Abstract Methodology using capillary gas chromatography was developed to determine addition of invert syrups (beet or cane) to honey. Fingerprint oligosaccharides, which were either not detectable or present in low concentrations in pure honey, were found in these inexpensive sweeteners. Oligosaccharides were analyzed as their trimethylsilyl ethers. Sixty-eight pure honey samples produced in continental North America, Hawaii, China, and Australia were analyzed. The detection limit for invert sugar addition was 5%.

Анотація:
Honey is a functional food with health-promoting properties. Some types of honey are used in wound care for the treatment of acute and chronic infected wounds. Increased interest in using honey as a functional food and as a base for wound care products causes limited availability of raw honey. Numerous studies suggest that the protein content of honey is mainly comprised of bee-derived proteins and peptides, with a pronounced antibacterial effect. Therefore, the aim of our study was to characterize for the first time the antibacterial activity of raw honeys and bee-processed syrups which were made by processing sucrose solution or invert sugar syrup in bee colonies under field conditions. Furthermore, we compared the contents of glucose oxidase (GOX) and the levels of hydrogen peroxide (H2O2) in honey samples and bee-processed syrups. These parameters were also compared between the processed sucrose solution and the processed invert sugar syrup. Our results clearly show that natural honey samples possess significantly higher antibacterial activity compared to bee-processed syrups. However, no differences in GOX contents and accumulated levels of H2O2 were found between honeys and bee-processed syrups. Comparison of the same parameters between bee-processed feeds based on the two artificial carbohydrate sources revealed no differences in all measured parameters, except for the content of GOX. The amount of GOX was significantly higher in bee-processed sucrose solutions, suggesting that processor bees can secrete a higher portion of carbohydrate metabolism enzymes. Determination of honey color intensity showed that in bee colonies, bee-processed syrups were partially mixed with natural honey. Further research is needed to identify the key botanical compounds in honey responsible for the increased antibacterial potential of honey.

Abstract Rhododendron honey is a monofloral honey and it is collected from the flowers of Rhododendron species widely spreading over many countries, mainly in America, Turkey, Indonesia, Australia. It is belived that Rhododendron honey treats several disorders and is used traditionally as an alternative medicine. The determination of the chemical characteristics of the Rhododendron honey is essential for public health. In this research, the physicochemical characteristics of Rhododendron, chestnut and flower honey samples collected from beekeepers in Turkey were determined and compared. Physico-chemical parameters such as moisture, acidity, sucrose, invert sugar, fructose/glucose, conductivity, diastase and hydroxymethylfurfural were analysed in each honey sample. According to the results obtained, no differences were found in physico-chemical properties of Rhododendron, honey samples, except from moisture and acidity compared with those of chestnut and flower honeys. In order to differentiate Rhododendron honeys, new methods should be developed. This honey should be reintroduced to medicine and used in pharmaceutical industry

Background: Recent animal and retrospective human studies have demonstrated that Schistosoma mansoni infection may have potential to protect against development of metabolic syndromes. Thus, the aim of this study was to assess metabolic panel among S. mansoni egg positives and egg negatives in stool examinations. This study was a cross-sectional study, conducted involving 120 participants from S. mansoni endemic town (Kemise) and 61 from non-endemic town (Kombolcha), Northeast Ethiopia. Stool samples were collected and examined for S. mansoni and other helminths using Kato-Katz method. Furthermore, blood samples were collected and used for determination of blood sugar, lipid profile tests, insulin, and C-reactive protein. Data were analyzed using SPSS software version 20. Chi-square test, independent mean t-test, and logistic regression models were employed on data. P values less than .05 were considered as statistically significant. Results: S. mansoni infected participants (n = 41; all from Kemise) had significantly lower levels of fasting blood sugar, low prevalence of dyslipidemia (at least one or more abnormal lipid profile tests; total cholesterol, low-density lipoprotein cholesterol [LDL-C], high-density lipoprotein cholesterol [HDL-C], and triglycerides) as compared with controls (n = 79 in Kemise and 61 in Kombolcha). Moreover, logistic regression model indicated that with the adjusted odds ratios, there was significant inverse association between S. mansoni infection and impaired fasting glucose (adjusted odds ratio −0.181, 95% confidence interval: 0.042-0.774). Conclusions: Low fasting blood sugar and reduced prevalence of dyslipidemia in S. mansoni egg positive participants might suggest inverse association of S. mansoni infection and development of metabolic syndromes. Furthermore, large-scale studies are recommended to assess the role of S. mansoni egg and/or worm antigens in modulating the host metabolic profile and reducing the risk of metabolic syndromes, including diabetes mellitus and cardiovascular diseases.

The human body needs a constant flow of biologically active substances. Berry products, including raspberries, are a source of natural and affordable BAS. Raspberry berries contain a complex of BAS, in particular fructose, glucose, organic acids, vitamins A, B1, B2, C, P, E, essential oils, pectins, fiber, complex of polyphenols, copper salt, iron, potassium, folic acid, etc. Berries are salicylic acid and can for a long time maintain the beneficial properties of various processed products. Berries contain a lot of food fibers, it is beneficial for digestion. Berries contain betasitosterol and anthocyanins have anti-sclerotic properties, and coumarins normalize blood coagulation. Berries contain a lot of food fibers, it is beneficial for digestion. Raspberry berries contain coarse dietary fiber, β-sitosterol, anthocyanins and coumarins, these substances have a positive effect on digestion, have anti-sclerotic properties and normalize blood clotting. The purpose of the research aimed at carrying out a comparative characterization of the basic biochemical substances content and the quality of various berries and raspberry hybrids grown at the research field "Fruit and Vegetable Garden" of NULES of Ukraine. During the research the complex of international and state regulatory documents were used, in particular: the berries were selected in the state of technical maturity, in accordance with the state standard 7179: 2010; the sample size corresponded to ISO 874-2002; the determination of the components of the biochemical composition was carried out: the content of dry soluble substances were determined according to ISO 2173-2013, invert sugars – state standard 4954: 2008, titrated acids – state standard 4957: 2008, ascorbic acid – ISO 6557-2: 2014; organoleptic evaluation – according to the generally accepted methodology. Based on the obtained results, it was found that among the studied samples of berry varieties Babine Lito, Sontse Kieva, hybrids – Hybrid №4a, Hybrid №2 were characterized by the highest organoleptic and biochemical parameters, therefore it is expedient to use them both for consumption in a fresh form and for processing. The obtained results should be taken into account during the planning of raspberry planting and in further selective work during the creation of competitive varieties and hybrids of raspberries with a high content of biologically active substances in berries.

Venema Automation started selling a glucose analyzer in 2013 as part of their beet brei analysis line. It was decided to invest in such an instrument to learn more about functionality and variations between countries and time of the campaign. After campaign 2013, based on dialogue with Venema and other users of the analyzer, improvements in software and hardware were agreed and implemented during summer 2014.

Modern instrumental analytical methods for the determination of 13C/12C ratios are established to differentiate between metabolic products of C3 and C4 plants. Differentiation and identification of sucrose from pure beet (Beta vulgaris) and pure cane (Saccharum officinarum) are possible without doubt. Influenced by the worldwide hydrological cycle the determination of the isotope ratios of 2H/1H and 18O/16O as well as their variations provide information about geographical origin. Using samples of selected crystal cane sugar (CCS) with known origin, invert sugar syrups (ISS) as well as burnt sugar syrups (BSS) produced therefrom, the authenticity was determined. The speciality sugars ISS and BSS which were made from CCS could be identified as carbohydrates of C4 plants by using 13C/12C Isotope-Ratio Mass Spectrometry (IRMS). In combination with yeast fermentation of ISS and sugar separation from BSS and fermentation into ethanol as well as knowledge about production water, the C2-H/O isotope ratios of ethanol can theoretically determine the geographical origin of the sugars.

Due to stagnating thick juice purity in Austria, a project was launched in 2010 in order to compare different predictive models for assessment of the technological quality of sugar beet. Preliminary results, which had been published in 2012, demonstrated that classical predictive formulas for the quality evaluation of stored beets give significantly higher calculated thick juice purities than found under technical conditions. However, formulas which take into account the invert sugar content of beet or are solely based on sugar and refractometric dry substance content of the beet brei filtrate delivered results which were close to the values known under technical conditions. After some basic considerations about the technological beet quality the results from the comparative study of the different predictive models are discussed in which the proposed “refractometer formula” performs very well. These comparisons were carried out using fresh beet material from beet variety trials and beet material that had been collected in Austrian sugar factories throughout the whole campaign in the years 2010–2015, respectively. Eventually, some possibilities are pointed out how to maximize the benefit from information obtained by the refractometric determination of dry substance of beet brei filtrate

Invert syrup is a liquid sweetener, which is produced by sucrose hydrolysis to form fructose and glucose. Important qualitative parameter of invert syrup is the sucrose inversion – weight percentage of invert sugar (sum of fructose and glucose) in invert syrup dry mass. This diploma thesis presents a possibility of sucrose inversion determination by polarimetry in combination with refractometry in invert syrups of 70–78 % dry mass produced at 80 °C and pH 2,4. New relationship describing the sucrose inversion as a function of polarization and refractometric dry mass was determined. The results of sucrose inversion determined using this new relationship were compared to results obtained by HPLC/RI, which was used as a reference method. The difference between these 2 determination methods was 0,1 ± 0,5 %. The new relationship was detemined with reference to the fact, that under the processing conditions, more glucose than fructose is formed. The fructose : glucose concentration ratio formed under processing conditions was observed to be equal 0,96 ± 0,02.
