Polycyclic aromatic hydrocarbons (PAHs) are environmentally significant compounds due to the toxicity of some members. They are ubiquitous and are persistent bioaccumulative toxins(PBTs). The toxicity of PAHs represents a risk to human health, and there are varied risk assessment approaches to quantifying the risk posed by PAHs based on exposure routes and scenarios. The monooxygenase catalysed Baeyer-Villiger reaction provides a method of synthesising enantiopure products which are otherwise difficult to obtain by other strategies. In this thesis the fungus Cunninghamella echinulata NRRL 3655 has been shown to synthesise a Baeyer-Villiger monooxygenase enzyme (CeBVMO) which is known to catalyse the insertion of an oxygen atom in to the C-C(=0) bond of a cyclic ketone, forming a lactone group. The fungus Cunninghamella elegans has in many studies shown to have abiotransformation similar to the metabolism of mammals. If the biotransformation isgeneral, it enables the production of metabolites by the fungus and the use asreference material. The purpose of the project were to examine whether themetabolic process of C. elegans is general, with respect to the formation ofglucosides, and can be applied to different classes of drugs.
