Polycyclic aromatic hydrocarbons (PAH) are present in groundwater in the Pinal Creek basin near Globe, Arizona. The maximum concentration of quantified PAH in samples from monitoring wells was 35 micrograms per liter. PAH contamination was found in a plume about 11 kilometers long. Polycyclic aromatic hydrocarbons (PAHs) are toxic substances that undergo bioaccumulation and can be found in various forms, including coal tar, fossil fuel burning, forest fires, grilling meats over open fires, cigarette smoke, diesel emissions, asphalt surfaces, tar roofs, aluminum and coke plants, and more. PAHs can initiate and promote tumors and may function as complete carcinogens, resulting in a high occurrence of tumors and mortality in laboratory animals. Exposure to PAHs can occur at home, outdoors, or at work, with a mixture of PAHs being more likely. Primary sources of exposure to PAHs include tobacco smoke, wood smoke, inhalation of compounds in ambient air, and consumption of PAHs in foods. PAH exposure is a significant concern due to its potential to cause cancer. PAH metabolites are absorbed into aquatic environments through various pathways, including atmospheric, municipal wastewater discharges, oil spills, and transportation operations. Exposure to PAHs can lead to lung cancer, scrotal cancer, and other health issues. Occupational exposure to PAHs, such as coal gasification, coke production, and aluminum manufacturing, increases the risk of cancer. Environmental exposure, such as household heating, vehicular traffic, and industrial point sources, contributes to the high cancer risk. PAHs are also absorbed through the gastrointestinal tract and can be metabolized through various pathways. The Toxicity Mechanism is crucial in understanding the carcinogenic and toxic potential of PAHs, as they can form chemical bonds with DNA, leading to mutations, tumors, and cancer. PAHs have various toxic effects, including hematotoxicity, reproductive and developmental toxicity, immunotoxicity, and carcinogenicity. Excessive exposure to PAHs can lead to lung cancer, urological, gastrointestinal, laryngeal, and pharyngeal malignancies, respiratory effects like cough, chronic bronchitis, and hematuria. Carcinogenic PAHs, such as B[a]P found in cigarette smoke, can cause toxicity and carcinogenesis by interacting with nucleophilic regions of cellular macromolecules, leading to DNA damage in both laboratory animals and humans. PAHs, especially carcinogenic PAHs, have a significant impact on the development and progression of cancer. They can cause heritable disruptions in gene expression, oxidative stress, inflammation, immunosuppression, receptor-mediated processes, and alteration of cell proliferation through intracellular Ca2+.

Today, medicinal and aromatic plants are used in the treatment of many diseases in alternative medicine. The use of active substances obtained from medicinal and aromatic plants is increasing day by day. One of these plants is Valerian (Valeriana officinalis L.). Valerian is especially used in many disorders such as migraine, sleep problems, heart palpitations, stress and restlessness. Valerian, which belongs to the Valerianaceae family, has around 200 species in the world. There are 12 species identified in Turkey. The subspecies of Valerian (Valeriana officinalis L.), which can grow especially around Erzurum-Ardahan in eastern Turkey, can be found at an altitude of approximately 1980-1999m. It grows on the slopes where the slope is 55-65% and there is no danger of erosion, on the slopes where the north-west, north-east and north sun is abundant. The organic matter content of the soils where it grows is between 2-7%. It spreads on chestnut colored forest soils. These soils have “Sandy Loam” and “Silty Loam” and “Loamy Sand” soil texture. It can grow even in soils poor in organic matter. The pH of these soils is between 6,7-7,2. Superficial stoniness rate is over 50%. The areas where cat grass grows are geologically mesozoic (ophiolite series), mostly Cretaceous. For human consumption, mussels are known as an abundant source of nutrients. As for public health, mussels must be cultivated or harvested in clean regions. Because they obtain their food by filtering water, mussels are an excellent indicator of water contamination. Owing to this, they might include a range of chemical and microbiological contaminants that can be found in contaminated waters, including diclofenac, organochlorine pesticides, dioxins, furans, heavy metals, microplastics, nanomaterials, nanoparticles, persistent organic pollutants, polychlorinated biphenyls, perfluoroalkyl substances, polycyclic aromatic hydrocarbons, and organochlorine compounds. Mussels should also be processed under appropriate conditions after being harvested from clean waters, and their contamination should be prevented. It is thought that it is necessary to carry out controls continuously at every stage, from harvest to consumption, for consumers to reach healthy and reliable mussels. In addition, as this study reported, it is envisaged that information studies on the chemical and microbiological contaminants of mussels and their safety will be important to prevent the formation of disease risks.

In recent years, propolis has garnered substantial global attention as a dietary supplement, owing to its multifaceted nature and diverse biological properties. Derived from beehives, this natural product, characterized by its sticky, waxy consistency, and aromatic scent, is a complex amalgamation of plant and animal origins. Produced by honeybees through the enzymatic processing of resinous substances from herbal extracts, propolis serves an array of structural and functional roles, from insulating beehives to fortifying their defense against diseases. Raw propolis, collected from hives, is harnessed for various formulations as a food supplement following extraction using different solvents. Ethanol (70%) stands as the preferred solvent for propolis extraction, with oil-based and water-based extracts also viable options. Non-toxic propolis extracts are commonly consumed, often encapsulated within natural polymers like chitosan, pectin, alginate, and dextran. Renowned for its diverse array of biological activities, propolis showcases a broad spectrum of functionalities. These encompass antioxidant, antimicrobial, antiviral, anti-inflammatory, anti-tumoral, anti-diabetic, immuno-modulating, hepatoprotective, and neuroprotective properties. Pectin is a soluble dietary fiber with several health benefits, such as antibacterial, antioxidant, gastrointestinal-protective, and anticancer properties. Pectin is becoming an important class of materials owing to their inherent structural and functional properties such as biodegradability, binding potential, self-assembly, high nutritional value, gelling properties, non-toxicity, and good biocompatibility. Pectin is highly beneficial in microencapsulation since it allows for better control over the toxicity of the active substances and ensures the safety of the customer. Pectin offers a safe route for drug delivery due to its well-designed molecular architecture based on the changes in the biological process’s fundamental mechanisms. The current arising insight into the chemical structure and associated health advantages of pectin opens new opportunities for the use of pectin in nutraceutical encapsulation and drug delivery. Pectin can be obtained from various plant sources at a lower cost. Thus, pectin is a promising biopolymer when designing materials that may achieve the highly desired dual objectives of being environmentally friendly and economically sustainable. This chapter emphasizes pectin-based nano and microencapsulation systems, their tailor-made functionalities, and their applications in the pharmaceutical and food industry.
