The contamination of foods with hydrocarbon mixtures migrating from food contact materials (FCM) was first observed for jute and sisal bags treated with batching oil in the 1990s. Since the millennium, the focus has shifted to printing inks and recycled cardboard packaging as most recognized sources for hydrocarbon contamination from FCM. The aim of research activity is focussed on the evaluation of microcantilever-based mass sensor performances for biodetection of toxic molecules in food. We investigated the possibility to detect human pathogen bacteria (Salmonella spp.), milk allergens, mycotoxins and carcinogenic anabolic agent in meat. The results in terms of sensitivity and selectivity were compared with traditional analysis protocol and commercially available detection kits.
