ObjectiveTo explore the impact of the dietary patterns of truck drivers on their driving behaviours and the mediation effect of fatigue between these factors.MethodsA sample of 389 male truck drivers from a transport company in Suzhou, China completed the Food Frequency Questionnaire (FFQ), the Multidimensional Fatigue Inventory (MFI), the Positive Driver Behaviours Scale (PDBS) and the Driver Behaviour Questionnaire (DBQ). The associations among dietary patterns, fatigue and driving behaviour were examined using pathway analysis.ResultsFour dietary patterns were identified based on principal component analysis: animal-derived foods, staple foods, snacks and vegetables. The pathway analysis showed that the vegetable-rich pattern had a direct positive impact on positive driving behaviour (β=0.211, p<0.001); the animal-derived pattern had a direct positive impact on errors (β=0.094, p<0.05) and ordinary violations (β=0.071, p<0.05); the snacks pattern had a direct negative impact on positive driving behaviour (β=−0.191, p<0.001); fatigue mediated the effect of dietary patterns on driving behaviours (p<0.001); and the staple foods had an indirect effect on driving behaviours.ConclusionsOverall, the driving behaviours of truck drivers are correlated with their dietary patterns. Drivers who preferred vegetables and staple foods had more positive driving behaviour, while the animal-derived food and snack patterns were related to dangerous driving behaviour. The experience of fatigue could explained the underlying mechanism between these factors.

Food literacy is described as the behaviours involved in planning, purchasing, preparing, and eating food and is critical for achieving healthy dietary intakes. Food literacy programs require valid and reliable evaluation measures. The aim of this paper is to describe the development and validation of a self-administered questionnaire to measure food literacy behaviours targeted by the Food Sensations® for Adults program in Western Australia. Validity and reliability tests were applied to questionnaire item development commencing with (a) a deductive approach using Australian empirical evidence on food literacy as a construct along with its components and (b) adapting an extensively-tested food behaviour checklist to generate a pool of items for investigation. Then, an iterative process was applied to develop a specific food literacy behaviour checklist for program evaluation including exploratory factor analysis. Content, face, and construct validity resulted in a 14-item food behaviour checklist. Three factors entitled Plan & Manage, Selection, and Preparation were evident, resulting in Cronbach’s alpha 0.79, 0.76, and 0.81, respectively, indicating good reliability of each of these factors. This research has produced a validated questionnaire, is a useful starting point for other food literacy programs, and has applications globally.

Food waste is a crucial and persistent issue globally. The household food waste phenomenon in Malaysia has emerged as increasingly serious with the rapid rise in its generation by domestic households. This study explored youth behaviour toward food waste and its disposal behaviour among the university students of Faculty Business and Management, Universiti Teknologi MARA, Puncak Alam Campus. Factor analysis was applied to identify the underlying factors of food waste and disposal behaviour, while the independent t-test served to examine gender differences regarding the factors. In particular, Pearson’s Chi-square Test of Independence was applied to examine the association between gender and food waste, food planning, and food recycling behaviors. To this end, a self-administrated questionnaire was used to collect data based on the convenience sampling method in which a sample size of 111 respondents were engaged with. Factor analysis successfully identified three factors as a result, namely food disposal, knowledge of food waste, and involvement in preventing food waste. The independent t-test also revealed significant gender differences among the students on food disposal behavior, whereas no significant gender differences were found with the actors of knowledge of food waste and involvement in preventing food waste. Additionally, there was no association between gender and food recycling, food planning, and food waster behaviours, respectively. As such, these findings can increase student participation and commitment to reducing food waste as it is fast becoming an issue for all.

Purpose: The web-based Food Behaviour Questionnaire (FBQ) includes a 24-hour diet recall, a food frequency questionnaire, and questions addressing knowledge, attitudes, intentions, and food-related behaviours. The survey has been revised since it was developed and initially validated. The current study was designed to obtain qualitative feedback and to validate the FBQ diet recall. Methods: “Think aloud” techniques were used in cognitive interviews with dietitian experts (n=11) and grade six students (n=21).Multi-ethnic students (n=201) in grades six to eight at urban southern Ontario schools completed the FBQ and, subsequently, one-on-one diet recall interviews with trained dietitians. Food group and nutrient intakes were compared. Results: Users provided positive feedback on the FBQ. Suggestions included adding more foods, more photos for portion estimation, and online student feedback. Energy and nutrient intakes were positively correlated between FBQ and dietitian interviews, overall and by gender and grade (all p<0.001). Intraclass correlation coefficients were ≥0.5 for energy and macronutrients, although the web-based survey underestimated energy (-10.5%) and carbohydrate (-15.6%) intakes (p<0.05). Under-estimation of rice and pasta portions on the web accounted for 50% of this discrepancy. Conclusions: The FBQ is valid, relative to 24-hour recall interviews, for dietary assessment in diverse populations of Ontario children in grades six to eight.

This is a treatise of consumer behaviour in the Czech foods market, respectively, organic food market. This concerns comprehensive analysis of consumer behaviour, which places great emphasis on the motivating factors and barriers, which substantially influence the individual consumers when deciding between conventional foods and organic foods and are operationally broken down into a set of empirical indicators. The database comes from a questionnaire survey to ascertain the trends in the development of the consumption of conventional foods and organic foods including the shopping behaviour of the individual consumers. The results of the questionnaire survey were evaluated by analysis of the qualitative features and other sophisticated statistical methods were also used. Based on the results obtained, the influence of the individual factors on the decision-making behaviour of the consumers when purchasing foods. The main factors that influence consumer behaviour were considered to be the income of the consumers, price of the foods, attitudes that influence the purchase of foods.

Background: Fast foods are convenient to people who lives a busy lifestyle. Nevertheless, uncontrolled consumption of fast food can lead to obesity. About 84% of Malaysian students consume fast food and are often unable to meet recommended nutrient intake due to snacking habits and skipping meals. Objective: To identify food access and fast food consumption behaviour among Health Sciences students at UiTM Puncak Alam. Methods: This cross-sectional study was done among Health Sciences students at UiTM Puncak Alam. The questionnaire was adapted from ‘Fast Food Consumption and Obesity’. A total 267 from Year 2 and Year 3 was participated. The questionnaire consists of 27 questions including demographic data, food access and fast food consumption behaviour. Results: Majority of the students have problem in transportation for food access and consumed fast food many times per month. However, the study finding showed no relationship between transportation problem, fast food consumption behaviour and BMI. Conclusion: With the advance in technology food can be ordered online and can be delivered by the restaurant. Therefore, there was no relationship between transportation problem and fast food consumption behaviour. Future research should focus on effect of fast food consumption behaviour on students’ academic performance and health related quality of life.

PurposeThe purpose of this paper is to explore the associations between food literacy, consumer profiling and purchasing behaviour in a sample of Italian consumers.Design/methodology/approachParticipants (N = 194) completed an online survey including personal data, two questionnaires on purchase behaviour and food consumption, the General Trust Scale (GTS), a questionnaire assessing individual chronotype and two scales about food literacy: one investigating nutritional knowledge (short food literacy questionnaire, SFLQ) and the other focussing on procedural skills (self-perceived food literacy scale, SPFL). Associations between food literacy, consumer profiling and purchase behaviour were analysed with linear regression models.FindingsParticipants with specific education in nutrition reported higher scores in food literacy. The final score of food literacy was predicted by a greater attention to nutritional content and nutritional properties of products. Women paid more attention to nutritional properties than men, and they obtained higher scores in SFLQ. Evening types obtained lower scores in SFPL compared to intermediate and morning chronotypes. Body mass index (BMI) was negatively correlated to SPFL score, while it was associated with the easy availability of a product, so that obese (BMI ≥ 30) subjects considered the easy availability of a product more important compared to non-obese ones (BMI < 30).Originality/valueThis study investigates the influence of personal and psychometric variables of consumer profiling on food literacy and consequently on purchase behaviour, paving the way for implementing healthier food consumption policies. These findings reinforce the primacy of specific education in building healthy eating habits.

The objective of this study was to examine the association between the scores of the Children's Eating Behaviour Questionnaire (CEBQ) and BMI in a sample of Portuguese children. Using a cross-sectional design, a sample of 240 children (123 females and 117 males) aged 3–13 years were recruited from clinic and community-based settings. Parents completed the CEBQ to indicate their child's eating style for three ‘food approach’ and four ‘food avoidant’ sub-scales. Factor analyses revealed an underlying structure similar to the original CEBQ. Children's height and weight were measured to calculate BMI and Centre for Disease Control BMI z-scores. Hierarchical regression analyses controlling for gender, age and socioeconomic status indicated that all CEBQ sub-scales were significantly associated with BMI z-scores (P = 0·03 to < 0·001). Food approach scales were positively related to BMI z-scores (β = 0·33–0·51) and food avoidance negatively related (β = − 0·17 to − 0·46). Our results support the use of the CEBQ to further understand eating style as a behavioural pathway to obesity.

Infant nutrition may influence eating behaviour and food preferences in later life. The present study explores whether exclusive breast-feeding duration and age at introduction of solid foods are associated with children's eating behaviour and fruit and vegetable intake at age 5 years. Data were derived from the Amsterdam Born Children and their Development study, a prospective birth cohort in the Netherlands, and included 3624 children. During infancy, data on infant nutrition were collected. Child eating behaviour (satiety responsiveness, enjoyment of food, slowness in eating and food responsiveness) was assessed with the Children's Eating Behaviour Questionnaire; and fruit and vegetable intake was calculated from a validated child FFQ. Both questionnaires were filled in by the mothers after their child turned 5 years. Exclusive breast-feeding duration was not associated with later eating behaviour, although longer exclusive breast-feeding was significantly associated with a higher vegetable intake at age 5 years. Compared with the introduction of solid foods at age 6 months, introduction before the age of 4 months was associated with less satiety responsiveness at age 5 years (β − 0·09; 95 % CI − 0·16, − 0·02). Introducing solid foods after 6 months was associated with less enjoyment of food (β − 0·07; 95 % CI − 0·12, − 0·01) and food responsiveness (β − 0·04; 95 % CI − 0·07, − 0·01). Introducing solid foods before the age of 4 months was associated with a higher fruit intake compared with introduction at 6 months. These findings suggest that prolonged breast-feeding and introduction of solid foods between 4 and 6 months may lead to healthier eating behaviour and food preferences at age 5 years.

Fondazione Bruno Kessler is developing a mobile app prototype for empowering citizens to improve their health conditions through different lifestyle interventions that will be incorporated into a mobile application for lifestyle promotion of the Province of Trento in the context of the Trentino Salute 4.0 Competence Center. The envisioned interventions are based on promoting behaviour change in various domains such as physical activity, mental health and nutrition. In particular, the nutrition component is a self-monitoring module that collects dietary habits to analyse them and recommend healthier eating behaviours. Dietary assessment is completed using a Food Frequency Questionnaire on the Mediterranean diet that is presented to the user as a grid of images. The questionnaire returns feedback on 11 aspects of nutrition. Although the questionnaire used in the application only consists of 24 questions, it still could be a bit overwhelming and a bit crowded when shown on the screen. In this paper, we tried to find a machine-learning-based solution to reduce the number of questions in the questionnaire. We proposed a method that uses the user’s previous answers as additional information to find the goals that need more attention. We compared this method with a case where the subset of questions is randomly selected and with a case where the subset is chosen using feature selection. We also explored how large the subset should be to obtain good predictions. All the experiments are conducted as a multi-target regression problem, which means several goals are predicted simultaneously. The proposed method adjusts well to the user in question and has the slightest error when predicting the goals.

Abstract:
During nutrition intervention programs, some form of dietary assessment is usually necessary. This dietary assessment can be for: initial screening; development of appropriate programs and activities; or, evaluation. Established methods of dietary assessment are not always practical, nor cost effective in such interventions, therefore an abbreviated dietary assessment tool is needed. The Queensland Nutrition Project developed such a tool for male Blue Collar Workers, the Food Behaviour Questionnaire, consisting of 27 food behaviour related questions. This tool has been validated in a sample of 23 men, through full dietary assessment obtained via food frequency questionnaires and 24 hour dietary recalls. Those questions which correlated poorly with the full dietary assessment were deleted from the tool. In all, 13 questions was all that was required to distinguish between high and low dietary intakes of particular nutrients. Three questions when combined had correlations with refined sugar between 0.617 and 0.730 (p<0.005); four questions when combined had correlations with dietary fibre as percentage of energy of 0.45 (p<0.05); five questions when combined had a correlation with total fat of 0.499 (p<0.05); and, 4 questions when combined had a correlation with saturated fat of between 0.451 and 0.589 (p<0.05). A significant correlation could not be found for food behaviour questions with respect to dietary sodium. Correlations for fat as a function of energy could not be found.

The organic food consumption in Portugal and in the world has increased throughout the years, so the understanding of the behavior and the profile of the organic food consumer is important, especially for the food industry sector. The aim of this work is to identify and characterize the Portuguese organic food consumer. Specifically, we study the frequency of organic food purchase, the places of purchase, the types of organic food that are consumed more often, the motivation to purchase this food, the perception about organic food, the consumer´s lifestyle, and the demographic characteristics. In this work, we introduce a literature review on the theme of organic food and a questionnaire, which was used to study the aforementioned topics and has been answered by 602 people through the internet. After the dada analysis using univariate analysis, Qui-Square test and kruskal-Wallis test, we were able to draw some conclusions about the Portuguese consumer profile. We conclude that the Portuguese consumers who regularly buy organic food are women between 35 and 54 years old. The consumers tend to buy organic vegetables, fruits and eggs, and they prefer to buy these food items in local and street markets. Moreover, the consumer’s main motivations to buy organic food are because they are healthier and more flavorful

Abstract:
Introduction: Currently, 1 in 7 children are classified as obese, which represents an obesity rate two times higher than that of the last 25 years. Part of the solution to address the positive energy balance underlying weight gain is to target the specific eating behaviours and factors that lead to food intake. One widely used tool to measure eating behaviour is the Three-Factor Eating Questionnaire (TFEQ). Objective: The primary objective of this study was to validate scores of the 21-item Child version of the Three-Factor Eating Questionnaire (TFEQ-R21 C), by examining validity evidence and reliability of TFEQ-R21 C responses in a sample of Canadian children and adolescents. The secondary aim was to examine the associations between the TFEQ-R21 C factors and body mass index (BMI) z-scores and food/taste preferences. Methods: The participants consisted of a sample of 158 children, 63 boys (mean age: 11.5 ± 1.6 years) and 95 girls (mean age: 11.9 ± 1.9 years), recruited from English schools in the Ottawa area. To assess eating behaviour, participants filled out the TFEQ-R21 C, the Power of Food Scale, and the Leeds Food Preference Questionnaire. Height and weight measurements were taken using a stadiometer and a digital scale. An exploratory factor analysis with oblique rotation and an item analysis were conducted to determine the factor structure and validity of the questionnaire. A median split on Cognitive Restraint (CR), Internal Uncontrolled Eating (UE 1), External Uncontrolled Eating (UE 2), and Emotional Eating (EE) was used to dichotomize factor-based scores into high and low categories for each factor, to allow for group comparisons. Bivariate correlations explored relationships between weight, BMI and BMI z-score, and food and taste preference, by sex and age group. To determine if BMI, BMI z-scores, and food/taste preferences were associated with factor scores of the TFEQ-R21 C, two-way ANOVAs were conducted. Results: The exploratory factor analysis replicated the Emotional Eating (EE) and Cognitive Restraint (CR) scales of the original TFEQ-R21, whereas the global factor of Uncontrolled Eating (UE) produced two subscales: Internal Uncontrolled Eating (UE 1) and External Uncontrolled Eating (UE 2). Item 17 did not load onto any of the factors and was subsequently removed. The four-factor model, with item 17 removed (FFEQ-R21 C: 20-item Child version Four-Factor Eating Questionnaire), accounted for 41.2% of the common variance in the data and showed good internal consistency (α= 0.81). The factors of UE 1 (r= 0.27, p<0.001), UE 2 (r= 0.36, p<0.0001), and CR (r= 0.20, p= 0.04) correlated significantly with EE. Younger children reported higher UE 1 scores [F(1,143)= 3.99, p=0.048, f2= 0.028] and CR scores [F(1,143)= 3.99, p= 0.001, f2= 0.089]. Boys who reported a high UE 1 scores had a significantly higher weight [F(1,58)= 6.44, p=0.014, f2= 0.117 ] and BMI z-scores [F(1,58)= 4.45, p=0.039, f2=0.083], compared to those who reported low UE 1 scores. Children with overweight or obesity [F(1,143)= 2.75, p<0.001. f2= 0.035] reported higher EE scores, compared to children of normal weight. Children with high UE 1 scores reported greater preference for high protein and fat foods, and high fat savoury (HFSA) and high fat sweet (HFSW) foods, compared to those with low UE 1 scores. Higher preference for high protein, fat, and carbohydrate foods, and HFSA, HFSW, and low fat savoury foods (LFSA) foods was found in children with high UE 2 scores, compared to those with low UR 2 scores. Children and adolescents with low CR scores reported greater preference for high protein, carbohydrate, and fat foods, compared to those who reported high CR scores. Discussion: This study showed adequate reliability and validity evidence of the TFEQ-R21 C scores, and that the questionnaire is best represented by a 20-item four-factor model in our sample. The FFEQ-R21 C was able to identify relevant eating behaviour traits associated with higher BMI z-scores and food preferences in both sexes and age groups, which were mainly in accordance with previous findings in children and adolescents. These results support the utility of the questionnaire for the assessment and identification of problematic eating behaviour and food preferences in the Canadian pediatric population. Younger children reported higher influence of the psychological constructs of eating behaviour (CR, UE 1, UE 2, and EE), compared to older children. This study provides preliminary evidence that FFEQ-R20 is a reliable and valid self-report tool to measure eating behaviour in children and adolescents to characterize those at higher risk for excess weight. However, further research is needed to examine the validity of the questionnaire in larger samples and in other geographical locations across Canada, as well as the inclusion of extraneous variables such as parental eating behaviour, socioeconomic status, and physical activity levels.

Abstract:
The World Health Organisation ([WHO], 2007) declared obesity as the public health threat of the 21st century. Currently, the Maltese adult population ranks as the heaviest in the Euro‐Mediterranean region. In response to a gap in Maltese research on the area of obesity and food consumption, this PhD aimed to gather local data to unearth behavioural‐psychological factors that could be implemented in local interventions. The focus of the PhD was narrowed to women with families based on literature that has identified motherhood as a salient point of transition that amplifies the weight trajectories for adult women. A mixed‐methods approach guided the methodology of the PhD programme with four studies carried out sequentially in two phases. The findings of the qualitative phase revealed that weight management for Maltese mothers was enmeshed with gender norm expectations surrounding motherhood. For mothers with a higher BMI, their relationship to food was a significant barrier to weight loss maintenance. Mothers with a lower BMI or who maintained their weight pointed at their food planning ability to manage their diet. The quantitative phase extended literature on the dimensional validity of the Dutch Eating Behaviour Questionnaire (DEBQ) (Van Strien et al., 1986) by reproducing its factor structure and ascertaining its reliability among Maltese women. This was the first validation of an eating behaviours assessment tool in Maltese and the first validation of the DEBQ in a Semitic language. Finally, Structured Equation Modelling revealed how food planning could act as a mediator to restrained and external eating styles to increase fruit and vegetable snacking and decrease high calorie snacking. In addition to the implications to theory, it is believed that these findings have worthy practical implications through tailored eating behaviour interventions, by targeting food planning to counterbalance the impact of external eating among Maltese mothers.

This thesis offers a case study analysis of the food waste in schools focusing on the pupils’ knowledge of foodwaste issues. The thesis uses a project initiated by the municipality of Uppsala which aims at reducing theamount of food wasted in the schools restaurants as a case study. The knowledge of food waste issues frompupils of Uppsala has been assessed with questionnaires. The amount of pupil’s food waste generation is alsoshown in the thesis. At first it is seen that older pupils waste more than younger ones. Looking at theirknowledge, pupils in general ignore the environmental and ethical consequences of food waste but are aware ofthe economic consequences. The current food waste reduction project implemented by the municipality ofUppsala seems to work only for the schools where the pupils are aware of the incentive in place. This incentiveaims to reward the pupils from the schools which reduce their food waste other time. The results obtained fromthe questionnaires, the results from current food waste reduction project and the interviews (with the person incharge of the food waste reduction project and a kitchen staff) are analyzed through a theoretical frameworkbased on environmentally significant behavior theory. Later, suggestions are made in order to improve thecurrent project. For instance, it is advised to review the current incentive depending on the schools by working incooperation with the schools and the pupils. Also, the pupils need to obtain a better basic understanding of foodwaste issues through instruction in formal and informal ways. The project itself could be reviewed in order tobetter integrate the pupils’ opinions and their degree of understanding of the food waste issues but also tocooperate more with the different stakeholders in the project.

Increasing recognition of the importance of diet in the etiology of disease has highlighted the need for methods to determine dietary intake of high risk nutrients. The Behavior Risk Factor Survey is a food frequency questionnaire used to assess dietary habits. This project used the BRFS to determine if perceived dietary fat intake correlated with actual dietary fat intake in three elderly population groups. Results show that subjects who perceived their diet to be low in fat, consumed fewer servings of high fat foods and had lower overall weekly fat intakes. Subjects stating no change in diet had a higher weekly intake than subjects claiming a change in diet. These finding suggest that the BRFS is a rapid, inexpensive data collection method which can be used to determine differences between perceived and reported behaviors. Results from this investigation may be used to develop educational programs targeting the elderly.

Objective: To assess the effect of upward feedback on the perception gap of manager-rated and subordinate-rated managerial behavior scores using the Multifactor Leadership Questionnaire (MLQ). Design: Phase I questionnaires assessed the use of upward (subordinate to manager) feedback and were used to form Feedback and Comparison groups. Phase II questionnaires included feedback, attitudinal, and demographic questions and the MLQ. MLQ scores were compared between the two groups. Subjects/setting: Directors of Food and Nutrition Services and Clinical Nutrition Managers and their respective subordinates in a hospital setting. Statistical analyses performed: General Linear Model (using SAS Version 9.2, Cary, NC) was used to determine the relationships between MLQ scores and questions of interest. Results: Upward feedback practices in both the Feedback and Communication groups did not correspond to the Phase I reports. Feedback managers did not have higher MLQ scores based on feedback group, manager tenure, and manager implementation of feedback. Managers whose subordinates who enjoyed their jobs had higher subordinate-rated MLQ scores. Conclusions: Policies and practices of upward evaluation methods are not clear and need to be studied further in a hospital dietetics setting.

This study evaluated the ability of a promised charitable donation to the Heart and Stroke Foundation by a corporate sponsor, Bell Canada, to stimulate a higher mail questionnaire response rate. In addition, the study assessed whether the intention to complete the questionnaire and its eventual return by mail would increase donations through a "foot-in-the-door" (FITD) effect during Heart and Stroke Month. Three study groups which included an experimental group (the Heart Group) and two control groups (the Bell and Mail Only Groups) were established by random assignment from a randomized cluster-sample of 910 households in the City of Kanata, a satellite community west of Ottawa, Ontario. The promised charitable donation by a corporate sponsor stimulated a greater response rate for personally-delivered mail questionnaires, and a foot-in-the-door effect associated with returning a mail questionnaire subsequently increased donations to the Heart and Stroke Fund. O The Three Factor Eating Questionnaire versão reduzida de 21 itens (TFEQ-R21) vem sendo proposto como um meio eficaz para avaliar estes três padrões de comportamento associados ao hábito alimentar. Objetivo: Traduzir e aplicar o TFEQ-R21 em uma amostra de mulheres brasileiras e analisar a relação dos comportamentos de RC, AE e DA, entre si, e com o consumo alimentar e os parâmetros antropométricos: índice de massa corporal (IMC), circunferência abdominal (CA), porcentagem de gordura corpórea (%Gord). Método: Após os procedimentos de tradução e autorização do autor do TFEQ-R21 para uso no Brasil, uma amostra casual de 125 mulheres dentre 800 trabalhadoras, contratadas ou voluntárias, do Hospital das Clínicas da Faculdade de Medicina da Universidade de São Paulo, interessadas em receber orientação nutricional, assinaram o termo de consentimento, responderam ao TFEQ-R21 e a um questionário semiquantitativo de consumo e freqüência alimentar, e foram submetidas às medidas do IMC, CA e %Gord. O Alpha de Cronbach foi calculado para avaliar a consistência interna do TFEQ-R21. Índices de correlação de Pearson e equações de retas de regressão linear simples foram calculadas entre as variáveis relacionadas, bem como modelos de regressão linear múltipla tendo IMC, CA e %Gord como desfechos e os comportamentos de RC, AE e DA como variáveis independentes. O valor de 0,05 foi usado para definir o nível de significância de todas as operações estatísticas. Resultados: O valor de Alpha de Cronbach calculado para o TFEQ-R21 traduzido foi de 0,85. Encontraram-se associações significantes (p<0,05) entre AE e DA, assim como entre AE e IMC, CA, %Gord, e consumo de carboidratos e carnes. O DA associou-se aos mesmos parâmetros, mas também ao consumo de laticínios, gorduras e doces. Conclusão: O TFEQ R21 traduzido para o idioma português mostrou-se um instrumento adequado para identificar os padrões de comportamento associados ao hábito alimentar, e sua aplicação e análise pode servir como ponto de partida para a adoção de novas estratégias de abordagem de orientação nutricional em programas voltados ao controle de peso de brasileiros.
Introduction: The cognitive dietary restriction (CR intentional restriction of food consumption for ponderal regulation), the emotional eating (EE food consumption triggered by feelings, emotions or psychic stress) and uncontrolled eating (UE loss of criterion in relation to selection, frequency, quality and quantity of foods consumed) have been studied as constraining factors of dietary behavior and associated, in most part, to failure of attempts of weight control or reduction, through clinical methods. The Three Factor Eating Questionnaire 21 item reduced version (TFEQ-R21) has been proposed as an effective mean for assessing these three behavior patterns associated to eating habits. Objective: To translate and apply the TFEQ-R21 in a sample of Brazilian women and analyze the relationship of the CR, EE and UE behaviors, with each other, and with food consumption and the anthropometric parameters: body mass index (BMI), abdominal circumference (AC), percentage of body fat (% Fat). Method: After translations and authors authorization procedures for the TFEQ-R21 use in Brazil, a casual sample of 125 women among 800 employees or volunteer workers of the Hospital das Clínicas of Faculdade de Medicina da Universidade de São Paulo, parties interested in receiving nutritional orientation, signed the informed consent for, responded the TFEQ-R21 and a semi-quantitative eating frequency and consumption questionnaire, and were submitted to measurements of BMI, AC and %Fat. Cronbach Alpha was calculated to assess the internal consistency of TFEQ-R21. Pearson correlation indexes and line equations of simple linear regression were calculated between the related variables, as well as multiple linear regression models having BMI, AC and %Fat as outcomes and the CR, EE and UE behaviors as independent variables. The value of 0.05 was used to define the level of significance of all statistical operations. Results: The Cronbach Alpha value calculated for the translated TFEQ-R21 was 0.85. Significant associations were found (p<0.05) between EE and UE, as well as EE and BMI, AC, % Fat and consumption of carbohydrates and meats. UE was associated to the same parameters, but also to the consumption of dairy products, fats and sweets. Conclusion: The TFEQ-R21 translated into Portuguese was shown to be an adequate instrument for identifying behavior patterns associated to eating habit, and its application and analysis can serve as starting point for the adoption of new nutritional orientation approach strategies in programs directed towards weight control of Brazilians.

Background and objective: Researchers have been looking for a way to predict future emission rates, and come up with explanations on how to tackle the issue of global warming through changes in individual behavior for decades. The focus of these studies have, on the other hand, focused more on nutritional bases rather than cultural. This study’s objective is to provide a method, as a useful tool in further analysis on GHG-emission based on cultural behavioral factors such as socio-economic status as well as age, sex, etc. with diet as emission prediction factor. This could be a stepping stone toward future research on Co2e related to e.g. physiological factors such as BMI, blood pressure and diseases. Method: With the use of data obtained from the FFQ questionnaire within the VIP-program, combined with estimates of greenhouse gas-emission (Co2e) attributed to specific diets obtained from Röös, estimations of individual Co2e emission-levels were calculated using the software “R”. The dataset contained 159 687 observations and 152 different variables. The data was obtained from the Department of Public Health and Clinical Medicine at Umeå University. Portions sizes were mainly collected from the Swedish Food Composition Database. Box-plots and regression analysis were made to illustrate the main findings. Result: The result was a new dataset that could be applied to any population to estimate Co2e-emission on individual level based on an FFQ, given that the FFQ have the same structure as the one in the VIP. The variables that contributed to the highest amount of Co2e were animal products i.e. butter, milk and meat. Chicken, pork and fish were not nearly as Co2e heavy as the meat products containing beef such as “steak”, “minced meat” and “hamburgers”. The regression analysis showed that higher age had a positive effect on reducing emission, as well as being a woman. Education showed an increase in Co2e for higher education. There were some small differences among municipalities. Marital status gave a slight decrease in the regression, meaning married couples emits more than singles. Exercise showed an increase in Co2e for active individuals in the regression analysis. However, the most noticeable result were sex, yielding a relatively big decrease in Co2e-emission for women compared to men. Conclusion: People at younger ages, within the observed age groups 40-60, seemed to reduce their carbon footprint more in relation to the higher age groups over the last 20 years. Overall, the general diet-based carbon footprint in Västerbotten seems to have increased slightly during the last 17 years. A remarkable dip were noticed in 2003, however this might not have been due to any behavioral changes, since the trend broke in 2006 and instantly receded back to the normal levels. This study confirms the fact that meat and dairy products are responsible for a significant amount of the diet-based emission. This topic needs to be studied more, and with this method of applying GHG-emission measures to individual diet-based data, a gate has been opened for a new field of research.

Different methods have been developed by researchers in modelling wine consumers purchase behaviour. The quality of a food product is described by a set of characteristics ascribable to the intrinsic and extrinsic product attributes (Olson and Jacoby, 1972). Price, brand, region of origin, grapes and gained awards are the key extrinsic attributes and physical characteristics of the wine such as taste and flavour are intrinsic attributes. This paper addresses the problem of measuring the intrinsic attributes that characterise the wine, based on specific characteristics and the impact on consumers in terms of preferences. To this end, a fractional factorial experiment held on a selection of white wines of the Alto Adige/Südtirol province in Italy. The sensorial experiment involved a voluntary sample of 33 mild wine consumers and concerned 6 grape varieties typical of that territory. For each variety, two producing cellars were selected for a total of 12 evaluated wines. The experiment followed a double-blind administration procedure to the sample and a paper questionnaire was used to elicit the consumers’ opinions on the tasted wines. The results show that intrinsic attributes, such as taste-olfactory intensity, harmony and olfactory complexity, are the drivers used in combination by consumers to rank wines in order of preference.

This study investigates the factors affecting consumers’ decisions to purchase organic products. A self-administered questionnaire was used to collect the data from consumers who are primary shoppers for their households at five retail stores in the Bangkok metropolitan area. Using psychological and socio-demographics variables, exploratory factor analysis and logistic regression was used to examine consumers’ decisions to purchase organic products. Results suggest that consumers who are knowledgeable about organic products often purchase groceries at natural/health food stores, are concerned about health and food safety, and are more likely to purchase organic products. In addition, middle-aged female consumers who are highly educated and in the high income group are more likely to be organic consumers. In contrast, households who often dine out or consume takeaway food are less likely to purchase organic products.

The term Internet memes was coined to describe the phenomenon of replicating and spreading messages via social media. This study explores individual personality traits in relation to Internet meme behavior in the context of online news about functional foods based on the expectancy-confirmation process, and also the correlates between value perception and consequential behavior. An online convenience sample was used to collect data by posting on LINE, the instant communication tool, and a total of 343 questionnaires were returned, 252 valid questionnaires were used for structural equation modeling and hypothesis verification. The results found that: (1) Neuroticism was positively related and Extraversion was negatively related to value expectation for consuming functional foods; (2) The food value for health expectation participants can predict replication and usage satisfaction; (3) The usage satisfaction and replicative behavior can predict the frequency of spread messages. The results suggest that consumers with Neuroticism will need to reduce processes of Internet memes to online fake news about functional food.

The aim of this chapter is to identify whether frontline employees perceived themselves as having feelings of sexism, ageism, and appearance discrimination against customers in retail services. This investigation is a quantitative research, a conclusive description (Gil, 2002), and ex post facto study, which utilises a survey to collect the data and sampling by convenience. Three protocols are used (1) to format the questionnaire, (2) to produce 12 different standards combining age, gender, and appearance, and (3) to create social classification (Rattam, 1998). In a previous study (Palmeira, Palmeira, & Santos, 2012), customers of different ages and genders perceived some degree of prejudice and discrimination in face-to-face retail services. Now, on the other side of the coin, frontline employees who work in Fashion and Food retailing recognise that there is prejudiced behaviour against customers, depending on their age, gender, and appearance, when providing them with face-to-face retail services. More than 95% of female and more than 64% of male attendants believe that well-dressed, young female customers are given priority when being served. Almost 80% of female and only 58% of male frontline workers believe that badly-dressed middle-aged men (not younger men) are the last to be served when there is no clear queuing process in the retail spatial area. This context strongly suggests the growing importance of an interpersonal skills training process for an organisations' staff as a way of avoiding behaviour that makes the customers think that there are prejudice and discrimination in the service process, as well as ASL development (T&D against Ageism, Sexism, and Lookism) being part of the strategic statements.

OBJECTIVE To determine whether a 2-year family-based intervention using frequent contact and limited expert involvement was effective in reducing excessive weight compared with usual care. METHODS Two hundred and six overweight and obese (BMI ≥85th percentile) children aged 4 to 8 years were randomized to usual care (UC) or tailored package (TP) sessions at university research rooms. UC families received personalized feedback and generalized advice regarding healthy lifestyles at baseline and 6 months. TP families attended a single multidisciplinary session to develop specific goals suitable for each family, then met with a mentor each month for 12 months, and every third month for another 12 months to discuss progress and provide support. Outcome measurements (anthropometry, questionnaires, dietary intake, accelerometry) were obtained at 0, 12, and 24 months. RESULTS BMI at 24 months was significantly lower in TP compared with UC children (difference, 95% confidence interval: −0.34, −0.65 to −0.02), as was BMI z score (−0.12, −0.20 to −0.04) and waist circumference (−1.5, −2.5 to −0.5 cm). TP children consumed more fruit and vegetables (P = .038) and fewer noncore foods (P = .020) than UC children, and fewer noncore foods were available in the home (P = .002). TP children were also more physically active (P = .035). No differences in parental feeding practices, parenting, quality of life, child sleep, or behavior were observed. CONCLUSIONS Frequent, low-dose support was effective for reducing excessive weight in predominantly mild to moderately overweight children over a 2-year period. Such initiatives could feasibly be incorporated into primary care.

There are many factors that influence children's eating, and the role of parents is outstanding. During our research, we studied children's eating behaviour and were also interested in parents' attitudes towards their children's eating behaviour. In the course of our investigation, we used a part of the already validated questionnaire, DEBQ. Our sample was made up of primary school children and their parents. A total of 172 children and their parents completed the questionnaire. The results show that parents consider the child's nutritional characteristics differently than the child itself. We found that parents overestimate their children's self-control about delicious food.

The young generation born in the mid-1990s and later is referred to as Generation Z. As the only post-war generation, they grew entirely on the World Wide Web and has been increasingly associated with the rapid increase in daily use of technology on a daily basis. Mainly the Internet and smart mobile phones have become an indispensable part of their lives and are often used in consumer preferences and during shopping. The paper focuses on the analysis and evaluation of selected results of Generation Z research in the Czech Republic in relation to shopping behaviour and on-line shopping. In terms of methodology, the research is based on an extensive quantitative questionnaire survey among members of a given generation in the Czech Republic. The results show that Generation Z a bit surprisingly prefers shopping in a brick-and-mortar store compared to online shopping. On the other hand, Czech young population not surprisingly spends the largest expenditures on food, entertainment, clothing and footwear, housing and travel, and this product mix is also reflected in the frequency of visits. This finding may be important for retailers and managers because, despite the ever-increasing implementation of smart technologies and an online lifestyle across all generations, brick-and-mortar businesses are still competitive to face this trend.

Abstract:
The article deals with the research of food preferences among the inhabitants of the South Moravian Region. The text focuses on attitudes research, examining whether respondents prefer local or regional food when buying. Research also provides information of regional food labeling. The aim of the text is to present theoretical knowledge about the labeling of regional foods on the basis of relevant literature, and also to find out whether consumers are inspired by this information or whether these are key information when buying them. The data are also based on a questionnaire survey conducted from February and March 2022. The main results of the text can be considered the presentation of particular brands for regional foods, as well as finding out the preferences of consumers in the South Moravian Region. Food labeling can influence consumer behavior and food selection when shopping. However, the question is whether consumers know, use and are influenced by the labeling system. This text tried to answer these research questions. The results of the sociological survey can be seen as a contribution to the debate on the promotion of regional foods. The main finding is the increase of online shopping during the Covid-19 pandemic. It can be expected that the issue of regional foods will continue to develop dynamically in the coming years, also with regard to discussions concerning food self-sufficiency.

Obesity has dramatically increased during the last decades and is currently one of the most serious global health problems. The consequences of obesity for physical health are well established. The development of human obesity is attributed to overeating. Studying eating behaviour is an important approach in tackling obesity. Eating behaviours influence energy intake through choices about when and where to eat, and the types and amounts of foods chosen, including decisions about starting and stopping eating. This paper summarizes the measurement tools and methods in analyzing eating behaviour. The aim of this paper was to find the correct questionnaire for future research, which is the Dutch Eating Behaviour Questionnaire in this case.

Background: Obesity is reaching epidemic proportions globally, with a threefold increase from 1975 to 2016. The percentage of obese adolescents aged 12-19 years increased from 5% to 21% over the same period. Social Cognitive Theory can determine human behavior in limiting food intake (diet) and regular physical activity. A valid and accurate measuring instrument for the factors influencing obesity is essential. This study aimed to determine the reliability of measuring instruments for diet, physical activity, social support, and Social Cognitive Theory on overweight and obesity in adolescent girls. Subjects and Method: This study used primary data. As many as 15 study subjects were selected by simple random sampling. The value of item-rest correlation and Cronbach’s alpha were examined using split half method run on Stata 14. Results: Dietary intake questionnaire haditem-rest correlation ≥0.20 with Cronbach alpha= 0.77. Physical activity questionnaire had item-rest correlation ≥0.20 with Cronbach alpha= 0.78. Social support questionnaire had item-rest correlation ≥0.20 with Cronbach alpha= 0.88. Social cognitive theory questionnaire had item-rest correlation ≥0.20 with Cronbach alpha= 0.89. Abstract:
The Government of Qatar took strong containment measures to prevent the spread of COVID-19 with restrictions on daily living such as social distancing and the closing of businesses and schools. While these measures are essential to stop the virus spreading, several voices came to warn of their potential disruptive impact on the agri-food system. Therefore, this paper investigates the immediate impacts of COVID-19 on Qatari consumer awareness, attitudes, and behaviors related to food consumption. The study is based on an online survey in Qatar using a structured questionnaire that was administered in the Arabic language through the Survey Monkey platform from 24 May until 14 June 2020. The results reveal clear changes in the way consumers are eating, shopping, and interacting with food. Indeed, the survey results suggested (i) a shift toward healthier diets; (ii) an increase in the consumption of domestic products due to food safety concerns; (iii) a change in the modality of acquiring food (with a surge in online grocery shopping); (iv) an increase in culinary capabilities; and (v) the absence of panic buying and food stockpiling in Qatar. The results are expected to inform current emergency plans as well as long-term food-related strategies in Qatar.

Sri Lanka introduced colour coding for sugar, salt & fat regulations, which was enforced from the 1st of June 2019. It is the latest food labelling regulation in Sri Lanka. Over the years of consumer studies, even though few studies have studied the impact of food labels on consumer purchase decisions, there is not enough evidence on traffic light food labelling system and its impact on health and healthy choices of the point-of-purchase. Hence, this research study on the impact of colour coding regulation on consumer’s buying decisions with special reference to Western Province, Sri Lanka. The purpose of this research was to study the influence of colour code label system on consumer’s buying decisions and analyse the consumer’s knowledge of the traffic light food labelling system. A purposely developed online questionnaire was administered to 200 randomly selected samples in Western Province in Sri Lanka. The questionnaire had three separate parts. The first part of the questionnaire sought information on the socio-demographic profile of the respondent. The second part had few questions on basic knowledge and behavioural aspect of traffic light food labelling system. The third part of the questionnaire was questioned about further improvements in the traffic light food label from the consumers’ perspective. IBM SPSS version 21 software was used for analysing collected data with frequency analysis and Friedman test. Results revealed that most of the consumers refer to the price label instead of other labels. Also, they are not giving special attention to traffic light food labels at the point-of-purchase. Among the consumers who considered traffic light food labelling system at the point-of-purchase, most respondents had a clear idea about different colour codes and would like to consume food products with a low level of sugar, salt, and fat. Further, a fair number of respondents suggested enlarging the size of the existing colour codes of the traffic light food labelling system. Based on the results obtained, it can be observed that still Sri Lankan consumers are not significantly considered traffic light food labels at the point-of-purchase, and they are limited to seek the price tag at the point-of-purchase. Further, the findings of this study will act as a guide for food regulators when assessing the outcome of the new food labelling regulation of Sri Lanka.

The paper sought to investigate how first year University student’s-teachers understand and instil appreciation of the beauty of Setswana language. Since the proverbs are carriers of cultural values, practices, rituals, and traditional poetry, they are rich in meaning, they can be used to teach moral values for the sake of teaching character building among the students and teaching Setswana at the same time. Proverbs contain values of wisdom, discipline, fairness, preparedness, destiny, happiness, and efforts. Proverbs are short sayings that contain some wisdom or observation about life and or role-play and to use a few of the proverbs to reinforce the meaning, using proverbs as a pedagogical strategy, the researcher has observed that student teachers find it difficult to learn and teach learners at school. Students-teacher’s think and feel about how they conceptualize proverbs, how they define their knowledge and use of Setswana proverbs. The lecturer observed how the nature of proverbs are linked to the culture embedded in the language. In Setswana language there is a proverb that says, “Ngwana sejo o a tlhakanelwa” (A child is a food around which we all gather) which implies that the upbringing of a child is a communal responsibility and not an individual responsibility. Put in simple terms, a child is a child to all parents or adults, since a child’s success is not a family’s success but the success of the community. In doing so, the paper will explore on how student-teachers could make use of proverbs to keep the class interested in learning Setswana proverbs. As a means of gathering qualitative data, a questionnaire was designed and administered to student-teachers and semi-structured interviews were conducted with student teachers. The findings revealed that despite those students-teachers’ positive attitudes towards proverb instruction, they did not view their knowledge of Setswana proverbs as well as the teaching of proverbs. The paper displays that proverbs constitute an important repository of valid materials that can provide student-teachers with new instructional ideas and strategies in teaching Setswana proverbs and to teach different content, which includes Ubuntu and vocabulary and good behaviour. Proverbs must be taught and used by teachers and learners in their daily communication in class and outside the classroom in order to improve their language proficiency.

The problem of accounting automatic affective and cognitive processes as bases for implicit attitudes towards brands, as well as methods for measuring them, is poorly developed. An analysis of previous research shows that the study of attitudes towards brands in terms of their affective and cognitive components is mainly carried out using self-assessment procedures. The aim of this research is to measure the affective and cognitive bases of implicit and explicit attitudes towards brands of domestic and foreign foods. Participants N = 131, aged 17-57 (Mdn = 31). Measures: specifically designed methodically balanced procedures for measuring implicit and explicit attitudes towards food brands: affective and cognitive implicit associative tests (IAT), Self-Concept IAT; emotional and cognitive explicit procedures and demographic questionnaires. The consistency of the results of implicit and explicit measurements is shown. The results of the measurements of implicit attitudes using three IAT procedures are related too. Using factor analysis, the independence of the constructs of explicit and implicit attitudes towards brands was confirmed, which is interpreted in terms of the theory of double attitudes. The greatest contribution to the implicit attitude, measured by the Self-concept IAT, is made by the cognitive component of attitude, which represents the implicit brand associations of domestic or foreign foods with attributes that characterize the price and quality of the foods. All implicit assessments obtained separately using the affective and cognitive procedures of the IAT, as well as the Self-concept IAT, testified in favour of the preference for foods of domestic brands. However, explicit assessments of the frequency of consumption of the brands under consideration did not reveal preferences for any of them. This discrepancy is seen not only as evidence of a possible ambivalent interaction between affective and cognitive associations, but also as an indication of the importance of future measurements of implicit assessments of instrumental associations that are the result of instrumental learning from consumers. This has the potential to improve the predictive validity of implicit measurements of brand attitudes and to better understand the structure of implicit consumer attitudes and the mechanisms of their influence on behaviour.

Fieldwork for Food and You 2: Wave 4 was conducted between 8th October 2021 and 10th January 2022. A total of 5,796 adults from 4,026 households (an overall response rate of 28.5%) across England, Wales, and Northern Ireland completed the ‘push-to-web’ survey (see Annex A for more information about the methodology). This report presents findings from the F&Y2: Wave 4 ‘Eating out and takeaway’ module relating to the Food Hygiene Rating Scheme (FHRS). A total of 4,755 adults across England, Wales, and Northern Ireland completed the ‘Eating out and takeaway’ module via the online or the ‘Eating out’ postal questionnaire. Food and You 2: Wave 4 data were collected during a time and context which has seen changes in UK and global economics and politics, the context in which the public make food decisions, and the effect of Omicron restrictions.
