Abstract:
Although studies on food insecurity among low-income families and children are prevalent, it's rare to come upon a study specifically measuring food insecurities among college students. There are limited accesses for students to government assistance such as food stamps because of their "dependency" on their parents. Although, on paper, the student may still be a dependent, there are a myriad of instances where they are unable to receive monetary help from their parents for different circumstances. My current study is examining an understudied population of college students who use the Knights

Abstract:
Since 1999, there has been a significant increase in the number of food insecure individuals in the United States. The Great Recession (2007-2009) and slow economic recovery has led to additional increases in rates of food insecurity and the usage of emergency food assistance programs. Thirty qualitative interviews with individuals seeking emergency food assistance at a Tampa Bay food pantry were conducted. Interviews focused on collecting the life experiences of participants, the barriers they face in having food security, their strategies to cope with limited food budgets, and how food insec

Abstract:

Understanding the effect of food insecurity of vulnerable individuals is necessary to develop strategies for improving lives of those individuals. In this study I explore the effect of a low-cost, unobtrusive intervention on food pantry clients’ choice of healthier food items at a local food pantry. A cross-sectional study was conducted at a food pantry in the Midwest U.S. using the randomized controlled trial method. Participants in the intervention group received a nutrition ranking information about the food items in the pantry during their visit. Both the intervention and control groups

Abstract:

Food insecurity, or limited access to enough foods for an active, healthy life, characterizes the situation of 65% of US food pantry clients. Food insecurity is associated with poor dietary intake of key food groups and nutrients, diet-related chronic disease, poor physical and mental health, and reduced quality of life. Although food pantry clients are prevalently food insecure, there is a sizeable proportion of clients who are classified as food secure (FS), or report having adequate access to healthy foods. Previous studies suggest that food secure pantry clients may use pantry resources
