Abstract:
Dry pasta is a very popular product, which has a large and growing market in Brazil. Alongside the increase in consumption, there has been a search for products classified as “clean label”, which are alternatives with fewer additives in their composition. It is known that for pasta preparation it is necessary to use strong flour. The use of enzymes for the total or partial replacement of additives in the food industry can be expanded, as there are still little explored applications. Therefore, this work aimed to evaluate the effect of the enzyme transglutaminase (TG) in the preparation of spag

During the 60’s and 70’s, formulations were developed to cure under ambient air drying conditions rather than high temperature flame curing/baking2. Abstract:
The paint and coatings industry has witnessed significant change over the past 50 years. These changes have been driven by many factors including VOC mandates, safety concerns, advanced polymers and new demands of the end users and materials. One of those changes was the introduction of desiccant dehumidification to assist in the blast and coatings process of liquid storage tanks in 1983. The ability to indefinitely hold a blast by providing a dry climate mechanically set off the beginning of a technology that would continue to advance for years to come.

Abstract:
Gluten-free (GF) dry egg pappardelle was prepared with tigernut flour (50%), chickpea flour (50%) and pregelatinized TNF (0, 5, 10%), and compared to plain pasta (100% durum wheat semolina). The GF pasta may have a significant higher content of insoluble fibre, minerals and fat rich in oleic acid and a similar protein content. It was not found any clear relationship between the flour functional properties and its proximate composition. The use of PG did not imply an improvement on the firmness but did provide some continuity to the pasta structure. Keywords: Gluten-free pasta, tigernut flour,

The research presented in this article reflects on the theme of vegetables byproducts as a material to encourage the consumption of plant-based food in a sustainable perspective. We present a case study of cultivation of tomatoes optimized for the synthesis of bioactives such as polyphenols, which usually concentrate in the peel and are normally discarded during industrial and domestic processing. It is estimated that the European tomato industry produces more than 200,000 tonnes of waste - peels and seeds - annually, which constitute an environmental problem and an economic cost. Currently, i

Despite the many differences among Caribbean nations, Climate Change (CC) poses a serious threat to them all. Average temperatures in the Region have increased by 0.1° to 0.2°C per decade over the past three decades and rainfall patterns have shifted, with the number of consecutive dry days expected to increase. Additionally, sea level rise has occurred at a rate of about two to four cm per decade over the past 33 years, a trend which presents risks to the Region's freshwater resources and to its largely coastal population dependent on tourism and agriculture.OVE's regional study aims to asses

As one of the founding member states of the European Communities (EC), France has played a major role in the process of European integration since the 1950s. However, French presidents have always treated European integration cautiously, generally supporting forms of supranational integration in areas of socio-economic policy and preferring the intergovernmental mode of governance in areas of defence and foreign policy. In a context marked by the recent weakening of the French influence on European integration (see Assemblée Nationale, 2016), the gradual rise in Euroscepticism since the 2010s
