AbstractThis chapter provides an overview of possible strategies for implementing aquaponics in curricula at different levels of education, illustrated by case studies from different countries. Aquaponics can promote scientific literacy and provide a useful tool for teaching the natural sciences at all levels, from primary through to tertiary education. An aquaponics classroom model system can provide multiple ways of enriching classes in Science, Technology, Engineering and Mathematics (STEM), and the day-to-day maintenance of an aquaponics can also enable experiential learning. Aquaponics can thus become an enjoyable and effective way for learners to study STEM content, and can also be used for teaching subjects such as business and economics, and for addressing issues like sustainable development, environmental science, agriculture, food systems, and health. Using learner and teacher evaluations of the use of aquaponics at different educational levels, we attempt to answer the question of whether aquaponics fulfils its promise as an educational tool.

Food literacy is a sub-field of health literacy with a concept under construction, but corresponds to the ability to read, understand, and judge the quality of information; to seek and exchange knowledge related to the topics of food and nutrition; to buy and prepare food; to critically reflect on factors which influence personal choices about food and understand the impact of these choices on society. In turn, the ACP model is a three-factor communication model (assertiveness, clarity, and positivity) that aims to optimize education based on health literacy. The aim of this chapter is to present a proposal for food guidance which combines the foundations of the ACP model and food literacy for the different life cycles. The guidelines for each cycle were adapted to the ACP model. In conclusion, the ACP model can be applied to food literacy actions in any life cycle. However, it is worth mentioning that the professional's communicational behavior needs to be aligned with the assertiveness competence so that such actions are in fact effective.

This concluding chapter considers how we might think about youth food consumption, as a sphere of social meaning constituted in the everyday spaces of school, home, and commercial realms, and its relationship to our democratic future. It suggests that schools should move beyond conventional nutritional education and focus on critical food literacy. This entails a broader curricular project that enables students to engage the wide range of concerns relating to health and diet, environment and sustainability, industrial food production and food origins, well-being, community empowerment, and public space. A critical food literacy program is expansive in scope; builds on school, nonprofits, and community partnerships; and advances a critical pedagogy where learning is student centered. Since young people's struggles for autonomy and claims of cultural authority are often sought in the consumer sphere, critical food literacy is especially important.

Oral diseases are often called a neglected or silent epidemic. They are largely due to social injustice in which private wealth overrides the public’s health. Although oral diseases affect almost everyone, prevention of them and access to dental services have not been high priorities in the United States. This chapter, after defining oral health, describes the neglected epidemic of oral diseases and then discusses the roles that the food and tobacco industries play in contributing to oral disease and poor oral health. Although organized dentistry has done much to improve oral health, it also has limited access to dental care for millions of Americans. The chapter discusses health literacy and social inequality, national issues concerning oral health, state and local issues, school programs, the dental public health infrastructure, and the dental workforce. It discusses what needs to be done. A text box addresses oral health in low- and middle-income countries.

Abstract:
Following its establishment in 1945, UNESCO worked to promote the aims of the UN through a range of educational mechanisms. This chapter considers the textual operations of the agency’s film work in support of fundamental education, literacy and health in the late 1940s and early 1950s, arguing that some of the agency’s structural and ideological contradictions are available for reading therein. Considering The Task Ahead, Mondsee Seminar, World Without End, Books for All, and the Healthy Village Project in relation to the UN Declaration of Human Rights (1948) and UNESCO’s Statements on Race (1950, 1951), the essay explores the ways in which UNESCO filmmakers illustrated the technobiological and often racialized operationalization of the UN’s universal humanist aims.
