Testo completoENGLISH ABSTRACT: This study explores the feasibility of establishing a diversified hotel property fund (DHPF) on the Johannesburg Stock Exchange. To be launched in 2005/2006, the proposed unit trust fund is made up of a diversified portfolio of hotels located throughout South Africa. Research suggests that Hotel Property Funds have traditionally been the most volatile of Real Estate Investment Trusts (REITs) with their share value largely dependent on hotel revenue. However, investing in HPFs and REITs have numerous advantages such as their stipulated 90% dividend-payout ratio, steady stream of cash flow and zero corporate income taxes. The Property Unit Trust sector in South Africa in 2003 realised annualised rates of returns of 39%, and furthermore, the economic outlook and hotel industry sector show promising signs with economic growth rates for 2004 and 2005 reaching 4% and 5% respectively. This study thus considers whether a hotel property fund will succeed in South Africa and what returns investors can expect. By drawing on empirical and primary research and lessons learnt from international best practices this ground-breaking report identifies and analyses key performance variables of HPFs and REITs and applies them to a South African context. These variables include; capital structure, investment strategy, risk and return, Net Asset Value (NA V) and initial public offerings (IPO's). The report establishes that there is no optimal capital structure for REITs and only when the market reacts to the issuance of debt can one tell if the REIT is favourably structured or not. Concerning investment strategy, investors are in general, often lured to a diversified portfolio, however this report suggests that there is no optimal strategy for investing in REITs. In addition, over a medium to long term, REIT performance is strong, while over the short term performance is varied impacting on investor strategy. In assessing risk and return it was concluded that including REIT shares in an already diversified portfolio, the maximum expected return for each given level of risk is increased, and the level of risk for each level of expected return is reduced. Furthennore, the performance of RElTs is not necessarily detennined by size or Net Asset Value and thus small and large REITs can offer investors similar returns. Finally, initial-day returns for industry lnitial Public Offerings (lPO's) easily outperfonn REIT lPO's. Similarly to RElTs, there are numerous advantages to Hotel REITs which include, unlocking and redeployment of capital, investment spread and risk reduction and the provision of synergies between counter cyclical performing properties. However, empirical research indicates that Hotel REITs prove to be the most volatile of REIT sectors. Hotel REITs differ enonnously from their parent group in terms of their revenue & earnings which are more diverse in source and are generated from short-tenn leases. As such. Hotel REITs are also considered to be more management intensive. As with REITs there is no evidence to suggest an optimal capital structure and with the envisaged 50% debt ratio, the DHPF could be considered to be following international best practices. Several drawbacks with Hotel REITs include the lowest dividend yield among all RElT sectors, high volatility in income earnings, sensitivity to upswings and downturns in the tourism market, large capital investments and fixed operating expenses for staff and infrastructure. However despite these obstacles and in answer to the research problem, the prospects of the DHPF succeeding in South Africa are very high indeed. The REIT and Hotel REIT markets have proved successful throughout major capital markets, providing investors with a multitude of benefits. South Africa's economic and tourism climate is very favourable. The Property Unit Trust (PUT) sector has performed immensely well and investors can expect a healthy return which, as shown, is considerably higher than other investments. Finally, the fund is being spearheaded by a high calibre DHPF management team, which is key to the listing and management of the fund.
AFRIKAANSE OPSOMMING: Hierdie studie ondersoek die moontlikheid om 'n Diverse Hotel Eiendomsfonds (DHEF) op die Johannesburgse Aandelebeurs te loods. Die huidige aanvangsfase sal in 2005/2006 wees, en sal bestaan uit 'n portfolio van verskillende hotelle wat reg oor Suid-Afrika versprei is. Die navorsing toon dat hoteleiendomsfondse tradisioneel die mees veranderlikste van die Eiendoms Beleggings Trusts (EBT) was en dat die aandeel waarde hoogs afhanklik is van die hotel se inkomste. Nieteenstaande, het investering in DHEFs en EBTs 'n verskeidenheid van voordele soos die voorgeskrewe 90% dividend uitbetalingspersentasie, 'n bestendige kontantvloei en geen korporatiewe inkomstebelasting nie. Die eiendomsbeleggingsfondse sektor in Suid-Afrika het gedurende 2003 'n jaarlikse groei van 39% getoon, en verder beloof die ekonomiese uitkyk in die hotel bedryf om tussen 4% en 5% gedurende 2004 en 2005 onderskeidelik te groei. Hierdie veranderlikes sluit in: kapitaaistruktuur, beleggingsstrategie, risiko en terugkeer, Bruto Bate Waarde (Net Assest Value) (BBW) sowel as aanvanklike openbare aanbod (Initial Public Offering) (AOA). Daar is bevind dat daar geen optimale kapitaalstruktuur vir DHEFs bereken kan word nie. Verder word aangetoon dat daar slegs bepaal kan word of EBTs se struktuur voordelig is wanneer die mark reageer op nuwe skuld wat aangegaan is. Wat beleggingsstrategie betref, is beleggers oor die algemeen meer aangetrokke tot 'n diverse portefeulje van beleggings. Hierdie verslag bevind egter dat daar geen optimale strategie is om in EBTs te bele nie. Daar word verder bevind dat medium- tot langtermyn opbrengste goed vertoon, terwyl prestasie oor die korttermyn wisselvallig is wat gevolglik 'n invloed op beleggers se strategie het. In waardering van risiko en wins, is dit bepaal dat die insluiting van EBT aandele in 'n diverse portfeulje, die maksimum verwagte opbrengs vir elke vlak van risiko verhoog en dat die vlak van fisiko vir elke vlak van die verwagte opbrengs verlaag word. Verder is daar bevind dat die prestasie van EBTs nie noodwendig bepaal word deur batewaarde of -groote nie en klein EBTs kan beleggers vergelykende opbrengste bied. Eerstedag opbrengs vir industriele AOAs presteer beter as die van EBTs. Soortgelyk aan EBTs is daar verskeie voordele aan hotel EBTs wat die ontsluiting en herontplooiing van kapitaal, beleggingsverspreiding en risikoverlaging insluit. Empiriese navorsing dui aan dat hotel EBT's die mees onstabiele van die EBT sektor is. Hotel EBT's verskil wesenlik van ander EBTs in terme van opbrengs en verdienste wat meer divers is in oorsprong en gegenereer word deur korttermyn huurkontrakte. Hotel EBTs word ook gesien as meer bestuursintensief. Net soos met EBTs is daar geen bewyse dat daar 'n optimale kapitaalstruktuur bestaan nie en met die verwagte 50% skuld verhouding, volg DHEF wereldwye beste praktyk. Daar is verskeie nadele aan hotel EBTs, insluitend die laagste dividenduitkeer onder alle EBT sektore, hoe vlakke van onstabiliteit in verdienste, sensitiwiteit vir opswaai en afloop in die toerismemark, groot kapitaalbelegging en hoe vaste operasionele uitgawes op werknemers en infrastruktuur. Die gevolgtrekking is dat ten spyte van negatiewe faktore, die vooruitsig dat DHEF in Suid-Afrika sal slaag, hoog is. Die EBT en hotel EBT mark het bewys dat dit suksesvol is in talle ander groot kapitaalmarkte wat beleggers met 'n verskeidenheid van voordele kan voorsien. Suid-Afrika se ekonomiese- en toerismevooruitsig is baie positief. Die Eiendoms Eenheids Fonds (EEF) sektor het goed vertoon en beleggers kan 'n gesonde opbrengs verwag wat, soos aangedui word, aansienlik hoer is as ander beleggings. Die fonds word gedryf deur 'n hoe kaliber bestuurspan wat krities is tot die notering en die bestuur van fondse.

English abstract
The culture of hotel and restaurant work.
Dangerous for apprentices and students?
The study is based on a survey targeting 50 teachers at chef schools with good geographic distribution of 9 schools. Teachers answer questions on bullying and sexual harassment in the hotel and restaurant sector, and students practice shock in the meeting with the industry. Students face a hard and tough environment where it is expected that it will suffer a great deal of harassment and degrading treatment as part of a tradition. There seems to be a general but erroneous belief that the professional climate has improved. The study shows that this is not the case. The respondents replied that bullying is common in the industry, and 92% of vocational teachers indicated that students are affected by a practice shock. The study shows that the industry climate has to be tough, but it is stated at the same time be too tough. Schools management lacks understanding and insight into the unique professional culture that prevails.

En fara för lärlingar och elever?
Studien grundar sig på en enkätundersökning riktad mot 50 yrkeslärare med god geografisk spridning på 9 skolor. Lärarna svarar på frågor om mobbning och sexuella trakasserier i hotell och restaurangbranschen samt elevernas praktikchock i mötet med branschen. Eleverna står inför en hård och tuff miljö där det förväntas att man skall utstå mycket mobbning och kränkande behandling som en del av en tradition. Det tycks råda en allmän men felaktig uppfattning om att branschklimatet blivit bättre, studien visar att så inte är fallet. De tillfrågade yrkeslärarna svarade att mobbing är vanligt förekommande i branschen och 92% av yrkeslärarna uppger att elever drabbas av en praktikchock. Studien visar att branschklimatet måste vara tufft men det uppges samtidigt vara allt för tufft. Skolornas ledning saknar förståelse och insikt i den särpräglade branschkulturen som råder.

The hospitality industry in Taiwan is experiencing unprecedented opportunities and challenges. For decades, the industry has been growing rapidly, but the sudden decreases in visitor growth has led to increased competition among hotels. To attract more international guests, hoteliers have started to manage their online reputations by responding to online reviews. In this study, we analyzed online customer reviews and the responses of 31 hotels. A clear trend was observed: hotels are putting more resources into online management responses. We also interviewed ten hotels to learn how they manage these responses, what challenges they face in responding to online customer reviews, and how they use online reviews for other management purposes. We found that most hotels in the case study manage customer responses reactively rather than proactively; they lack strategic goals and methods for evaluating ROI. We also found that executive involvement and the hotel's internal communication style affect how customer responses can be used as a tool to improve the service-recovery process. Using online customer as a source of employee performance evaluation and linking customer feedback to encouragement scheme are also found in some hotels' practice. Future studies should further investigate how hotels' internal communication styles and response strategies and behavior affect service-recovery and customer loyalty. The use of online customer reviews to help improve other aspects of management such as human resource management is also suggested to be studied.

Testo completoThe application of systemic principles to a consultancy model was explored, using the systemic problem-solving methodologies developed in Britain by Burden (1978, 1981, 1983) and Checkland (1981). It is argued that, in addition to the traditional role of the educational psychologist as a child and family psychologist, the role of the educational psychologist should be extended to include a function as a consultant to social systems. The focus of the intervention was the children in the junior-primary section of a boarding-school. A team of consultants was formed for the duration of the intervention. The team comprised of key members from the system and the novice educational psychologist, with the academic supervisor acting as an outside consultant. The analysis focused on rules and patterns. Patterns of communication, support, isolation and problem-solving were highlighted. The intervention focused on structural changes. Structural changes, attitudinal changes and the process itself were evaluated. Agreement by consensus was used as a measure of change. Consensus was reached that the model had impacted positively on the problem-solving skills of the team and the previous isolation of team members. However limited news of difference was found in relation to the children. This was connected to the fact that many of the changes had not been implemented fully or for a sufficient period of time.

Testo completoThe purpose of this study was to investigate the relevance of the curriculum offered by universities of technology hotel schools in South Africa, in preparing students to be able to open and operate commercial restaurants successfully after graduation. Data for this research were obtained making use of qualitative and quantitative research. The researcher conducted interviews with restaurateurs throughout South Africa to determine what skills and knowledge would be required to ensure that students who graduated with their National Diploma in Hospitality Management: Food and Beverage (NDHM: FB), would be able to open and operate a sustainable and profitable commercial restaurant. The information obtained from these interviews was used to draw up a questionnaire, completed by third year students who hoped to graduate at the end of the year, sampled from the Cape Peninsula University of Technology Hotel School (known as the Cape Town Hotel School) and the Central University of Technology Hotel School. The questionnaire was designed to measure the students’ perceptions of their competencies in various areas i.e. of their skills and knowledge to open and run a successful commercial restaurant. The results revealed that, in general, the third year students did consider themselves to have the necessary skills and knowledge. The researcher recommends that hotel schools at Universities of Technology introduce more entrepreneurship and incubation programmes to provide more opportunities for graduates to open their own restaurants.

Testo completoThe sensory analysis of wines is an omnipresent object of instruction in professional and technical schools in hotel and catering sector. Its olfactory part is particularly difficult to teach. The double competence to be acquired is based on the smelling (odors and aromas) and the saying (oral description of wine to the customers of the restaurant). To try to make this teaching less opaque, we rely on the reference social practice of sommellerie. We use clinical didactics to pose the theoretical and conceptual framework of the subject taken in the didactics to follow and understand the issues of knowledge, through the lighting of the teaching subject, in the teaching of the olfactory part of the sensory analysis of wines.Through an exploratory questionnaire, four collaborating teachers from four contrasting profiles are selected. Each case is then built and analyzed: Philibert "As I can" an experienced non-specialist teacher, Nadia "Appealing to her childhood references" beginner teacher, Christian "No one is wrong (...) you have to follow a leader, a model, a mentor "experienced teacher and Jeremy" It's hard (...) to pass on to them the knowledge that I have "novice teacher. When reconciling cases, indicators of teaching practices are deduced. The olfactory part of the sensory analysis appears as a knowledge impossible to institutionalize, under the influence of a sensory already-there of the teaching subject and it seems animated by didactic springs which act on the teaching practices. The last part of this thesis brings praxeological propositions: the results of research contribute to the implementation of recommendations. Abstract This study aims at exploring educational improvements for rotational industry-school research liaison of vocational high schools, and proposes concrete suggestions according to the research conclusions. These suggestions can be referential for the educational improvements for the rotational industry-school research liaison of vocational high schools. Focusing on the current implementation situation of the career learning of the rotational industry-school research liaison class, this research mainly employs “questionnaire survey method,” takes the “executive staff and teachers” of the rotational industry-school research liaison class of the Division of Commercial Hotel and Restaurant Management of S High School of Home Economics and Commerce, the “parents of students” and the “supervisors of enterprises” as the research targets of the questionnaire survey. Totally there were 500 questionnaires sent out and 427 questionnaires returned, with a return rate of 85%. The data analysis adopts some statistical methods, including frequency distribution, percentage, mean, standard deviation, t-test of single sample, One-Way ANOVA, Scheffe’s posterior comparisons and regression analysis. The major findings of this study are: 1. The foundational vocational training provided by school is helpful to the working and learning of students. 2. The supplementary training arranged by school is helpful to the career learning of students. 3. The spirit of respects to work of the administrative staff in various professions has exemplifying functions. 4. Employers incline to prioritize the employment of graduates having participated in career learning. According to the above findings, this study concludes that the government should positively and actively promote the communitization of vocational high school, and encourage the establishment of a good industry-school research liaison between schools and excellent business units. Through the career learning and training, the students are able to know and adapt themselves to the career environment, where they can discover their aptitudes, interests and abilities so as to establish their future learning directions in advance. Based on these findings, this study proposes concrete suggestions for the “educational authorities,” “schools,” “parents of students,” “supervisors of enterprises,” and “follow-up studies.” Key words: vocational high school, rotational industry-school research liaison, industry of hotel and restaurant management, career learning

Due to the national two-day weekend policy , domestic travel has become very popular in recent years . It also leads the people to pay more attention to leisure activities.While under the impact of declining birthrate , family travel has become one of the most popular types of domestic travel in Taiwan . Thus, it also is very important for family travelers to explore selection factors of domestic resort hotel accommodation. The purpose of this study is to explore the effect of different tourists in their vacation lifestyle and selection factors. Correlations between the two factors were analyzed.The study adopted general investigation in the parents of the preschool children. A total of 257 questionnaires were completed, of which 255 were valid. The response rate was 99.22%. Surveying data were collected and analyzed using the following statistical methods: descriptive statistics ,T-test, One-way ANOVA, and Pearson’s product moment correlation. The analyzed results indicate that first , in terms of vacation lifestyle, “the purpose of vacation is to promote the family parent-child the sentiment”reached the highest level of recognition and, in terms of selection factors,”Family member's time can coordinate” reached the highest level of recognition. Furthermore, gender, age, occupation ,and annual household consumption expenditure in the domestic family travel were four significant variables in vacation lifestyle .Gender ,age , occupation and education were four significant variables in selection factors. Finally, it was found that vacation lifestyle was partially significantly correlated with domestic resort hotel selection factors for family travelers.

The purpose of this study is to find and compare the difference of Taiwan and Switzerland hospitality education and hospitality curriculum. This study is a qualitative study, and the research method includes literature analysis and comparative education methodologies. First, this study collects and reviews the literature of hospitality education and hospitality employee’s required competences, and then collects the information of Taiwan and Switzerland hospitality education, and analyze two countries’ general overview of hospitality education. This study then collect hospitality curriculum from two school, including National Kaohsiung University of Hospitality and Tourism Department of Hotel Management and École hôtelière de Lausanne Bachelor of Science in International Hospitality Mananement program, and use three different category dimensions to compare and analyze the hospitality curriculum by three steps. For the general overview of hospitality education, the result shows that Taiwan and Switzerland have significant differences in hospitality education system and hospitality curriculum evaluation, and the development background of the two countries’ hospitality education is the important cause of this study result. For the result of comparing curriculum, there are much more general education courses in Taiwan hospitality curriculum than in Switzerland hospitality curriculum, and it results in limiting the ratios of hospitality professional courses and business management courses in Taiwan’s hospitality curriculum. Besides, there are more than fifty percent of Taiwan’s hospitality courses conform to technical competences of top managers in hotel industry, however, this ratio is lower than the ratio of Switzerland technical competence courses. The regulation of general education made by Taiwan Ministry of Education is the main cause of this study result.

「Green Hotel」is a seriously name in this generation which to pay particular about green、energy-saving and environmentally friendly.There are many scholars and professionals had make a study of Green Hotel,and there are so many dealer engage in this scope.But until now ,there are only two green hotel is approved in Taiwan. Since the elementary school teachers is gives instruction in environmental education , they must be relize more in environmental education and environmentally friendly. So, this study will investigate the the relationships on acceptability of Green Hotel for elementary school teachers、behavioral intention of green consumption and cognition of green marketing . Wish that we can get more understand in the acceptability of Green Hotel by this teachers that has background of acceptability of Green Hotel,and take the next step to analyze that whether the elementary school teachers’ behavioral intention of green consumption and cognition of green marketing is relationships to acceptability of Green Hotel. The research result shows that the elementary school teachers’ acceptability of Green Hotel is natable relationships on behavioral intention of green consumption and cognition of green marketing.So we can say that the elementary school teachers’show is good in the behavioral intention of green consumption and cognition of green marketing , theirs acceptability of Green Hotel is good , too. On the other hand , the elementary school teachers cognition of green marketing is show well in route and plan of marketing ; the elementary school teachers’ acceptability is show well in the measures and protect of environmentally friendly. To get more elaborated information, we further apply multiple group analysis to find out the relationship and the path coefficients effects in cross-gender groups. The result shows that the teachers who have participated in environmental actitives that theirs behavioral intention of green consumption shows better effect in the acceptability of Green Hotel.

For tourist hotel industry, in addition to staff expertise and work experiences, attitude is also an important point emphasized in this field. In order to make tourism hospitality professionals cultivated by schools meet the needs of the tourist hotel industry, technical vocational colleges and universities have been actively promoting the internship training so as to shorten the gap between the learning and applying. The main purpose of this study is to explore the opinions about the school-outside internship in tourist hotel industry from the aspects of the tourist hotel industry and interns through the semi-structured interviews. Therefore, the subjects of this study are 3 senior managers in tourism hotel industry and 20 interns from technical vocational colleges. Based on the semi-structured interviews, the findings of the study are summarized as follows: Both senior managers in hospitality industry and interns from technical vocational college have opinions of the clear goal of internship should be made based on the mutual demand of hospitality industry and interns and the curriculum of the internship should be designed flexibly. Furthermore, owing to meet the success work with the immediate employment, teachers in school should participate in the internship program more often which will help to meet the need of the field from their class teaching. On the basis of the study findings, the suggestions are made as follows: 1.The field should assign the people who specifically work as the instructors to offer the guidance to the interns. 2.Both the school and the field should draw a plan on cultivating the middle-level leaders. 3.To increase the frequency of school-returning discussion when students are during their internships. 4.Students should realize the differences between the internship and a part-time job and try to win the field’s trust for themselves and their schools.

An Empirical Study on Relationship among Learning Environment, Personal Attributes and Absorptive Capacity – An Example of Students from Department of Hotel and Restaurant Management of S School under Rotary Cooperative Education Program Abstract There have some researchers discussing the rotary cooperative education program from the viewpoints of implementation efficiency, workplace survey and students’ satisfaction. They investigated the factors that affected the effective learning of students in the light of personal and environmental factors and paid much attention to students’ academic achievements when they studied the learning performance of students. However, the learning pattern of the students under rotary cooperative-education program is special. Therefore, the students’ ability to combine theory and practice, i.e., whether they are able to convert, assimilate and apply their knowledge and techniques concretely or not, is considered as an index for measuring their learning performance. This is similar to the concept of “dynamic absorptive capacity” submitted by Zahra and Gerard (2002). This study, in respect of the learning environment and personal attributes perceived by the students under rotary cooperative education program, further explores into the relationship among learning environment, personal attributes and absorptive capacity. This research uses absorptive capacity as a dependent variable in accordance with the concept of dynamic capacity developed by Zahra and Gerard (2002). The absorptive capacity includes two dimensions: potential absorptive capacity and actual absorptive capacity. Learning environment is used as an independent variable, which includes three dimensions: family learning environment, school learning environment and company learning environment according to the studies of Kuang-Hsiung Huang and Mao-Fa Chien (1991), Teh-Xiang Huang (1995). Personal attributes are treated as medium variables and consist of four dimensions: learning motivation, learning attitude, achievement motivation and internal locus of control according to the researches of Qiu-Lian Jiang (1995) and Kun-Yuan Yang (1996). Meanwhile, this study took internal locus of control, grade and sex as control variables. This study sent questionnaires to 348 persons who are grades 1, 2 and 3 students studying in the Department of Hotel & Restaurant of S School under rotary cooperative education program. The returning rate of the questionnaires was 88.51% with 308 valid samples. The study results indicate that: (1) The family- and company-learning environment shows a significantly positive influence on all dimensions of personal attributes (learning motivation, learning attitude and achievement motivation). The school-learning environment shows significantly positive influence on learning motivation and achievement motivation. (2) The company-learning environment has significantly positive influence on both dimensions of the absorptive capacity (potential absorptive capacity and actual absorptive capacity). The family-learning environment has significantly positive influence on both dimensions of the actual absorptive capacity. (3) Personal attributes (learning attitude, learning attitude and achievement motivation) have significantly positive influence on both dimensions of the absorptive capacity (potential absorptive capacity and actual absorptive capacity). (4) The company-learning environment would influence the potential absorptive capacity and the actual absorptive capacity indirectly through learning attitude and achievement motivation. The family-learning environment would influence the actual absorptive capacity indirectly through learning attitude and achievement motivation. (5) In the aspect of control variables, there is remarkable difference in school- and company-learning environment, personal attributes and absorptive capacity for different grade. There is remarkable difference in learning environment, personal attributes and absorptive capacity for different internal locus of control. There is remarkable difference in learning environment, personal attributes and absorptive capacity for different times of experiment. This study aims at utilizing the method of case study to discuss the operating performance of practical training hotel at national vocational high school. Under the point of view of literature review, the study process investigates the management style of the practical training hotel, with static case description to explain the origin & history of the practical training hotel, the introduction of the environment, the general situation of the facilities, the current operational situation, and the teaching functions. By interviewing the three practical training hotels that are operated by the school, and understanding the different dimensions of the practical training hotel, such as human resources, financial management, marketing methods, operational performance, teaching outcomes, then the operational method of the practical training hotel would be studied and drafted. Next, the conceptual framework of this study would be used to state the operational method so as to confer the study method and study flow path. The conclusion of this study is divided into the following five points: 1. Human resources: It is divided into the organizational framework of the management committee board, the development training of the part-time administrative teachers, the recruitment of non-teaching staff, and the practice system of the intern students. 2. Financial management: Need to carry out according to the laws and decrees of Technological and Vocational Education of Ministry of Education. 3. Marketing method: Different characteristics of practice training hotels choose different marketing methods. 4. Operational performance: The operational performance is divided into the financial affairs, operation, and organizational performance for assessment. 5. Teaching outcome: The teaching outcome of the practical training hotel is discussed according to the educational function, the learning functions of the practice place, and teaching method. According to the result of study, this study proposes the following suggestions for the schools with practical training hotels: 1. The aspect of human resources: Developing the functions of the practice training hotel’s management committee board, assisting the part-time administrative staff to manage the practical training hotel, reducing part-time administrative staff’s working pressure, increasing the numbers of non-teaching staff, carrying out educational training to the non-teaching staff, increasing the opportunity for colleagues to accept new knowledge and cultivate special skills. 2. The aspect of financial management: In the face of the changes of the whole environment, since the government-related departments reduce activity subsidies in succession, the school needs to bring the potential of increasing income and reducing expenditure fully and reach self-sufficiency. 3. The aspect of marketing method: Strengthening on the students’ manpower, characteristic of the products, service content, teaching culture and practice values, then the marketing tactic that accords with cost and difference the best will be developed. 4. The aspect of operational performance: The aspect of financial performance should demonstrate the depreciable time and amount of money of every equipment, the practical training hotel is responsible for its own preparation for improving the teaching equipment in the future, expanding the cooperating relationship with the hotels in the community, and offering the teachers in the school with high-quality teaching environment. 5. The aspect of teaching outcome: Designing the teaching activities that are related to the practical training hotel, teaching the students how to be familiar with the standard operation procedures of the practical training hotel, including the appearance of the clothing and attitude in attending to customers.

The study is aimed to construct a rational as well as an evaluative model that can be applied to assess the operating performance of practical training hotels at Taiwan national vocational high schools. Firstly, the indexes of operating performance indicators in evaluating practical training hotel were specifically established based on the literature reviewed and Delphi Method. Afterwards, a mode of the above indicators was constructed via an Analytic Hierarchy Process method and empirically applied to compare and assess different working years’ operating performance toward the practical training hotel in National Taichung Agricultural Vocational High School. Study results indicated that two main aspects including education and business, six secondary criteria including business input, business output, satisfaction, teachers, students and administration, and nineteen detailed indicators were extracted by seventeen panel experts and hierarchically constructed for the evaluating model of operating performance. Within each hierarchy, the main aspect of education, the secondary criterion of teachers, and the detailed indicator of effective teaching plan and execution are mostly accounted for the operating performance of practical training hotel in Taiwan national vocational high schools.

The purpose of this study is to explore personality traits, learning satisfaction and learning effectiveness at tourism and restaurant department for students nowadays and is also to understand the differences and correlations among these three items analyzed. 458 valid self-assessment questionnaires samples were collected from students at vocational high schools. Descriptive statistics, Independent samples t-test, one-way ANOVA and Pearson correlation were performed for data analysis. The data were analyzed and showed that most of the students in personalities belong to the extraversion and followed by agreeableness. Professional teaching and environmental education equipment showed its No. 1 and bottom ranking individually at student learning satisfaction survey. In the learning effectiveness, learning aspect accounts for high score but behavior aspect does not. With different backgrounds, the student’s study motivation has significant influence on personality aspect. The variable of school district significantly influence the learning satisfaction aspect, Four variables inclusive of study motivation, school district, household income and maternal education level have statistically influence on the learning effectiveness aspect. Personality, learning satisfaction and learning effectiveness were all correlated well to each other.
