Texto completoLas fábricas de conservas de fruta formaron parte de las industrias agroalimentarias que abastecieron desde fines del siglo XIX el creciente mercado interno, desde el norte del país durante la expansión salitrera entre 1880-1930- y externo, desde los mercados del Pacifico y Europa, proceso que se mantuvo intermitente hasta después de la crisis de 1929. Tuvieron en su favor una constante apreciación del tipo de cambio entre 1880 y 1930 (valor de la divisa expresada en pesos chilenos) que permitió que estos productos fueran cada vez más baratos en el exterior. Pero también facilitó su desarrollo y consolidación la sucesiva implementación de tarifas arancelarias de corte proteccionista. A saber, la ley 980 de 1897 que estableció un impuesto del 60% sobre la internación de frutas en conserva. Posteriormente, la ley 3066 de 1916 modificó el impuesto a montos específicos según el valor de los productos. Finalmente el decreto 4321 de 1928 nuevamente modificó el arancel con impuestos específicos. De tal modo, hubo leyes que protegieron la producción nacional de conservas de fruta respecto al ingreso de conservas extranjeras. Estos elementos y la acción decidida de un grupo de industriales nacionales e inmigrantes propiciaron el origen, desarrollo y consolidación de la industria de conservas de fruta en Chile. En suma, el estudio de la temprana “industria de la fruta” es significativo no sólo para ampliar nuestra comprensión del desarrollo industrial del país a fines del siglo XIX y comienzos del XX, sino también para estimular el estudio de otras industrias que permitirían vislumbrar avances significativos en la modernización económica durante este período, un asunto central en el debate historiográfico acerca del legado del Ciclo Salitrero en la economía chilena.

As for the fruit juice branch and especially citrus juices, for which the national market is currently developing, the problem centres on the inadequacy of the appropriate primary materials. However, the future of this important industry constitutes a major element of the social and economic life of the greek countryside and must be very carefully planned. Not only does this industry influence land use and the evolution of its primary sector - agriculture - but oving to the large number of people connected with this industry, it determines its relations with growers, it contributes to the creation of jobs and the interplay of rural activities, it creates revenue and influences its flow and it modifies, albeit in a limited way, the life-styles of its personnel

Texto completoThis paper has its scope limited to the Pelotas canned food industry, comprising a study on the market structure as well the behavior of the enterprises belonging to this sector. For this purpose it gathers descriptive and analytical elements related to the manufacture structural features such as the concentration levei of the industries, barriers to entry, demand conditions, industry development as well as the strategies adopted by the companies providing a good basis so that the industrial performance can be properly analyzed. The study was developed from data collected in 15 (fifteen) preserved food companies through carefully organized interviews with entrepreneurs and/or technicians. In addition, interviews were performed with representatives of other organs direct or indirectly involved with the preserved food industry such as the Sindicato da Indústria de Doces e Conservas Alimentícias de Pelotas (Union of the Industry of Confectionery and Preserved Food of Pelotas); Sindicato dos Trabalhadores Rurais de Pelotas (Union of the Rural Workers of Pelotas); Coordenadoria Econômica da Prefeitura Municipal de Pelotas (Economic Coordination Office of Pelotas City Hall); Research and Rural Extension Institutions (EMBRAPA - Brazilian Company for Agricultural Research and EMATER - Association of Technical Assistance and Rural Extension Enterprises of Rio Grande do Sul), aiming to supplement the survey with information not available in the companies. Data analysis have allowed us to make the following considerations about the preserved food industry: a) Although there exist a set of factors which may lead to the development of the preserved food industry as the geographic concentration of the manufacturers, proximity to the production centers of vegetal raw-material, proper physical structure and the presence of rural institutions for research and extension, it does not exclude the quantitative and qualitative problems of supplying which the companies have noticed. Thus, the benefits originated by the gathering of the producers, manufacturers and the existing technology in the region are not fully exploited concerning their potentiality. b) Since the supplying of vegetal raw-material and the competitive actions are performed by the companies, based exclusively in price differentials, a considerable part of the problems verified in the preserved food industry of Pelotas occur due to its own structural organization concerning production. c) The behavior of the economic agents reveals an indefmite positioning in relation to entrepreneurial strategies such as maintenance of differential in costs, products, market segmentation, price policy, technological improvement among others, due to their own development level which may be classified as declining under several aspects theoretically examined. d) Entrepreneurial strategies adopted by the companies were actions merely adapted to the existing conditions of the market structure. There are not competitive moviments aiming to transform or alter the unfavorable circumstances. Concluding, some recommendations were put forward along with Chis study so that we may have elements to intervene directly or indirecdy in activities either in the public or private sectors.

O setor conserveiro da região de Pelotas, no Sul do Rio Grande do Sul, surgiu em fins do século XIX e consolidou-se na década de 70 quando grandes empresas instalaram-se no local. Os anos 80 presenciaram o fechamento de muitas dessas fábricas em função da chamada #crise# que atingiu o setor. Em 90, as empresas que permaneceram, concentraram os faturamentos; das 40 indústrias que havia na década anterior, em 2007, apenas 12 atingiram um marco de produtividade sem precedentes no ramo, hoje, responsáveis por 98% da produção de compotas de pêssego do Brasil. Algumas dessas empresas reestruturaram-se, incrementaram seu parque produtivo e adotaram mudanças organizacionais, em um movimento semelhante ao verificado em diferentes ramos produtivos. Outras combinaram novos e velhos processos, marcas que caracterizam uma reestruturação heterogênea que articula, simultaneamente, passado e presente em movimento, um contexto no qual interagem instituições públicas e privadas interessadas no desenvolvimento regional. Na dimensão do mundo do trabalho, o fechamento das empresas representou um intenso desemprego na região de Pelotas, por terem sido a principal atividade econômica do local. A reestruturação empresarial fragilizou a posição de trabalhadores e sindicatos do ramo, e as formas coletivas de organização viram-se, assim, ainda mais restritas. Os sujeitos dessa trama narram de diferentes maneiras esses momentos, mas, invariavelmente, indicam uma intensificação na precariedade das suas condições e relações de trabalho, principalmente, no que se refere às formas de gestão empresarial. A postura dos trabalhadores nesse contexto parece ir muito além de uma condição de fatalidade. Na interface entre esfera fabril e extra-fabril, nas formas de sociabilidades que estabelecem entre si, suas vidas se inter-relacionam, e o espaço de trabalho passa a ser palco de diversas práticas de contestação. The sector of canned goods in the region of Pelotas, in Rio Grande do Sul, came to life at the end of the XIX Century and was consolidated in the 70#s when large companies installed themselves in the area. The 80#s witnessed the closing of many of these factories, due to the supposed #crisis# that hit this field of activity. In the 90#s, the firms which remained, concentrated their invoicing # of the 40 industries that had existed in the previous decade, only 12 reached the productivity level in 2007, without precedent in the field today, responsible for 98% of canned peach production in Brazil. Some of these companies restructured themselves, developed their productive industrial complex, and adopted organizational changes in a movement similar to that seen in different productive chains. Others combined new and old processes, marks that characterize a heterogeneous reorganization, which simultaneously articulates past and present in movement, a context in which public and private institutions, interested in regional development, interact. In the dimension of the working world, the closing of the companies represented intense unemployment in the region of Pelotas, since these firms had been the main economic activity of the region. The business reorganization weakened the position of the workers and labour unions in the field, and collective forms of organization found themselves even more restricted because of this. The players of this network describe these movements in different ways, but invariably indicate intensification in the weakness of their conditions and labour relations, principally in regard to the administration of the business. The attitude of the workers in this context seems to go way beyond a condition of fate. In the interface between industrial and extra-industrial, in the forms of sociability which are established among them, their lives interrelate and the working place becomes the stage of various contestation practices.

Texto completoEl objetivo principal de esta tesis es evaluar la entrada de una empresa chilena al mercado australiano de duraznos en conservas, el cual se estima en un valor anual cercano a los $70 millones de dólares australianos. La motivación de la empresa es diversificar los mercados a los cuales hoy está exportando ya que mayoritariamente son americanos y cuentan con aranceles preferenciales para Chile con continuidad incierta. La oportunidad de globalización viene tras la gran pérdida de competitividad que ha sufrido la industria australiana, debilitada por aumentos en costos de mano de obra y producción, disminución de zonas de cultivo, salida de productores del mercado y apreciación de la divisa local. El año 2010 la empresa hizo su primera incursión en Australia al ganar un contrato por una temporada produciendo dos SKUs de la marca propia de un importante retailer local. Para afiatar la presencia de la empresa en dicho mercado se definieron cuatro alternativas de entrada: 1. Seguir produciendo marcas propias de retailers locales. 2. Exportar directamente una marca de producción nacional al retail. 3. Proveer a la industria de servicio de comida. 4. Proveer a un procesador local australiano de productos etiquetados con sus marcas. En base al análisis cualitativo, se descartó la opción de penetrar con una marca chilena debido a la alta competitividad del mercado australiano, la presencia de marcas fuertes y los altos costos de desarrollar y promocionar una marca desconocida. La otra opción descartada fue la de proveer a la industria de servicio de comida por tener un mercado de tamaño considerablemente menor que el del retail y tener clientes y distribuidores altamente atomizados. Para las rutas restantes se identificaron los productos presentes en el mercado, se hizo un levantamiento de precios a público y se estimaron los márgenes esperados por los actores involucrados. Se modelaron los costos de la empresa y se estudiaron los márgenes para las distintas alternativas. Bajo un escenario que no contempla los precios de la competencia, se logran rentabilidades muy altas en todas las alternativas. Al apuntar a una rentabilidad de un 15%, mínimo esperado por la empresa, se llega a precios estrechamente competitivos en relación a los precios promedios de las importaciones de otras naciones, medidos en precio CIF por tonelada. Esto implica la existencia de márgenes muy grandes para el retailer y bajos para los exportadores. Se recomienda a la empresa continuar su incursión en el corto plazo buscando estrechar una alianza más duradera con su cliente actual y apuntar a marcas de mayor valor. Adicionalmente, debe negociar con otras empresas, como potenciales clientes. En el mediano y largo plazo se recomienda buscar una alianza estratégica con el procesador local SPCA. Finalmente, es fundamental que la empresa, entre otros, invierta en modernizar sus procesos productivos sumando líneas de productos que lo conviertan en un socio más atractivo para mercados más desarrollados.

Texto completoDebido a que la industria de durazno conservero en Chile presenta una sobreoferta de materia prima para la producción de conservas durante los meses de enero y febrero, la fruta que no puede ser procesada en los días siguientes a cosecha se almacena en cámaras de frío, generando pérdidas por concepto de falta espacio para guarda o por excesivos periodos de almacenaje. Se realizó una investigación buscando optimizar la calidad del producto final, cuyo objetivo fue determinar el efecto del estado de madurez y del período de almacenado refrigerado sobre la calidad industrial y sensorial de variedades de media estación de durazno conservero. La cosecha de los frutos de las variedades Andross, Dr. Davis, Hesse, Klampt y Ross se realizó en Paine, Región Metropolitana, en un huerto propiedad de Univiveros, y en la localidad de Chimbarongo, Región de O’Higgins. Se cosechó la fruta según el color de fondo en dos estados de madurez: M1 y M2, correspondientes a D3 y D5, según tabla de color ASOEX para duraznos y nectarinas. La fruta se caracterizó a cosecha y luego de 28 días de almacenado refrigerado, obteniéndose 4 tratamientos para el estudio: M10, M20, M128 y M228. Posteriormente, se procesó la materia prima, produciéndose para cada tratamiento, las cuales se evaluaron sensorialmente, luego de 42 días de su elaboración. Los parámetros técnicos de madurez evaluados en la caracterización de fruta fresca fueron: peso, diámetro, color de piel, absorbancia de la clorofila, concentración de sólidos solubles, acidez titulable, firmeza y relación pulpa carozo. La evaluación sensorial de conservas se realizó sobre la fase sólida, líquida, olfativa, gustativa y textural. El análisis de los resultados fue mediante un análisis de componentes principales (ACP) y de conglomerados, para agrupar dichos tratamientos. Los tratamientos M1 se asociaron a mayor firmeza, I y acidez, mientras que los tratamientos M2 se asociaron a CSS, CSS/AT y C*. Los tratamientos sin almacenar se asociaron a mayor firmeza, I AD AD y AT, mientras que almacenados luego de 28 días se asociaron a CSS, CSS/AT y C*. Existe un afecto positivo de la firmeza en la calidad sensorial del producto final. Los tratamientos que presentaron los mayores porcentajes de desecho por baja firmeza en frutos, con respecto a la Norma, tienden a tener una alta asociacion a defectos gustativos y olfativos.
Because of peach canning industry in Chile has an oversupply of raw material for canning during January and February, some fruit that can not be processed in the following days after harvest, has to be cold stored. In order to optimize the quality of the final product, this research was held, whose objective was to determine the effect of maturity stage and cold storage period on canning peach quality, made with midseason varieties. Fruit of ‘Andross’, ‘Dr. Davis’, ‘Hesse’, ‘Klampt’ and ‘Ross’ peaches was harvested in Paine, Metropolitan Region, and in Chimbarongo, O'Higgins Region. Two stages of maturity were harvested: M1 and M2, corresponding to D3 and D5, according to peach and nectarine ASOEX color table. The fruit was characterized at harvest and after 28 days of cold storage, resulting in 4 treatments in the study: M10, M20, M128 and M228. Subsequently, raw material from each treatment was canned, and subsequently evaluated after 42 days after processed. Fresh fruit was characterized according technical parameters for maturity; the evaluations were: fruit weight and diameter, color, absorbance of chlorophyll (I ), soluble solids concentration, titratable acidity, firmness and pulp pit ratio. Sensory evaluation was performed on canned fruit according to solid and liquid fraction, smell, taste and texture. The results were analyzed by principal component (PCA) and cluster analysis to group the treatments. M1 treatments were associated with greater firmness, acidity and I AD, AD while M2 treatments were associated with CSS CSS/AT and C *. Not cold stored treatments were associated with greater firmness, AT and I while 28 days cold stored treatments were associated with CSS, CSS/AT and C *. There is a strong positive effect of firmness on sensory quality of final product. Treatments with higher percentages of cull for lack of firmness, with respect to the Norma chilena, have a high association of gustatory and olfactory defects.

Texto completoThe present thesis includes the development of a strategic plan for the Peruvian Blueberry Industry, as a product with great productive potential, that will allow to diversify the commercial proposal towards the international market. This strategic plan is proposed with a projection of ten years, which will allow to know better the current situation and the actions to be taken to be one of the leading countries in the supply of cranberry in the world. The challenge of this research work is to analyze, identify and propose a strategic plan to maximize the potential of Peru to become one of the first blueberry producers in the world. Throughout the development of this strategic planning will be explained the internal and external potentialities of the Peruvian agricultural environment, in relation to the production and commercialization of blueberry; as well as the long-term objectives that will allow Peru to be one of the first producers: (a) increase exports to US $ 600 million, (b) generate 200,000 jobs, and (c) increase net profitability to 35% ; This is also the case in the year 2027. Strategies have also been designed to achieve these objectives and are evaluated with different matrices, allowing the definition of retained strategies that are intensive, diversified or integrated, such as: (a) developing the internal market of blueberry; (b) developing markets in the United States, the Netherlands and the United Kingdom; (c) penetrate the markets of Spain and Germany; (d) horizontal integration of blueberry producers into an industry-wide association; and (f) develop new products derived from blueberry; among others. The future of the Peruvian Cranberry Industry is promising, with a growing increase in cultivated areas, sustained improvement of the production process, integration of the productive chain, high yield per hectare and profitability, all in a sustainable way with the environment

For this, historical information contributes to the comparison of competitors in search of the main competitive advantages that should be strengthened and exploited in order to achieve the positioning of this sector, as a referent in the medium term. This document will show how to promote the development of the aguaymanto industry for the next ten years, mainly in the province of Cajamarca, taking advantage of the good weather condition, using the resources properly, with the help of technology in the production process. Texto completoThe main objective of this research is to develop a Strategic Plan for the Peruvian agricultural fresh fruit and vegetables exporting Sector, given the enormous potential it possesses to become one of the world’s main exporters of such products. The development of this Plan benefits from the enormous advantage bestowed upon this activity by the range of geographic zones that exist within Peru, as well as the country’s strategic geographic location. Also of importance is the considerable commercial support provided by the free trade agreements Peru has signed, and the success of Marca Perú [“Brand Peru”], which has achieved worldwide recognition. In this research work we analyzed internal and external factors, and this enabled us to identify the strengths, weaknesses, opportunities, and threats that led to our establishing a series of strategies designed to achieve the proposed Vision. The long term objectives formulated were designed to achieve economic growth, hand-in-hand with the technological innovation that will allow us to develop sustainably. Considering the fact that Peru has been experiencing FOB growth in excess of 20%, we believe that with an appropriate policy for the promotion of agricultural exports Peru could become one of the world’s leading exporting countries. As part of the project, we considered the development of this sector and the possibilities for sustainable growth in non-traditional products, such as organic produce, blueberries, onions and other crops with the potential to contribute to increased exports, that will help improve the socioeconomic conditions of all those who form part of the value chain.

Resumo: o objetivo do presente estudo foi desenvolver um modelo matemático para um secador industrial de túnel para fi'utas, simulá-Ia e otimizar sua operação considerando a qualidade do produto como restrição principal na formulação do problema de otimização. Os secadores operam em forma semi-contínua e têm carrinhos e bandejas. O período de cada ciclo é determinado fazendo cumprir as especificações da umidade inicial e final do produto, de forma que cada carrinho com um número determinado de bandejas com fruta úmida seja alimentado em ciclos ao túnel enquanto outro que atingiu a umidade final é retirado do outro extremo do túnel. As configurações consideradas no estudo foram concorrente e contracorrente. O modelo que foi desenvolvido a partir dos balanços simultâneos de calor e massa para a fase sólida e gasosa, tanto para as bandejas (carrinhos) quanto para o túnel, é simples e apropriado para efeitos de otimização onde o tempo computacional é muito importante. O modelo foi aplicado para simular a secagem de uva Itália usando dados experimentais da cinética de secagem, ajustando-se os parâmetros de acordo aos requerimentos das equações do modelo. Os códigos de simulação e otimização foram desenvolvidosem FORTRAN 90 de Microsoft Fortran PowerStation. A não linearidade das equações do modelo e da restrição de qualidade da fruta, representada pela degradação de ácido ascórbico, conduziram ao desenvolvimento de um algoritmo para a solução do problema de otimização cuja função objetivo foi minimizar o consumo de energia por unidade de sólido seco, tempo do ciclo e temperatura máxima atingida pela fruta. Os resultados mostram as condições de operação ótimas para um número fixo de carrinhos no túnel e indicam que a configuração contracorrente é mais eficiente quando se avalia os requerimentos de calor por kg de sólido seco para uma degradação de ácido ascórbico aproximadamente constante. Igualmente, que se reduz o consumo de energia em ambas configurações quando comparado aos valores simulados sem otimizar.
Abstract: The non linearity of the equations of the model and the quality of the fruit, represented by the ascorbic acid degradation, leaded to develop an algorithm for the solution of the optimization problem which objective function was to minimize the energy consumption, cycle time and maximum temperature achieved by the fruit. Results show the optimal operation conditions for a fixed number of trucks in the tunnel and indicate that countercurrent configuration is more efficient when heat requirements per kg of dry solids is evaluated for approximately constant ascorbic acid degradation. Furthermore, energy consumption for both configurations is reduced when compared to non optimized simulation results.

However, due to the high perishability and handling conditions, high percentages of losses are observed throughout the whole production chain. For these reasons the aims of this work were to obtain the adsorption thermodynamic properties and the drying kinetics of the pineapple shell and central cylinder as these information that are useful for the utilization of this waste. The pineapple shell and central cylinder adsorption isotherms were determined by the static gravimetric method under 40, 50, 60 and 70 °C. Six sorption isotherm equations – GAB, Henderson, Ferro-Fontan, Peleg, Oswin and Halsey – were tested to fit adsorption isotherm data. Resumo: Neste trabalho foi feita a aplicação do processo de escoamento superficial no solo ao tratamento de efluentes da industria cítrica. Foram construídas três rampas medindo em media 6 por 60 metros cada, plantadas com uma gramínea e tendo declividade de quatro porcento. Os resultados indicaram boa remoção de sólidos sedimentáveis e suspensos, DQO, DBO e fósforo total, porém o desempenho tende a piorar com valores de pH acima de 12. A melhor taxa de aplicação foi de 0.200 m³ /h.m para um período de aplicação de 12 h/dia. A remoção de fósforo total foi melhor para valores menores que aquela taxa
Abstract: The overland flow process was used to treat a citrus processing industry effluent. Three slopes 6 by 60 meters each. and with a gradient of 4 percent, were construct the industry wastewater treatment plant. Grass was used as vegetation to cover the slopes. Results indicated a good percent removal of suspended and settle able solids, COD, BOD and total phosphorus, but total efficiency would get worse for pH values higher than 12. The best application rate was of 0,200 m³/h.m for an application period of h/day. Total phosphorus removal efficiency was better for application rates lower than that

La finalidad de implementar el sistema de Inocuidad HACCP, es analizar e identificar peligros potenciales para que puedan ser controlados y monitoreados con el objetivo de brindar productos inocuos. En el presente estudio se utiliza materiales y métodos aplicados para la obtención de información como son las entrevistas con la Gerencia y áreas involucradas, elaboración de un cuestionario y aplicación de la Gráfica de Pareto para el análisis de la información. El HACCP, una herramienta preventiva, es una metodología eficaz y reconocida que da confianza a los clientes y empresa en lo relacionado con la seguridad de los alimentos. Se concluye en base los resultados plantados que la Implementación del Plan HACCP propone desarrollo y mejora para la Empresa Wenam E.I.R.L.

Texto completoDuring the last years, in the world there is a growing trend of preference for the consumption of vegetables and various fruits, which increased their demand and generated entrepreneurial opportunities. Faced with this panorama, the pineapple has become a fruit highly valued for its various nutritional benefits. The lands of Peru, and especially of Junín, have comparative advantages for the cultivation of pineapples, such as: the variety of climates, geographical location and their fertile soils, which allows to produce pineapples of excellent quality in their different varieties. In the development of the external analysis it was observed that Junín has political and economic stability that favors the entire pineapple value chain, has different opportunities such as the increase in the demand for natural products, the exchange of knowledge and the variety of agricultural lands in production, as well as the trend towards agroindustrialization. However, this is not enough if one considers the internal weaknesses of the sector such as the lack of technical assistance from the government, the lack of standardization of pineapple production, the limited level of associativity of farmers and the costly access to local financing. . In the present thesis, the strategic planning of the pineapple was developed in Junín. To do this, an analysis was developed both external and internal, and competitive Piña to propose strategies, objectives and policies that will help, by 2023 Junín is positioned as the first producer of pineapple at national level, reaching a high yield ( t/ha), contributing to the Gross Value of Production and the development of the sector; promoting the growth of the region and national per capita consumption

O trabalho apresentado tem suas conclusões baseadas na aplicação da metodologia MCDA visando desenvolver um modelo de avaliação do desempenho de uma indústria de conservas na cidade de Pelotas, Rio Grande do Sul. Fizeram parte da construção deste trabalho o autor, atuando como facilitador, e o decisor, que é até a presente data o diretor da empresa objeto deste trabalho. O trabalho foi dividido em duas etapas principais onde, primeiramente, foi desenvolvida a estruturação do modelo de avaliação e por fim a avaliação do desempenho atual e do cenário projetado pelo decisor. Os aspectos principais que foram levantados na etapa de estruturação foi que, por tratar-se de uma metodologia de abordagem construtivista a atuação do facilitador foi fundamental para que o decisor pudesse estruturar seu modelo como algo realmente seu. Já na fase de avaliação o aspecto mais importante a ser destacado é que, embora o decisor acreditasse ter uma clara idéia dos objetivos que desejava alcançar, os resultados ainda que plenamente atingidos estariam abaixo de suas expectativas demonstradas no modelo. É necessário ter-se sempre em mente que um modelo como o aqui apresentado não é definitivo, devendo ser aprimorado pois as mudanças de contexto podem alterar os juízos de valore do decisor

Texto completoGlobally, the main mango producers are India and China, followed by Thailand and Indonesia, while in Latin America, Mexico stands out as the world's 8th largest producer and the first exporter to the United States. On the other hand, Peru is located in the 18th place, cultivating different varieties of mangoes, among which are grafted or improved, such as Hade, Kent and Tommy Atkins that have international demand and are therefore exported. The demand for this fruit is growing and the Peruvian Mango Industry should take this opportunity to position itself among the world's two leading exporters, supplying various markets such as South Korea, Japan and China, as well as the markets currently served, which are Holland and the United States. By the year 2027, the aim is to lead exports in monetary terms, which will increase the volume of production and employment, as well as the yield per hectare through training and the use of state-of-the-art technology, especially in irrigation. All this will lead the Peruvian Mango Industry to see its profitability increase, benefiting both large companies and traditional producers. This will be achieved by implementing strategies that have been extensively discussed in this document, such as: (a) developing the US market for processed foods; (b) penetrate Asian markets with fresh mango; (c) developing organic mango crops; (d) integrate vertically with retailers and wholesalers to encourage the consumption of Peruvian mango in the national market; (e) vertically integrated forward, so that each farmer association or cooperative has its own marketing unit to reduce the number of intermediaries and increase profitability; and (f) horizontally integrate all small mango producers into associations that allow them access to financing, technology and markets

Texto completoThe objective of this study is to analyze the oil industry and propose strategic guidelines to develop the grape seed oil industry in Peru, taking advantage of remains from the Wine and Pisco industries. The grape seed oil is a product that is not currently produced in Peru, however, because of its beneficial properties for human consumption and its great taste in food, makes the product to be considered a premium oil, where a sector of the population recognizes and prefers this kind of advantage. Due to Peru's economic growth in recent years, most Peruvians have the ability to choose beneficial products for health. It is for this reason that other premium oils have been successfully established, being its main consumers those of the socioeconomic level A and B. The growth of the wine and pisco industries has been going at the same speed of the economic growth in Peru. The remains from these industries, which have no use, can be used as raw material for the production of grape seed oil. This is an advantage over other kinds of oils, as there is a large availability of raw material, which is one of the key factors for the development of this industry. As a result of our investigation, we’ve concluded that the grape seed oil industry would have the opportunity to enter the market and it must be positioned in both socioeconomic level A and B, as a premium oil. However, the industry must be established near the wine and pisco areas in order to obtain an appropriate amount of raw material that allows a production of grape seed oil that meets the demand.

This project proposes a strategic plan for the orange industry in Peru with the purpose of consolidating the country the second exporter of oranges in South America in 2023, by achieving a leadership position in the European and North American markets and maintaining a framework of social responsibility while protecting the environment. Nowadays, Peru consumes its own orange production, that’s why this proposal contemplate to take advantage of its counterseason geographical position to the biggest consumers, increase production and productivity and improve its products quality for entering to the most important and biggest markets that allow a better profitability, thus achieving economic improvements for the participants involved in this process. Texto completoLa presente tesis tiene por finalidad desarrollar el Planeamiento Estratégico de la Palta, a efectos de mejorar el desarrollo obtenido involucrando a todos los productores sean estos medianos y/o pequeños agricultores así como lograr un posicionamiento acorde con la calidad del producto en el mundo. A lo largo de este documento se pueden ver los excelentes avances logrados en estos últimos diez años en lo relacionado a la producción y exportación de la Palta, pero los análisis realizados también nos llevan a la conclusión de que hay mucho por hacer con el objetivo de sostener y/o mejorar lo realizado. Los principales países productores con los cuales salimos a competir en el mundo han construido en el tiempo una serie de ventajas competitivas que los diferencian del resto y que debemos de conocer, ver si aplican a nuestra realidad y si fuera el caso, tomarlas como punto de partida para ir formando las nuestras. La ejecución de las estrategias recomendadas permitirá al Perú posicionarse al 2023 como el segundo productor a nivel mundial, para lo cual sugerimos la formación de Comité Peruano de la Palta (CPP) entidad estatal adscrita a la Presidencia del Consejo de Ministros (PCM) quien deberá asumir el rol de liderazgo para la obtención de la visión propuesta. Así como lograr que este auge económico también llegue al resto de peruanos que integran la cadena de abastecimiento de la Palta e incentivando al resto de agricultores que reconviertan sus cultivos hacia este producto tan rentable. El CPP tendrá la ardua tarea de generar un trabajo en conjunto entre peruanos de diferentes idiosincrasias, llegando posiblemente a lugares donde la presencia del Estado no ha sido visible, pero lo interesante de este reto es que es una forma de trabajo que los peruanos debemos de empezar hacer, para que el desarrollo llegue a la mayor cantidad posible de connacionales, independientemente de su ubicación geográfica u origen étnico.
This thesis aims to develop the Strategic Planning of Avocado, in order to improve the development achieved by involving all producers and whether these medium and / or small farmers can achieve a position commensurate with the quality of the product in the world. Throughout this document see the excellent progress made in the last ten years in relation to the production and export of the avocado can be seen, but analysis also leads to the conclusion that there is much to be done in order to sustain and / or improve what has been done. The main producing countries worldwide with which we compete have built over time a number of competitive advantages that set them apart from the rest and we need to know and see if these apply to our situation and if necessary, take them as a starting point to form our own. The implementation of the recommended strategies as of 2023 will enable Peru to be in the position as the second largest producer in the world, for which we suggest the creation of the Avocado Peruvian Committee (APC) a government agency under the Presidency of the Council of Ministers (PCM). They will assume the leadership role in building and obtaining the proposed vision and, in order to take advantage of this economic boom so that all Peruvians involved in the avocado supply chain can benefit and will also encourage the other farmers to reconvert their crops to this more profitable product. The APC will have the arduous task of generating a Peruvian joint work relationship between different idiosyncrasies, possibly reaching places where the state's presence is not so visible, but the interesting thing about this challenge is that it is a form of work that Peruvians must do, so that development can reach the largest possible number of nationals, regardless of their geographic location or ethnicity.

Texto completoThe present work is a study that seeks to identify the factors that determine the increase of Florida canned grated tuna imports from the Philippines to Peru and from the experience of CIA S.A. Yichang Company between 2015 and 2016. In the first chapter, we include aspects related to tuna such as kinds, characteristics, displacement, extraction and benefits of canned grated tuna. In addition, it analyzes the legal framework that are the procedures and requirements that regulate imports from the Philippines to Peru. It closes up with a study of the business organization by revising the forces and tendencies of the market that allows a greater growth of the imported product from the experience of Yichang CIA S.A In the second chapter, it refers to the methodological framework where the purpose and type of qualitative research are proposed, as well as some semi structured questions are used to carry out the interviews and to collect suitable and necessary information for this investigation. The third chapter presents a qualitative analysis of the interview data where categories and segments are used to analyze information. In the fourth chapter, we discuss the results that show details on the findings, barriers and gaps of the research. Finally, the conclusions of the research related to the hypotheses, raised in the investigation, are presented. Closing up with recommendations based on the topic presented.

Texto completoMango has been recognized worldwide as one of the most valued tropical fruits, reflecting the progressive growth of its demand in recent years, with the Piura Region being the main exponent of this growth, giving it a predominant role at the national level, not only for its important growth trend, but also because its development contributes to the economic and social growth of the country. Although the Piura Region presents competitive and comparative advantages for the development of the mango sector thanks to its fertile soils, variety of climates, its geographical characteristics and its commercial window; these advantages are overshadowed by internal weaknesses in the sector, such as the lack of investment in infrastructure and technology, as well as the low level of association among mango producers. The present work develops the strategic planning of the Mango Sector of the Piura Region, for which an external, internal, and competitive analysis of mango in the region has been carried out, making it possible to establish long-term objectives and strategies that must be implemented to consolidate Piura as the main mango producing and exporting region from Peru, to the year 2022. The importance of this work lies in the fact that the activity of the sector is concentrated in the rural areas of Piura, where the largest proportion of the region's poverty is gathered, therefore, the present work seeks to generate an impulse in the progressive growth in the quality of life of the producers, the creation of new and better jobs and in the increase of the income for the Piura Region.

Texto completoThe agro-export sector is experiencing in recent years a significant growth trend, mainly due to increased global demand as a result of new consumer preferences that generate great business opportunities for Peru, particularly in the Lambayeque region. In 2011, the most important markets are demanding food that is healthy, natural and of good quality, such as fruits and vegetables. The mango is being recognized as one of the most valuable tropical fruits worldwide, this is reflected in its growing demand. In the same fashion, Peru has had a progressive growth of the cultivated area and the level of exports, with the Piura region being the main example of this growth. Moreover, Peru has competitive and comparative advantages for the development of the mango sector, such as the commercial opening, the variety of climates, and its higher level of productivity that allows it to offer a quality product, however, it has not been able to take advantage of these strengths due to a significant fragmentation of the agriculture in general, as well as a low level of collaboration among producers. It should be noted that a percentage greater than 90% of the mango exports from Peru is sold to markets in Europe and the U.S., where it competes with major exporters like Mexico and Brazil, which decreases mango prices worldwide. To counter this, new markets are being introduced with better trading conditions that can be fulfilled. The Lambayeque region has geographical and climatic characteristics very conducive to making agriculture one of the main production activities that promote the creation of direct and indirect employment, however, these capabilities have not generated a stage of development in the same magnitude as Piura, nationally, or Mexico and Brazil, internationally. This thesis develops the Strategic Plan for the mango in the Lambayeque region, and is a valuable management tool where the critical factors for the development of mango are identified, which are related to increased exports, strict phytosanitary control, technological improvements, optimal development of the harvest phase, cultivation and marketing of mango, improved partnerships among producers, and integration of the entire chain, including the participation of the regional government and the related government entities. To do this, we establish long-term goals and strategies that shall be implemented to achieve the desired future.

Texto completoThe purpose of the present investigation is to identify the compliance levels of the nine success factors linked to TQM (Total Quality Management) in the quality management of the Juice Bar subsector in Metropolitan Lima, moreover, it has been proposed two inquiry questions that tend to know which is the grade of global compliance in quality success factors (TQM) coming from juice bar subsector in function of the most representative enterprises operating in metropolitan Lima, and which is the level compliance of each quality factor (TQM) coming from juice bar subsector in function of the most representative enterprises operating in metropolitan Lima; and what is the level of specific compliance of each quality factor (TQM). To execute this investigation, it was adapted the nine quality factors of success propounded by Benzaquen (2013). The instrument attempts to estimate the quality into the following dimensions: (a) senior management, (b) quality approach, (c) quality audit and evaluation, (d) product design, (e) supplier quality management, (f) control and improvement of the process, (g) education and training, (h) quality circles, (i) focus towards customer satisfaction; analyzing and describing each one of them. To appraise the data semi-structured interviews were carried managers and chief’s store of the most representative enterprises in metropolitan Lima. The results showed that the level of global compliance, on a liketrt scale of 1 to 5, is 4.5 that represents "Always Compliant". For the specific results, the factor with the highest value is quality planning with a result of 4.5 that represents "Always Compliant" and the factor with the lowest value is the approach to customer satisfaction with a result of 2.7 that represents "Compliant Many Times".
