The purpose of this study was to determine the effect of Price Discount and In-store Display on Impulse Buying. The population in this study are consumers of the Amifa Minimarket Pekanbaru. Limbah tulang ikan Sunu (Epinephelus spp.) merupakan sumber biomaterial potensial yang belum banyak dimanfaatkan secara optimal. Penelitian ini bertujuan untuk mengekstraksi dan mengkarakterisasi kitosan dari limbah tulang ikan Sunu melalui tiga tahapan utama, yaitu deproteinisasi, demineralisasi, dan deasetilasi. Kitosan dibuat dengan tiga tahapan, yaitu deproteinasi dengan mereaksikan bahan baku dengan NaOH 4 %, demineralisasi dengan menambahkan HCl 1 M, dan deasetilasi dengan mereaksikan hasil demineralisasi dengan NaOH 50% dengan variasi suhu dan waktu deasetilasi.
