Abstract α-Methylacyl-CoA racemase (Amacr) is an auxiliary enzyme of β-oxidation and participates in the elimination of methyl-branched fatty acids in peroxisomes and in mitochondria and in the synthesis of bile acids in peroxisomes. Phytic acid (myo-inositol-1,2,3,4,5,6-hexakisphosphate; InsP6) is ubiquitous in eukaryotic cells and constitutes the major storage form of phosphate in plant seeds (from 60% to 80%). During maturation it is accumulated in the protein storage vacuole in inclusions called globoids; the phosphate groups present in phytic acid (PA) are able to form phytate salts (phytin) binding important mineral cations. In mature maize kernels, 80% of PA is localized in the scutellum and the remaining 20% in the aleurone layer. The phosphorus stored as PA is remobilized during germination by phytase enzymes:

Le cancer du sein est la tumeur la plus fréquente et la principale cause de mortalité chez la femme. Des facteurs génétiques ont été mis en évidence et des mutations des oncosuppresseurs BRCA1 et BRCA2 ont été observées dans la majorité des cas héréditaires de cancer du sein. Dans les cas sporadiques (90 à 95% des cas), ce sont des modulations de leur expression qui ont été démontrées. Des facteurs environnementaux semblent intervenir également avec une incidence du cancer du sein plus élevée en Occident qu'en Asie et l'étude des populations migrantes met en avant l'alimentation riche en soja
