Zosima absinthifolia (Vent.) Link is a perennial herb and is found in Iran, Turkey, Iraq and different countries of the Caucasus, Middle East and Central Asia. It is the only member of Zosima genus growing in Azerbaijan. It has been used as a medicinal plant since ancient time in Iran, Turkey and Pakistan. Zosima absinthifolia is the only species of Zosima genus in Azerbaijan. The aim of this study was to determine the quantitative and qualitative determination of fatty acids in the fruits of the plant Zosima absinthifolia, which is widespread in Absheron, as well as to study its physicochemical and organoleptic properties, possible use in the pharmaceutical and food industries. The Garagush mountain system is one of the highest peaks of the Deralayaz range. It has an absolute height of 1200-2600 m. Based on the long-term research conducted in the Garagush mountain area, it has been clarified that medicinal, alkaloid, vitamin, resinous, rubbery, ethereal, citrus, nutritious, nectar-rich, dye and vaccine-rich, as well as decorative and fodder plants are widely distributed in the existing vegetation here.
