Full textIn considering the history of reproduction with regard to works of art in Quebec, four distinct periods have been established: 1936-1950, the novelty of techniques of reproduction; 1950-1970, the era of education; 1970-1980, the discovery of national identity through reproductions of Quebec artists; and 1980-1989: the consolidation of a new market; 1989-1990: the economical boom of the market and the structures get organized.
The portrayal of this new cultural industry is traced and its different characteristics considered. Selection of works, styles, marketability and motives for purchase are presented problematically. Thus, in the last chapter, a theory for art reproductions as a silent mode of communication in the private space is explored.

Full textThe natural microbiota of cheese has often been characterized to study their potential participation in the development of sensorial properties (taste, odour, texture) of the ripened cheeses. A better understanding of their role during cheese ripening is therefore essential in order to have a better control of its quality. Few in-depth genomic analyzes have been carried out on microorganisms of the natural microflora of cheese (non-inoculated microorganisms), while there is a greater interest for inoculated ferments. The genes possessed by bacterial strains of the Quebec terroir can be revealed by the characterization of their complete genome, leading to the prediction of the associated metabolic pathways. This also allows the establishment of the individual contribution of each strain to the production of aromatic compounds. As part of this work, the complete genome of four strains of Staphylococcus equorum were sequenced. Then, a detailed analysis of the genome of these four strains was completed by their assembly and the functional annotation of the ~ 2700 genes predicted in each of the studied strains. Genes potentially implicated in proteolysis, lipolysis and lactose degradation, were found in all S. equorum strains, revealing their potential metabolisms important for cheese. Several interesting attributes of S. equorum were also identified by comparative genomic analyses. First, the relation in between the phylogenetic grouping and the source of isolation of the strains, indicates a possible adaptation of the strains to their ecological niche. The presence of unique or barely shared genes is also a distinguishable characteristic of the studied strains and can have an impact on the metabolisms of the strains. The characterization of the genome of S. equorum strains and the phylogenomic analyzes have provided new information on their role in cheese and clues about their metabolic potential. The genomic data collected will allow during future validations the selection of strains with desirable properties in function of cheese variety to yield cheeses of optimal quality.

Full textThe main objective of this research is to identify performance indicators of vertical coordination, according to the perceived importance of the actors, in an agri-food supply chain. On the basis of the conceptual framework developed by Aramyan et al. (2007), which used four categories of performance indicators: efficiency, flexibility, responsiveness and food quality, this master's thesis focused on a pork supply chain in Quebec, as a case study. The research begins with a literature review on existing performance indicators in the literature on agri-food supply chains. On the basis of this review of the literature, the preliminary conceptual framework resulting from the work of Aramyan et al. (2007) was consolidated by the one developed by Gellynck et al. (2008). This conceptual framework was then assessed in the selected supply chain. The results show that efficiency in terms of cost and profit, flexibility in customer satisfaction, the balance of the chain in the sharing of risks and benefits, and quality (product and process) are the most important performance indicators in this agri-food chain. Full textThis research project explores the perceptions of Quebec communicators regarding the adoption of artificial intelligence (AI) in their organization and its integration into their professional practices. It is part of the wake of some studies carried out on perceptions of AI in Quebec (Centre interuniversitaire de recherche en analyse des organisations [CIRANO], 2018) and around the world (Brock and Wangenheim, 2019; Ransbotham and al., 2017; Sun and Medaglia, 2018). The study relies on a quantitative approach that proceeds from an online survey method whose questions were designed from a mapping of determining factors of adoption of AI. Results are interpreted based on Lewin's three-stage change management theory (1947), which allows to situate and explain the position of the actors in relation to a technological change according to a maturity scale. The results obtained show that Quebec organizations are in the middle of the scale of change, meeting 16 of the 32 required indicators. Overall, the players in the communications industry admit the importance of adopting AI in their field, are well aware of the issues and determining factors, but are struggling to see how to integrate it into their practices. In other words, they know "what to do" but they don't know "how to do it". In response to this problem, this research proposes a method of sequential adoption of AI in communication that allows an organization to situate itself on the change maturity scale and to identify the actions to be taken to move to the next level.

Full textWhy only a third of Canadian adults consume on a daily basis at least two servings of milk and alternatives? What explains their consumption? In the present study, most men and women (n = 161) reported being sensitive to health effects and taste, feel sometimes approval, sometimes disapproval from their immediate entourage and consider price and reducing confidence as a barrier. Their perceptions were different for milk and cheese; drinking milk was more associated with children, cognitive reasons and raised more questions, whereas cheese was more associated with pleasure, adults, was more convenient and facilitated by the food supply. These findings highlight salient beliefs underlying milk and cheese consumption and will contribute to support the effectiveness of strategies promoting an optimal consumption of these foods among the population.

Full textCollective marketing, an institution that is used by the Quebec hog industry to market its products, has changed four times between 1989 and 2009. The influence of institutions is often omitted in contemporary economic studies, although they shape the articulation of the sector. The objective of this thesis is to analyze the interaction between institutional changes in the marketing of agricultural products and the chain organization with regard to the strategies of key players. To do this, a literature review and interviews with the Quebec hog industry leaders were performed. These institutional changes have had effects on incentives, supply uncertainty, behavior and organization of the sector. In addition, these amendments to collective marketing have their roots in the economic environment and the behavior of players who uncover flaws in the system. Full textThe complex fungal ecosystems of specialty cheeses are increasingly studied because of the potential contribution of indigenous yeasts to the development of the cheese’s sensory properties. They may contribute directly or indirectly by their interaction with the funga l ecosystem or the modification of the cheese matrix. Previous studies detected Cyberlindnera jadinii, Kazachstania servazzii and Pichia k udriavzeviiin both raw milk and/or artisanal specialty cheeses from the province of Québec. The aim of this project was toanalyze the distribution of these three yeast species in cheeses made in the province of Québec. A highly specific and quantitative real time PCR assay was developed to quantitate these yeast species. The rind and the core of cheeses made in the province of Québec were sampled and analyzed using this method. Tracking of C. jadinii and P. k udravzeviirevealed that these yeasts are found within the majority of the analyzed cheeses. This study is the first step toward a better understanding of the possible contribution of these indigenous yeasts species in the development of cheese flavors, and their role in the cheese’s fungal ecosystem.

Full textAs part of the cultural history of food, the purpose of this thesis is to show how the strawberry from Île d'Orléans - a real and symbolic incubator promoting the development of agriculture and culinary traditions - has been anchored in a heritage development process based on economic, social and symbolic enhancement measures since the beginning of the 20th century. We therefore propose to analyze the different forms of heritage development at work in this case, namely the reinvestment of the past, the transmission, the anchoring in a specific territory, but above all, the valuation strategies deployed by many actors. How did the association of the place with the product come about, then the product with the Quebec culinary identity? We propose to analyze these questions by lifting the veil on food heritage constructions in Quebec.

Full textThis thesis focuses on the wood processing industry in Quebec. Since several years, the sector faces many problems that hinder its competitiveness. The main research question is: Does the introduction of products of secondary and tertiary processing, as well as the diversification of markets including uncovered domestic segments as non-residential construction, could provide solutions to get industry's current crisis? Indeed, for several decades, firms in this sector export basic wood products and depend heavily on the single market of the United States. Today, stakeholders are increasingly convinced that this crisis is basically due to low investment in the modernization of the industry and the high dependence on one market. This challenges them to join their efforts to revitalize the industry by promoting the development of new products. This could open new external and internal markets. Since collaboration is a key success factor in the development of products; the first sub-question is to identify what are the key strategies for effective collaboration management with all stakeholders to design new value added products. Based on the results of interviews with business leaders in the industry of the second and third wood processing, a model incorporating eleven key strategies for effective collaboration management is proposed. The second sub-question concerns the impact of the organization’s specific characteristics in choosing the destination market. Based on a sample of 1,022 manufacturing firms in the province of Quebec, the analysis by the binary logistic regression’s method demonstrates that the industry, the total sales and the presence or absence of a website have an impact on the diversification of export markets. While the firm age, the firm location and the presence of an export manager are not significant. Finally, the third sub-question concerns the determinants of the acceptance and use of wood technology as a new practice in non-residential construction industry in Quebec. To answer this question, a web survey was addressed to twenty eight engineers on construction. Results reveal some constraints on the use of wood in non-residential construction industry in Quebec. Full textMany economic and climatic disruptions have influenced the Quebec dairy farms between 2000 and 2010. However, the incidence of these disruptions did not have the same effect on the financial health of the farms, as demonstrated by the disparity shown in their financial results. In order to obtain a better understanding of the presence of heterogeneity, the strategic behavior of the most efficient and the less efficient producers has been evaluated from two series of analysis, performed on eleven management strategies. The results showed that the producers of the head subgroup obtained better security margin, labour organization, dairy productivity and valorization of the fodder than the producers of the tail subgroup, regardless of the economic and climatic situation. It appears then, that their production structure and their strategic planning are more economically efficient and more capable of restraining the negative effects of disruptions.

Full textThe analysis of funding practices initiates in a context where these practices that run the agricultural sector are questioned and where financial situation of dairy farms does not seem in good shape. First of all, good practices that are based on the financial theory have been identified. Also, real practices have been explored from an evaluation of some real cases consisting in indebted dairy farms in operation for many years. Results demonstrate that, for the sample of farms subjected to special conditions, some cases present practices that are not strict enough. Furthermore, behavior study and risk evaluation of the farmers in regards to the bank credit bring to conclude that the situation is not going to improve easily if there is no future change. So, it is demonstrated that funding practices can be a factor that explains why some results of the indebted dairy farms are not attractive.

Full textThe socio-professional integration of the information technologies (IT) sector immigrant workforce in Quebec is not well documented. The sector is dynamic in the region and growing businesses are facing a labour shortage specific to the local economy. This would suggest the best possible integration of immigrants trained in IT, while studies on the general integration of immigrants highlight difficulties at both the provincial and regional levels. The methodology used in our study is qualitative. 28 skilled immigrants report their socio-professional situation prior to getting their first IT job in Quebec. We then study the professional trajectory of seven of them following a four step longitudinal approach, for one year (after one month, after 3 months, after 6 months and after one year to employment). To understand the integration process, this thesis taps into symbolic interactionist theory and takes a particular interest in the human experience and the symbolic dimension. It also refers to the interpretative process of Michael Piore (in Beyond Individualism, 1995) which recognizes, in today’s world, the emergence of social minorities, such as immigrants with special interests who are not recognized by institutions. The results of this approach emphasize the same barriers to professional integration as those observed with Quebec’s immigrant workforce in general. The market more specifically fails to assess and recognize the qualification and of these immigrant workers who are consequently underemployed. In the Quebec IT sector, insertion into first employment is thus conditioned by Quebec training. The integration in the labour market, studied within one year, is fraught with challenges and hides individual actions and integration strategies established by immigrants to circumvent the obstacles. In the face of this risk situation, the most surprising findings emerge. Indeed, monitoring the integration of these skilled workers over a continuous period of time brings to light the continuation of a project and an ability of agency on the part of the immigrants encountered. The study of these two dimensions posits that although some of them find themselves in a disappointing professional situation, they are not ultimately unhappy. They describe their satisfaction in terms of employment opportunities, material comfort, family plans, goods acquired, individual achievements and obstacles circumvented. Full textEn tenant compte que la démocratisation culturelle a été établie comme l’un des piliers de la première politique culturelle du Québec, Notre culture, notre avenir (Ministère des Affaires culturelles 1992), ce mémoire aborde le phénomène des concerts crossover symphoniques–concerts hybrides intégrant un élément d’un autre genre musical aux concerts symphoniques (Brackett 1994)–chez les institutions symphoniques au Québec, à partir des exemples de l’Orchestre symphonique de Québec (OSQ) et de l’Orchestre symphonique de Montréal (OSM). L’objectif de ce mémoire est de comprendre la portée socioculturelle de cette pratique, au-delà de sa fonction de stratégie marketing utilisée pour attirer les publics à court terme afin de pallier les difficultés financières accentuées par une baisse de fréquentation des institutions symphoniques. Dans un premier temps, ce mémoire présente un portrait global de la présence de concerts crossover au sein des programmations annuelles de l’OSQ et de l’OSM depuis ce qu’il nous apparaît comme le début decette pratique, soit la saison 2000-2001, jusqu’à la saison 2017-2018 inclusivement et, dans un deuxième temps, propose des facteurs contribuant aux variantes et aux constantes identifiées, de même qu’au point de convergence de la pratique observée tant à l’OSQ qu’à l’OSM. Finalement, ce mémoire propose une réflexion sur la pratique observée et de son évolution, à la lumière de notre compréhension de la notion de démocratisation culturelle (Bellavance 2002) dans un contexte où les habitudes et pratiques culturelles des publics sont davantage marquées par des caractéristiques d’omnivorité culturelle (Peterson 1992). Au final, cette réflexion permettra de comprendre en quoi le crossover, tel que pratiqué par l’OSQ et l’OSM depuis la saison 2000-2001, peut être un vecteur de démocratisation culturelle pour les institutions symphoniques au Québec.

Full textThis research is an attempt to document and analyze the social impacts of the Raglan Mine on the communities of Salluit and Kangiqsujuaq in order to further understand the consequences of such projects on the inuit populations of Nunavik. Nunavik is facing an unprecedented mining boom. Extractive companies are attracted by its considerable mineral resources. Following the promotion of mining development by the Quebec Government, the level of exploration and exploitation is unprecedented North of the 49th parallel. However, the large-scale development of the mining industry is not without consequences for the Inuit people of Nunavik that will be the first to feel the impacts of these mining projects. However, we know little about the social impacts of mining projects taking place in Nunavik. By studying and comparing the social impacts of Raglan on the communities of Salluit and Kangiqsujuaq, this research aims to help bridge these gaps and bring on new light to the impact of mining development in Nunavik. Full textThe marketing of the pork to be slaughtered in Quebec is done within the framework of a collective marketing. In 2009, the electronic auction, a virtual channel of sale managed by an office of pork producers, was abolished. For the first time in the history of the collective marketing in this industry, one introduced the possibility of direct relationships between purchasers and producers. The literature of the supply chain management and the transaction costs economics suggest such relations imply a closer and more competitive vertical coordination. Importance to take into account the institutional framing which offers the collective marketing is also shown. The nature of these changes was analyzed in order to characterize this new way of coordinating the transactions. The impacts of this change in vertical coordination on the performance were located by mobilizing a multicriterion grid of analysis. The analysis thus revealed a closer coordination, modifying the mode of adaptation to the unforeseen, the rules of the game and their sources, the control and the incentives of actors implied in the transactions. Product quality, the flexibility of the relation between producer and purchaser, the balance of the chains in the sector as well as the nature and the level of transaction costs are the main impacts identified as regards performance of vertical coordination. A still appreciable but changing role of marketing board in the framing of these transactions was also reported by the participants met.

Full textRecent developments regarding the nature of the process of innovation have led us to try to better understand this process among firms, in particular among small and medium enterprises (SMEs). These recent developments indicate the interactive and open nature of innovation which is represented by the model of open innovation, according to Chesbrough (2003a; b). In this model, firms spend little on R&D and nevertheless are able to innovate : they rely on the knowledge and expertise of a wide range of actors and external sources (Laursen et Salter, 2006). The open innovation model has become, according to the report of the 2009 CST of, one of the major trends in the world. In its report entitled : Innovation ouverte, enjeux et défis pour le Québec, this institution promotes the benefits of this innovation model and proposes to accelerate its adoption by Quebec manufacturing firms. In this context, this thesis aims to contribute to this effort by studying a particular aspect of the open innovation model, namely openness. Introduced by Laursen and Salter in 2004, openness is a concept that primarily reflects the number (breadth) and intensity (depth) of the external sources of information used by the firm in the development or improvement of its products or processes. Openness has been widely studied in the context of large U.S. (Chesbrough, 2003a; b) and European companies (Laursen et Salter, 2004; 2006; Criscuolo et al., 2006; Reichstein et Salter, 2006; Lichtenthaler, 2008a). In the context of SMEs, the studies concerned with openness are still scanty, with only a few studies from the Republic of Korea and Europe. In Canada, especially Quebec, studies that focus on openness in SMEs are almost nonexistent. In this sense, it is necessary to fill this gap and to further explore the innovative behavior of SMEs under the care of the open innovation model. Innovation in SMEs, explained in part by the open innovation model, raises the complexity of the relations (Huizingh, 2011) between the different factors that traditionally explain innovation in SMEs. This need was at the origin of the first research objective in this thesis : 1. Study the determinants which explain the complex relationships that exist between the factors explaining innovation in SMEs under the care of the open innovation model. In addition to this objective, other gaps have been identified in the literature related to the open innovation model, including the second and third objectives of this research : 2. Study the degree of openness of SMEs through the dimensions of the breadth and depth, and the determinants related to varying degrees of openness. 3. Study the complementarity or substitution of SMEs to the openness towards the various sources of external information, and the determinants related to the openness towards these different sources. The results of this thesis and its contributions deducted from the three empirical parts are distributed according to the specific objectives that are raised, and these include : 1. The study of this first objective has led us to deepen our understanding of the theoretical approaches that would be complementary in the explanation of innovation in SMEs. In this sense, the literature review has led us to suggest an integrative conceptual framework which seems to us more appropriate to understand the complex relationships between the various factors which explain innovation in SMEs. It is primarily the open innovation model, the resource-based theory, and the regional innovation system approach. This is a very important theoretical contribution from this thesis. Also, the use of the path analysis has helped to empirically clarify the complex relationships between the determinants of innovation in SMEs. In particular, it is has shown that openness has a direct and indirect effect on the degree of novelty of the surveyed SMEs. The indirect importance of regional and national proximities through the openness on the degree of novelty in these firms has also been highlighted too. 2. The use of the cluster analysis based on the dimensions of openness, breadth and depth, has led to propose four classes of SMEs which differ by their degree of openness : closed SMEs, interactive SMEs, user SMEs and open SMEs. Moreover, in this empirical part of the thesis, by using multinomial and binary logistic regression models, it was possible to show that the variables related to regional and national proximities, as well as the variables related to the internal barriers to innovation, contribute very significantly to explain the probability that SMEs belong to a class of SMEs with a high degree of openness rather than to a class of SMEs with a low degree of openness. 3. The use of the structural equation model and of the Multivariate Probit (MVP) model has, on the one hand, confirmed our assumption related to the complementarity among the four categories of external sources of information (market sources, generally available information sources, research sources, and regional resources) and, on the other hand, the MVP model has confirmed the importance of national and regional proximities in the explanation of the openness to different categories of sources of external information. Finally, a general conclusion of this thesis is revealed in light of the results obtained in the three empirical parts of this thesis : in addition to the importance of openness for the innovation process of the surveyed SMEs, it should be noted that geographical proximity as considered in this thesis, is also important. In this sense, one can only hope for a major implication for policy makers concerned with policy innovation, involvement that could lead to the consideration, and as far as the promotion, of the crucial character of proximity, so that SMEs can get the maximum benefit from relationships with their close partners.

Full textIn this research, we raised the question if Quebec unions were able to act on the immediate work environment during the implementation of lean projects. So we tried to find out which factors of organizational work allow union members to make a lean project, an enabling organization? Our research explored three elements: 1) characterize the outcome of lean projects compared with an enabling organization, 2) characterize the organizational context of lean projects and identify the factors that influence the organizational work during the project and finally 3) characterize the organizational work of the trade union actors during the project and to highlight the factors which conduct to an enabling organization during the project. This exploratory research has been based on the method of multiple case studies. Five cases of lean projects have been documented in a single central union (CSN) by fifteen individual interviews and documents collection. For each project, at least two players were interviewed and documents associated with the project were collected, whenever it was possible. We were able to identify several factors that conduct to an enabling organization: (a) at the external of the business organization level: the act of making available a central union actor in the project with lean’s knowledge, and the presence of an external mediator in case of blocking; (b) at the business organization level: the construction of paritarism and actions and decisions of local officials regarding their participation; and (c) at the production and labour organization level: a way to use value stream mapping, actions and decisions to organize the performance indicators, the close supervision rules, the vertical and horizontal cooperation, as well as to organize the consideration of employees knowledge. These factors are all guidelines of action for trade unions and consultants who spread out lean projects.

Full textQuebec’s Water Policy has almost 20 years. To plan an integrated water management, the Watershed Organizations need to implement consultation and cooperation between all water stakeholders. The consultation meeting is not an obligation for them, it is voluntary. They all have a different relation with the water resources. Depending of their role in their respective organization, they have various interests, which may influence their participation to the integrated water management planed by the Watershed Organizations with the Water Master Plan. This study focuses on the mining industry of the Côte-Nord region and its participation to the consultation. The private sector often has a significant influence in their host communities, so they can have great impacts on the population.The main goal of this research is to know how stakeholders perceive consultation meetings for the integrated water management by watershed, and what is the place of the mining industry’s participation. The hypothesis is that a voluntary consultation is hard to organize and that it is not in the mining industry’s interests to participate. Some interviews have been realized during summer and fall of 2019 to help answer these questions. This case study shows a summary portrait of Quebec’s water governance in a context of decentralization and allows a reflection on our natural resource management methods. The hypothesis is not well confirmed. There are effectively some difficulties to plan a voluntary consultation, however we cannot confirm it is not in the interest of the mining companies to be part of it.
