Purpose The purpose of this paper is to reveal influential information used in vegetable purchasing decisions of household primary food shoppers in China and in Taiwan. Design/methodology/approach Two in-person surveys were administrated separately in Shanghai, China and in Taipei, Taiwan, the two most populous metropolitan areas in China and in Taiwan, respectively. Findings Results reveal that about 32 per cent of respondents in Taipei purchase vegetables once in every two to three days. The majority of respondents in Shanghai (81 per cent) purchase vegetables on a daily basis. Results of factor analysis reveal the four dimensions, origin labelling, promotion, selection, and quality, influence purchasing decisions of respondents in Taipei and in Shanghai. For household primary food shoppers in Taipei, origin labelling and selection help food shoppers in Taipei in vegetable purchasing decisions, but not promotion. For those food shoppers in Shanghai who purchase large volume of vegetables, quality is the most important factor in purchasing decisions. Originality/value This study provides new insights into vegetable purchasing decisions in two populous cities in China and Taiwan. The contributions of this study are to provide valuable information in vegetable purchasing decisions for effective information communication in retailing; and to fill in the gap of research in vegetable purchasing decisions in consumer behaviour studies in Chinese societies.

This article examines how commodity status is achieved and how value is articulated across three food provisioning practices and ideologies in China: nationally certified food, local government-sponsored organic food near Shanghai, and an alternative food movement comprising small-scale and independent organic farmers in Shanghai and the surrounding countryside. Understanding value across these three cases requires asking how the social relations of production and the rural labor involved in domestic food production are rendered visible, or not, to urban shoppers. Drawing on eighteen months of ethnographic fieldwork as well as on work experiences with transnational food corporations in China, this article illustrates that government initiatives alienate rural labor in an effort partially designed to manage social harmony, while independent organic farmers “bring the rural back.” This analysis adds to our understanding of urban/rural relations in China today. It also shows that for alternative notions of value to flourish, gifts may intentionally moonlight as commodities.

Resourceful parents and grandparents in Shanghai go a long way in search of safe and healthy food for the children of their families. From an ethnographical perspective, this article delves into the risk of eating in everyday family life in urban China, and it investigates the complexity of navigating the urban food market and trusting advice from Internet sources, mommy groups, friends, and family members in order to avoid often incomprehensible health risks posed by polluted or chemically treated foods. It describes how family caregivers feel a moral obligation of doing their best to handle food risks in everyday life, and how they exchange practical knowledge in private networks. It argues that food risks are tackled with individual strategies aiming towards a feeling of peace of mind ( fangxin), and that buying, preparing, and eating safe food is a moral issue within the family.

Water scarcity has put pressure on city development in China. With a particular focus on urban and rural effects, logarithmic mean Divisia index decomposition (LMDI) was used to analyze the water footprint per capita (WFP) of food consumption in five East China cities (Beijing, Tianjin, Shanghai, Qingdao, and Xiamen) from 2008 to 2018. Results show that the WFP of food consumption exhibited an upward tendency among all cities during the research period. Food consumption structure contributed the most to the WFP growth, mainly due to urban and rural residents’ diet shift toward a livestock-rich style. Except in Beijing, the food consumption level mainly inhibited the WFP growth due to the decrease in food consumption level per capita in urban areas. Urbanization had less influence on WFP growth for two megacities (Beijing and Shanghai) due to the strictly controlled urban population inflow policy and more positive effects for other cities. The water footprint intensity effect among cities was mainly due to uneven water-saving efficiency. Meanwhile, Beijing and Tianjin have achieved advancement in water utilization efficiency.

Chinese water deer (Hydropotes inermis) was endangered in China and vanished from Shanghai early in the 20th century. The deer was reintroduced from 2006 onward, so as to re-establish a wild population in Shanghai. We obtained the deer from the breeding stock and released them. The deer numbers increased from 21 in 2007 to 299 in 2013. There has been a total area of 30.62 km2 of free-range deer release from 2010 and this will be enlarged in the future.

It has been increasingly recognized that dietary factors play a major role in the development of chronic diseases, including cancers and CVD. The identification of patterns of nutrient intake in populations with different disease incidence will be helpful in understanding the diet and disease association. The present report describes nutrient intake in 74810 Chinese women, aged between 40 and 70 years, who participated in a population-based cohort study in Shanghai from 1997 to 2000. A food frequency questionnaire was used to derive estimates of nutrient intakes. The average daily energy intake was 7027·8kJ in the study population, with protein, fat and carbohydrates contributing 15·9%, 15·6% and 68·5%, respectively. Factors, including younger age, higher income, attainment of education at the college level or above, being married or holding a professional job, were related to higher intake levels of most nutrients. The present results highlight the need for continuing to promote public health strategies aimed at improving the diets of women from both older and lower socio-demographic backgrounds, and in the meantime, continuing to help address the current dearth of data on nutrient intakes for middle-aged and elderly urban Chinese women.

Resumen
Although in Europe and in the USA many studies focus on organic, little is known on the topic in China. This research provides an insight on Shanghai consumers’ perception of organic, aiming at understanding and representing in graphic form the network of mental associations that stems from the organic concept. To acquire, process and aggregate the individual networks it was used the “Brand concept mapping” methodology (Roedder et al., 2006), while the data analysis was carried out also using analytic procedures. The results achieved suggest that organic food is perceived as healthy, safe and costly. Although these attributes are pretty much consistent with the European perception, some relevant differences emerged. First, organic is not necessarily synonymous with natural product in China, also due to a poor translation of the term in the Chinese language that conveys the idea of a manufactured product. Secondly, the organic label has to deal with the competition with the green food label in terms of image and positioning on the market, since they are easily associated and often confused. “Environmental protection” also emerged as relevant association, while the ethical and social values were not mentioned. In conclusion, health care and security concerns are the factors that influence most the food consumption in China (many people are so concerned about food safety that they found it difficult to shop), and the associations “Safe”, “Pure and natural”, “without chemicals” and “healthy” have been identified as the best candidates for leveraging a sound image of organic food .
Quantunque in Europa e negli USA gli studi sul biologico siano molteplici, ben poco si sa sull’argomento in Cina. Il presente studio analizza la percezione del biologico da parte dei consumatori cinesi della città di Shanghai, puntando a comprendere e rappresentare in forma grafica la rete di associazione mentali che scaturisce dal concetto di biologico. Per acquisire, elaborare e aggregare le mappe concettuali individuali è stata utilizzata la metodologia denominata “Brand concept mapping” (Roedder et al., 2006), mentre l’analisi dei dati è stata condotta anche attraverso procedure analitiche. I risultati a cui lo studio ha condotto suggeriscono una percezione del biologico come prodotto salutare e sicuro, ma costoso. Sebbene questi attributi siano in linea con la visione Europea, sono emerse anche alcune differenze sostanziali. In primo luogo, in Cina biologico non è necessariamente sinonimo di prodotto naturale, anche per via della infelice traduzione del termine “biologico” in lingua cinese, che suggerisce l’idea di un prodotto industriale. In secondo luogo il biologico compete con il green food in termini di immagine e posizionamento sul mercato, in quanto i due marchi sono facilmente associati e confusi. L’aspetto di “tutela ambientale” è emerso come associazione di rilievo, mentre non sono stati menzionati i valori etici e sociali. Per concludere, la cura della salute e la sicurezza alimentare sono fattori chiave che influenzano maggiormente il consumo in Cina (molte persone sono così preoccupate per la salute da trovare difficile fare la spesa), e le associazioni “sicuro”, “puro e naturale”, “senza additivi” e “salutare” sono state individuate come candidati migliori per la promozione di un’immagine positiva del prodotto biologico.

Traditional fabric and tailoring shops, which had a close relationship to the textile industry once flourished in Shanghai, used to play a vital role in people’s daily life and thus forming the culture of purchasing fabrics and tailoring. Nowadays, most of them are disappearing in a rapid speed without raising too many public concerns. Laou Kai Fook, as the most time-honored traditional fabric and tailoring shop, is a unique and rare example to show that how it relates to the textile industry and the role of it in forming the tailoring culture in Shanghai. This thesis will focus on “Laou Kai Fook” to understand its intrinsic heritage significance by studying its business history, and its connections to the development of the textile industry as well as the evolution of the tailoring culture. A new approach of understanding heritage significances will be introduced to emphasize the relationships between the tangible and intangible aspects in order to form a more comprehensive image of the cultural heritage in a larger context.

Busca identificar en qué factores críticos de éxito nos deberíamos centrar como país para lograr ser más competitivos en nuestras exportaciones de palta Hass hacia Shanghai – China. En el primer capítulo incluimos aspectos relacionados a la palta como producto, beneficios y valor nutritivo además de revisar qué es un factor crítico de éxito y ejemplos de los mismos para los casos de México y Chile que son nuestros principales competidores. Luego hemos investigado sobre el mercado objetivo; sus características y estrategias para ingresar, así como el tema logístico. Todos estos conceptos con el fin de entender el tema investigado para proceder con la validación mediante entrevistas a informantes claves, empresas exportadores y asociaciones de apoyo a las exportaciones que se llevan a cabo en el segundo capítulo. Luego de las entrevistas como fuente primaria, en el tercer capítulo pasamos a analizar datos que nos llevaron a resultados por categorías y segmentos y por último en el cuarto capítulo discutimos los resultados detallando los hallazgos, barreras y brechas de nuestra investigación; culminando con las conclusiones y recomendaciones para este caso.

Compared to these advanced nations, China’s consumer behavior and power can be viewed as uncultivated and full of potential. Thus, taking in China’s long culinary history and long tradition of its cuisine, if food technology can be integrated into these specialties, there will be a bright future for China’s frozen food market. This report collects its data from Access Asia Limited: Frozen Food In China Market Analysis and from focusing on frozen prepared food , investigates the growth, size, selection and advantage of the frozen food market in China The city of Shanghai is the most prosperous, goverened and educated city in China. With a well developed infrastructure and modernized malls, Shanghai provides the best environment for fostering a frozen food market. Thus, this report picks Shanghai as the main city of observation and arrives at the following conclusions : 1. The Frozen Food Market in Shanghai will enjoy a promising 5% growth rate, a potential market for any new investors . 2. From observing the sales of dumplings and meat , one notices that frozen cooked food will enjoy a bigger market share because it meets the consumer’s need of basic nutrition intake . 3. Sanitation and safety are two primary concerns on the consumer. Thus establishing a good brand image is vital to any company’s success. Selling products through supermarket is also a crucial channel that vendors need to establish . 4. Due to the common use of microwave in the common household, microwavable frozen food not only provides variation but is also convenient for the consumer, thus raising its overall value. A majority of the consumer believe that microwavable frozen food can maintain a dish’s original flavor while saving time. As this market is merely in its fledgling state, it is advised that all companies should pay attention to this market .

This chapter discusses the jazz scene in Beijing. While Shanghai has been the main focus of the evolution of jazz in China, the jazz scene in Beijing has also evolved since the late 1980s. As in Shanghai, one can find jazz in some large venues, hotel bars and food courts, and especially in a few small clubs dedicated to jazz performance. The Beijing jazz scene over the last several decades has clearly evolved. As diplomat Martin Fleischer reports, when he arrived in Beijing in the late 1980s there were no jazz clubs in China's capital. It was not until the early 1990s that jazz becomes a public presence in Beijing with the emergence of the Beijing International Jazz Festival created and curated by German entrepreneur Udo Hoffman.

The post-shock scenario is outlined: an uncertain future with a “new normality.” The embryos of the new paradigm are alongside the powerful discontinuity generated by COVID-19. With examples and anecdotes from Shanghai and China, a transformation already underway is portrayed. No more perfect shock could be thought to reconsider the role of humans on this planet, on our cities. There is a crucial need for resilience of local systems, for short chains, for autonomous energy and food self-sufficiency, for decentralizing essential products. Security and contingency plans are needed and must operate on a global scale, but at the same time at the country and the city level. The future must be reinvented, acting in depth, for shifting from “exploitation” to “cooperation” with natural systems. Topics are education, work, services, transport, food safety.

The supply of healthy food is distributed unequally in city. The accessibility of healthy foods is affected by both locations and traffic conditions. This paper examines spatio-temporal disparities in healthy food accessibility in Shanghai communities. Firstly, we choose all communities in Shanghai and use python as a crawling tool to collect healthy food store POI (e.g. agricultural markets, vegetable markets, fruit markets, aquatic seafood markets, supermarkets and comprehensive markets) from Gaode Map and get 23,436 points to calculate the amount and density of healthy food store in various communities. Secondly, after comparing Baidu Map and Gaode Map, leading platforms of Web GIS services in China, we choose Baidu Map to collect data to study the spatio-temporal difference in accessibility by using network analysis and developing a crawling tool to collect different travel time (e.g. walking and public transportation) for each community to the closest healthy food store at each time of day (0:00-24:00). Thirdly, we set up a variable to see at what time are people in the communities able to reach their nearest healthy food store in 15 minutes and the ratio of the above-mentioned time to the whole day is calculated so that we can evaluate the temporal disparities of healthy food accessibility. Additionally, we use global and local spatial autocorrelation to analyze the spatial patterns of the temporal disparities of healthy food accessibility, based on the Moran’s index and the local indicator spatial association (LISA) index. Finally, on the basis of the research above, the food desert map is drawn. The results of this analysis identify the communities in Shanghai with the greatest need for improved access to healthy food stores and the variance of accessibility affected by the traffic in different times will be taken into account. Ultimately, this study explores a more complete and realistic condition of healthy food accessibility in Shanghai and the corresponding improvement strategy is proposed.

Resumen
China's urban and rural development has entered a new stage of comprehensive transformation. The advent of the era of metropolitan development and the strategy of Rural Revitalization are two important national strategic backgrounds of this study. As the highest urbanization rate in Southern Jiangsu, rural and urban development needs synchronous resonance. Rural areas, as an important role in the integration of the Yangtze River Delta and the development of Shanghai Metropolitan Area, play an important role in regional cohesion and complementary functions, and are an important part in the overall construction of the metropolitan area. Jinxi Town is located in the southern end of Jiangsu Province, bordering Qingpu District of Shanghai, and between Suzhou and Shanghai. In ancient China, Jinxi was a traditional town of fish and rice and water culture. During the period of reform and opening-up, Jinxi worked closely with surrounding cities to create a brilliant chapter of "Sunan Model" and "Kunshan Model". In the new stage of development, Jinxi Town shoulders the heavy responsibility of more ecological functions and reduction of construction land indicators. It is not only more responsible for ensuring food production safety and protecting ecological functions, but also more demanding for rural revitalization. It is also more urgent to study its development path and strategy. Firstly, this paper takes Jinxi's contemporary mission as the starting point, secondly, through the analysis of Jinxi's function orientation, population, industry and space, and then puts forward the general strategic requirements of Rural Revitalization according to these four aspects. Thirdly, it demonstrates several different types of villages in Jinxi town, respectively. The cases of upgrading agriculture, industrial integration and development, demonstration of rural community and industrial retreat to build Jinxi Town to revitalize villages in the countryside. Finally, through the follow-up revision and improvement of planning formulation, to help the effective implementation of Jinxi Town's Rural Revitalization strategic planning. Through this study on the Rural Revitalization of Jinxi Town, on the one hand, it comprehensively implements the national deployment and the task of Jiangsu as a benchmark; on the other hand, it earnestly follows the law of rural selfdevelopment, and in the theoretical category of regional economy, it is based on the development of metropolitan area and the background of Rural Revitalization era, with Chinese characteristics, Shanghai. The road of Rural Revitalization in metropolitan area. At the same time, this paper expects to provide ideas and methods for the compilation of strategic planning for Rural Revitalization in metropolitan areas.

Resumen
To better study the biology and ecology of hadal trenches for the marine scientists, the hadal science and technology center (HAST) of Shanghai Ocean University has made a significant commitment to develop operational support for the promotion of hadal science. The first focus of HAST is to construct a movable laboratory for hadal trenches which includes a mothership, an full ocean depth (FOD) Human Occupied Vehicle (HOV), an FOD Autonomous and Remotely-operated Vehicle (ARV) and several FOD landers. All of them are named as Rainbowfish series. Presently, the construction of the ARV has been finished and the first phase sea trial has been conducted in South China Sea from September 26th to October 25th 2015. In the sea trial, the ARV was laid down to certain water depth and recovered back to water surface through a load-bearing armored cable. The reliability of the cable is critical to the safety of the ARV, as if the cable was broken, the ARV could hardly be retrieved. In such circumstances, this paper focuses on two important issues, i.e. the tensions of the cable and the ARV offset using numerical methods. Due to the change of the mothership in the final phase before the sea trial, the cable analyses with two different types of supporting vessels (a catamaran and a barge) were performed respectively and a comparison was made. In addition, a sensitivity study of submergence depths and winch hook positions was also conducted. Finally, the first phase sea trial of the ARV was described and discussed.
