Abstract:
Motivation Cardiovascular disease (CVD) is one of the most important causes of mortality and morbidity in South Africa. The major risk factors are prevalent in both the developed and developing areas of the world, among all social classes, and are of similar public health significance in all countries regardless of their level of development. This indicates that much scope remains for further reducing coronary heart disease (CHD) death rates in developed countries and for preventing the emerging CHD epidemic in poorer nations. This study aims at identifying the beliefs of the South African adult population regarding food and cardiovascular health and to therefore identify target groups for education programs. Objectives To investigate the beliefs of South African adults towards the importance of the link between food and cardiovascular health, especially between the different races, living standards, age and gender groups. Also to determine whether this population looks for the Heart Foundation symbol on food products, as well as where the link between food and heart disease ranks in terms of importance compared to other highly prevalent diseases. Method The design of the study was a randomized cross-sectional study. Trained field workers administrated questionnaires by conducting face-to-face interviews with consumers in the language of their choice. Two thousand South African individuals (1 6 years and older) were randomly selected from metropolitan areas in South Africa. The data was weighted to be representative of the total South African metropolitan consumer population, based on gender, age and race distribution (n=10 695 000). The total population was representative of both genders (5 423 000 men and 5 272 000 women) and major race groups (2 615 000 whites, 6 252 000 blacks, 1 255 000 coloureds and 573 000 Indians), from different age and living standards groups. The market research group, MARKINOR, was contracted to collect the data. Quantitive data was statistically analysed in order to generate the relevant descriptive statistics, cross tabulations and statistical tests. Results The majority of the population found the link between food and cardiovascular risk related health issues to be important, especially the higher LSM groups within the different race groups. The link between food and weight loss was considered the least important compared to other cardiovascular risk factors (cholesterol, blood pressure, diabetes, healthy blood vessels). Only 35% of the study population agreed with the statement that they look for the Heart Foundation symbol, while 46% disagreed with the statement. There was a greater tendency for the higher LSM groups to look for the Heart Foundation symbol than the lower LSM groups. Heart disease was considered just as important and in some cases more important when compared with HIVIAIDS and cancer. Conclusions This study shows that the metropolitan South African adult population is aware of the importance of food on CVD. Nutritional education needs to be aimed at both genders and all ages of the lower socio-economic groups of South Africa. The reasons why such a large percentage of the South African metropolitan adults do not look for the Heart Foundation symbol, or are undecided about it, needs to be investigated and addressed. Prevention programs promoting a healthy lifestyle, which would address the risk factors associated with CVD, should be received with a positive attitude.

The subject of the master's thesis is elaborate a project documentation to obtain a building permit for the multifunctional house. The proposed building is located in Štúrovo in the urban part of the polyfunctional area with predominant housing. The plot is slightly sloped. The building in question consists of five above-ground floors. The building is divided into a commercial zone, an administrative zone and a living area. The structural system of the building is cast-in-place reinforced concrete frame. The building is roofed with single-shell flat roof. In the preparation of the project documentation was used valid legislation, laws and technical norms. Drawings are made in program Nemetschek Allplan 2013, visualisation is SketchUp program.

This thesis examines the nature and effects of current public information about food production, purchasing and sustainability that is available in Sweden. The thesis follows a two part structure based on the Action Research Cycle; it focuses predominantly on the initial diagnostic stage, using document review, questionnaires and Cultural Probes to examine what information is currently available to Swedish consumers, as well as how they respond to this information. The thesis then moves towards the action planning stage of the Action Research Cycle, using current academic literature in IS with the findings of my diagnostic research to suggest ways in which information-communication technology can be used to improve upon the current situation, and paving the way for future research in the area of public information and food sustainability.

Abstract:
This thesis aims to understand the present food situation in Tucson, AZ and the implications for the city’s December 2015 UNESCO International City of Gastronomy designation. Through qualitative research and feminist methodologies, this thesis raises the voices of leaders within the Tucson food system to gain deeper insight into how to work towards a more socially just food system, and why this is important. In the hope that this thesis can be used as an advocacy tool for policy-makers and grassroots leadership, the topics addressed cover food justice and security through representation for the underrepresented, culturally significant food access, and long-term solutions. By understanding how the local government has made space for the designation, this thesis provides ideas that the local government should encompass in order to move forward in allowing the designation to positively impact the Tucson food system and the groups it currently inequitably affects.

Concluímos que a EC contribui para a redução do desperdício.
The aim of this work is to discuss the extent to which the Circular Economy (CE) can be useful in combating food waste (FW). After a non-systematic reviewing of the literature on the concepts of CE, Waste and Food Losses and on the relationship between both, we relied on a case study - the Cooperativa Fruta Feia - to implement the discussion on the contribution of CE to the reduction of FW. We conclude that CE contributes to the reduction of FW.

Abstract:
This study constructs themes and propositions about the experiences of youth participants in the fall 2013 Food Landscapes program at the Neighborhood Resource Center in Richmond, Virginia. During the program, youth participated in cooking-based volunteerism with adults with disabilities and created short videos about their experiences. In this study, I analyzed pre- and post-program participant interviews, twice-weekly program observations, and facilitator reflections to understand how Food Landscapes affected youths’ conception of community engagement and communication strategies. This case study offers insight into how youth experience after-school programming of this design. Based on my findings, youth develop and rely upon a sense of togetherness in out-of-school programs. Togetherness as a bridge to commitment strengthens participation. Individually, youth need to form personal connections to and/or empathy with the content areas of the program in order to derive meaning, critically reflect, and problem solve. Furthermore, the youth articulated their perceptions of the community and the program by developing, organizing, and voicing their ideas of cooking/food, volunteering, and art making. By sharing research about the experiences of youth in after-school programming, organizations and educators can better construct, facilitate, and sustain youth participation and engagement.

South African debates on food security address a wide range of issues related to the production, the distribution and the consumption of food in the context of deep concerns over the impact of poverty, unemployment and inequality. One aspect of such debates is on the need for nutritious food amidst hunger, malnutrition, obesity and the prevalence of diabetes. This study will investigate the Islamic theological injunctions and guidelines that govern the production, the different facets of distribution and the consumption of food in Muslim communities. There are numerous theological injunctions from the Quran and prophetic traditions (?ad?th) guiding the Muslim community in relation to food security. These include injunctions around the need to provide nutritious food. The study will assess the programmes of five Muslim faith-based organisations in the Cape Town Metropolitan Area, working in the field of food security and more specifically, feeding schemes. The food programmes of these organisations will be described, analysed and assessed in order to establish whether, and to what extent, the Islamic injunctions on nutrition are implemented, given various constraints. This will require attention to the policies, the strategies and the practices associated with such feeding schemes.

The diploma thesis deals with project documentation of new kindergartens in the cadastral area Rohatec. The building is self-standing, two-storey with a partial basement. It is a building designed for the upbringing and education of pre-school children. The capacity of kindergarten is 48 children divided into two classes. Part of the operation is a food preparation zone. The building is designed as a brick made of porous concrete blocks with mineral insulation, based on basic concrete passages. The roofing of the kindergarten is using warm flat roofs.

Abstract:
The present study employed a quantitative, non-experimental, multivariate correlational research design to test a hypothesized model examining associative paths of influence between ecological factors and weight status of urban, African-American adolescent females. Anthropometric and self-report survey data of 182 urban, African- American adolescent females were collected during after-school programs, health and physical education classes, and community events in an urban area in northeast Florida. Descriptive analyses were conducted to characterize the study participants based upon their age, study setting, and weight status. A scale reliability analysis was conducted to assess the internal consistency reliability of the sample data using selected measures within the context of the study’s specific population and subsequently guided the structural equation model (SEM) analyses. The SEM path analysis was used to develop two measurement models to control for observed error variance for variables demonstrating poor internal consistency reliability (diet behaviors and nutrition selfefficacy) and a final structural model to test the associative paths of influence between latent (diet behaviors and nutrition self-efficacy) and manifest variables (teacher social support and friend social support) on weight status. The results of the path analysis indicated that both teacher social support and friend social support demonstrated a positive, indirect influence on child weight status through nutrition self-efficacy and diet behaviors following two different and specific paths of influence. Diet behaviors, in turn, demonstrated a positive, direct effect on child weight status. These findings provide clear implications for educational leaders that call for the integration of health behavior change theory into traditional education and leadership practice and actively addressing the childhood obesity epidemic in the school environment by implementing health behavior change strategies at various ecological environmental levels.

abstract: The humans-food relationship is a 2.5 million year old, symbiotic connection of “living together” which encouraged a “system of communication up and down the food chain” (Pollan, 2008). (Reardon, 2015). Many researchers agree that this connection is a critical foundation for a beneficial relationship with food and engaging in healthy eating behaviors (McKeown, 2010; Neumark-Stainer et al., 2007; Ristovski-Slejepcevic et al., 2008; Simontacchi, 2007). Against the backdrop of a steadily increasing obesity rate and associated spending, it is critical to approach this issue from a systematic perspective such as understanding the powers that impact the consumer-food relationship (Aronne and Havas, 2009). Experts agree that the rapid increase in convenience food environments has contributed to an obesogenic foodscape that has negatively impacted consumers’ understanding of and interactions with food, resulting in consumption of nutritionally poor food, over-nutrition and chronic illness (Brownell and Battle-Horgen, 2004; Nestle, 2002). Additionally, designers and researchers are beginning to recognize the influence the built environment can have on actions (Patel, 2012; Wansink, 2010), behaviors and attitudes (Gallagher, 1993), even hindering or encouraging one to partake in healthy behaviors (Mikkelsen, 2011; Story et al., 2008). The goal of this study is to understand modern built convenience food environment design and its potential to impact the consumer-food relationship. This study utilizes a heavily qualitative approach, structured by a grounded theory methodology due to the lack of existing research (Martin & Hanington, 2012; O’Leary, 2010) and triangulates utilizing an analysis of secondary research, environmental audit through observations and a survey. The final result will be a compilation of design suggestions, based on those findings, for designing a BCCFE that encourages a healthy relationship between the consumer and food.

The introduction of FMD into the US would have serious economic and societal effects on the livelihoods and sustainability of affected livestock producers. Livestock producers serve as an important line of defense in both detecting an introduction of FMD as well, helping to prevent disease spread. However, due to the complexity of moral, social, and economic issues surrounding the control of highly contagious diseases, producer cooperation during an outbreak may not be assured. This study was conducted using a mixed-methods approach, including qualitative analysis of interviews and quantitative analysis of a postal survey, in order to explore the factors likely to influence producer cooperation in FMD detection and control in Texas. Reporting of cattle with clinical signs of FMD in the absence of an outbreak was related to producers´ beliefs about the consequences of reporting, beliefs about what other producers would do, trust in agricultural agencies, and their perception of the risk posed by FMD. During a hypothetical outbreak, intentions to report were determined by beliefs about the consequences of reporting, and perception of the risk posed by FMD. Intentions to gather and hold cattle when requested during an outbreak were determined by beliefs about the consequences of gathering and holding, beliefs about barriers to gathering and holding, trust in other producers, and perception of the risk posed by FMD. Compliance with animal movement restrictions was determined by experiential attitudes, beliefs about the availability of feed, space, and disinfection procedures, beliefs about what other producers would do, and perception of the risk posed by FMD. Recommendations for improving producer cooperation include targeting specific beliefs in both planning and communication, increasing transparency in the post-reporting process, planning for and communicating plans for maintaining business continuity in order to better inform risk perception, and partnering with organizations to ensure sustained and meaningful communication that supports trust between producers within the affected agricultural community.

Most fundings for religious groups are from public dedication. Based on limited sources of fundings , self-cooking meals are served at most religious activities.Meal time might not, when the meal counts are large, be met due to the lack of experience. This paper contains two phases and studies the quantity food production of one of the Tzu Chi Foundation activities. The first phase is qualitative research including field interviews with responsible personnel, observations of the food preparation process , data collection of time and resources of the main ingredients. and literature review. The impact factors of food production time are found: batch production, personnel operating time and the use of food containers. The second phase is quantitative research. Through simulation software eM-Plant 7.0 to construct the model of the status of the food production activities, and SPSS12.0 three-way ANOVA to analyze the interaction between three factors on the total production time, results show that (1) if food containers are used, the average total production time would decrease by 12.2% (26.79 minutes), (2) if the average personnel operating time is reduced by 9%, the average total production time would decrease by 9% (19.78 minutes), (3) although scenario 12 is the most time-saving, which makes average decrease of total production time by 24.1% (56.6 minutes), the scenario must run with "the use of food containers", "20 percent less operating time", and "the largest batch production ". This study suggests that the adoption of scenario 7: the use of food containers or scenario 3: 10 percent reduction in personnel operating time would cause better and applicable solution on total production time.

abstract: Health knowledge alone does not appear to lead to sustained healthy behavior, suggesting the need for alternative methods for improving diet. Recent research shows a possible role of moral contexts of food production on diet related behaviors; however no studies have been conducted to specifically explore the relationship between moral constructs and food consumption. This study examined the relationship between fast food consumption and two measures of morality, Moral Foundations Questionnaire (MFQ), specifically harm/care and purity/sanctity foundations, and the Ethical Concern in food choice (EC) questionnaire, which includes animal welfare, environment protection, political values, and religion subscales. The study also examined the association between the measures of morality. 739 participants, primarily female (71.4%) and non-Hispanic Whites (76.5%), completed an online survey that included the MFQ, the EC questionnaire, and a brief fast food screener. Participant's morality scores in relation to their fast food consumption were examined first using bivariate ANOVA analysis and then using logistic regression to control for covariates. The MFQ foundations were compared with the EC subscales using Pearson correlation coefficient. Significant bivariate relationships were seen between fast food consumption and the MFQ's purity/sanctity foundation and EC's religion subscales (p<0.05). However these significant bivariate relationships did not hold after controlling for gender, race, university education, and religion in the logistic regression analysis. The foundations of the MFQ were positively correlated with the subscales for the EC questionnaire (r values ranging from .233-.613 (p<0.01). MFQ's purity/sanctity foundation and EC's religion subscale were the two most highly correlated (r=.613, p<0.01) showing that moral intuitions may be associated with eating decision making. The study did not find significant associations between MFQ or EC scores and fast food consumption.

In this dissertation, a new construct is introduced as a means for systematically assessing the meanings associated with eating behavior and food choice. There are many determinants of food choice that have been operationalized throughout the health behavior literature. Some factors are instrumental, external, and/or immediate, whereas others are more global, higher-order and distal from the process of food selection and eating. However, the literature still lacks a comprehensive construct for systematically assessing the ways that food is related to people’s larger meaning systems, systems composed of durable and enduring values, goals and beliefs. The Meaning of Food in Life (MFL) project was therefore designed to operationalize the construct of the MFL as well as explore how this, in turn, influences food choice. First we introduce the theoretical basis for systematically operationalizing and investigating the MFL, and then explore its relationship to food choice, moral psychology and wellbeing. We articulate a clear definition of the meaning of food; namely, that for something to constitute a food meaning it must be connected to or embedded in a person’s life-world, in contrast to orientations to food rooted in the proximal and immediate demands of the eating situation. Then, over three separate studies, we developed and validated a questionnaire that assesses the meaning of food in life, and demonstrate the ways that different food meanings are linked with different food-related attitudes, motivations and behaviors. In Study 1, we present the development and validation of an assessment tool for empirically measuring the MFL. In this investigation we operationalize the MFL and generate a 22-item tool for its assessment. The items were tested in an online format in three empirical studies (n = 560), and participants were recruited through MTurk. Exploratory factor analyses and item analysis were conducted to confirm the psychometric characteristics of the item pool. Overall, five distinct domains of food meanings emerged: moral, sacred, health, social, and aesthetic. Each domain of food meaning was significantly associated with different dietary intake outcomes, providing evidence for construct validity. Further, each dimension of food meaning displayed associations with psychologically similar, yet distinct constructs from the literature in a manner concordant with the theoretical specifications of each construct, providing further validity evidence. The associations between the different domains of food meanings and behavioral outcomes suggest that this construct may be an important and clinically relevant aspect of people’s relationship to food that has heretofore lacked systematic investigation. Study 2 evaluated how the five domains of the MFL, namely, moral, sacred, social, aesthetic and health, relate to determinants of healthy eating behavior and a positive relationship to food. We administered a questionnaire to an online sample of 252 American participants. Measures included demographics, the MFL, self-efficacy for eating healthy foods, a positive relationship to food, fruit and vegetable (F&V) stage of change, calorie restriction, and body satisfaction. Data were analyzed using correlation and regression analyses. Results demonstrate that the moral, aesthetic and health domains of the MFL were positively associated with greater self-efficacy for consuming healthy foods (all p < .001), and the moral and health domains were positively associated with greater body satisfaction (both p < .01). All five MFL domains were positively associated with F&V stage of change (all p < .01) and a positive relationship to food (all p < .05, or less), whereas none were associated with calorie restriction. These data suggest that the MFL has clinical health relevance in the form of promoting healthier dietary behavior and a positive relationship to food. The discourse around food has shifted in recent years, fueled by growing concerns over the environment, animal welfare, and public health issues such as obesity. One domain that hasn't yet been considered in terms of its relation to food choice is that of compassion and self-compassion, independent yet related constructs encompassing a concern for the suffering of others or the self, accompanied by a desire to alleviate that suffering. In Study 3, we investigated the associations between compassion, self-compassion, the meaning of food in life, healthy and sustainable eating behavior, and a willingness to pay higher prices to ensure environmental protection and animal welfare. We collected data from 254 subjects via MTurk. Results indicate that compassion was significantly linked with behavior that entailed reducing the suffering of others, demonstrated by the negative associations between compassion and meat intake (p < .05), and the positive links between compassion and limiting intake of fast food (p < .05) as well as a willingness to pay higher prices to ensure animal welfare (p < .001). Self-compassion was positively associated with making healthier choices for the individual, indicated by significant associations with increased vegetable intake (p < .01), and with limiting intake of candy, soda and processed foods (all p < .05). For many of the dietary outcomes, both self-compassion and compassion made unique and significant contributions, suggesting their effects may be additive and potentially influence dietary behavior through different mechanisms. This preliminary investigation should pave the way for future investigations into these relationships and their potential applications. Overall, this research project generated the theoretical and empirical foundations for operationalizing the MFL as a determinant of food choice. We came up with a definition for the meaning of food, namely, that for something to constitute a food meaning it must be embedded in a person’s larger life-world, rather than be limited to the immediate demands of the eating situation. While there already exist several measures that measure motivations for eating across the board, as well as measures that measure the proximal factors which influence eating, to our knowledge, this is the first study to exclusively focus on and operationalize the distal factors which influence food choice – the factors which, by definition, are non-immediate, and which are connected to non-food aspects of life. These non-food related aspects of eating life, as our empirical data have shown, include moral and value-based orientations to food, the social and cultural importance of food and eating, the sacred or spiritual connections between people’s food choice and belief systems, the meaningfulness of nourishing one’s body in a healthy fashion, and the aesthetic dimensions of food, whereby food is seen to be an arena for creativity and artistic expression. Our repeated empirical investigations confirmed that the five domains of moral, social, sacred, health and aesthetic consistently emerge as distinct factors that influence food choice.

In recent years a considerable literature has accumulated to establish that western society is confronting a monumental crisis in health care. In the thesis that follows we shall see that the nature of the growing crisis is multifaceted and includes scientific, socio-cultural and philosophical dimensions, all of which figure prominently in the way in which we educate people of all ages for health. My aim in the first part of the thesis will be to explore and reflect upon a number of these facets, with an aim to showing that the epistemological framework they presuppose represents a valuable but incomplete understanding of newly emerging health problems which are themselves, partly the outcome of the highly technologised societies in which we live. Once this preliminary objective of the thesis has been completed, I shall contend in Part II of the thesis that one area of crisis which remains insufficiently understood is the relationship between food and nutrition. I deliberately use the word relationship between food and nutrition, because the traditional emphasis of such concerns within the context of health has focused primarily on nutrition, largely in the quantitative sense of encouraging people to obtain enough vitamins, minerals, proteins, carbohydrates and fats required to keep them healthy. My contention is that without broadening the discussion to encompass the relationship between food and nutrition, the answers we give to the quantitative questions are inevitably myopic and limited. My goal in the third and final part of this thesis will be to make clear that in light of the importance of the connection we have with our food and recent developments made in the philosophy of quantum mechanics, an exciting new discipline is emerging which Professor Ronald S. Laura has called the ‘Metaphysics of Food’. As part of my elaboration of this area, I shall weave together strands of insight from the research of Professor Laura and Dr. Masaru Emoto, two major pioneers in advancing this field of knowledge. Professor Laura’s theory of ‘participatory consciousness����, drawn from his elaboration of quantum entanglement and his theory of ‘empathetic epistemology’ provides a fruitful conceptual framework, I shall argue, for the philosophical elucidation of Emoto’s research on the metaphysics of vii water. Using the confluent theoretical interpretative heuristics of Laura and Emoto, my objective will be to argue that in principle, the foods we eat can themselves be impacted favourably or adversely in health terms by entanglements of consciousness which in turn affect our own health in subtle but important ways. Although the articulation of the pedagogic implications of this insight would be beyond the remit of this Master Thesis, a conceptual foundation will have been laid here upon which a new edifice for further research at the doctoral level can be built.

The public health sector, from WHO to Taiwan, is considering obesity as an important public health problem to be prevented and controlled. In Taiwan, obesity prevention is the main administrative goal of Health Promotion Administration, and it has been regulated by Paragraph 3, Article 28 of Act Governing Food Safety and Sanitation, so called “junk food advertisements reguation clause.” Obesity prevention involves interdisciplinary approach, which can include the historical background of liberalization, critique from political philosophy, application of regulation theory, theory and practice in public health, empirical research and critique in medical sociology. However, little legal research has been done on obesity prevention and control. The purpose of this article is to find the theoretical foundations of obesity prevention, and to apply these theoretical foundations to assess the legal strategies, using the junk food advertisements regulation as an example. The issues to be addressed in this article are as follows: Is obesity a global epidemic to be prevented and controlled? Should obesity prevention be regulated by the state? Is the state capable of regulating? How will the state regulate? What are the possible side effects of the regulations, e.g. discrimination? Is the junk food advertisements regulation necessary? What is the constitutional restraint on obesity prevention? The method to carry out this article is using constitutional dogmatic and sociology of law to project the interdisciplinary values on the constitutional values, which are the underlying principles of the Constitution and fundamental rights. The framework consists of the following: the importance of obesity issues, the necessity of improving the obesogenic environment to prevent obesity, the justifiability of obesity regulation by the state, and the necessity of junk food advertisements regulation for improving the obesogenic environment. Finally, this article analyzes the junk food advertisements regulation clause as well as the relating draft regulations, and makes practical suggestions.

There has been a recent upsurge in “Food and Agricultural Education”, which utilizes an educational method that connects food, agriculture, and the environment. Starting from the thing that is most relevant to our life -“food”, this enables the public to better understand the impact of human behavior on the environment from a more relatable perspective. In addition, it lets people understand that although we cannot cease agriculture, we can implement friendly agriculture laws to minimize negative impact on the environment caused by humans, and maintain biodiversity. Our choice of food is the most direct way to practice environmental protection in life. The comprehensive improvement of environmental knowledge, skills, and values serves to increase environmental protection participation, and is the most important purpose of Environmental Education. However, the current Environmental Education in Taiwan lacks the ability to cultivate independent thinking on environmental issues. We also lack education that promotes action, and our standardized one-way education is evidently unable to reach our ultimate goal of solving environmental issues. Many of today's Environmental Education-related activities tend to be very formal. They often lack content and design, still relying on the accumulation of knowledge. By ignoring the areas of development in goodwill and skill, they ultimately fail to reach the goal of Environmental Education. The implementation of environmental education is sometimes even excluded from our daily lives because they are limited to a particular field or specific time or space. Thus, “Environmental Education which based on life” is very important for Taiwan at this stage. The study chooses National Taiwan Museum and Lovely Taiwan Foundation as compared cases of Food and Agricultural Education development. One is located in urban with the basis of Museum resources. Another is located in countryside, which is rich of agricultural resources and with the purpose of locally taking root. The two cases display "to use methods in line with local circumstances" in differences of courses content, participants and location. This study will compare the contents, participating groups, implementation areas, and the differences in participants' life experiences between the two courses to deduce the reason for the course differences. Finally, through reviewing these two cases, this study strives to answer the question: Can Food and Agricultural Education serve as a new type of Environmental Education that leads people in putting to practice their newly accumulated knowledge and changes in values, and therefore achieve the real purpose of Environmental Education? Furthermore, through the comparative analysis of two cases, this study explores how different areas can develop Environmental Education according to local conditions, which can serve as a reference for the future development of Environmental Education.

This research intends to investigate the reason, principle, vision that Homemakers United Foundation promotes green food education, along with the green food education at school, the way of promotion, the challenges faced by the organization, and how the organization overcomes those challenges. Through the research, people can understand the mission statement of the green dietary education and rethink how our diet influence the environment, which can provide to other advocates and participants for future references. This research is a case study, which interviews six advocates of green dietary education in Homemakers United Foundation through the Qualitative research.The result of this research is as follows: 1.The birth of Homemakers United Foundation is that many mothers cared about their family members’ health and diet. They tried to change the production process through customer buying power, providing their families with a healthier and safer diet. Homemakers United Foundation is a women's federation that involves in environmental protection. 2.The reason that Homemakers United Foundation promotes green food education is to emphasize the actual participation of environmental protection in daily life. 3.The vision of Homemakers United Foundation is to create city farms and green food community. 4.The essential principle of the Homemakers United Foundation is to educate children to develop good eating habits and actually participate in daily life. 5.The Homemakers United Foundation promotes the green food education through the practice experience accumulation. To design the classes, the organization needs to discuss with the participating schools. The form of classes may be adjusted based on location and students. The organization strived to develop a complete strategy to train volunteers, saving money, raising funds, and designing creative teaching plans. 6.To promote green food education, the organization needs to communicate and negotiate the essential principle, the arrangement of classes, and the way of the promotion with the participating schools. When the organization is short-handed, it needs to train parents to be volunteers in order to smoothly promote the green food education. At the same time, the organization recruits external volunteers to help promoting the green food education. To raise funds, the organization accepts donation from the public and corporations. However, the organization raises most funds by applying activity projects. The promotion activities of green food education stated above intends to encourage learners to not only have correct diet sense of values but also participate in daily life. All of the promotion activities focuses on the environmentally friendly lifestyle, and the teaching materials will be reused, which echoes the mission statement of Homemakers United Foundation.
