Inelastic collisions between dipolar molecules, assumed to be trapped in a static electric field at cold (> 10−3K) temperatures, are investigated and compared with elastic collisions. For molecules with a Λ-doublet energy-level structure, a dipole moment arises because of the existence of two nearly degenerate states of opposite parity, and the collision of two such dipoles can be solved entirely analytically in the energy range of interest. Laser and Fourier transform spectroscopy were used to study a variety of gas phase molecules. A series of calcium and strontium monoalkoxides, CaOR and SrOR [R=H, CH₃, CH₂CH₃, CH(CH₃)₂, CH₂CH₂CH₃, CH₂(CH₂)₂CH₃, CH₂(CH₃)CH₂CH₃ and C(CH₃)₃] was studied by laser induced fluorescence and laser excitation techniques. We found universal laws for the spectrum of two-dimensional three-body systems, composed by two identical particles and a distinct one (AAB). These universal laws appear when the potential range (r_0) is much smaller than the size of the system. A resonant cavity operating in TE011 mode was used to study the adsorption response of single walled carbon nanotubes (SWCNTs) and other nanomaterials for different types of gas molecules. The variation of a magnetic field in the vicinity of a zero-energy resonance allows highly vibrationally excited molecules (‘Feshbach molecules’) to be produced from an ultracold atomic gas. In this thesis, we study the dynamics of this process. We begin by studying the dissociation of Feshbach molecules, showing that in the limit of a sudden jump the shape of the spectrum of dissociated atoms can act as a probe of the zero-energy resonance.
