O mundo contemporâneo exige agilidade do ser humano na vida cotidiana. Pensar em formas de minimizar o tempo de preparo de alimentos, sem deixar de ter uma alimentação saudável, tem sido a preocupação das pessoas que têm trocado o consumo de frutas e verduras íntegras pelas minimamente processadas. Entre estas se encontra o morango. O morango é um fruto muito valorizado, no entanto é muito delicado, altamente perecível e de alto custo. Destacam-se suas propriedades nutracêuticas, sua ação antioxidante e capacidade de aumentar as defesas imunológicas. Os compostos fenólicos são apontados como principais substâncias que participam destas atividades. Dentre os revestimentos utilizados, aqueles a base de xantana tem se destacado por originar revestimentos com alto grau de proteção. Este estudo tem como objetivo avaliar diversos revestimentos comestíveis a base de goma xantana, gelatina, sorbitol e óleo de canola em morango minimamente processado, em diferentes tempos de armazenamento, como forma de amenizar a perda dos compostos antioxidantes e proporcionar o aumento da vida de prateleira. O experimento foi realizado no período de 15 dias, as amostras foram retiradas para as análises após o 10, 50, 10o e 150 dias de armazenamento. Ao final de cada período foram realizadas as análises de perda de peso, cor, textura, pH, acidez, sólidos solúveis, umidade e sólidos totais. Parte do material relativo a cada período de armazenamento foi triturado e armazenado a – 80 0C, para realização das análises de ácido L- Ascórbico, antocianinas, compostos fenólicos e atividade antioxidante. A conservação das propriedades físico-químicas do morango foi ampliada com o revestimento de gelatina, xantana, sorbitol e óleo de canola a 3% (GXSL 3%) para os parâmetros sólidos solúveis totais e firmeza. Na conservação dos compostos bioativos, a cobertura com xantana, sorbitol e óleo de canola a 3% (XSL 3%) demonstrou ser o melhor tratamento para impedir que o percentual de inibição do DPPH diminuísse. Entretanto, não foram verificados resultados estatisticamente significativos de proteção para os outros fitoquímicos.
The contemporary world requires agility of the human being in everyday life. Think of ways to minimize the preparation time of food, while having a healthy diet, has been the concern of people who have changed the consumption of fruits and vegetables by intact minimally processed. Among these is the strawberry. The strawberry is a highly prized fruit, however is very delicate, highly perishable and expensive. Noteworthy are their nutraceutical properties, its antioxidant action and the ability to increase your immunological defenses. Phenolic compounds are cited as the main substances that participate in these activities. Among the coatings used, those based xanthan has been noted for yield coatings with a high degree of protection. This study aims to evaluate the various edible base xanthan gum, gelatin, sorbitol and canola oil in strawberry minimally processed at different storage times coatings as a way to mitigate the loss of antioxidants and provide increased shelf life. The experiment was performed at 15 days, samples were taken for analysis after 1, 5, 10 and 15 days of storage. At the end of each period analyzes of weight loss, color, texture, pH, acidity, soluble solids, moisture and total solids were performed. Some of the material for each storage period was crushed and stored at - 80 0C, for analyzes of L- ascorbic acid, anthocyanins, phenolic compounds and antioxidant activity. The conservation of the physicochemical properties of the strawberry was expanded with the coating of gelatin, xanthan gum, sorbitol and canola oil 3% ( GXSL 3 % ) for total soluble solids and firmness parameters. Conservation of bioactive compounds, cover with xanthan, sorbitol and canola oil 3% ( XSL 3 % ) proved to be the best treatment to prevent the inhibition of DPPH decreased. However, no statistically significant results for the other protective phytochemicals have been checked.
