Full textLa Tesis Doctoral que se presenta aborda esta cuestión al estudiar la interacción genotipo x ambiente en variedades tradicionales de judía (Phaseolus vulgaris L.) históricamente cultivadas en Catalunya, referente al contenido de proteína, almidón, amilosa, amilopectina, sacarosa, ácido málico y ácido cítrico en el grano. Se han escogido dichas moléculas porque la bibliografía indica que están relacionadas con atributos sensoriales de la judía una vez cocinada.
Para delimitar los efectos genéticos, ambientales y de interacción se efectuaron ensayos de campo en cinco zonas de Catalunya con tradición de cultivo de judía (Garrotxa, Vallès Occidental, Vallès Oriental, Maresme y Baix Llobregat), durante dos años consecutivos. Como germoplasma se emplearon cuatro tipos varietales catalanes (Ganxet, Genoll de Crist, Tavella Brisa y Castellfollit del Boix), y cuatro variedades testigos (Faba, Navy, Canela y White Kidney).
Todos los efectos principales (localidad, año y variedad) resultaron significativos para la mayoría de los carácteres. Las máximas diferencias se presentaron entre las localidades de Santa Pau y el Vallès, representativas de condiciones extremas dentro de la variación ambiental que abarca el estudio. El análisis multivariante confirma el alejamiento de la localidad Santa Pau del resto. Suelos volcánicos, elevada capacidad de intercambio catiónico, y cultivo en secano, hacen de esta localidad una peculiaridad interesante con una producción de composición química bien diferenciada.
Las variedades tradicionales Ganxet (Montcau) y Genoll de Crist se sitúan en grupos de significación extremos para la mayoría de los compuestos estudiados mientras que los testigos se sitúan habitualmente en grupos de significación intermedios.
Se han detectado numerosas interacciones significativas genotipo x localidad lo cual es importante para justificar la elección de determinados tipos varietales en cada zona si pretendemos maximizar o minimizar alguno de los componentes químicos. A menudo las interacciones más significativas coinciden con combinaciones consolidadas históricamente de variedad x ambiente y que tienen ya prestigio (p.e. Ganxet en el Vallès y Maresme; Genoll de Crist en el Maresme, Navy y Tavella Brisa en Santa Pau).
De confirmarse también en el ámbito sensorial este abanico de características químicas causado por efectos genéticos, ambientales y de interacción, la definición objetiva de al menos dos denominaciones de origen en Catalunya parece una tarea posible y que merece impulsarse. Además, todo parece indicar, que este enfoque podría utilizarse de manera general para la delimitación de DOPs en judía.
We attended at the present time a constant loss of the genetic diversity of the cultures. Parallelly in many zones of the world, specially in the developed countries, a regression of the agriculture takes place that entails environmental problems. Some traditional varieties have been selected historically by their high gastronomical properties which has helped its persistence, even competing locally with the improved varieties. Since the consumers of the developed countries are arranged to pay superior prices by the sensorial quality of products, the recovery of outstand ing traditional varieties can help the maintenance of the biological diversity as to the recovery of some zones of culture as much. Against this background the boundary of Protected Denominations of Origin (DOPs) and the objective description of the properties of products in cultivated them, is an activity that must be considered high-priority.
The Doctoral Thesis that appears approaches this question when studying the interaction genotype x environment in traditional varieties of bean (Phaseolus vulgaris L.) historically cultivated in Catalunya, referring to the content of protein, starch, amylose, amylopectin, sucrose, malic acid and citric acid in the grain. These molecules have been chosen because the bibliography indicates that they are related to sensorial attributes of the bean once cooked.
In order to delimit the genetic, environmental effects and of interaction tests of field in five zones of Catalunya with tradition of bean culture took place (Garrotxa, Vallès Oriental, Vallès Occidental, Maresme and Baix Llobregat), during two consecutive years (2002, 2003). As germoplasma four Catalan varietales types were used (Ganxet, Genoll de Crist, Tavella Brisa and Castellfollit del Boix), and four varieties witnesses (Faba, Navy, Canela and White Kidney).
All the main effects (locality, year and variety) were significant stops for most of the characters. The maximum differences appeared between the localities of Santa Pau and the Vallès, representative of extreme conditions within the environmental variation that includes the study. The multivariant analysis confirms the distance of the locality Santa Pau of the rest. Volcanic grounds, high capacity of cationic interchange, and culture in dry land, makes of this locality an interesting peculiarity with a production of a differentiated chemical composition.
The traditional varieties Ganxet (Montcau) and Genoll de Crist are located in extreme groups of meaning for most of the studied compounds whereas the witnesses locate themselves habitually in intermediate groups of meaning.
Numerous significant interactions genotype x locality have been detected which is important to justify the election of certain varietal types in each zone if we try to maximize or to diminish some of the chemical components. Often the most significant interactions agree with consolidated combinations historically of variety x environment and that have prestige already (e.g. Ganxet in the Vallès and Maresme; Genoll de Crist in the Maresme, Navy and Tavella Brisa in Santa Pau).
If also in the sensorial scope this fan of chemical characteristics caused by genetic, environmental effects and of interaction is confirmed, the objective definition of at least two denominations of origin in Catalunya it seems a possible task and that it deserves to impel itself. In addition, everything seems to indicate, that this approach could be used of general way for the boundary of DOPs in bean.

Ferroelectric materials have a vast application in modern industry as data storage devices. Some of this materials, as the ferroelectric oxides class ABO3, have phase transitions with the alteration of of the lattice modifiers concentration ("A"). The aim of this work was to study the tetragonal to cubic phase transition in (Pb,Ca)TiO3 ferroelectric solid solution with a experimental and theoretical view point. The powders and thin films were achieved by the polymeric precursor method and characterized by X ray diffraction, Raman spectroscopy, capacitance vs voltage and capacitance vs frequency electrical measurements on thin films. The theoretical results were obtained by periodic quantum-mechanical calculations of (Pb,Ca)TiO3 structure in discrete compositions, applying the density functional theory (DFT) for the calculations in CRYSTAL98r code. The comparison of theoretical and experimental results pointed that the solid solution starts from a ferroelectric tetragonal structure to a paraelectric cubic structure with the increase of calcium relative content and, albeit cubic in calcium concentrations above 40%, the perovskite structure conserve a local disorder of titanium atom in the perpendicular direction relative to the unit cell z axis. This local disorder was confirmed by the appearing of characteristics vibrational modes in Raman spectrum of the oxide powders of the higher symmetry. The theoretical results suggest that Ti-O bonds in the oxides posses a great influence in the unit cell electronic densities distribution. The X-ray diffraction profiles of (Pb,Ca)TiO3 reveal that the relative intensities of (hkl) plans of tetragonal structure obeys a first order exponential decay function with the increase of calcium concentration on the PbTiO3 structure. The ferroelectric experiments in thin films show a decrease of relative dielectric permittivity with calcium incorporation due the structural modifications imposed by alkaline cation increase. The thin films displayed formation of space charges, perceived in the degradation of capacitance vs voltage profile in low application frequencies of the reversal electric field.
Os materiais ferroelétricos possuem uma vasta aplicação na indústria moderna como dispositivos de armazenamento de informação. Muitos destes materiais, como os óxidos ferroelétricos da classe ABO3, possuem transições de fase estrutural com a variação da concentração dos cátions modificadores de rede ("A"). O objetivo deste trabalho foi estudar a transição de fase composicional tetragonal-cúbica da solução sólida ferroelétrica (Pb,Ca)TiO3 sob o ponto de vista experimental e teórico. Os pós e filmes finos foram obtidos a partir do método dos precursores poliméricos e caracterizados pelas técnicas de difração de raios X, espectroscopia Raman, medidas elétricas de capacitância vs voltagem e capacitância vs freqüência dos filmes finos. Os resultados teóricos foram obtidos por cálculos mecânico-quânticos periódicos da estrutura (Pb,Ca)TiO3 em diferentes composições, utilizando a teoria do funcional de densidade (DFT) para o cálculo no programa CRYSTAL98r. A comparação de dados teóricos e experimentais sugerem que a solução sólida parte de uma estrutura tetragonal ferroelétrica para uma estrutura cúbica paraelétrica com o aumento da concentração relativa de cálcio na solução sólida e que, embora cúbica em concentrações relativas de cálcio acima de 40%, a estrutura perovisquita mantém uma desordem local do átomo de titânio central na direção perpendicular ao eixo z, que pode ser confirmada pela manutenção de picos característicos no espectro Raman dos pós na estrutura de maior simetria. Os resultados teóricos indicam que a ligação Ti-O possui uma grande influência na distribuição de densidade eletrônica. Os resultados de difração de raios X dos óxidos (Pb,Ca)TiO3 indicam que a intensidade relativa de difração dos planos que definem uma estrutura tetragonal diminuem com aumento da concentração relativa de cálcio na estrutura (aumento de simetria) obedecendo uma equação de decaimento exponencial de primeira ordem. As medidas ferroelétricas nos filmes finos apontam uma diminuição no valor da permissividade dielétrica relativa com o aumento de cálcio na rede do PbTiO3 devido a mudança estrutural provocada pela incorporação do cátion alcalino. Os filmes finos apresentaram a formação de cargas espaciais, observadas na degradação das medidas de capacitância vs voltagem em baixa freqüência de aplicação do campo elétrico.

Full textThis work was carried out in the Campanha Central, Rio Grande do Sul, Southern Brazil, with the objective of studing the effect of defoliation and harvesting times on the maturation and quality of 'Cabernet Sauvignon' grape and wine. The experimental design was in completely randomized blocks, arranged as an incomplete factorial with four defoliation times and three harvesting times, in relation to an ideal time of harvesting (DIC). Results showed that defoliation during the maturation period had no significant effect on the fresh and dry weights, nor on humidity, pH, sugar and mineral contents of fruits; nevertheless, it caused a decrease in the total acidity and organic acids, but this was not confirmed at the hfrrvesting time. There was a decrease of productivity at harvesting by DIC; however, the grapes had the highest oBrix and pH values, and the lowest contents of total acidity and organic acids. Corcerning the wine, time of defoliation had an effect only on alcohol, reducing sugars, dry extract and total polyphenols, but time of harvesting had an effect on most of the evaluated variables. The sensory evaluation did not show any improvement on wine quality due to time of defoliation, but showed differences be t ween time of harvesting, those of the second time being better balanced.
