Animal products are a major source of human exposure to hormones that could be harmful to health if present in elevated concentrations. In this paper, the development and optimization of the liquid chromatography–tandem mass spectrometry (LC–MS/MS) method for the determination of progesterone in chicken eggs were described. Egg samples were prepared using ultrasonic extraction and clean-up with Oasis HLB cartridges. Extracts were analyzed by LC–MS/MS with atmospheric pressure chemical ionization.
