The identification of the chemical acrylamide (AA) in food was followed by intense research which led to the discovery that AA forms in starch-rich foodstuff when roasted, fried and baked, due to the reaction of the amino acid asparagine and reducing sugars. This thesis investigated novel approaches to the delivery of lifestyle education for people with diabetes. The principles of dietary advice for diabetes recommend a high carbohydrate intake, yet carbohydrate foods raise blood glucose levels significantly. Study 1 was designed as a randomised controlled trial to evaluate the effect of a low carbohydrate (LC) and low fat (LF) diet on glycaemic control and body weight in 26 subjects. Beluga teeth are evaluated as biomonitors of heavy metal accumulation in beluga soft tissues and contaminant exposure in people who consume beluga as part of a traditional diet. Selenium, which protects marine mammals from the toxic effects of mercury, was measured in beluga teeth for the first time using hydride-generation atomic fluorescence spectrometry.
