Abstract:
Natural sun-dried raisins are susceptible to crop loss and quality reduction when rainfall occurs during the 2-3 week drying period. The purpose of this experiment was to determine the effect of rainfall at selected stages of the raisin drying period on raisin quality. Thompson Seedless grapes were harvested and dried in the field using normal commercial practices. Raisins were moved to a humid chamber at the green, brown, turn, and roll stages of the drying period. Then, raisins were misted with 6.4 or 25.4 mm of water to simulate rainfall. Samples remained under humid conditions for approximately 48 hours after which they were returned to the field to complete the drying process. Raisin quality was evaluated by USDA incoming inspection procedures. The amount of rainfall had little effect on raisin quality at the levels in this experiment. However, raisin quality was significantly reduced when rainfall occurred at the green and brown stage of drying. Raisins which received rainfall at the turn and roll stages of drying were of comparable quality as control raisins.

Abstract:
Raisin aroma is a vital sensory characteristic that determines consumers’ acceptance. Volatile organic compounds (VOCs) in fresh grapes, air-dried (AD), pre-treated air-dried (PAD), sun-dried (SD), and pre-treated sun-dried (PSD) raisins were analyzed, with 99 and 77 free- and bound-form compounds identified in centennial seedless grapes, respectively. The hexenal, (E)-2-hexenal, 1-hexanol, ethyl alcohol, and ethyl acetate in free-form while benzyl alcohol, β-damascenone, gerenic acid in bound-form were the leading compounds. Overall, the concentration of aldehydes, alcohols, esters, acids, terpenoids, ketones, benzene, and phenols were abundant in fresh grapes but pyrazine and furan were identified in raisin. Out of 99 VOCs, 30 compounds had an odour active value above 1. The intensity of green, floral, and fruity aromas were quite higher in fresh grapes followed by AD-raisins, PAD-raisins, SD-raisins, and PSD-raisins. The intense roasted aroma was found in SD-raisins due to 2,6-diethylpyrazine and 3-ethyl-2,5-dimethylpyrazine. Among raisins, the concentration of unsaturated fatty acid oxidized and Maillard reaction volatiles were higher in SD-raisins and mainly contributed green, fruity and floral, and roasted aromas, respectively.

Growers in California’s San Joaquin Valley produced >25% of the world’s raisins in 2012, with a farm-gate value of >$590 million, making the United States the leading global producer of raisins. California’s traditional raisin-making method is a laborious process in which clusters of grapes (Vitis vinifera) are harvested by hand onto paper trays, which are left in the vineyard to dry. The drying fruit may need to be turned or rolled, tasks requiring manual labor, and the trays of dried raisins are also picked up by hand. Most California raisins continue to be made in this way, but in recent years, the declining availability and increasing cost of labor has prompted many growers to implement one of two mechanized production systems, “continuous tray” (CT) or “dry-on-vine” (DOV). In CT systems, machines are used to pick the berries, lay them onto a tray, and pick up the dried raisins. The CT system could be considered a short-term strategy: it is compatible with existing conventional ‘Thompson Seedless’ raisin vineyards and has been widely adopted. The DOV system could be considered a medium-term strategy: it is best suited for vineyards specifically designed for DOV, with early ripening grapevine cultivars on expansive trellis systems, which ensures timely drying, and capitalizes on the fact that sunlit row middles are not needed for fruit drying. Grapevine breeding programs are currently working toward the development of raisin grape cultivars with fruitful basal nodes, with fruit that dry naturally upon ripening. This is a long-term strategy to further reduce labor needs by enabling mechanical pruning in winter and eliminating the need for cane severance in the summer.

With a focus especially on The Sign in Sidney Brustein’s Window, this article argues that Hansberry’s work is, in a sense, underappreciated. Hansberry’s fame relies chiefly on A Raisin in the Sun, and critics have often failed to appreciate Brustein because of its general allusion to life in the Village and comparative lack of adherence to Black topics. The article however argues that this is an indicator of Hansberry’s overall strength as an author, rather than a weakness. The article assesses the work’s importance with allusions to Anne Cheney and comparisons to the writing of August Wilson. It additionally explores her upbringing in the Black bourgeosie.

Grape is one of the most important fruit crop in the world due to its nutritional and therapeutic value. Grapes are good source of dietary sugars, organic acids and some vitamins. The seedless raisins are called as Kishmish. Raisin not only provides sweetness but also is excellent source of dietary fibres, some amount of minerals and vitamins. The study on making grape raisins was carried by. Open drying (Sun drying) is widely used due to its low initial and running costs but depend mainly on weather conditions, which can induce microbial and insect contamination and hence, lower their quality. Drying rate and drying time was faster in tray drying compare to others three drying methods but the disadvantage of tray drying was it is batch process and cannot be used for mass production and the consumption of power is more. The quality of raisins from sensory evaluation were highly accepted in controlled shade drying where temperature and humidity is maintain as per the requirement and least accepted in open drying. Controlled shade drying is better drying method compare to other methods as it is a continuous process and less chances of contamination and high quality of product is obtained. The mean score for colour/appearance, texture, taste, flavour and acceptability of the raisins prepared by different drying methods ranged from 6.1 to 8.4, 6.3 to 8.1, 6.2 to 8.3, 6.3 to 8.0 and 6.2 to 8.3 respectively.

In the phantasmagoric performance that begins the second act of Lorraine Hansberry’s classic A Raisin in the Sun (1959), Beneatha Younger emerges with a short “close-cropped” natural style after cutting off her straightened hair offstage. Although this is a seemingly minor theatrical moment, hair in this scene and Hansberry’s work and life serves as a powerful dramatic signifier, a political tool for self-understanding and liberation, and a cultural bridge between African and African diasporic identity. Drawing from archival material concerning the original 1957 playscript, Tracy Heather Strain’s 2017 documentary Sighted Eyes/Feeling Hands, and recent scholarship, this article examines how Beneatha asserts her own body politics and corporeal scripting in her interactions with two romantic prospects, Joseph Asagai and George Murchison, to argue that her relationship with each suitor represents the complicated ways she wrestles with the meaning of the African diaspora. By embracing her natural hair and making deliberate aesthetic self-fashioning choices, Beneatha reclaims an ancestral African identity and cultivates a global Black consciousness that ultimately exceeds specific performances of dress, dance, and hair.

Sun-dried raisins are a source of dietary fibre and tartaric acid. The effects of tartaric acid on colon function have not been the focus of extensive research. The purpose of the present study was to evaluate the effects of dietary fibre and tartaric acid from sun-dried raisins on colon function and on faecal bile acid and short-chain fatty acid (SCFA) excretion in healthy adults. Thirteen healthy subjects were fed 120 g sun-dried raisins/d or 5 g cream of tartar (equivalent to the tartaric acid in 120 g sun-dried raisins)/d for 9 weeks, divided into 3-week cycles. The experimental diets were fed in a crossover design after an initial control period. Faeces were collected for the last 4 d of each cycle for analysis of SCFA and bile acids. Intestinal transit time decreased from 42h on the baseline diet to 31h on cream of tartar (P<0·1) and to 28h on sun-dried raisins (P<0·05). Faeces were softer on both sun-dried raisins and cream of tartar, but sun-dried raisins increased faecal wet weight (P<0·05), while cream of tartar did not. Sun-dried raisins caused significant reductions from baseline values in total bile acid concentration (from 1·42 (sd 1·03) to 1·09 (sd 0·76) mg/g, P<0·05), whereas cream of tartar did not (1·40 (sd 1·06) mg/g). Sun-dried raisins also significantly reduced the lithocholic (LC):deoxylithocholic acid (DC) ratio (from 1·63 (sd 0·85) to 1·09 (sd 0·50), P<0·02), whereas cream of tartar reduced the ratio, but to a lesser extent (1·29 (sd 0·79), NS). Both faecal bile acids and the LC:DC ratio are indicators of reduced risk for colon cancer. Sun-dried raisins increased total SCFA excretion (from 5·6 (sd 3·4) to 7·6 (sd 3·0) g/4d, P<0·05), which remained unchanged with cream of tartar (5·6 (sd 3·0) g/4d). Both sun-dried raisins and cream of tartar appear to be good stool softeners and to shorten intestinal transit time, although the fibre in sun-dried raisins has the added benefit of increasing faecal weight. Both sun-dried raisins and cream of tartar modulate the composition of faecal bile acids and SCFA in a way that has potential health benefits.

Taking a cue from the robber barons, leaders in the state's promising raisin industry set out to apply the advantages of corporation law—and of the modern trust—to the principles of cooperation. As early as 1899, the raisin industry's merger of corporation and cooperative caught the attention of the San Francisco Chronicle's agricultural editor, Edward F. Adams. “The principle of cooperation in [agriculture] for marketing purposes,” he wrote, “is identical with that of the cooperation of capitalists in what are called ‘Trusts.’”

Air- and sun-dried raisins from Thompson Seedless (TS) grapes were analyzed under GC/MS to evaluate fatty acids (FAs) and their derived volatile compounds, coming from unsaturated fatty acids oxidation. A total of 16 FAs were identified in TS raisins, including 10 saturated fatty acids (SFAs) and 6 unsaturated fatty acids (USFAs). The contents of C18:0, C15:0, and C16:0 among SFAs and C18:3, C18:2 and C18:1 in USFAs were significantly higher. Furthermore, USFAs such as C16:1 and C20:1 were only identified in air-dried raisins. The principal component analysis showed the increased content of FAs and FA-derived compounds were in air-dried and sun-dried raisins, respectively. Among FA-derived compounds, 2-pentyl furan, 3-octen-2-one, 1-hexanol and heptanoic acid were more potent. This study shows that air-drying is more favorable for the production of fatty acids (SFAs and USFAs), whereas sun-drying is more advantageous in terms of fatty acid-derived volatiles.
