Abstract:
The genus Artocarpus has tree habitus characteristics, and has stem characteristics that produce a special liquid (sap) with a stem growth type, namely monoceus with unisexual flowers. Artocarpus is a type of tropical fruit plant that is multi-functional and can be grown in tropical areas with an altitude of less than 1000 meters above sea level. The purpose of the study was to describe the diversity of Artocarpus species on the riverbanks of Beringin Kencana Village, Tabunganen District. This research method uses a descriptive approach. The results of the species diversity data were analyzed descriptively. The results showed that on the riverbanks of Beringin Kencana Village, Tabunganen Subdistrict, 4 types of Artocarpus were found, namely: 1) Jackfruit (Artocarpus heterophyllus Lamk.), Bilulang Jackfruit (Artocarpus heterophyllus Lamk.), Jackfruit Porridge (Artocarpus heterophyllus Lamk.) which belongs to one variety, while Sukun (Artocarpus altilis (Park.) Fosberg.), Cempedak (Artocarpus integer (Thunb.) Merr.), and Keledang (Artocarpus lanceifolius Roxb.) are other species.

Abstract:
Indonesia has an abundance of Artocarpus species. The genus Artocarpus has 30 species spread across Indonesia. This research is a type of development with research results oriented to field data which is then made into a product in the form of an HTML 5-based electronic pocket book enrichment material that will be used for high school students. HTML 5 based electronic pocket book, which is about the diversity of Artocarpus species on the riverbanks of Beringin Kencana Village, Tabunganen District which is compiled as enrichment material. The research method is research and development (R&D) with the Borg and Gall model. The results showed as many as 6 types of Artocarpus namely Nangka (Artocarpus heterophyllus Lamk.), Nangka Bilulang (Artocarpus heterophyllus Lamk.), Nangka Bubur (Artocarpus heterophyllus Lamk.) which was included in one variety, Sukun (Artocarpus altilis (Park.) Fosberg.), Cempedak (Artocarpus integer (Thunb.) Merr.) and Keledang (Artocarpus lanceifolius Roxb.) are other species. The electronic pocket book that was developed obtained the criteria of "very valid" on the validity test conducted by 3 experts and "very good" on the readability test conducted by 7 students.

Abstract:
The flavonoid compound was successfully isolated from jackfruit leaves (Artocarpus heterophyllus Lamk.). Extraction was done by maceration with methanol-water (9:1), followed by methanol-water (1:1) as a solvent. Hydrolyzed extract was obtained by adding of 2NHCl, then extracted with ethyl acetate and monitored by thin layer chromatography (TLC) with nhexane-ethyl acetate (3:5) as a mobile phase. Separation was performed by column chromatography, followed by preparativethin layer chromatography. Purity of isolates was determined by 2-dimensional thin layer chromatography. Characterization of isolate were carried out by ultraviolet-visible spectrophotometry and infrared spectrophotometry. The result showed a maximum absorbance of bands I at 328.4 nm and 271 nm for bands II. Characterization of isolate by infrared spectrophotometry showed the presence of functional groups OH, CH, C = C, C = O, CC, and CO. Based on the data, the isolate identified as a flavonoid compound. Antioxidant activity of ethyl acetate fraction and column fraction by 1,1-diphenyl-2-picryl-hydrazyl (DPPH) assay showed EC50 at 60.53 mg/mL and 35.27 μg/mL respectively.Key words: Artocarpus heterophyllus Lamk., flavonoid, 1,1-diphenyl-2-picryl-hydrazyl (DPPH), EC50. AbstrakSenyawa flavonoid berhasil diisolasi dari daun belimbing (Artocarpus heterophyllus Lamk.). Ekstraksi dilakukan dengan cara maserasi menggunakan metanol-air (9:1), diikuti dengan metanol-air (1:1) sebagai pelarut. Hasi dari ekstrak yang terhidrolisis didapatkan dengan menambahkan 2NHCl, kemudian diekstraksi dengan etil asetat dan diamati menggunakan kromatografi lapis tipis (KLT) dengan campuran n-heksana-etil asetat (3:5) sebagai fase gerak. Pemisahan dilakukan menggunakan kromatografi kolom yang dilanjutkan dengan kromatografi lapis tipis preparative. Kemurnian dari isolat ditentukan dengan cara kromatografi lapis tipis 2-dimensi. Karakterisasi isolat ditunjukkan dengan spektrofotometer UV-Vis dan inframerah. Hasil spektrum menujukkan adanya absorbansi maksimum dari pita I pada 328,4 nm dan 271 nm untuk pita II. Karakterisasi dari isolat menggunakan spektrofotometer inframerah menunjukkan adanya gugus fungsional OH, CH, C=C, C=O, CC, dan CO. Berdasarkan data tersebut, isolat teridentifikasi sebagai senyawa flavonoid. Aktivitas antioksidan dari fraksi etil asetat dan fraksi kolom menggunakan pengujian 1,1-difenil-2-pikril-hidrazil (DPPH) menunjukkan EC50 pada 60,53 mg/ml dan 35,27 μg/mL.Kata kunci : Artocarpus heterophyllus Lamk., flavonoid, 1,1-difenil-2-pikril-hidrazil (DPPH), EC50

<p>Indonesia is a tropical country which is diverse types of plants, one of them which was plant jackfruit (<em>Artocarpus heterophyllus</em> Lamk.). But so far, its utilization of waste still leaves form the seeds of jackfruit. Basic human needs of food and technology progress encourages humans to cultivate seeds into flour, jackfruit seed jackfruit. To understand the nutrient content of quality food grain powder jackfruit is the researchers want to do an analysis of proksimat on seed flour, jackfruit. This research use experimental design to test the levels of protein, carbs, fat and calories jackfruit seed flour. The measurement of protein content by Kjeldahl method, method of Carbohydrate carbs by Defference method with Soklet,fat,and calories with manual calculation. Research results from the jackfruit seeds have been processed into flour, jackfruit seeds showed that levels of the protein in the flour biji nangka of 12.19 grams, carbohydrate levels of 56.21 grams, 1.12 grams of fat content and moisture content of 12.4 grams. Expected with the known value of jackfruit seeds flour on proksimat this will encourage the public to make use of waste food into jackfruit seeds in the form of jackfruit seed flour. In addition to reducing waste, nutrient content of jackfruit seed flour is also high.</p>

Meanwhile, the study entitled Correlation Analysis Between Watering Interval, Stem Height, Stem Diameter and Number of Leaves in Jackfruit Seedlings (Artocarpus Heterophyllus Lamk) is guided by the amount of watering of 100 ml which is based on the recommendation for the use of the best liquid fertilizer from the research of Mamik et al., (2020). The research will be carried out in the closed room experimental garden of the Plantation Management Study Program, Politeknik Indonesia Venezuela located in Cot Suruy Village, Ingin Jaya District, Aceh Besar Regency, from May 2024 to July 2024. The temperature in the experimental garden is set at 25oC – 28oC. To see the correlation analysis between the Watering Interval, Stem Height, Stem Diameter, and Number of Leaves in Jackfruit Seedlings (Artocarpus Heterophyllus Lamk) bivariate correlation analysis was used. There is a relationship between plant height, stem diameter, and number of leaves. There is no relationship between the length of the watering interval and the variables of plant height, stem diameter, and number of leaves. Table 6 shows that there are no variables that are strongly related and have a significant effect on the watering interval, plant height, stem diameter, and number of leaves. The decreasing amount of water causes plants to be unable to grow normally.

Daun nangka mengandung senyawa yang berkhasiat sebagai antibakteri sehingga dapatmenghambat pertumbuhan bakteri jerawat. Untuk mempermudah penggunaan daun nangkasehingga dibuat menjadi suatu sediaan topikal berupa salep. Penelitian ini bertujuan untuk membuatsediaan salep dan mengetahui basis salep yang memenuhi syarat uji stabilitas fisik. Salep ekstraketanol daun nangka dibuat dalam dua basis salep yaitu basis hidrokarbon dan basis larut air. Ujistabilitas salep menggunakan uji stabilitas Freeze Thaw Cycle dan diuji sifat fisik salep meliputi ujiorganoleptik, uji homogenitas, uji pH dan uji daya sebar. Sediaan salep ekstrak etanol daun nangkadiamati selama 12 hari (6 siklus). Hasil penelitian menunjukkan basis hidrokarbon memilikikestabilan yang baik dalam uji organoleptik, uji homogenitas dan uji pH. Sedangakan untuk basislarut air hanya memiliki kestabilan yang baik pada uji homogenitas.

Abstract:
Osmophilic yeast are microbes that are able to live on media with high sugar concentrations. Some types of osmophilic yeast can break down organic compounds, for example, starch. This research was aimed to isolate and identify existing osmophilic yeast in unripe jackfruits. In this research, the unripe jackfruit was left rotting and 2.5 g of the sample were taken to be solved in 25 ml 0.85% NaCl and diluted. The GYP (glucose-yeast-peptone) agar medium with the glucose concentration of 30–50% was suitable for osmophilic yeast growth. Isolate purification was performed using the streaking method from single colony. Isolates were identified based on physiological and morphological characteristics. The physiological characterization were carried out by running sugar assimilation test on the tool kit API 20C AUX, while the morphological characterization was carried out by performing macroscopic and microscopic observations. Four isolates were assumed to be Candida lambica, 3 isolates were assumed to be Candida rugosa and two isolates were assumed to be Geotrichum candidum. It was found out that 44.4% of yeast in the unripe jackfruit were Candida lambica, 33.3% was Candida rugosa and 22.2% was Geotrichum candidum. Candida lambica was the most common osmophilic yeast found in the jackfruit.

Jackfruit leaves (Artocarpus heterophyllus Lamk.) have health benefits as an antimicrobial. The leaves contain flavonoids, tannins, saponins which act as antimicrobials. The purpose of this study was to study the potential antibacterial activity of ethanol extract of jackfruit leaves (Artocarpus heterophyllus Lamk.) On the bacteria Staphylococcus aureus, Escherichia coli, Staphylococcus epidermidis, and Salmonella typhi. This research conducted with an experimental method that included the collection and processing of samples, the examination of the simplicia characterization and phytochemical screening. The concentration of jackfruit leaf ethanol extract. Used was at a concentration of 500 mg mL, 400 mg/mL, 300 mg/mL, 200 mg/mL, 100 mg/mL, 100 mg/mL, 50 mg/mL , 25 mg/mL, 10 mg/mL 30 mg/ml chloramphenicol and blanks. Using the disk diffusion method to measure the clear zone against the bacteria Staphylococcus aureus, Escherichia coli, Staphylococcus epidermidis, and Salmonella typhi. Antimicrobial inhibition of ethanol extract of jackfruit leaves against Staphylococcus aureus bacteria at a concentration of 500 mg/mL has a strong antibacterial inhibition with a diameter of 10.8 mm. The bacteria Escherichia coli, Staphylococcus epidermidis, and Salmonella typhi at a concentration of 500 mg/mL have inhibitory power, 9.2 mm, 9.6 mm, and 8.8 mm in the medium category. Positive control chloramphenicol has powerful antibacterial inhibition with an inhibition zone diameter of 28.6 mm.

Atualmente, com o aumento no número de estudos sobre invasões biológicas, sabemos como ocorre o processo, suas causas e conseqüências. A prevenção ainda é a melhor maneira de limitar e diminuir o aumento no número de problemas associados às espécies exóticas e invasoras biológicas. A jaqueira, Artocarpus heterophyllus Lamk. (Moraceae), é uma espécie exótica invasora que foi introduzida no Brasil no período colonial. A principal estratégia de controle de A. heterophyllus tem sido o método mecânico conhecido como anelamento e o arranque de plântulas. Utilizando o Manual da TNC para Controle de Espécies Invasoras, este estudo objetivou propor um novo método de controle da jaqueira, e caracterizar a estrutura populacional da espécie. O estudo foi conduzido na Ilha Grande, localizada no município de Angra dos Reis, RJ, que é coberta por Mata Atlântica em diferentes estágios sucessionais. Testou-se um novo método químico que consistiu na injeção de herbicida Garlon diluído a 4% no tronco de árvores com DAP>15 cm. Ao todo 684 indivíduos distribuídos em 10 parcelas medindo 0,64 ha cada foram encontrados. A densidade media encontrada foi de 107 ind. / ha, com densidades variando entre 3340 ind. / ha, na classe Juvenis 1 (DAP < 5 cm) a 13 ind / ha na classe Adltos 2 (20.1 <DAP> 25.0). A área basal média encontrada foi de 3,692 m / ha. Os resultados mostraram que o método químico foi mais eficiente que o método mecânico. Após 60, 150 e 240 dias do tratamento inicial, os métodos diferiram significativamente. Os resultados demonstram que não há correlação entre a eficiência do método mecânico em relação ao DAP. Entretanto o método químico é dependente do DAP. Os resultados das taxas de mortalidade foram significantes para o tempo de resposta aos 60 dias (p = 0,009), 150 dias (p = 0,039) e 240 dias (p = 0.013), após teste estatístico Kruskal Wallis. As vantagens do método químico em relação ao mecânico são claras, onde menos dinheiro é gasto e mais resultados são gerados.<br>Currently, with the increasing number of studies on biological invasions, we know how this process occurs, its causes and inherent consequences. Prevention is still the best way to limit and reduce the increasing number of problems associated with exotic and invasive species biology. Jackfruit, Artocarpus heterophyllus Lamk. (Moraceae) is an invasive alien species that was introduced in Brazil during the colonial period. The main strategy for controlling A. heterophyllus has been a mechanical method known as girdling and remove seedlings. Using the Manual for the Nature Conservancy Invasive Species Control, this study aimed at proposing a new control method of jackfruit, and characterize the population structure of the species. The study was conducted in Ilha Grande, located in Angra dos Reis, RJ, which is covered by Atlantic forest in different successional stages. We tested a new chemical method which consisted of injecting herbicide Garlon diluted to 4% into the trunk of trees with DBH> 15 cm. The total of individuals sampled in 10 plots mesuring 0,64 ha each, was 684 plants. The average density was 107 individuals / ha, with densities ranging from 3340 ind / ha on the class Youth 1 (DBH <5) to 13 ind. / ha on class Adults 2 (20.1 <DBH> 25.0). The average basal area was 3,692 m / ha. The results showed that the chemical method was more efficient than the mechanical method. The methods differed significantly after 60, 150 and 240 days of initial treatment. The results show no correlation of the mechanical method to DBH. However, the chemical method is dependent on DBH. The results showed significance with time 60 days (p = 0,009), 150 days (p = 0,039) and 240 days (p = 0.013), after analysis with the statistical test of KruskalWallis. Its now clear what the advantages of the chemical method are when comparing to the mechanical method. Less money is spent and more results are generated.

Abstract:
Jackfruit (Artocarpus heterophyllus Lam.) is a multi-purpose fruit tree, native to tropical Asia. It was introduced to South Florida in the early 1900s but has had little commercial importance. In recent years, there has been an increased interest in jackfruit as a commercial crop in South Florida, but there has been little scientific investigation conducted. The pollination mechanism was not clearly understood. This study focused on jackfruit breeding using 'Dang Rasimi' and 'Cheena' cultivars. Controlled hand-pollinations revealed that both cultivars were not apomictic. Both cultivars set fruit with self-pollination, but seed set and many fruit characters such as size, flesh percentage and edible percentage were greatly enhanced with cross-pollination. I conclude that jackfruit are outbreeding plants. Tests for pollen dispersal by wind were inconclusive. A variety of insects were collected, but few had a role in pollination. My results suggest that jackfruit are likely to have insect-assisted wind pollination in South Florida.

Abstract:
Jackfruit (Artocarpus heterophyllus Lam.) is a minor tropical tree that bears the largest edible fruit in the world with high nutritive potential. As jackfruit is an unexploited fruit, there is a lack of systematic research on: fruit maturation and ripening assessment, fruit quality evaluation, and postharvest quality management of jackfruit. This research project: evaluates changes in fruit quality during maturation and ripening; examines variability in fruit quality traits and mineral composition among different jackfruit genotypes; and investigates the effects of postharvest dip application (five min) of methyl jasmonate (MeJA), putrescine (PUT) and melatonin (MLT) on fruit quality and storage life of jackfruit bulbs. With progression of fruit maturation and ripening, a significant increase in jackfruit soluble solids content (SSC), ascorbic acid (AsA), and total flavonoids content (TFC) was observed. However, total phenolics content (TPC), and titratable acidity (TA) exhibited a decline with progression of maturity and ripening. With the advancement of fruit maturity and ripening, there was a decline in bulb firmness, total pectin (TP), protopectin (PP), and cellulose (CEL) along with increase in activities of fruit softening enzymes. Amongst the investigated jackfruit genotypes, maximum fruit and pulp weight were recorded in ‘Accession 304’, whilst ‘Accession 348’ exhibited the highest edible portion. The highest SSC:TA ratio was recorded in ‘Seedling 2’, where AsA and TCC were comparatively higher in orange-fleshed genotypes. ‘Accession 306’ exhibited the highest TPC, while TFC and dry matter content were higher in ‘Rajang’. Amongst 25 mineral elements, potassium, magnesium, and phosphorus were identified as primary minerals in jackfruit pulp. Among genotypes tested, ‘Seedling 1’, ‘Rajang’, and ‘Accession 284’ were superior in terms of average mineral content. Postharvest application of 1.0mM MeJA to jackfruit bulbs significantly reduced disease incidence (DI) and maintained higher antioxidant potential as compared to untreated bulbs. Bulbs treated with 0.5mM MeJA exhibited significantly higher bulb firmness, along with lower activities of cell wall hydrolases, and higher TP than control bulbs. Bulbs dipped in 1.0mM MeJA had significantly higher PP, CEL and lower oxidative stress than control bulbs. Exogenous application of PUT (0.5mM) was effective in reducing DI, and maintaining higher levels of antioxidants involved in the ascorbate-glutathione cycle. Oxidative stress was effectively mitigated in 0.5mM PUT-treated bulbs as evidenced by lower lipoxygenase, malondialdehyde and hydrogen peroxide radicals than control bulbs. Postharvest application of 0.1mM MLT was most effective in alleviating browning index and suppressing the activities of browning enzymes. Treatment with MLT (0.2mM) maintained higher AsA, TPC, TCC and higher activities of antioxidant enzymes, as compared to control. Bulbs treated with 0.2mM MLT had relatively higher bulb firmness and TP, along with lower activities of cell wall hydrolases. Overall, this study can guide the selection of genotypes based on intended use and marketability in addition to providing potential strategies to mitigate postharvest issues in jackfruit bulbs, thus contributing towards efforts to expand the commercial potential of jackfruit in Australia. These findings also provide a strong baseline for future research on genotype selection, maturity standardisation and postharvest quality management of whole jackfruit.

As embalagens usadas foram: polipropileno (PP), politereftalato de etileno (PET), poliestireno expandido recobertas com filme de cloreto de polivinila (PVC) e saco plástico de polipropileno biorientado (BOOP). Foram realizadas analises físico-química e de compostos bioativos da polpa. Os dados foram submetidos a análise de variância e regressões polinomiais. Foi significativo do tempo de armazenamento e dos tipos de embalagens. Houve acréscimos significativo em relação tempo e entre tipos de embalagem para as variáveis físico-químicas: Perda de Massa, Sólidos Solúveis, Acidez Titulável e pH. Os compostos bioativos: Clorofila, Carotenoides, Flavonoides e Antocianinas aumentaram com o tempo de armazenamento e diferiram com o tipo de embalagem. Os níveis de Ácido ascórbico foram reduzidos de forma significativa e os Compostos fenólicos totais sofreram também reduções com a evolução da maturação dos frutos.<br>The jaca (Artocarpus heterophyllus, Lam) and originated from Asia belongs to the Moraceae family, and Artocarpus genre. The size of the fruits associated to the latex exudation and its marked aroma characteristic has been limiting factors in its consumption. The had as of the objective to evaluate the quality of the processed jackfruit and to pack in different types of packages under temperature of 3° during 12 days. The experiment was developed in the Laboratory of Technology of Vegetable Sources at the Center of Sciences and Agrifood Technology of the Federal University of Campina Grande, using a completely randomized experimental design in a factorial scheme 4 x 7 (4 storage bags nature and 7 time intervals) with 3 replicates totalizing 84 treatments. Polypropylene (PP), polyethylene terephthalate (PET), expanded polystyrene coated with polyvinyl chloride film (PVC) and bioriented polypropylene plastic bag (BOOP) were used as packing materials during seven processing periods. Physical and chemical analyzes of the bioactive pulp compounds were performed. Data was submitted to analysis of variance and regressions. Was significant effect of the storage time and types of packages. The physic chemical variables mass loss, soluble solids, titratable acidity and pH were significantly influenced by the processing time and types of packaging increasing these with the time of processing. The bioactive compounds Chlorophyll, Carotenoids, Flavonoids and Anthocyanins also were affected significantly with the time of storage and type of packaging, increasing these with the time of processing. Ascorbic acid levels and total phenolic compounds were reduced with the evolution of fruit maturation.

Na pesquisa foram determinadas isotermas de dessorção para a polpa, casca, mesocarpo, eixo central e sementes de jaca a 40, 50, 60 e 70 °C, na faixa de conteúdo de umidade entre 0,001 e 0,278 kg-kg"1 e atividades de água entre 0,02 a 0,753. O modelo teórico de GAB e os modelos empíricos de Oswin, Halsey, Henderson e Iglesias-Chirife foram empregados para a modelagem. Foi proposta a primeira derivada da solução analítica da equação de Clausius-Clapeyron para calcular o calor isostérico de sorção e a entropia diferencial para os resíduos e polpa de jaca, através dos modelos de GAB e Oswin quando o efeito da temperatura em equilíbrio higroscópico foi considerado. Secagem de casca, polpa e sementes de jaca foram realizadas em um secador de leito fixo, nas velocidades do ar de 0,7; 1,4 e 1,8 nrs"1 e temperaturas de 40, 50, 60 e 70 °C. Os modelos de Peleg, Page, Henderson-Pabis e difusivo foram empregados na modelagem das curvas de secagem. Observou-se período de taxa decrescente nos experimentos. Com as informações obtidas na secagem, foram formulados produtos alimentícios a base de polpa e resíduos de jaca, os quais foram caracterizados via química, nutricional, sensorial e microbiológica.<br>The objective of this paper is the drying process implementation for pulp and jackfruit waste items {Artocarpus heterophyllus Lam.) for a possible application in the industry.The relationship between moisture content and water activity provides useful information for processing and storage of jackfruit wastes. The desorption isotherms for pulp, peel, mesocarp, central axis and seeds of jackfruit were determined at four different temperatures (40, 50, 60 and 70 °C) over wide ranges of moisture content (0,001-0,278 kg-kg"' and water activity (0,02-0,753). The theoretical model of GAB and the empirical models of Oswin, Halsey, Henderson and Iglesias-Chirife were used to modeling the desorption isotherms. The analytical solution of the Clausius-Clapeyron equation was proposed to compute the isosteric heat of sorption and the differential entropy, for peel, mesocarp and pulp of jackfruit, by means of the GAB and Oswin models when the effect of temperature on hygroscopic equilibrium was considered. Drying kinetics for peel, pulp and seeds of jackfruit in convective hot air forced equipment were determined, at three air velocities (0,7; 1,4 and 1.8 nvs"1) and four temperatures (40, 50, 60 and 70 °C).In the graphical analysis, a falling rate period was found for all experimental curves. Finally, with the information obtained in the drying process, products were formulated with the pulp and others jackfruit items, which were characterized via chemical, nutritional, sensory and microbiological.

Foram analisadas por ICP-OES as concentra??es dos elementos: c?lcio, cobre, ferro, magn?sio, cromo, mangan?s, pot?ssio, s?dio, zinco, n?quel e cobalto. Os resultados mostraram que as sementes da JM e da JD t?m composi??es bromatol?gicas muito pr?ximas: 63% de umidade, 18% de carboidrato, 15% de prote?na e 3% de cinzas. A maior diferen?a foi no teor de lip?deos (0,4% - JM e 0,9% - JD). As composi??es minerais s?o bem distintas. O pot?ssio e o magn?sio s?o os mais abundantes em ambas as variedades (95,8% - JM e 93,2% - JD). As sementes de JD t?m 5,5 vezes mais Na, 24% mais Ca, 3 vezes mais Zn e 2% mais K. As sementes de JM t?m 32% mais Fe, 37% mais Mn e 16% mais Mg. Do ponto de vista fisicoqu?mico, as polpas t?m uma grande distin??o. A polpa da JD tem 9,5 vezes mais lip?deos e o dobro de carboidrato. A polpa da JM tem 10% mais umidade e 14% mais cinza. O teor de prote?na ? muito semelhante. Os resultados foram submetidos ao teste t pareado, com 95% de signific?ncia, para inferir sobre a signific?ncia da igualdade ou desigualdade dos par?metros comparados.<br>This work had as objectives to determine the physicochemical and mineral compositions of the dehydrated seeds of the soft jackfruit (SJ) and of the hard jackfruit (HJ), of the dehydrated, in nature and lyophilized pulps of the SJ and HJ. For this, were determined the percentages of: moisture, ash, lipids, protein and carbohydrate. The concentrations of the elements calcium, copper, iron, magnesium, chromium, manganese, potassium, sodium, zinc, nickel and cobalt were analyzed by ICP-OES. The results showed that the seeds of SJ and of HJ have very close bromatological compositions: 63% moisture, 18% carbohydrate, 15% protein and 3% ash. The major difference was in the lipids contente (0,4% - SJ and 0,9% - HJ). The mineral compositions are quite distinct. Potassium and magnesium are the most abundant in both varieties (96% - SJ and 93% - HJ). The seeds of HJ have 5,5 times more Na, 24% more Ca, 3 times more Zn and 2% more K. The seeds of SJ have 32% more Fe, 37% more Mn and 16% more Mg. From a physicochemical point of view, the pulps have a great distinction. The pulp of HJ has 9,5 times more lipids and twice the carbohydrate. The pulp of SJ has 10% more moisture and 14% more ash. The protein content is very similar. In pulps, the composition of minerals is quite different, although potassium and magnesium are the major elements in the two varieties (96% - SJ and 93% - HJ). The pulp of SJ has 33% more K, 29% more Mg, 26% more Mn, 48% more Na, 16% more Cu, 24% more Fe and 5% more Zn. The pulp of HJ has 45% more Ca, which may explain its greater firmness. The chemical composition of the pulps in nature of SJ and HJ are very similar in relation to the concentrations of Fe, Cu, Mn and Mg. The HJ in nature pulp has 2,6 times more Ca and 27% more Zn. The in nature soft variety has 5% more K and 25% more Na. The freeze-drying preserved the carbohydrate content in the pulps of the two varieties of jackfruit. The SJ lyophilized pulp had the lower metal content than the pulp dehydrated in the oven. The results were submitted to the paired t test, with 95% significance, to infer the significance of the equality or inequality of the parameters compared.

Mestrado em Engenharia Agronómica - Agronomia Tropical - Instituto Superior de Agronomia - UL<br>Em São Tomé e Príncipe, a jaca (Artocarpus heterophyllus) está entre os frutos mais apreciados. Porém, a sazonalidade e a rápida perecibilidade que a caraterizam, determinam a sua ausência no mercado em certas alturas do ano. Este trabalho visou estudar a desidratação de jaca de São Tomé e Príncipe, caracterizando e comparando fisico-quimicamente (cor, matéria seca, proteína, fenóis, açúcares, aw e textura, no que se refere à dureza e adesividade) e sensorialmente amostras frescas e desidratadas. Dois conjuntos de amostras com teor médio inicial de humidade de 41% e 40%, foram submetidos durante 8 e 10 horas, a 50ºC +/-5ºC, obtendo-se 8% e 11,8% de humidade final, respetivamente. As análises efetuadas revelaram que a jaca é rica em hidratos de carbono, apresentando teores baixos de fenóis, sendo o teor de proteína o mais variável, mas sempre baixo. Verificou-se ainda que a fruta fresca altera-se muito rapidamente mesmo quando conservada em frio. Comparando as amostras frescas e desidratadas entre si, não houve variação significativa para nenhum dos parâmetros excepto as proteínas. Os valores médios de saturação (c) aproximaram-se de 30, de luminosidade (L) oscilaram entre 53-57 (amostras frescas) e 70-73 (amostras desidratadas), de tonalidade entre 79-80 (amostras desidratadas) e 97-98 (amostras frescas). O ºBrix nas amostras frescas foi cerca de 26-27º, nas amostras desidratadas de 58º. O teor médio de proteínas solúveis oscilou entre 4 e 300 (mg/100g) e de fenóis totais entre 26 e 101mg/100g. A análise por HPLC identificou a presença de glucose, frutose, sacarose, etanol e metanol. A determinação da aw após desidratação e após 1 mês de armazenamento em vácuo revelou que o produto teve e manteve uma aw abaixo do limite de 0,6. Na análise sensorial, não há diferença estatística entre a preferência dos provadores, embora tendencialmente prefiram o conjunto com menor teor de humidade.<br>N/A

Abstract:
Abstract Medicinal plants are widely used in many parts of the world. In Brazil, due to the influence of indigenous roots, this practice has been widespread until today, especially in northern and northeastern regions, where there is the largest concentration of indigenous tribes still alive. The precariousness of public services in remote communities has resulted in the use of plants for medicinal purposes as the main therapeutic resource of these populations and ethnic groups, given that the presence of knowledge about herbs and plant materials, which is passed on among families, is the primary source of treatment and cure of various diseases based on empirical experimentation in these communities (LEITE, 2014). Thus, it should be noted that the use of plants for curative purposes comes from the earliest reports of human societies and, currently, it can still be observed that the wealth attributed to the ancient knowledge of traditional peoples has been a potentiating factor in innovations in research and the search for new substances from what has already been described in these cultures.
