A levedura Brettanomyces/Dekkera pode causar alterações importantes em vinhos tintos, com a formação de etil-fenóis, compostos de aromas desagradáveis. Este estudo teve como objetivo determinar a presença dessa levedura e de etil-fenóis em vinhos tintos comerciais e durante a vinificação em escala industrial, além de observar sua possível inibição pelo ácido sórbico. O vinho é a bebida obtida por meio da fermentação alcoólica do mosto simples de uva sã, fresca e madura. Durante o processo fermentativo, realizado por leveduras Saccharomyces cerevisiae, ocorre uma sucessão de microrganismos. Dekkera bruxellensis can outcompete Saccharomyces cerevisiae in environments with low sugar concentrations. It is usually regarded as a spoilage yeast but has lately been identified as an alternative ethanol production organism. Biological spoilage of wine arises from yeasts and bacteria metabolic activity. Brettanomyces/Dekkera bruxellensis, one of the main contaminating yeast, is able to produce unpleasant compounds, such as vinyl and ethyl phenols (VPs). These off-flavors define the so called “Brett” character. Two enzymes, the cinnamate decarboxylase (CD) and the vinylphenol reductase (VPR), are involved in the spoilage activity. This thesis reconstructs the genre of urban satirical pamphleteering. It contends that the pamphlets of Robert Greene, Thomas Nashe, Thomas Dekker, Thomas Middleton, and Barnaby Rich are stylistically and generically akin. Writing in a relatively undefined form, these pamphleteers share an interest in describing contemporary London, and employ an experimental style characterised by its satirical energy. In addition, they negotiate a series of tensions between profitability and play. In the early modern period, ‘profit' was variously conceived as financial, moral, or rooted in public service. P
