Full textEl presente estudio investigó el efecto de la inclusión de harina de galleta sobre el rendimiento productivo de cerdos de recría. Un total de 920 lechones recién destetados (22 días) fueron asignados según su peso (livianos, 4.935 g o pesados, 6.893 g) a 20 corrales, y fueron alimentados con una dieta control (DC, n = 10) o una dieta tratamiento (PSG, n = 10) la cual incorporaba 100 g/kg de harina de galleta en remplazo de maíz. Ambas dietas fueron elaboradas para presentar los mismos aportes energéticos y proteicos. El peso de los animales se registró al día 1 y 14 del experimento, mientras que el consumo de alimento los días 2, 7 y 14, permitiendo así calcular la ganancia diaria de peso (GDP) y eficiencia de conversión alimenticia (ECA) para ambos grupos. Los lechones PSG tendieron a presentar un mayor consumo que los animales DC al día 2 (P = 0,11). Durante el mismo periodo, los animales livianos del grupo PSG tendieron a consumir más que los animales pesados (P = 0,10). No existieron diferencias en el consumo entre grupos al día 7 (P = 0,299) y 14 (P = 0,445). El grupo DC presentó una mayor GDP (P = 0,005) y mejor ECA (P = 0,013) al día 14. Estos resultados demuestran que la incorporación de harina de galleta aumentaría el consumo de los lechones más livianos en los primeros días post-destete, sin embargo, su incorporación en etapas posteriores no mejoraría el crecimiento de los animales

Full textThe aim of this study was to evaluate the incorporation of spirulina on the nutritional and sensory properties of wheat-and-amaranth based cookies, by means of proximal-chemical, microbiologic and sensory analysis. Wheat flour was partially replaced by amaranth flour in 30%. Also, it was replaced with spirulina at 0% (control cookie), 1% (CS-1), 3% (CS-2) and 5% (C-3). The impact of incorporation on physicochemical, microbiological and sensory characteristics of cookies were evaluated. Results showed that protein, fat, ash, moisture, iron, calcium and sodium content of cookies CS-1, CS-2 and CS-3 increased as a result of spirulina incorporation. According to sensory evaluation by hedonic test, sample with 3% spirulina received the highest score after control.

Full textThis research work develops a business idea for the course Sustainable Business Entrepreneurship: Implementation, taught at the Peruvian University of Applied Sciences (UPC). Our business model was consolidated with the knowledge learned during the university career. To develop it, we identified the two main problems that dog owners present when educating and feeding them, since due to the situation there are a greater number of families with at least one pet at home. The problem of educating them properly lies in choosing a treat that the pet wants to receive and that at the same time is healthy and contributes to their diet. Faced with this, our business idea has been designed to be able to provide a solution to these two identified problems, since we make healthy homemade cookies that serve as a reward and as a food supplement due to the nutritional contribution of the ingredients. The preparation of healthy treats for dogs is based on oatmeal and banana, it has vitamin B6, vitamin C, magnesium and potassium, thus helping to improve heart rate and promote bone health. We conducted an investigation to determine our target audience within metropolitan Lima, determining zones 6 and 7 as the most appropriate. For our business idea, we develop a plan that allows us to organize the appropriate resources and strategies during the first 3 years, since it is important to know if the business is profitable.

Full textAccording to the research conducted by our team, we have been able to identify situations that concern the parents of our analysis segment; parents with children between 3 and 10 years of age in the socio-economic sector A and B of metropolitan Lima. The practicality of digital media that interferes with optimal growth of their children, the lack of effective communication and the generation of unhealthy habits for them. In addition, it should be mentioned that the pandemic caused by the Covid – 19 has altered family life by closing schools for children and creating a remote work style from home for parents. It’s for this reason that a group of students from the Faculty of Business of the Peruvian University of Applied Sciences has seen the creation of Galletea, a business model that seeks to reach children, developing the creative side and motivating their learning and imagination, sharing moments of creativity and moments as a family. All these factors based on a previous analysis of the business model, focusing on the results of the financial plan, which indicates with right determination that this project has the capacity to generate cash which will allow it to have a positive profitability outlook for both the project itself, as a generator of value and also for shareholders.

The main input is eggshell powder since this ingredient provides high calcium content. In this way, Galletas Calette will have 3 unique flavors on the market. The segment to be covered is Modern Lima, for the public between 25 to 54 years old and from NSE B and C, likewise, the product is for those who are concerned about consuming healthier foods. One of Calette's objectives is to offer a product based on quality inputs and high nutritional value. Given the current situation of the COVID-19 pandemic, the best option to sell cookies is the online channel, specifically social networks such as Facebook and Instagram. The mentioned channel will allow to have a greater reach with the target audience.
