The current work addresses the possible impact of dietary and microbial fatty acids on the absorption of phenolics at the intestinal epithelium. The Caco-2 cell culture model of small intestinal enterocytes was optimised to mimic the chronic supplementation with physiological concentrations of fatty acid. These acids accumulate in field soil by combining with soil and clay particles to form stable complexes which remain until degraded by bacterial metabolism. Plants produce a rich variety of natural products to face environmental constraints. Enzymes of the cytochrome P450 CYP98 family are key actors in the production of phenolic bioactive compounds. They hydroxylate phenolic esters for lignin biosynthesis in angiosperms, but also produce various other bioactive phenolics. We characterized CYP98s from a moss, a lycopod, a fern, a conifer, a basal angiosperm, a monocot and from two eudicots. Molecules of anthocyanins and quinones possess distinctive electrophilic character, which is demonstrated by their facile reactions with nucleophiles such as sulfite, thiols, amines and water. In food systems, one of their likely targets would be nucleophilic centers in the side chains of amino acids. Berry ripening in lowbush blueberry (Vaccinium angustifolium Ait.) is influenced by developmental, physiological and climatic factors resulting in a heterogenous mix of maturities at harvest. This study characterizes the physico-chemical changes which occur during fruit ontogeny and links ripening patterns to micoclimate. Individual clones in five commercial fiels were followed in the 2006 and 2007 growing seasons. Phenolic acids, flavonols, and flavan-3-ols decreased and anthocyanins increased with maturity.
