La 5-aminolévulinate deshydratase (E. C. 4. 2. 1. 24 ; 5-ALAD) est une enzyme oligomérique qui permet la synthèse du porphobilinogène à partir de l'acide aminolévulinique. Son étude après différents traitements par des antibiotiques, des plantules de radis, montre après une analyse par des techniques immunochimiques, une relation étroite entre l'activité enzymatique et la quantité de protéines. Chez ces derniers, la voie de biosynthèse de la chlorophylle est bloquée au niveau de la pénultième étape qui correspond à la réduction de la protochlorophyllide en chlorophyllide. Contudo, são poucos os estudos relativos à sua absorção in vivo, atividade antioxidante e impacto no estado nutricional.
