Full textThis report will cover the work process behind creating a spectrum analyzer. The reader will be able to read about the chosen method but also the alternative methods. Apart from this the theoretical parts behind every moment will also be covered and compared to potential alternative solutions. The project has been carried out on behalf of KA Automation. The purpose of the project was to create a base for analyzing sound frequencies. The goal was to be able to identify sound properties in the form of frequencies in servo motors in for example water pumps. The idea was to be able to in a later development stage be able to identify when new frequencies have entered the audio profile which might result in the motor to be in need of service. The base is created with the help of C# and the sound library NAudio. From the result one can conclude that this program can analyze sound and display the magnitude of its frequency components and is therefore a suitable base for future development.

Full textFat-filleddairy powders have acquired a growing interest from both an economical and a scientific point of view. They include a large variety of products for numerous food applications such as infant formulae, dairy ingredients, cattle feeding, and ecapsulated flavors. Fat supramolecular structure in fat-filled dairy powders can be very complex and is often poorly understood. It gives specific physicochemical properties to fat, which in turn gives specific functional properties to the surrounding matrix. Despite its interest, there was no exhaustive academic study of the topic at the beginning of this Ph. D. Program. Furthermore, controlling the physicochemical propoerties of these powders was still rather empirical in the industry. Hence, investigating the scientific issues related to fat supramolecular structure in fat-filled dairy powders appearead to be of primary importance for both the academic and industrial communities worldwide. The aims of this Ph. D. Research program were to investigate fat supramolecular structure and properties in fat-filled dairy powders in order (1) to determine adapted chemical compositions and process parameters to orientate fat supramolecular structure in fat-filled dairy powders, (2) to reach a better understanding of the mechanisms of the formation and evolution of fat supramolecular structure and fat physicochemical properties, and finally (3) to control powder physicochemical properties. The strategy was original as the study considered powders manufactured at the laboratory in controlled and industrial-like conditions and as specific methods for lipids were adapted to fat-filled dairy powders

Full textThis work is a part of the description of ductile rupture of metals. The coupled influences of the crystalline plasticity and the porosity growth is studied by micromecanichal approach. Following existing works in ductile rupture, especially for isotropic porous materials, and using works on porous single crystals, we propose an original approach to predict the behaviour of several crystalline porous materials.First, a numerical approach has been performed. Numerical homogenization tools has been developped and used to study the resistance of single crystals with periodic microstructures. The influence of the crystalline orientation on the plastic yield limit, the hardening and the evolution of the porosity has been evaluated for different crystalline structures.These numerical results has been used to assess an approximate yield criterion we proposed. This one is derived from a limit analysis process taking into consideration the plastic crystalline anisotropy. Thus, this criterion has been assessed for different plastic crystalline anisotropies. An extension to take into account the hardening has been proposed using an evaluation of the heterogeneity of the strain field. An exemple of use of this criterion for numerical computation of polycrystal with intragranular porosity is also proposed. Finally, the particular case of single crystals obeying non Schmid plasticity (non associated plasticity) is considered. As it does not fall in the classical scope of limit analysis, an approach based on the bipotential proposed by de Saxcé has been used. A specific bipotential for the non associated crystalline plasticity proposed by Qin and Bassani has been derived. Then, a macroscopic yield criterion and a macroscopic flow rule is derived by homogenization by bipotential. Numerical tools developped for the associated plasticity have been adaptated for the non associated one. Numerical simulations are performed to assess the behaviour law obtained

Resumo: Objetivou-se com este estudo caracterizar as pisciculturas da microrregião da Baixada Cuiabana, localizada na região Centro Sul do Estado do Mato Grosso-MT. Para tanto, contou-se com a colaboração de extensionistas, técnicos de órgãos governamentais e privados e da Associação dos Aquicultores do Mato Grosso - Aquamat, que possibilitou o levantamento de dados por meio de entrevistas junto a 26 piscicultores selecionados dessa região e que representaram esse universo. Além disso, foram obtidos dados a partir de consulta bibliográfica. Os dados qualitativos foram submetidos ao teste estatístico qui-quadrado, para diagnosticar a existência de correlação entre os mesmos com 95% de confiança. Os resultados desta pesquisa permitem concluir que as espécies que compõem o grupo dos peixes redondos, estão presentes em 100% das pisciculturas amostradas e são responsáveis por 88,2% da produção total do pescado produzido na microrregião da Baixada Cuiabana. O diferencial da piscicultura é o tamanho de área de lâmina d'água, com consequente, escala de produção superior a outras regiões do país, e ainda com perspectiva de crescimento da área de lâmina d'água explorada no sistema de tanques escavados, com tendência de aumento do número de produtores e da produtividade no sistema de criação. Foram verificados no Estado algumas ações governamentais que visam o desenvolvimento da piscicultura, são elas: aprovação da lei que rege e disciplina a piscicultura, isenção de ICMS na comercialização do pescado proveniente de sistemas de cultivo, criação do projeto Criar Nagua e aporte de R$ 40 milhões, em 2009, para incentivo da atividade. No entanto, algumas ações ainda devem ser implementadas, tais como: legislação objetiva e com pessoal qualificado e suficiente para vistoriar os empreendimentos; pesquisas aplicadas na utilização de tecnologias de manejo... Abstract: The aim of this study was to characterize the fish farming in the downloaded micro region in Cuiabá, in the south center in the Mato Grosso State/MT. A field research was realized and 26 fish farmers were selected. There was the collaboration of extensionist, public and private techniques and the Aquaculture Association of Mato Grosso - AQUAMAT. Furthermore this data was obtained from bibliographic searches. The qualitative data was analyzed using the chi-square' test to diagnose the existence of correlation with 95% of confusability with them. The results of this search allow to conclude that the species that compose the fat fish group are presents in 100% in the fish farming studied and they are responsible for 88,2% in the total production of fish produced in the downloaded micro region in Cuiabá. The differential in the fish farming is the size of superficial water area with consequent superior production scale comparing to other regions in the country, and the growing perspective in the water area explored in the excavated tanks system, showing tendency to increase the fish farmers number and the productivity in the creation system. Some governor actions was verified to take the development in fish farming in the state like as: approval of the law that discipline the fish farming, not payment of the ICMS to the commercialization of the fish from the culture system, creation of the project "Criar Nagua" and contribution of the money about R$ 40 million in 2009 to incentive the activity. However, some actions must be implemented to this occurrence like as: objective legislation with qualified and sufficient people to take inspection in the fish farming, applied research to using technologies in feeding management to produce rations with better prices and quality, better technical and administrative management in the activity, planning of the fish culture that looks... Full textNo competitivo comércio mundial de artigos têxteis e de confecção observase uma tendência ao estabelecimento de alianças internacionais estratégicas entre empresas, visando, entre outros benefícios, a complementação de recursos, a redução de incertezas e o barateamento da produção. Para as empresas brasileiras de moda que desejam internacionalizar suas marcas, o estabelecimento de parcerias internacionais pode trazer vantagens competitivas importantes. O presente trabalho tem como objetivo analisar a adequação estratégica de uma empresa brasileira do setor de varejo de moda, considerando sua estratégia de internacionalização e as implicações das alianças internacionais neste processo. Busca-se analisar, portanto, se suas escolhas estratégicas, bem como suas projeções para o futuro são adequadas (fit estratégico) ao contexto internacional em que a empresa está inserida. Baseia-se no pressuposto de que é importante considerar as implicações das alianças e redes, dadas as características da empresa, bem como as implicações da sua atuação internacional na análise da conduta e do desempenho da empresa. O objeto pesquisado pelo método de estudo de caso único é a marca carioca Osklen, líder no segmento em que atua. Para o levantamento de dados, foram coletadas informações públicas disponíveis nos websites especializados no setor, bem como no site da empresa estudada. Além disso, foram realizadas entrevistas com executivos da empresa que, além de responderem a um questionário estruturado, proveram informações complementares sobre a atuação internacional da empresa. Para a análise estratégica sob a ótica relacional foi adotado o ferramental Strategic Network Analysis – SNA de Macedo-Soares (2002) que inclui um modelo, uma metodologia e listas de referência com construtos relacionais. O estudo acrescentou a essas listas novos construtos pertinentes ao setor de moda. Com base nos resultados da análise relacional, a pesquisa evidenciou que o estabelecimento de alianças tem implicações diretas na competitividade da empresa, proporcionando a potencialização e complementação de suas forças, o melhor aproveitamento de oportunidades, bem como a minimização das fraquezas internas e das ameaças do macroambiente. Foi possível observar também que as alianças da Osklen tiveram e ainda têm implicações positivas no processo de internacionalização da empresa.
In the competitive world of textile and clothing trade, there is a tendency to establish international strategic alliances between companies, seeking - among other benefits - additional resources, risk reduction, and production cost savings. For Brazilian fashion companies who want to internationalize their brands, the establishment of international partnerships can bring significant competitive advantages. The research at issue in this thesis aims to analyze the internationalization strategy of a Brazilian fashion retailer, and the implications of forming and maintaining its international alliances. Precisely, it seeks to analyze a Brazilian fashion retailer`s strategic fit (strategic choices and projections for the future) considering the international context in which the company operates. It is based on the assumption that it is important to consider the implications of alliances and networks, as well as that of the internationalization process for the company`s conduct and performance. The company focused upon is Osklen, a leader in the segment in which it operates. With a view to collecting the necessary data, in-depth interviews were conducted with executives of the company, who besides answering a questionnaire, provided information on the company`s international operations. In addition, public information available on websites specialized in the sector (also including the website of the company) was collected. The Strategic Network Analysis (SNA) tool, developed by Macedo- Soares (2002), was adopted for analyzing the data from a relational perspective. The SNA tool includes a methodology, a graphic model, in the sense of a map of the firm`s ego-net within its value net, and reference lists with relational constructs. The case study of this company added to these established reference lists new constructs that are particularly relevant to the fashion sector. Based on the results of relational analysis, the research strongly suggested that the establishment of strategic alliances has positive implications for the competitiveness of the company - providing enhancements of both company strengths and external opportunities, as well as minimization of company weaknesses and macroenvironmental threats. Finally, it was observed that Osklen’s strategic alliances have had-and continue to have-positive implications for the company’s internationalization process.

Full textThe thesis focuses on the development of methods for the titanium dioxide (TiO2) nanoparticles (NPs) characterization in food products. The study was separated distinctly into two axes. The development of the AF4-ICP-MS (I) method within the CEA Nano-Safety Platform in Grenoble and the development of the Sp-ICP-MS (II) method within the Food Safety Laboratory of the Anses in Maisons-Alfort.For the first axis, the electrostatic interactions between the particles and the AF4 membrane were studied. The surface charge (zeta potential) was measured for particles and membranes depending on several solvent parameters such as pH, ionic strength and the presence of surfactants. Following the several analyzes carried out, several solvent conditions have been identified as promoting the electrostatic repulsion between the particles and the membrane, which will make it possible to reduce the losses of particles at the level of the membrane. Several conditions were therefore directly tested for NPs analysis of TiO2 in AF4-ICP-MS. It has thus been shown that the conditions favoring electrostatic repulsions make it possible to improve the efficiency of the particles at the level of the AF4 system. However, the analyzes also showed that the TiO2 NPs were not sufficiently dispersed to obtain a reliable size distribution.The second part of the thesis aimed at first optimizing the data treatment of the Sp-ICP-MS method. Several improvements have been made such as the automatic calculation of the background-particle threshold, the calculation of the transport efficiency or the addition of quality control parameters. This data treatment was then compared to a software dedicated to analyzes by Sp-ICP-MS and made it possible to highlight that the internal spreadsheet gives results with a better accuracy, while providing additional parameters.In a second time an optimization of the Sp-ICP-MS method was carried out. Several parameters were therefore evaluated such as the choice of the titanium isotope, the acquisition time, the type of solvent to disperse the particles, as well as the sample collection mode and its flow rate.Finally, several foods were analyzed after setting up an extraction protocol for NPs. The results obtained made it possible to determine a size distribution of the NPs of TiO2 present in the samples

Full textCarmen Klein: Lung Sonography and Analysis of the Respiratory Mechanics by means of Impulse Oscilloresistometry in Healthy and Pneumonic Piglets and Porkers Institute of Bacteriology and Mycology Faculty of Veterinary Medicine University of Leipzig Germany Federal Institute for Health Protection of Consumers and Veterinary Medicine Jena Branch Germany submitted in May 1999 (157 pages, 52 figures, 34 tables, 285 references, appendix with 62 pages, 15 figures, 50 tables) Two non-invasive diagnostic methods, i.e. lung sonography and impulse oscillometry, were examined for the first time with regard to their applicability and evidence in clinically healthy as well as pneumonic weaned piglets and porkers of up to ca. 50 kg b.w. A total of 45 healthy or pneumonic swine was subjected to lung sonography. For this purpose, the animals were sedated with 2.0 mg/k b.w. diazepam. Six clinically healthy swine were studied to establish the lung area accessible to sonography in this animal species. Sonography was found to cover well the cranioventral sections of the lung often affected by pneumonias. The findings established by lung sonography in the swine showed a good coincidence with results described in literature for other species. The findings in swine revealed the following picture. ? No changes: sonography NAD ? Low-grade changes: little pronounced comet-tail artefacts ? Moderate changes: Comet-tail artefacts and consolidations or echogenic basic pattern including comet-tail artifacts ? High-degree changes: basic echogenic pattern or basic echogenic pattern plus abscess or necrosis Lung sonography findings in 34 swine were assigned to the corresponding pathological-anatomical findings. Tissue considered as unchanged from the pathological-anatomical angle was found to be without or with only minor sonographic changes, with a probability (sensitivity) of 95.65 %. In tissue exhibiting pathological-anatomical changes, sonographic findings showed pictures of moderate and high-degree changes, with a probability (sensitivity) of 74.62 % A total of 49 tissue samples was subjected to histological examination. It was not possible to infer, from the sonographic findings, the type of pneumonia diagnosed histologically in the swine. Nevertheless, a statistically confirmed correlation between the degree of pronouncedness of the histological changes and the sonographic findings was established. The pronouncedness of the histological changes was, like other factors, directly related to the air content of the lung tissue. Impulse oscillometry being a method used to analyze respiratory mechanics was applied to swine either sedated by means of diazepam (1.5 - 2.0 mg/kg b.w.) or non-sedated by medication but trained correspondingly. The animals were fixed in a canvas sling with openings for the limbs, avoiding stress, and the measuring system was adapted to the animal using a rigid face mask hermetically fitting to the animal's head. A total of 26 animals was included in the studies to examine a variety of factors influencing the IOS parameters. The following parameters were considered: Respiratory rate (Af), tidal volume (Vt), the spectral parameters resistance (R), reactance (X) and coherence (K) at 5, 10, 15 and 20 Hz each (R5, ...R20, X5, ...X20, K5, ...K20) as well as the model parameters, central (Rz) and peripheral (Rp) resistance, lung compliance (Cl) and central inertance (Lz). A variability analysis involving five non-sedated, clinically healthy swine served to examine the reproducibility of the results of three IOS measurements either performed consecutively within a few minutes, or on three consecutive days at the same time of the day. During the brief period of a few minutes, the variability of the results of measurements, for most parameters, was due to inter-individual factors while in the case of an analysis over several days, the intra-individual share of variability increased. In the context of the IOS measurements performed in eleven clinically healthy, sedated swine over a period of 62 days, development in terms of age and body weight could only partially explain the variations of the IOS parameters taking place with growth. The influence of the time of the day on IOS parameters studied in eight clinically healthy, sedated swine was found to be small; coincidence with data given in literature, however, was seen as a tendency. The influence of diazepam sedation on the IOS parameters was examined in 16 clinically healthy swine. This medication resulted in a significant reduction of Af and Vt and improved quality of IOS measurements (K5, K10, K20). In seven clinically healthy, non-sedated swine, defined respiratory situations, i.e. bronchospasm and bronchodilatation were generated by aerosol inhalation of pharmacologically active substances such as carbachol and fenoterolhydrobromide and demonstrated by IOS measurements. This state of the bronchial system is characterized by the changes in IOS parameters found at the time of the bronchospasmic reaction, in particular the vehement rise of resistance in the lower frequency range (R5), the obvious drop in reactance, especially at 5 Hz and the noteworthy rise in the model parameter, Rp. Nine clinically healthy, sedated swine were examined first with their heads in a physiological and then, in a vertical position of their heads. The severe bending in the head-neck area produced an extrathoracic obstruction. Spectral resistance (R5 - R20) and the model parameter, Rz were significantly higher at a vertical position of the head. An experimental infection of seven sedated swine with Actinobacillus pleuropneumoniae served as a model to study the course of respiratory disease. The animals were subjected to regular IOS measurements over a period of 23 days. The results of IOS measurements performed 3 days p.i. (elevated resistance over the entire frequency range, vehement rise of Rz and Lz) reflected, above all, an involvement of the extrathoracic and central areas of the respiratory tract. As a result, the modifications of defined IOS parameters (intensification of negative frequency dependency, rise in Rp, drop in Cl) which were present at least as a tendency, indicated an additional involvement of the peripheral lung areas. The results of IOS measurements over a defined period were compared with the findings from lung sonography. High correlations between IOS parameters indicating peripheral changes and lung changes detected by sonography were demonstrated. Conclusions 1.) Both diagnostic methods studied may be used in swine and will provide a valuable completion of conventional diagnosis in the respiratory tract of this species. 2.) With a high probability, lung sonography will provide evidence of the presence of visible pathological-anatomical changes in the lung and their extent in the lung area that is accessible to sonography. 3.) Impulse oscillometry provides a complex of parameters that contain information about the functional state of the entire respiratory system. This state is dependent upon numerous physiological factors (among them position of the head, growth, time of the day), pharmacologically active substances administered (e.g. diazepam, carbachol, fenoterolhydrobromide) and the presence of respiratory disease (e.g. caused by Actinobacillus pleuropneumoniae). 4.) Since the two methods reflect different facts, i.e. the morphological (sonography) and the functional (impulse oscillometry) state of the respiratory system, they supply mutually supplementing information. 5.) Both diagnostic methods offer themselves above all for use in scientific research on swine. Owing to their non-invasive character, it is possible to handle test animals in a non-offensive way. 6.) In specific cases, lung sonography may also be used in the veterinary practitioner's surgery, e.g. for the examination of animals kept for breeding

They are due to an energy transfer that occurs between a heat source, usually a flame stabilized inside a combustor, and the surrounding acoustic field and may lead to undesirable phenomena such as flame extinction, increased heat fluxes, very large sound emissions at certain frequencies, vibration, structural damage and even catastrophic failure in some cases. Given the potential consequences of such phenomena, a large research effort has been devoted to predicting the onset of combustion instabilities in modern boilers, rocket engines and gas turbines during the past few decades. Unfortunately, the theoretical framework associated with the study of thermoacoustic instabilities is complex and multi-physics and the geometry of practical combustors is an intricate arrangement of 3D cavities. Full textDifferent fields in plastic and aesthetic surgery have evolved in recent years including the transfer and injection of autologous adipose tissue. The first clinical data was presented without any real scientific support. The purpose of this thesis is to improve this technic by adding scientific evidence. There are two questions to consider: 1) Do adipose tissues have different characteristics according to their anatomical origin, and should certain regions be preferred for autografting? 2) Are there autologous growth factors to stimulate engraftment, proliferation and differentiation of grafted cells? The first part of this work consisted in analyzing the adipose tissue according to the fat depot. For this purpose, we analyzed the adipose tissues from 2 anatomical sites: the knee and the chin. The rational of this choice comes from a technical reason and a theoretical reason. Our results suggest that the two sites studied have different embryonic origins, and show that these two sites have a different molecular signature and functionality. The second part of the work deals with the in vitro effect of autologous human growth factors. on the proliferation and differentiation of human adipose stem cells (ASCs). For this purpose, we used platelet concentrates from blood samples, which can therefore be used in human therapeutic practice. It is the PRF (fibrin-rich platelet) and the PRP (platelet-rich plasma). The results of the study show that the presence of PRF or PRP in the culture medium allows a drastic increase in ASC proliferation of about 4 to 5 times. In contrast, the results show a partial inhibition of adipocyte differentiation, whatever the period and the time of contact. We analyzed the composition of different PRP sources and we identified the involvement of the TGFB pathway in the anti adipogenic effects of PRP. In contrast, the antiadipogenic effect was concomitant with the differentiation of ASCs towards myofibroblasts-like cells. In conclusion, this work allows us immediate clinical transposition using PRP during lipofilling. This work also makes it possible to highlight the probable difference in function of the adipocytes taken according to their original anatomical site. This likely has a consequence on the long term evolution of these adipose tissue grafts in case of a weight change

Full textThe aim of this research is to describe the types of orthographical errors of Iranian students in French language and to conduct a qualitative and quantitative analysis of the evolution of each type of error during the four years of bachelor degree (B.A.) in the system of higher education of the French language discipline in Iran. This descriptive analysis is followed by a etiological discussion of orthographical errors based on two key assumptions : the role of the dissimilarity between the two phonological systems of French and Persian languages and the characteristics of higher education of French language in Iran. To achieve this objective, an oral dictation with a selective text was read out to 313 Iranian students from the first to the fourth year of undergraduate French language in all public and private universities in Tehran city. The orthographical errors of these students were classified according to the typology proposed by A.Chervel and D.Manesse (1989), slightly modified, with eight types of errors from the categories of "language", "grammar" and "lexicon". The study of different types of orthographical errors of Iranian students in our sample showed that their most common errors are of two types : 1 – preorthographical errors ("language" category) which contain errors on the non-recognition of the word and on the phonetical errors ; 2 – orthographical errors which contain the grammatical errors. The study of the evolution of orthographical errors of these students showed that the errors will remain the same from the first to the last year of B.A. degree and decrease in frequency but not reach to zero level. The high frequency of phonological and grammatical orthographical errors among students in our sample confirms the mentioned assumptions of this research

Thus, a general reflexion is committed in modeling and diagnostic of induction machine defects. More particularly, we propose to study the rotor defects (broken bars in the rotor). In the first time, we develop two models of the asynchronous machine for the simulation of broken bars. We present in the continuation three methods to detect this fault. The principle of detection is based on the spectral analysis of the stator current in order to follow the evolution of the frequencies which are related to the fault. Lastly, a study of the defect in the presence of a classical vector control is presented, opening a new way towards a diagnostic in the case of speed variation. An experimental part is carried out to validate the exactitude of the theoretical results and to show the effectiveness of the developed methods

Eleven-thousand one-hundred eighty-five pigs were used in 11 experiments to determine effects of birth-weight, feeder design, and dietary astaxanthin (AX) and ractopamine HCl (RAC) on growth, carcass, and pork quality characteristics of pigs. Also, data from 27 experiments were used in meta-analyses to improve prediction of pork fat iodine value (IV). In Exp. 1, increased birth-weight resulted in greater (quadratic, P < 0.05) pre-weaning survivability, ADG, final BW, and likelihood of achieving full-value market at 181-d of age. In Exp. 2, 3, 4, 6, 7, and 8, pigs using the wet-dry feeder (WD) had greater (P < 0.05) ADG, ADFI, and final BW than those using the conventional dry feeder (CD). Pigs using WD had poorer (P < 0.05) G:F in Exp. 3 and 4, and increased (P < 0.05) HCW and backfat depth in Exp. 3, 4, 6, and 7, compared to pigs fed using CD. In Exp. 5, pigs using WD from 19 to 38 kg had decreased (P < 0.02) ADFI and better G:F than pigs using CD. Increased feeder opening of WD increased (P < 0.05) ADG, ADFI, and final BW in Exp. 5, 6, and 7; as well as HCW and backfat depth in Exp. 6 and 7. Reducing WD opening at 28- and 56-d in Exp. 7 decreased (P < 0.05) ADG, ADFI, and backfat depth. Different openings of CD had little effect on performance in Exp. 5 and 6. In Exp. 8, changing water-source of WD to a separate location during late-finishing reduced (P < 0.05) overall ADG, ADFI, and final BW. Limited responses to AX were observed in Exp. 9, 10, and 11, but ADG, G:F, final BW, HCW, and fat-free lean were improved (P < 0.05) for pigs fed RAC in Exp. 10 and 11. Total color change during retail display of LM chops for gilts and pigs fed RAC was reduced (P < 0.05) in Exp. 10 and 11, indicating their color shelf-life improved. In the meta-analyses, models using dietary PUFA with ADG, BW, or backfat depth improved the fat IV prediction from R2 = 0.45 to R2 = 0.90.

Full textThere is a wide variety of dairy matrices on the market, with very different textures. Among them, high fat stirred yogurts (≥ 5%) are particularly appreciated by the consumers for their creamy texture. The creamy texture is linked to both the level of firmness and the fat perception in mouth (oily film, melting) and is directly driven by the structure of the product. The objective of this work was to change the texture of high fat stirred yogurts by tailoring their structure without addition of any additive.High fat stirred yogurts are concentrated dispersions of microgels, where each microgel is an emulsion-filled gel (i.e. fat droplets dispersed in a protein network and interacting with it via the interface). Several levers were identified in order to modify the structure and the main ones were the state of fat, the composition and the physico-chemical state of the interface, and the size and stiffness of the microgels. These levers were modified through formulation and process, either at pilot- scale (industrial partner) or at lab-scale (mini-line of stirred yogurt production specially developed).A multi-scale approach was adopted to understand the relationship between the structure and the macroscopic properties. The physico-chemical properties of milk proteins and fat were characterized. The interfacial properties of whey proteins were measured depending on their physico-chemical state. The microstructure was accurately characterized through the sizes of fat droplets and microgels, the shape and fractal dimension of microgels (with 3D reconstruction) and the quantitative analysis of the stirred yogurt microstructure (mathematical morphology). The macroscopic properties were measured by combining rheology (firmness) and tribology (lubrication) in conditions consistent with oral processing (shearing, temperature, materials). Each identified lever was individually tested and the nature of the interface and the composition of fat droplets were proved to be interesting in modifying the macroscopic properties (firmness, lubrication) of stirred yogurts. These two levers were eventually combined in a study to take their interdependence into account. All the work led to the statement of structuring mechanisms of the stirred yoghurts depending on the conditions of formulation and process used

The observation of these two organizations can inform the general strategies implemented in both of these structures to recruit their staff. The history of the development status of ATSEM help us to understand the linkages between the general and local decisions. Coordination problems are less central to the work of managers of the CDG are in a position of intermediate labor markets ATSEM while in the city of Lyon there is a close link between mode of recruitment and team cohesion work. Observing the work of managers or board, shows the difficulties agents have to position themselves in relation to the rule. This discomfort is however to some extent of democracy guarantor. Full textIn recent years, health authorities worldwide advise for a reduction of salt and fat in daily food consumption. However, foods with reduced salt and fat content are often not appreciated by consumers, Therefore, the formulation of low-salt-fat foods that maintain acceptability is a major concern in food research. In this thesis, the multi-sensory integration and release kinetics of flavor compounds were explored as strategies to compensate for salt and fat reduction in cheese products (model cheeses and real cheeses). The objective was to better understand the mechanisms leading to aroma and salt release during mastication and to evaluate how the matrix composition and structure influence salt and aroma release profile.Multisensory integration approach to compensate for salt and fat reduction was studied in a first step. The structure and sensory perception of 24 cheese models varying in composition (2 levels of fat, 2 salt, 2 pH at renneting) and flavored with either a sardine aroma (associated to salt), a butter aroma (associated to fat) or not flavoured (control) were characterised by rheological measurements (uniaxial compression) and sensory evaluation (descriptive analysis). The results demonstrated an influence of the composition on the products structure and perceived texture. Furthermore, a significant saltiness enhancement was induced by sardine aroma while significant fat perception enhancement was induced by butter aroma. However, this influence of the aroma on other sensory dimensions depends on the texture of the products thus on their composition and structure. These results have been extended to real cheeses but with specificities. If the sardine flavor enhanced the perception of salt, only butter-sardine-flavor enhanced the perception of fat.In a second step, a physico-chemical approach was developed to explore the release kinetic of flavor compounds during in vitro breakdown using a chewing simulator. The aim was to use these data to explain the influence of the structure of model cheeses and real cheeses and their breakdown during chewing on sensory effects observed in the first step. Volatile compounds release was monitored by connecting the chewing simulator to a proton transfer reaction-mass spectrometry (PTR-MS), while salt release was monitored using a conductivity probe. Results showed that product composition and structure (fat, salt and pH at renneting) influenced aroma release, which however depends on the nature of the aroma: the more hydrophobic compounds are less sensitive to variations in fat content and more sensitive to variations in pH and therefore to the products structure. The salt release kinetic during in vitro chewing was also influenced by the composition and structure of the products. Indeed, beyond salt content which determined the amount of salt released, fat content and the pH at renneting modulated the release kinetic. In conclusion, this work showed a significant impact of the flavor compounds release kinetic and probably of temporality of sensations on the overall perception of salt and fat when consuming a complex food
