L’évaluation du bien-être des étudiants fait l’objet de nombreuses recherches de la part des universités. Toutefois, il existe peu de données concernant la mesure du bien-être chez des étudiants inscrits en formation de santé en France. Genotypes of modern bread wheat (Triticum aestivum L.) produced significantly more grain yield over spelt (Triticum spelta L.) and emmer (Triticum dicoccum) genotypes of ancient wheat. Grain yield was more in bread wheat genotype than the spelt and emmer wheat species because of its higher harvest index. All three bread wheat genotypes had significantly higher harvest index over rest of genotypes while spelt had over both the genotypes of emmer wheat species. The spectrophotometric Bradford assay was adapted for the analysis of gluten protein contents (gliadins and glutenins) of spelt, durum wheat, emmer and einkorn. The assay was applied to a set of 300 samples, including 15 cultivars each of common wheat, spelt, durum wheat, emmer and einkorn cultivated at four locations in Germany in the same year. The total protein content was equally influenced by location and wheat species, however, gliadin, glutenin and gluten contents were influenced more strongly by wheat species than location. This brief contribution uses archaeobotanical data to quantify the edible weight and energetic value of a khar of emmer wheat and a khar of barley. It then combines these data with emmer and barley prices from late New Kingdom Deir el-Medina to argue that, contrary to conventional wisdom, emmer wheat was more expensive per calorie than barley during most of this period. It furthermore argues that emmer wheat and barley were delivered to the workers in almost equal quantities.
