Tall oil, a mixture of long-chain oleic and linoleic acids, was found to be a suitable lipophilic substrate for the production of sophorolipid, an extracellular glycolipid surfactant, by Candida bombicola ATCC 22214. Oxygen limitation was found to decrease sophorolipid production in this system. Partitioning experiments with sophorolipid revealed that the surfactant increases the affinity of oleic acid for the aqueous phase of a two phase system. C. bombicola therefore has potential applications in the remediation of pulp and paper effluent containing recalcitrant long-chain fatty acids

Claims that the lipids of Australian fish contain high levels of omega-6 fatty acids and arachidonic acid (AA) were investigated. This study compared chemical, physical and sensorial properties of wild and farmed fish. Farmed yellow perch fillets showed higher lipid contents (2.78% vs. 1.39%); softer texture (0.41 J/g vs. 0.53 J/g); whiter color (higher L* and lower b*values); different fatty acid profile (higher n-3/n-6 ratio), and mineral composition, when compared to their wild counterparts.
