Abstract:
The diploma thesis deals with usage of wheat bran as a source of high-quality proteins. Every year mill industry produces large amounts of by-products. These by-products are constituted by wheat bran. There is a big effort to use these type of materials within a circular economy. Wheat bran contains about 14–18 % proteins which appears to be a good component for valorisation. It is possible to extract proteins from bran according to their behaviour in the range of pH. Proteins are soluble in alkaline pH and can be precipitated around their isoelectric point. The final treatment of precipitated

Abstract:
Effective management of acute pancreatitis has for centuries eluded mankind. The disease has a wide spectrum of presentation; the milder form is usually a self limiting condition, whereas the severe form presents as a highly morbid and frequently lethal attack. The ability to predict disease progression on admission would aid in the comprehensive and multidisciplinary management of patients. The perfect predictor of disease progression has been an elusive factor hindering the management of the disease. This diploma thesis deals with the use of various types of bran as a by-product in the milling of cereals. Mills create a huge amount of this material per year. The most common way of processing bran is mostly incineration and to a lesser extent it is used as feed for livestock. Depending on the type of cereal, bran contains 10-20% of protein, which disappears from the food chain due to combustion. Within the framework of sustainability and valorisation of waste, which has recently been largely discussed, great emphasis is placed on waste minimization whether in the field of its production or

Inflammatory bowel disease (IBD) is a chronic debilitating disorder characterized by various forms of chronic mucosal and/or transmural intestinal inflammation, which increases the synthesis of the hepatic acute phase proteins contributing to muscle wasting and impaired growth. For the present thesis, in vitro and in vivo models of gut inflammation were used to study the antioxidant and anti-inflammatory effects of native and pressurized whey protein isolate (WPI) and polyphenols, as these nutritional supplements could be used to ameliorate complications of IBD. Matrix metalloproteinase (MMP) induced extra cellular matrix (ECM) degradation is a crucial process involved in the development of many chronic inflammatory diseases, including cardiac remodeling and cancer metastasis. In cardiac remodeling, the presence of pathological stimuli leads to elevated MMP-9 expression and impairment of cardiac performance, which subsequently develops into heart failure. While in tumorgenesis, MMP-9 has been found to play key roles in metastasis, as it can break physical barriers for the tumor. Therefore, searching for agents targeting MMP-9 is a new direction for th

A mutation in a residue far away from the active site will greatly affect a protein’s function. Therefore, knowledge of protein dynamics will help shed light on protein function. Molecular Dynamics simulation, which is based on molecular mechanics, is a powerful tool to compute protein’s trajectories, from which useful dynamical properties can be derived for the analysis of the relationship between protein structure and
