The objective of this study was to examine the effects of rearing temperature on the meat yield of broilers. Four experiments were conducted. Experiment 1 examined meat yield at different temperatures and on different diets when birds were grown to a fixed age. Experiments 2 and 3 were aimed at the effects of temperature and of the interaction between temperature and stocking density respectively on the meat yield of broilers when killed at a specified liveweight (i.e. allowing the rearing period to vary). Experiment 4 was designed to assess whether depression of growth rate at high temperatur

A series of experiments were conducted to investigate the effects of certain biological, nutritional, and processing factors on breast meat quality of broilers. In the first experiment, the influence of genetic strain, plane of nutrition, and age at slaughter on breast meat quality was evaluated. Breast meat from a high yield line of broilers had lower pH at 24 h postmortem (PM), greater L*, a*, and b* values, lower water holding capacity (WHC), and higher expressible moisture (EM) than those of a line selected for rapid growth.

White Striping (WS) and Wooden Breast (WB) are two emerging myopathies in broiler hybrid chickens, which are gaining great relevance for the poultry sector, due to the huge economical losses ascribable to the unappealing appearance and impaired nutritional and technological quality of af-fected fillets. However, the knowledge concerning their aetiology is not clear and the consequences on meat quality is still incomplete. Therefore, the present thesis, which includes four researches, aimed to deepen the knowledge possessed by the scientific community on these defects. The first study in-vestig
