Cette étude a permis de montrer les effets de certaines souches de bactéries appartenant au genre Bifidobacterium sur la flore intestinale, les nitrites, les nitrosamines et les sels biliaires. L’enzyme impliquée dans la déconjugaison des sels biliaires a été purifiée et caractérisée pour la souche de Bifidobacterium longum BB536. La fructose 6 phosphate phosphocétolase a été purifiée et caractérisée chez différentes souches de bifidobactéries.
