This study surveyed working young adults to explore their food choice influences. Focus group data determined which food choice influences were important for young adults and were used to develop a pilot survey. Analysis of the pilot survey assisted in revising the survey which was again pilot tested; minor revisions were made before data collection. The sample included 18-24 year old young adults who were taking nine or fewer credit hours and were not living with a parent or child. “Feeding Kansas” is an analysis of how food and its availability shaped the experiences of settlers and Native Americans in the two decades following the opening of Kansas Territory in 1854. From the outset, food was central to conceptions of the plains. White settlers arrived in Kansas expecting a verdant Eden; their expectations were quickly altered by the realities of farming and living in the semi-arid region. Net exporters of food tend to benefit from higher prices, while regions that are net importers of food, tend to be adversely affected. This study examined how case attributes impact plaintiff success and payouts in jury settled foodborne illness (FBI) lawsuits. Given the risk to firms in terms of potentially large payouts, future litigation, and lost reputation, the results may provide economic incentives for food firms and others in the supply chain to produce safer and better quality foods. Legal databases were systematically searched to identify cases of FBI, which were resolved through the U.S. court system. This study used the 1987-88 USDA Nationwide Food Consumption Survey to investigate the contribution meat products make to intakes of nutrients at risk of inadequate or excessive consumption by women. The study is unique in that meat nutrients were extracted from mixed dishes, providing a more accurate picture of consumption. This dissertation addresses the history of antibiotic use in British and US food production between 1950 and 2013. Introduced to agriculture in the 1950s, antibiotics underpinned the 20th-century revolution in Western food production.
