Food allergy is one of the most common forms of allergy among patients with allergic diseases. Various methods are used to reduce the allergenicity of proteins, including enzymatic hydrolysis. The paper presents studies on the effect of hydrolysates of egg and soy proteins on the characteristics of minced meat systems from horse meat and beef. Studies have shown that the sensitizing properties of egg albumin and soy protein hydrolysates were lower compared to those characteristic of egg albumin and soy protein.
