Atlantic salmon (Salmo salar) skin was hydrolyzed separately with three different enzymes, trypsin, α-chymotrypsin and papain, for two different times (2 and 4 h). The crude hydrolysates and unhydrolyzed soluble skin proteins were screened for antioxidant, antimicrobial and trypsin inhibitory properties. The antioxidant tests used, - namely, DPPH radical scavenging, metal chelation and reducing power assays, - showed that all hydrolysates and soluble proteins at 2mg/ml possessed antioxidant properties.
