The studies on the taste in sciences of management remain still marginal, but a better understanding of its mechanisms involve interest for companies. Some industrial brands succeeding on the market with home-made advertising, we study the influence of the perceived congruity by the consumers between this advertising and the brand on the taste perceived. Ours hypotheses concern the influence of the perceived congruity, direct impact of the brand equity and the mental representations on the taste perceived; and the influence of moderating variables. The concept of the mental representations specify the meaning which recover the terms of industrial and home-made production, before creating a scale of measure through the procedure C-OAR-SE proposed by Rossiter by integrating it into a traditional approach initiative. By an experimental process we collect gustative evaluations in blind situation, and in complete situation with brand. We confirm its role in the perceptuel process concerning the taste of a product. We examine the moderate incongruence of Mandler’s theory. The direct effect of the brand equity is also revealed. Our works underline the interest that constitute home-made characteristic for the new brands. The limits of this work hold its external validity. Furthermore, our model does not integrate individual variables. The ways of research concern mainly the study of the influence of other stimuli could have an impact on the taste

Ce qu'on appelle les arts « touristiques » africains diffèrent des arts touristiques occidentaux en trois points. Tout d'abord il s'agit essentiellement d'une production locale, souvent réalisée par des petites structures de production comme l'atelier. De ce fait le producteur d'objets « touristiques » africain a souvent la possibilité de rencontrer directement l'acheteur étranger et, il peut alors l'interroger pour tenter d'identifier ses goûts et ses envies. Par cet échange symbolique esthétique, l'acheteur étranger participe à l'introduction de nouveaux matériaux, formes et techniques dans la création d'objets. Deuxièmement, les objets issus de cet échange sont hybrides car influencés par les goûts des étrangers qui sont, et c'est là la dernière particularité, dans leur grande majorité des Occidentaux.
Mais, ces consommateurs occidentaux que les spécialistes du sujet ont trop facilement jugés comme étant des « touristes » ne sont pourtant pas uniquement des voyageurs de passage mais aussi des expatriés et des consommateurs en Occident. De ce fait les arts « touristiques » africains ne peuvent être exclusivement abordés comme un révélateur des goûts des touristes pouvant intéresser certaines problématiques révélées par la sociologie du tourisme mais doivent plutôt être appréhendés comme un révélateur des rapports entre l'Occident et le reste du monde.

This dissertation consists of three chapters that represent a contribution to the research on the role of product quality in international trade. The first chapter presents an empirical analysis of the relationship between the volatility of bilateral trade flows and the quality of products exported. We argue that, under the hypothesis of non-homothetic preferences, the variability of income generates larger fluctuations of the demand of high-quality imported products. Our findings indicate that a possible drawback of exporting high-quality products is represented by the higher exposure to income variability of destination countries. The second chapter sets up an empirical analysis on cross-country panel data to estimate the effect of the quality up-grade of exported products on the change of the wage premium measured at industry level.Our findings show that industries which up-grade the quality of exports, increase the average level of wages paid, implying a change in the workforce composition towards categories of better paid jobs. In the third chapter, we examine whether consumer's valuation for quality of French imported products is stronger in countries where consumers' tastes are similar to the French ones. To identify taste proximity, we rely on information collected from the online travel company TripAdvisor. The findings of our empirical analysis suggest that consumer’s valuation for product quality depends on the origin of imports and is stronger for products imported from countries with similar tastes to that of French consumers

Food industrialization is a real advance for society and the consumer who is looking for ease of purchase. However, with several health crises, the consumer wants to be better informed and to control his product choice. In this way, manufacturers want to improve communication on their product through visual attributes of their packaging. Nevertheless, an information overload can make the packaging difficult to understand. As a result, this doctoral research focuses on the impact of the level of visual complexity of the packaging on the evaluation of the food product. This problem leads to three research questions successively adopting a holistic approach, then two analytical approaches to the packaging complexity considering the number of ingredients and their degree of similarity depending on the level of availability of cognitive resources. The influence of the level of complexity on the evaluation of the product is studied by means of seven studies with a mixed methodological approach, with self-declared, behavioral and implicit measures. This research highlights the combination of a simple packaging with a healthy food product, valued according to the nutritional benefit and the quality ingredients in the product composition. In addition, it emphasizes the combination of a complex packaging with a better taste product that facilitates the formation of mental imagery taste depending on the degree of similarity of visual elements in the analytical approach of the design complexity and the cognitive resources level.
