The small but growing world of exotic meat allows adventurous appetites a taste of the wild. But as Reporter Ike Sriskandarajah found out, game meat is vastly unregulated and sometimes illegal. He follows the trail of lion meat sold at his corner grocer to a shady corner of the meat industry. Along the way he meets with store owners, online exotic meat retailers, the United States Department of Agriculture, the Food and Drug Administration, and the Fish and Wildlife Service. Few can say where the lions come from, but all signs point to a big cat-skinning operation in a Chicago suburb. The butcher associated with it has been in the game for years and was arrested for passing off meat from endangered tigers, leopards, and ligers as legal lion meat. Tests conducted by the FDA show that he is back to his old tricks, selling mislabeled game meat. This investigation shows that we can eat almost anything—but the story behind where our meat comes from can make it hard to swallow.

Abstract:
The aim of the study was to present a comprehensive characterisation of crayfish meat, which is crucial to assess its potential usefulness in the food industry. To this end, we assessed the yield, basic chemical composition (protein, fat, minerals), nutritional value (amino acid and fatty acid profiles, essential amino acid index (EAAI), chemical score of essential amino acids (CS), hypocholesterolaemic/hypercholesterolaemic ratio (h/H), atherogenicity (AI) and thrombogenicity (TI) indices), as well as culinary value (lab colour, texture, sensory characteristics, structure) of the meat of spiny-cheek crayfish (Faxonius limosus) (n = 226) from Lake Sominko (Poland) harvested in May–September 2017. Crayfish meat, especially that from the abdomen, was shown to have high nutritional parameters. It is lean (0.26% of fat), with a favourable fatty acid profile and a very high quality of fat (PUFA (sum of polyunsaturated fatty acids):SFA (sum of saturated fatty acids), n-6/n-3, h/H, AI, TI) and protein (high CS and EAAI). It is also a better source of Ca, K, Mg, Na, P, and Cu than meat from slaughter animals. Hence, crayfish meat can be an alternative to livestock meat in the human diet. Owing to its culinary value (delicateness, weak game flavour, and odour), it meets the requirements of the most demanding consumers, i.e., children and older people.

Abstract:
There has been a sudden growth in the vegan industry, with meatless burgers garnering a profoundly inviting reception and even people such as Arnold Schwarzenegger and Jackie Chan supportively entering the conversation. In some ways, companies such as Beyond MeatTM and Impossible FoodsTM and films such as The Game Changers are succeeding in doing what many political vegetarians and vegans, academics, and activists have long failed to do: to have a real effect on the animal agriculture business. Perhaps this is something to celebrate, especially since (despite the arguments, protests, and even veg-friendly businesses having steadily increased) the numbers of animals involved in the industry have consistently swollen. To rest much hope in the current vegan trends would be to fall victim to a deceptively sexist and ecophobic guiding narrative. While taking big steps toward shutting down the animal agriculture business, the great strides of the vegan industry follow a well-worn path. Putting veggie patties in the meat aisle and shunning words such as “vegetarian” and “vegan” engages in a disavowal of vegetal realities, and the fact that the meat aisle itself is so heavily gendered effectively re-genders the food itself. It may all seem harmless enough—even productive—until understood within the larger context of patriarchal “attempts,” to cite Laura Wright, “to reconceptualize veganism as an alternative untramasculine choice.” The Game Changers drips with such attempts, and, like the “meatless” products now enjoying such popularity, reeks of male self-delusionalism about having discovered a healthful, new diet. There is a lot more than veggies being served up with what we might call the new veganism, and there is not much chance of really effecting change unless we look at what’s really on the plate.

The settlement of Greenland, the world's largest island, dates back at least 4,000 years but the present population numbers no more than 35,000 and is very unevenly distributed throughout the area — 40 per cent of the inhabitants are grouped along the island's south-west coast. However, major increases in the population in recent years have brought about serious housing and land communications problems and a pressing need for improved community facilities. Greenland's economy is based upon the exploitation of natural resources, mainly game, fish and minerals. With the exception of a few meat and fish processing plants established in recent years secondary industry is almost non-existent. Increased investment and improvement of the educational System appear to be keystones to the future development of this isolated land.

Abstract:
Despite a growing recognition of late Palaeolithic and Mesolithic settlement in recent years, the area of Pojezierze Łagowskie still represents one of less known regions of western Poland, both in terms of Old and Middle Stone Age settlement and reconstruction of of contemporary environmental conditions. The article provides results of technological, typological, functional analyses, as well as that of raw materials used in stone industry of Mesolithic communities occupying sites 13 and 16 in Wilenko. Majority of functional tools is characterised by use-wear traces, which should be interpreted as results of variability of meat, bone, antler, and leather processing activities or game hunting. In the article an attempt has been made to reconstruct environmental conditions, on the basis of the results of pollen analysis.

Abstract:
Sustainable use of wildlife has become equated with exploitation of animal products (meat, skin or feathers) and/or removal of wild progenitors into the pet trade. This consumption of the wildlife is therefore largely ex situ and so removes nutrients and energy from the rangelands. Demand for lethal or a removal action is often driven by the severity of the perceived conflict between the wildlife and other enterprises, especially agriculture, rather than for the resulting products. Such uses also raise community concerns about humane treatment of animals and a valuing of the natural heritage. Wildlife-based tourism, as part of the valuable and growing nature-based or ecotourism industry in Australia, is an in situ use that may be a more ecologically sustainable and economically twble option for use of rangeland wildlife. This paper examines these possibilities and their problems with a focus on the commercial kangaroo industry and the use of arid-zone mammals, birds and reptiles for pets. It provides new evidence that wildlife-tourism based on free-living kangaroos in the rangelands is both feasible and in demand. This industry should be given advocacy in the on-going debate on the management and future of the rangelands. Key words: kangaroos, wildlife management, wildlife tourism, game harvesting

Abstract:
Using non-traditional raw meats is a promising direction of the meat industry. They include venison and meat from yak, elk, red deer, rabbits, ostriches, upland game, and musk-ox. The study aimed to compare the biochemical and physicochemical parameters of the meat from reindeer, elk, and musk-ox living in the Yenisei North. We found that these meats had a high biological value. First, we studied the composition of amino acids, fatty acids, vitamins, and minerals in the meat from reindeer of various sex and age groups. We found that the difference between the contents of unsaturated and saturated fatty acids and their ratio in adult and young reindeer males was in favour of young males, while these parameters did not differ in the meat from reindeer females of various age groups. Nevertheless, reindeer females had a higher content of saturated acids compared to reindeer male meat. Further, we studied the composition of amino acids, fatty acids, vitamins, and minerals in Taimyr elk and musk-ox meats. According to the results, the contents of essential amino acids in Taimyr elk and musk-ox meats were 60% and 55%, respectively. In both cases, the dominant amino acids were leucine, isoleucine, lysine, and valine. The study revealed the benefits of using indigenous meats in sausage production. Finally, we showed the influence of starter cultures on the quality of dry sausages and developed formulations of venison-based sausages.

In Ireland today, we eat more pigmeat per capita, approximately 32.4 kilograms, than any other meat, yet you very seldom if ever see a pig (C.S.O.). Fat and flavour are two words that are synonymous with pig meat, yet scientists have spent the last thirty years cross breeding to produce leaner, low-fat pigs. Today’s pig professionals prefer to use the term “pig finishing” as opposed to the more traditional “pig fattening” (Tuite). The pig evokes many themes in relation to cuisine. Charles Lamb (1775-1834), in his essay Dissertation upon Roast Pig, cites Confucius in attributing the accidental discovery of the art of roasting to the humble pig. The pig has been singled out by many cultures as a food to be avoided or even abhorred, and Harris (1997) illustrates the environmental effect this avoidance can have by contrasting the landscape of Christian Albania with that of Muslim Albania.This paper will focus on the pig in Irish cuisine and culture from ancient times to the present day. The inspiration for this paper comes from a folklore tale about how Saint Martin created the pig from a piece of fat. The story is one of a number recorded by Seán Ó Conaill, the famous Kerry storyteller and goes as follows:From St Martin’s fat they were made. He was travelling around, and one night he came to a house and yard. At that time there were only cattle; there were no pigs or piglets. He asked the man of the house if there was anything to eat the chaff and the grain. The man replied there were only the cattle. St Martin said it was a great pity to have that much chaff going to waste. At night when they were going to bed, he handed a piece of fat to the servant-girl and told her to put it under a tub, and not to look at it at all until he would give her the word next day. The girl did so, but she kept a bit of the fat and put it under a keeler to find out what it would be.When St Martin rose next day he asked her to go and lift up the tub. She lifted it up, and there under it were a sow and twelve piglets. It was a great wonder to them, as they had never before seen pig or piglet.The girl then went to the keeler and lifted it, and it was full of mice and rats! As soon as the keeler was lifted, they went running about the house searching for any hole that they could go into. When St Martin saw them, he pulled off one of his mittens and threw it at them and made a cat with that throw. And that is why the cat ever since goes after mice and rats (Ó Conaill).The place of the pig has long been established in Irish literature, and longer still in Irish topography. The word torc, a boar, like the word muc, a pig, is a common element of placenames, from Kanturk (boar’s head) in West Cork to Ros Muc (headland of pigs) in West Galway. The Irish pig had its place in literature well established long before George Orwell’s English pig, Major, headed the dictatorship in Animal Farm. It was a wild boar that killed the hero Diarmaid in the Fenian tale The Pursuit of Diarmaid and Gráinne, on top of Ben Bulben in County Sligo (Mac Con Iomaire). In Ancient and Medieval Ireland, wild boars were hunted with great fervour, and the prime cuts were reserved for the warrior classes, and certain other individuals. At a feast, a leg of pork was traditionally reserved for a king, a haunch for a queen, and a boar’s head for a charioteer. The champion warrior was given the best portion of meat (Curath Mhir or Champions’ Share), and fights often took place to decide who should receive it. Gantz (1981) describes how in the ninth century tale The story of Mac Dathó’s Pig, Cet mac Matach, got supremacy over the men of Ireland: “Moreover he flaunted his valour on high above the valour of the host, and took a knife in his hand and sat down beside the pig. “Let someone be found now among the men of Ireland”, said he, “to endure battle with me, or leave the pig for me to divide!”It did not take long before the wild pigs were domesticated. Whereas cattle might be kept for milk and sheep for wool, the only reason for pig rearing was as a source of food. Until the late medieval period, the “domesticated” pigs were fattened on woodland mast, the fruit of the beech, oak, chestnut and whitethorn, giving their flesh a delicious flavour. So important was this resource that it is acknowledged by an entry in the Annals of Clonmacnoise for the year 1038: “There was such an abundance of ackornes this yeare that it fattened the pigges [runts] of pigges” (Sexton 45). In another mythological tale, two pig keepers, one called ‘friuch’ after the boars bristle (pig keeper to the king of Munster) and the other called ‘rucht’ after its grunt (pig keeper to the king of Connacht), were such good friends that the one from the north would bring his pigs south when there was a mast of oak and beech nuts in Munster. If the mast fell in Connacht, the pig-keeper from the south would travel northward. Competitive jealousy sparked by troublemakers led to the pig keepers casting spells on each other’s herds to the effect that no matter what mast they ate they would not grow fat. Both pig keepers were practised in the pagan arts and could form themselves into any shape, and having been dismissed by their kings for the leanness of their pig herds due to the spells, they eventually formed themselves into the two famous bulls that feature in the Irish Epic The Táin (Kinsella).In the witty and satirical twelfth century text, The Vision of Mac Conglinne (Aisling Mhic Conglinne), many references are made to the various types of pig meat. Bacon, hams, sausages and puddings are often mentioned, and the gate to the fortress in the visionary land of plenty is described thus: “there was a gate of tallow to it, whereon was a bolt of sausage” (Jackson).Although pigs were always popular in Ireland, the emergence of the potato resulted in an increase in both human and pig populations. The Irish were the first Europeans to seriously consider the potato as a staple food. By 1663 it was widely accepted in Ireland as an important food plant and by 1770 it was known as the Irish Potato (Mac Con Iomaire and Gallagher). The potato transformed Ireland from an under populated island of one million in the 1590s to 8.2 million in 1840, making it the most densely populated country in Europe. Two centuries of genetic evolution resulted in potato yields growing from two tons per acre in 1670 to ten tons per acre in 1800. A constant supply of potato, which was not seen as a commercial crop, ensured that even the smallest holding could keep a few pigs on a potato-rich diet. Pat Tuite, an expert on pigs with Teagasc, the Irish Agricultural and Food Development Authority, reminded me that the potatoes were cooked for the pigs and that they also enjoyed whey, the by product of both butter and cheese making (Tuite). The agronomist, Arthur Young, while travelling through Ireland, commented in 1770 that in the town of Mitchelstown in County Cork “there seemed to be more pigs than human beings”. So plentiful were pigs at this time that on the eve of the Great Famine in 1841 the pig population was calculated to be 1,412,813 (Sexton 46). Some of the pigs were kept for home consumption but the rest were a valuable source of income and were shown great respect as the gentleman who paid the rent. Until the early twentieth century most Irish rural households kept some pigs.Pork was popular and was the main meat eaten at all feasts in the main houses; indeed a feast was considered incomplete without a whole roasted pig. In the poorer holdings, fresh pork was highly prized, as it was only available when a pig of their own was killed. Most of the pig was salted, placed in the brine barrel for a period or placed up the chimney for smoking.Certain superstitions were observed concerning the time of killing. Pigs were traditionally killed only in months that contained the letter “r”, since the heat of the summer months caused the meat to turn foul. In some counties it was believed that pigs should be killed under the full moon (Mahon 58). The main breed of pig from the medieval period was the Razor Back or Greyhound Pig, which was very efficient in converting organic waste into meat (Fitzgerald). The killing of the pig was an important ritual and a social occasion in rural Ireland, for it meant full and plenty for all. Neighbours, who came to help, brought a handful of salt for the curing, and when the work was done each would get a share of the puddings and the fresh pork. There were a number of days where it was traditional to kill a pig, the Michaelmas feast (29 September), Saint Martins Day (11 November) and St Patrick’s Day (17 March). Olive Sharkey gives a vivid description of the killing of the barrow pig in rural Ireland during the 1930s. A barrow pig is a male pig castrated before puberty:The local slaughterer (búistéir) a man experienced in the rustic art of pig killing, was approached to do the job, though some farmers killed their own pigs. When the búistéirarrived the whole family gathered round to watch the killing. His first job was to plunge the knife in the pig’s heart via the throat, using a special knife. The screeching during this performance was something awful, but the animal died instantly once the heart had been reached, usually to a round of applause from the onlookers. The animal was then draped across a pig-gib, a sort of bench, and had the fine hairs on its body scraped off. To make this a simple job the animal was immersed in hot water a number of times until the bristles were softened and easy to remove. If a few bristles were accidentally missed the bacon was known as ‘hairy bacon’!During the killing of the pig it was imperative to draw a good flow of blood to ensure good quality meat. This blood was collected in a bucket for the making of puddings. The carcass would then be hung from a hook in the shed with a basin under its head to catch the drip, and a potato was often placed in the pig’s mouth to aid the dripping process. After a few days the carcass would be dissected. Sharkey recalls that her father maintained that each pound weight in the pig’s head corresponded to a stone weight in the body. The body was washed and then each piece that was to be preserved was carefully salted and placed neatly in a barrel and hermetically sealed. It was customary in parts of the midlands to add brown sugar to the barrel at this stage, while in other areas juniper berries were placed in the fire when hanging the hams and flitches (sides of bacon), wrapped in brown paper, in the chimney for smoking (Sharkey 166). While the killing was predominantly men’s work, it was the women who took most responsibility for the curing and smoking. Puddings have always been popular in Irish cuisine. The pig’s intestines were washed well and soaked in a stream, and a mixture of onions, lard, spices, oatmeal and flour were mixed with the blood and the mixture was stuffed into the casing and boiled for about an hour, cooled and the puddings were divided amongst the neighbours.The pig was so palatable that the famous gastronomic writer Grimod de la Reyniere once claimed that the only piece you couldn’t eat was the “oink”. Sharkey remembers her father remarking that had they been able to catch the squeak they would have made tin whistles out of it! No part went to waste; the blood and offal were used, the trotters were known as crubeens (from crúb, hoof), and were boiled and eaten with cabbage. In Galway the knee joint was popular and known as the glúiníns (from glún, knee). The head was roasted whole or often boiled and pressed and prepared as Brawn. The chitterlings (small intestines) were meticulously prepared by continuous washing in cool water and the picking out of undigested food and faeces. Chitterlings were once a popular bar food in Dublin. Pig hair was used for paintbrushes and the bladder was occasionally inflated, using a goose quill, to be used as a football by the children. Meindertsma (2007) provides a pictorial review of the vast array of products derived from a single pig. These range from ammunition and porcelain to chewing gum.From around the mid-eighteenth century, commercial salting of pork and bacon grew rapidly in Ireland. 1820 saw Henry Denny begin operation in Waterford where he both developed and patented several production techniques for bacon. Bacon curing became a very important industry in Munster culminating in the setting up of four large factories. Irish bacon was the brand leader and the Irish companies exported their expertise. Denny set up a plant in Denmark in 1894 and introduced the Irish techniques to the Danish industry, while O’Mara’s set up bacon curing facilities in Russia in 1891 (Cowan and Sexton). Ireland developed an extensive export trade in bacon to England, and hams were delivered to markets in Paris, India, North and South America. The “sandwich method” of curing, or “dry cure”, was used up until 1862 when the method of injecting strong brine into the meat by means of a pickling pump was adopted by Irish bacon-curers. 1887 saw the formation of the Bacon Curers’ Pig Improvement Association and they managed to introduce a new breed, the Large White Ulster into most regions by the turn of the century. This breed was suitable for the production of “Wiltshire” bacon. Cork, Waterford Dublin and Belfast were important centres for bacon but it was Limerick that dominated the industry and a Department of Agriculture document from 1902 suggests that the famous “Limerick cure” may have originated by chance:1880 […] Limerick producers were short of money […] they produced what was considered meat in a half-cured condition. The unintentional cure proved extremely popular and others followed suit. By the turn of the century the mild cure procedure was brought to such perfection that meat could [… be] sent to tropical climates for consumption within a reasonable time (Cowan and Sexton).Failure to modernise led to the decline of bacon production in Limerick in the 1960s and all four factories closed down. The Irish pig market was protected prior to joining the European Union. There were no imports, and exports were subsidised by the Pigs and Bacon Commission. The Department of Agriculture started pig testing in the early 1960s and imported breeds from the United Kingdom and Scandinavia. The two main breeds were Large White and Landrace. Most farms kept pigs before joining the EU but after 1972, farmers were encouraged to rationalise and specialise. Grants were made available for facilities that would keep 3,000 pigs and these grants kick started the development of large units.Pig keeping and production were not only rural occupations; Irish towns and cities also had their fair share. Pigs could easily be kept on swill from hotels, restaurants, not to mention the by-product and leftovers of the brewing and baking industries. Ed Hick, a fourth generation pork butcher from south County Dublin, recalls buying pigs from a local coal man and bus driver and other locals for whom it was a tradition to keep pigs on the side. They would keep some six or eight pigs at a time and feed them on swill collected locally. Legislation concerning the feeding of swill introduced in 1985 (S.I.153) and an amendment in 1987 (S.I.133) required all swill to be heat-treated and resulted in most small operators going out of business. Other EU directives led to the shutting down of thousands of slaughterhouses across Europe. Small producers like Hick who slaughtered at most 25 pigs a week in their family slaughterhouse, states that it was not any one rule but a series of them that forced them to close. It was not uncommon for three inspectors, a veterinarian, a meat inspector and a hygiene inspector, to supervise himself and his brother at work. Ed Hick describes the situation thus; “if we had taken them on in a game of football, we would have lost! We were seen as a huge waste of veterinary time and manpower”.Sausages and rashers have long been popular in Dublin and are the main ingredients in the city’s most famous dish “Dublin Coddle.” Coddle is similar to an Irish stew except that it uses pork rashers and sausage instead of lamb. It was, traditionally, a Saturday night dish when the men came home from the public houses. Terry Fagan has a book on Dublin Folklore called Monto: Murder, Madams and Black Coddle. The black coddle resulted from soot falling down the chimney into the cauldron. James Joyce describes Denny’s sausages with relish in Ulysses, and like many other Irish emigrants, he would welcome visitors from home only if they brought Irish sausages and Irish whiskey with them. Even today, every family has its favourite brand of sausages: Byrne’s, Olhausens, Granby’s, Hafner’s, Denny’s Gold Medal, Kearns and Superquinn are among the most popular. Ironically the same James Joyce, who put Dublin pork kidneys on the world table in Ulysses, was later to call his native Ireland “the old sow that eats her own farrow” (184-5).The last thirty years have seen a concerted effort to breed pigs that have less fat content and leaner meat. There are no pure breeds of Landrace or Large White in production today for they have been crossbred for litter size, fat content and leanness (Tuite). Many experts feel that they have become too lean, to the detriment of flavour and that the meat can tend to split when cooked. Pig production is now a complicated science and tighter margins have led to only large-scale operations being financially viable (Whittemore). The average size of herd has grown from 29 animals in 1973, to 846 animals in 1997, and the highest numbers are found in counties Cork and Cavan (Lafferty et al.). The main players in today’s pig production/processing are the large Irish Agribusiness Multinationals Glanbia, Kerry Foods and Dairygold. Tuite (2002) expressed worries among the industry that there may be no pig production in Ireland in twenty years time, with production moving to Eastern Europe where feed and labour are cheaper. When it comes to traceability, in the light of the Foot and Mouth, BSE and Dioxin scares, many feel that things were much better in the old days, when butchers like Ed Hick slaughtered animals that were reared locally and then sold them back to local consumers. Hick has recently killed pigs for friends who have begun keeping them for home consumption. This slaughtering remains legal as long as the meat is not offered for sale.Although bacon and cabbage, and the full Irish breakfast with rashers, sausages and puddings, are considered to be some of Ireland’s most well known traditional dishes, there has been a growth in modern interpretations of traditional pork and bacon dishes in the repertoires of the seemingly ever growing number of talented Irish chefs. Michael Clifford popularised Clonakilty Black Pudding as a starter in his Cork restaurant Clifford’s in the late 1980s, and its use has become widespread since, as a starter or main course often partnered with either caramelised apples or red onion marmalade. Crubeens (pigs trotters) have been modernised “a la Pierre Kaufman” by a number of Irish chefs, who bone them out and stuff them with sweetbreads. Kevin Thornton, the first Irish chef to be awarded two Michelin stars, has roasted suckling pig as one of his signature dishes. Richard Corrigan is keeping the Irish flag flying in London in his Michelin starred Soho restaurant, Lindsay House, where traditional pork and bacon dishes from his childhood are creatively re-interpreted with simplicity and taste.Pork, ham and bacon are, without doubt, the most traditional of all Irish foods, featuring in the diet since prehistoric times. Although these meats remain the most consumed per capita in post “Celtic Tiger” Ireland, there are a number of threats facing the country’s pig industry. Large-scale indoor production necessitates the use of antibiotics. European legislation and economic factors have contributed in the demise of the traditional art of pork butchery. Scientific advancements have resulted in leaner low-fat pigs, many argue, to the detriment of flavour. Alas, all is not lost. There is a growth in consumer demand for quality local food, and some producers like J. Hick & Sons, and Prue & David Rudd and Family are leading the way. The Rudds process and distribute branded antibiotic-free pig related products with the mission of “re-inventing the tastes of bygone days with the quality of modern day standards”. Few could argue with the late Irish writer John B. ENGLISH ABSTRACT: The wildlife industry in Namibia has shown tremendous growth over the past decades and is currently the only extensive production system in Namibia that is expanding. Harvesting game for the purpose of meat production is a viable option since there is a worldwide demand for healthy and high quality proteins. The main objective of the dissertation was to investigate selected parameters required to develop a sustainable Namibian game meat industry. The major species suitable for commercial harvesting operations are springbok (Antidorcas marsupialis – Zimmerman, 1780), gemsbok (Oryx gazella – Linnaeus, 1785), kudu (Tragelaphus strepsiceros – Pallas, 1766), mountain zebra (Equus zebra hartmannae – Linnaeus, 1758) and red hartebeest (Alcelaphus buselaphus caama – Pallas, 1766). Eland (Tragelaphus oryx – Pallas, 1766) could be considered as a suitable species, although the numbers of animals that can be harvested during an operation are limited. This study demonstrated that gender influenced live weight of springbok, kudu and red hartebeest. Gender also influenced carcass weights for springbok, gemsbok, kudu and red hartebeest, but not for eland, while dressing percentage did not differ between gender for springbok, gemsbok, kudu and red hartebeest. Although there were some statistical differences in the chemical composition of the various muscles from the different species (Mm. biceps femoris, infraspinatus, longissimus dorsi, semimembranosus, semitendinosus and supraspinatus), it is doubtful whether consumers would be able to distinguish between these. Discriminant analysis could not differentiate among the different muscle groups for springbok and gemsbok. A differentiation was, however, revealed among the various muscles for red hartebeest. During the investigation on the influence of season and gender on the carcass yields and meat quality characteristics of kudu and red hartebeest, dressing percentage was affected by season, but not by gender. Muscle colour differed significantly between seasons. Results from this study showed that male eland contained more saturated fatty acids than females, but no gender differences were observed for polyunsaturated fatty acids. Hides of gemsbok, kudu and red hartebeest contributed 6 – 7% of live weight, while the skin of springbok contributed 4 – 5% of live weight. Comparisons of offal items among species showed significant differences for all offal items, except for intestines. Retail cuts showed significant species difference for rump, topside, silverside and sinews. No significant species differences were observed for thick flank and bolo. Significant gender differences were observed for silverside. No interactions between species and gender were found for the different retail cuts from gemsbok and kudu. Microbiological counts of game meat, chilled for 6 weeks and frozen for 12 months, respectively, were found to be within acceptable limits as prescribed by the South African retail market. Differences in physico-chemical and microbiological properties were observed among salami from different game species. The springbok salami was found to be microbiologically unstable. The main characteristics observed while tasting the salami from springbok, gemsbok, kudu and zebra were a distinctive smoky, salty, pepper and salami flavour combined with a smoky, salami aroma. Game flavour did not feature as strong during the sensory analyses. Sustainable utilization of game for commercial meat production has the potential to increase earnings to beneficiaries in the wildlife sector. Results from this study contributed knowledge which can be utilized to develop the Namibian game meat industry.
AFRIKAANSE OPSOMMING: Die wildsbedryf in Namibië het die afgelope dekades buitengewone groei getoon en is huidiglik die enigste ekstensiewe produksie-sisteem wat in Namibië uitbrei. Die oes van wild is ʼn voordelige opsie, aangesien daar wêreldwyd ʼn aanvraag is na gesonde en hoë kwaliteit proteïene. Die hoofdoelwit van hierdie dissertasie was die loods van ʼn ondersoek na geselekteerde aspekte wat benodig word om die Namibiese wildsvleisbedryf te ontwikkel. Die belangrikste spesies geïdentifiseer as geskik vir kommersiële oes, is springbok (Antidorcas marsupialis – Zimmerman, 1780), gemsbok (Oryx gazella – Linnaeus, 1785), koedoe (Tragelaphus strepsiceros – Pallas, 1766), berg sebra (Equus zebra hartmannae – Linnaeus, 1758) en rooihartbees (Alcelaphus buselaphus caama – Pallas, 1766). Diskriminant-analise kon nie verskille uitwys tussen die verskillende groepe spiere van springbok en gemsbok nie. Verskille was egter te bespeur tussen verskillende spiere van die rooihartbees. Gedurende hierdie ondersoek is die invloed van seisoen en geslag op die karkasopbrengs en vleiskwaliteit van koedoe en rooihartbees ondersoek. Uitslagpersentasie is beïnvloed deur seisoen, maar nie deur geslag nie. Kleur het betekenisvol verskil tussen seisoene. Resultate van die studie het getoon dat elandbulle meer versadigde vetsure het as koeie, maar dat geen verskille vir geslag gevind is vir poli-onversadigde vetsure nie. Gemsbok-, koedoe - en rooihartbeesvelle het 6 – 7% bygedra tot die lewendige gewig, terwyl die vel van die springbok 4 – 5% bygedra het. Vergelykings van afvalopbrengs tussen spesies het verskille uitgewys ten opsigte van al die items, behalwe die ingewande. Kleinhandelsnitte het betekenisvolle verskille getoon vir die kruis, binneboud, dy en senings. Geen betekenisvolle spesies verskille is opgemerk vir die diklies en bolo nie. Die dy het betekenisvolle verskille tussen geslagte getoon. Geen interaksie tussen spesies en geslag is opgemerk vir die verskillende kleinhandelsnitte van gemsbok en koedoe nie. Mikrobiologiese tellings vir wildsvleis, verkoel vir 6 weke en gevries vir 12 maande, onderskeidelik, het voldoen aan die aanvaarbare vlakke soos voorgeskryf deur die Suid-Afrikaanse kleinhandelsmark. Verskille in fisiese, chemiese en mikrobiologiese kwaliteite was opgemerk vir die salami van die verskillende spesies. Springbok salami was mikrobiologies onstabiel. Die belangrikste karaktereienskappe bemerk tydens die proe van die salami vervaardig van springbok-, gemsbok- , koedoe - en sebravleis, was ʼn oorheersende rook-, sout-, peper- en salamigeur, gekombineer met ʼn rook- en salami aroma. Wildsvleisgeur het nie sterk na vore gekom tydens die sensoriese analise, nie. Die volhoubare gebruik van wild vir kommersiële vleisproduksie het die potensiaal om inkomste vir belangegroepe in die wildsektor te verhoog. Resultate van hierdie studie het kennis uitgebrei wat gebruik kan word om die wildsvleisindustrie in Namibië te ontwikkel.

ENGLISH ABSTRACT: Livestock production forms a significant part of the agricultural activities in Namibia. This study is an analysis of the red meat (beef and mutton) supply chain in the country, south of the Veterinary Cordon Fence. The supply chain from production of animals on the farms through processing to placing of meat on the market is analyzed. The red meat supply chain is split into three sectors for the purpose of the study. The three sectors are the supply sector involved in the production of animals on the farms, the processing sector involved with the slaughtering and value addition on the livestock products and the demand sector that is involved in the placing on the market of the livestock and livestock products. Each of the sectors is then analyzed as an entity. The three tools that are used to analyze the sectors are: a) The market competitiveness done using the Porter’s 5 force analysis; b) The SWOT analysis for determination of intrinsic and extrinsic environments of the respective sectors and c) Trend review of the activity in each sector for the years 2000-2005. The aim of the analysis is to create a deeper insight into the forces and the impact these forces are having on the meat supply chain.
AFRIKAANSE OPSOMMING: Veeboerdery vorm ‘n vername deel van landbou-aktiwiteite in Namibië. Hierdie navorsingsverslag is ’n analise van die rooivleis (bees en skaap) leweringsketting in die land suid van die veeartsafbakeningsheining. Die studie ondersoek die leweringsketting van produksie van vee op plase tot by die plaas van vleis op die markte. Die rooivleis leweringsketting is, vir die doeleindes van hierdie studie, in drie dele verdeel. Hierdie drie dele is die lewerings-sektor wat verantwoordelik is vir die produksie van vee op die plase, die prosesserings-sektor wat verantwoordelik is vir die slag en waardetoevoeging tot die vee-produkte, en die vraag-sektor wat verantwoordelik is vir die plasing van vee en vee-produkte op die mark. Elk van hierdie sektore word ontleed as ’n entiteit. Die drie instrumente wat gebruik word om die sektore te analiseeer is: a) Die markkompeterendheid word gedoen aand die hand van Porter se 5 kragte analise; b) Die “SWOT” analise vir die bepaling van die intrinsieke en ekstrinsieke omgewings van die onderskeie sektore, en c) Tendens oorsig van die aktiwiteite in elke sektor vir die jare 2000-2005. Die doel van die analises is om dieper insig te skep van die kragte en die impak wat hierdie kragte het op die vleis leweringsketting.

ENGLISH ABSTRACT: The purpose of this research was to study the current purchasing and marketing behaviour of game meat by supermarkets, butcheries and restaurants in the Western Cape Province, and to investigate perceptions on, purchasing and consumption of game meat by South African consumers and overseas tourists visiting South Africa. Research was done by the survey method with the aid of structured, self-administered questionnaires. Chi-squared frequencies were used to test for significant influences of data. The research showed that South African consumers are poorly educated regarding the nutritional benefits and cooking methods of game meat. Consumers indicated that they would buy game meat if they were better informed on its qualities. Just over 73% of the respondents indicated that they have eaten game meat, whilst 66% of the respondents indicated that they would eat game meat again. South African consumers, however, indicated that they are not willing to pay more for game meat than other meat types. Race and educational level were the only two socio-demographical variables that showed significant differences. White respondents and respondents that were in the "post-High school diploma/degree" educational group, were better informed on game meat and were also more likely to buy game meat than either the black or coloured racial groups. The respondents indicated the leanness of meat as one of the most important quality considerations when they buy meat. This provides an opportunity for game meat marketers to market game meat as a low-fat meat product. This research succeeded in identifying target markets for game meat. Restaurants should market game meat for European tourists, whilst supermarkets and butcheries should focus on marketing game meat to white consumers and consumers with higher educational qualifications, but also target coloured and black consumers. This research confirmed that the South African game meat industry is plagued by numerous misconceptions and contradictions. It is evident that both consumers and marketers of game meat have contradictory beliefs regarding the seasonal availability of game meat. Consumers as well as some of the supermarket, butchery and restaurant meat buyers, are ill-informed regarding the sensory qualities, health benefits and preparation and cooking methods of game meat. Ironically, the research showed that tourists visiting South Africa were the respondent group that were the most knowledgeable regarding the sensory qualities and health benefits of game meat. This research provides a valuable pilot-study into the marketing possibilities of game meat.
AFRIKAANSE OPSOMMING: Die doel van hierdie navorsing was om die huidige aankoop en bemarkingsgedrag vir wildsvleis deur supermarkte, slaghuise en restaurante in die Wes-Kaap gebied, en persepsies oor en aankoop van wild deur Suid-Afrikaanse verbruikers en oorsese toeriste wat Suid-Afrika besoek, te ondersoek. Gestruktureerde vraelyste is ontwerp om die navorsing volgens die opname metode uit te voer. Chi-kwadraat frekwensies is gebruik om beduidende invloede te meet. Die navorsing het gewys dat Suid-Afrikaanse verbruikers oningelig is aangaande die gesondheidsvoordele en gaarmaakmetodes van wildsvleis. Verbruikers het aangedui dat hulle wildsvleis meer gereeld sou koop indien hulle beter ingelig word oor wildsvleis se kwaliteite. Die navorsing het bewys dat toeriste wat Suid-Afrika besoek, beter ingelig is oor die sensoriese kwaliteite en gesondheidsvoordele van wildsvleis as Suid-Afrikaners. Net meer as 73% van die Suid-Afrikaanse respondente het aangedui dat hulle al voorheen wildsvleis geëet het, terwyl 66% aangedui het dat hulle weer wildsvleis sal eet. Suid-Afrikaanse verbruikers het egter genoem dat hulle nie bereid is om meer vir wildsvleis te betaal as vir ander vleis nie. Ras en opvoedkundige vlak is die enigste sosio-demografiese veranderlikes wat 'n beduidende invloed gehad het. Blanke respondente en respondente in die "post-hoërskool diploma/graad" opvoedkundige vlak, was beter ingelig oor wildsvleis en ook meer geneig om wildsvleis te koop. Die vetinhoud van vleis was vir meeste respondente 'n belangrike maatstaf by die keuse en aankoop van vleis. Aangesien wildsvleis 'n lae-vet produk is, is daar dus geleentheid vir vleisbemarkers om wildsvleis as 'n lae-vet produk te bemark. Hierdie navorsing het daarin geslaag om teikenmarkte vir wildsvleis te identifiseer. Restaurante moet fokus op oorsese toeriste wat Suid-Afrika besoek, terwyl supermarkte en slaghuise bemarking moet rig op verbruikers met 'n hoër opvoedkundige vlak en blanke verbruikers. Hierdie navorsing het bevestig dat die Suid-Afrikaanse wildbedryf geknel word deur verskeie wanpersepsies en teenstellings. Dit is duidelik dat sowel verbruikers as bemarkers van wildsvleis, teenstellende persepsies het aangaande seisoenale beskikbaarheid van wildsvleis. Hierdie navorsing verskaf 'n waardevolle voorloperstudie vir verdere navorsing oor die bemarkingsmoontlikhede van wildsvleis.

ENGLISH ABSTRACT: Transaction cost economics has travelled a difficult and long path to general acceptance in current economic opinion. The general theory of transaction cost has however developed in various paradigms with little or no empirical backing. It is mostly the difficulty of measurement that caused economists to shy away from empirical testing and rather, to quote Coase (1992), "to write in prose". The last 10 years there has been a renewed thrust for the empirical measurement of transaction cost. This study is an attempt to measure transaction cost by using case study data gathered in the run of the NOLIDEP study in the meat markets of the Northern Communal areas of Namibia. Until recently the method of data analysis that has been used in most empirical studies was variations of the regression technique. Regression as a tool is most useful in economics, giving quick answers and general trends to the researcher. It is however a technique that is linear in nature and therefore some information in the data will always be sacrificed. In general- and multi industry surveys this do not pose a great problem as general trends can usefully be applied in making policy recommendations. In smaller and especially rural industries this is not the case. The dynamic interactions within the industry and its dynamic linkages with the rest of the economy will surely be underrated when using a linear method. Consequently, a non-linear technique was applied in this study - the Non-linear Dynamic Model. This model gave the interactions between all variables enabling one to describe the dynamics of the market. As mentioned elsewhere the first aim of this study was to measure transaction cost so that the second aim could be fulfilled. The second aim of this study was to prove that transaction cost has an important influence on marketing channel decision. The analysis of the data satisfied the above two aims: Firstly it showed that it was possible to measure transaction cost. Secondly that transaction cost has a large and sometimes overriding influence on marketing channel decisions. A third and last point that became apparent was that a non-linear method of data analysis allows for better description of a dynamic market.
AFRIKAANSE OPSOMMING: Dit het 'n lang tyd gevat vir transaksie koste om as konsep in ekonomie aanvaar te word. Die algemene teorie van transaksie koste het egter ontwikkel binne verskeie paradigmas sonder werklike empiriese ondersteuning. Dit is meestal die meting van transaksie koste wat empiriese werk in die rigting belemmer het. Daar is egter in die laaste 10 jaar hernude pogings gewees om transaksie koste empiries te meet. Hierdie studie is 'n poging om transaksie koste te meet deur gebruik te maak van data wat verkry is gedurende die NOLIDEP studie in die noordelike kommunale gebiede van Namibia. Tot onlangs was die metode van data analise vir empiriese studies variasies op die regressie tegniek. As 'n hulpmiddel is regressie baie bruikbaar in ekonomie waar vinnige antwoorde en algemene tendense verwag word. Die tegniek is egter inhirent liniêr en daarom sal daar altyd interpretasies rondom data opgeoffer word. In algemene studies is dit egter nie 'n probleem nie en kan voldoende beleids aanbevelings gedoen word. Dit is egter nie die geval in kleiner en plantelandse industriëe nie. Die dinamiese interaksies binne die industrie en die dinamiese skakels met die res van die ekonomie word dan onderskat met die gebruik van 'n liniêre metode. Daarom is 'n nie-liniêre metode gebruik, die Non-linear Dynamic Model. Die model neem die interaksie tussen veranderlikes in ag wat die beskrywing van dinamika moontlik maak. Soos reeds genoem is die eerste doel van die studie om transaksie koste te meet sodat die tweede doelwit van die studie bereik kan word. Die tweede doel is om te bewys dat transaksie koste bemarkingskanaai besluite bëinvloed. Die data analise het beide bogenoemde doelwitte bevredig. Eerstens dat transaksie koste meetbaar is. Tweedens dat transaksie koste 'n groot en selfs oorweldigende effek het op bemarkingskanaai besluite. 'n Derde punt wat sterk na vore gekom het is dat nie-liniêre metodes 'n beter beskrywing van dinamika toelaat.

On October 1999 South Africa signed a historic TDCA with the European Union. The main objective of this agreement is to liberalise most trade between the two parties over time through a free trade agreement. Namibia as a member of SACU became automatically a de facto member of the SA-EU FTA. At the same time the EU concluded another 20-year agreement with the ACP countries effectively changing its traditional trade relationship with these countries. Namibia also being a member of the ACP group of countries finds itself in the middle of these two agreements. South Africa and the EU however opted to leave some of the sectors that are considered sensitive out of the free trade agreement in order to mitigate some of the adjustment costs likely to be faced by lesser-developed partners in SACU such as Namibia. Beef is one of those sensitive sectors as it is the main Namibian agricultural export to both the EU and South Africa. The fisheries sector likewise contributes a lot to Namibia's export earnings and the fact South Africa and the EU are negotiating for a fisheries agreement could mean a change in Namibia's competitive position in this sector. The impact that these two agreements will have on the beef sector is not very significant or at least manageable at this stage. The impact on the fisheries sector is mainly uncertain at this stage in the absence of an EU-SA fisheries agreement. The major impact of the SA-EU FTA will be on government revenues, which rely heavily on receipts from the SACU common revenue pool. The SADC has also started its regional economic integration process, which the EU hopes to be a move towards a REPA with which it hopes to do business as part of the new Cotonou Agreement. However the vast disparities in economic development between the EU and SADC does not favour such a move. The benefits will most probably accrue to the EU and the costs to SADC countries, especially those countries that are not part of SACU. It is important that if the new Cotonou Agreement is to be mutually beneficial steps need to be taken to strengthen the industrial and export capacities of the ACP countries. Otherwise this wave of globalisation will be nothing but a zero sum game.

ENGLISH ABSTRACT: Namibia by nature is very well suited for livestock production and is a net exporter of beef. Beef is currently exported to South Africa, the European Union (EU) and Japan while market access to the United States of America is being explored. Food safety, traceability and lately animal welfare are all aspects which are requested by Namibians trading partners when exporting meat to those countries. The first two aspects have been addressed with the introduction of the Farm Assured Namibian Beef scheme (FAN Meat) which also provides basic guidelines for animal welfare. Beef in Namibia is produced from extensively managed enterprises which are privately owned and managed, or state owned and communally utilized. The events of handling and transport are considered stressful to all animals but especially so to extensively raised animals and their reaction to these events has the potential to severely infringe on their welfare. The aim of this study was to determine the effect of pre-, during, and post-transportation handling on animal welfare status under Namibian transport conditions. The study also investigated the influence of breed on the meat quality of Namibian beef. The level of bruising recorded on slaughter was used to measure animal welfare. Interviews with producers were conducted to describe the pre-transport handling. Questionnaires that included variables considered as important indicators of animal welfare during transport were distributed to truck drivers. Observations of the off-loading event and animal behaviour were completed in lairage at the export abattoir in Windhoek. The variables that were identified as high risk factors and had a significant influence on the level of bruising under Namibian transport conditions include animal factors (i.e. breed type, age, sex, condition and subcutaneous fat cover), pre-transport handling (i.e. re-branding of animals), transport related risks (loading density and animals lying down during transit) as well as lairage factors (i.e. fit of truck floor to off-loading ramp, the way animals moved to holding pens, pen size and minimum environmental temperatures). The influence of breed on meat tenderness and water-holding capacity of the Longissimus dorsi muscle of the four main beef breeds (i.e. Brahman, Bonsmara, Simbrah and Simmental), as well as the effect of different aging periods on meat quality (i.e. 2, 9, 16, 23, 30 & 37 days post mortem) were investigated. The Brahman differed significantly (p < 0.05) from the other three breeds in terms of all aging treatments; with higher Warner-Bratzler shear force values reported for this breed. Interactions between days post mortem and breed were found for the Simbrah, and Simmental breeds, which may be indicative of a delayed response to aging of meat samples obtained from Simbrah animals. This can possibly be ascribed to an increased calpastatin activity in these animals. Meat samples obtained from the Bonsmara steers showed the highest rate of tenderization, with this effect retained until day 30 post mortem. Recommendations as pertaining to the ante mortem handling of cattle are made.
AFRIKAANSE OPSOMMING: Namibië word gekenmerk deur toestande wat uitstekend vir diereproduksie is, met die land wat as ‘n netto uitvoerder van beesvleis beskou word. Vleis word na Suid-Afrika, die Europese Unie (EU) en Japan uitgevoer, met die moontlikheid van die Verenigde State van Amerika wat as ‘n uitvoermark ondersoek word. Voedselveiligheid, naspeurbaarheid en dierewelsyn is drie vereistes wat deur die invoerders van Namibiese vleis daargestel word. Die eerste twee vereistes is reeds deur die implementering van die Farm Assured Namibian beesvleis skema (FAN Meat) aangespreek, met die skema wat basiese riglyne vir dierewelsyn voorskryf. Namibiese beesvleis word geproduseer onder grootskaalse ekstensiewe boerdery omstandighede, wat of privaat besit en bestuur word, of aan die regering behoort en deur plaaslike gemeenskappe benut word. Die invloed van hantering en vervoer is besonder stresvol vir diere en in besonder vir diere wat onder ekstensiewe omstandighede geproduseer word. Omdat diere onder ekstensiewe omstandighede ongewoond aan hantering en vervoer is, kan dié twee aksies ‘n ernstige impak op die welsyn van sulke diere hê. Die doelwit van die studie was om die invloed van hantering voor-, tydens en na-vervoer onder Namibiese vervoertoestande te ondersoek. Die invloed van ras op Namibiese beesvleiskwaliteit is ook ondersoek. Die mate van kneusing waargeneem met slagting was as standaard gebruik om die welsynstatus van diere te bepaal. Onderhoude is met produsente gevoer om inligting oor die pre-vervoer toestande in te win. Vraelyste wat veranderlikes wat as belangrike indikators van dierewelsyn tydens vervoer beskou kan word, ingesluit het, is aan vragmotorbestuurders versprei. Waarnemings van die aflaai en verwante diergedrag was by die houfasiliteite van die uitvoer abattoir in Windhoek, waarnatoe die diere vervoer is, gedoen. Verskeie hoë risiko faktore wat ‘n betekenisvolle invloed op die mate van kneusing wat tydens vervoer opgedoen is, gehad het, is in die studie geïdentifiseer. Hierdie faktore het dierverwante eienskappe (d.i. ras, ouderdom, geslag, liggaamskondisie en onderhuidse vetvoorsiening), voorvervoer hantering (d.i. herbrandmerk van diere), vervoerverwante risiko’s (d.i. aantal diere per trok kompartement en diere wat tydens vervoer gaan lê), asook ontwerp van houfasiliteite (d.i. verbinding tussen trokvloer en laaibrug, die manier wat diere na houkampies beweeg het, grootte van houkampies en lae omgewingstemperature), ingesluit. Die invloed van ras op die sagtheid en waterhouvermoë van die Longissimus dorsi spier van die vier hoof vleisbeesrasse (d.i. Brahman, Bonsmara, Simbrah en Simmentaler), asook verskillende verouderingstydperke op vleiskwaliteit (d.i. 2, 9, 16, 23, 30 en 37 dae post mortem) van die vier rasse is ondersoek. In addition to one national park and six nature reserves, the Free State Province boasts several privately owned game reserves, as well as game farmers and commercial stock farmers who keep game. A survey conducted in 1985 showed that the majority of game could be found in the Xhariep District situated in the southern and south-western parts of the province. Game export abattoirs and processing facilities are situated in provinces other than the Free State, which results not only in an outflow of game carcasses for export purposes, but also a loss of employment opportunities and opportunities for the generation of foreign currency from a district (Xhariep) which, from a socio-economic perspective, is seen as deprived. There are 21 non-export highthroughput red meat abattoirs in the province, posing the question as to whether these could be used for the slaughtering of game. This study aimed firstly to compile guidelines for the wild game meat industry regarding the production of wild game meat for the international market and to assess wild game production and utilisation in the Xhariep District through a comprehensive survey of game farming practices, game numbers and species, as well as the utilisation of game through various consumptive and non-consumptive methods. A further aim was to investigate practices at existing slaughter facilities in order to determine their potential to be adapted into wild game meat export facilities and assess such potential via a standardised protocol. The research commenced with an investigation into processing and export requirements for wild game meat in South Africa through a literature study of all EU legislation, directives and other relevant literature on the subject, and provides comprehensive reference material for entrepreneurs and developers in the wild game meat industry. Methodologies utilised included audits to determine the extent to which abattoirs conform to the structural, operational and documentation meat hygiene requirements followed by the development of a novel assessment matrix for measuring the level of compliance of existing abattoirs and their potential to be developed into European Union (EU) export facilities. The survey of the Xhariep area concluded that a significant potential exists for the expansion of the game industry, as several respondents indicated that they were interested in expanding their game production and that they had land available for this purpose. A further indication was that the game would be highly marketable because it was free ranging and could be regarded as organic due to the absence or controlled use of additives and pesticides that could result in chemical residues in the meat. The establishment of a wild game export facility was favoured by nearly 70% of the respondents. The hygiene evaluation of existing slaughter facilities in the Free State Province resulted in six slaughtering facilities being rated as good or excellent, demonstrating the potential to successfully process game meat for the export market. This was tested by utilising the proposed evaluation matrix, which rated the abattoirs most suited to be adapted into game meat processing facilities for export purposes. The value of this approach lies in the fact that it is not only restricted to local markets, but can be utilised internationally by the abattoir industry, as well as the fact that it is not species specific. It should, however, be applied objectively by knowledgeable operators in the industry. It is concluded that institutions in the Free State Province possess the knowledge and ability to not only produce wild game meat, but also to successfully process this commodity through the optimal utilisation of existing high-throughput red meat abattoirs. By utilising existing management skills and affecting relatively minimal adjustments to existing structures, these resources should be utilised to successfully enter the wild game meat export market which should, in turn contribute towards the prosperity of the Xhariep District.

In this study on product development and positioning in the hunting industry in the Eastern Cape, two conceptual frameworks were developed, based on a literature study. These positioning and product development concepts were tested against primary and secondary information gathered about the hunting industry. The game and hunting industries were in a strong growth phase at the time of this study. These industries are playing an increasingly important role in the economy of the Eastern Cape, and more and more agricultural land is utilised for game ranching. From the perspective of obtaining a competitive advantage in an increasingly competitive environment, it is therefore important for hunting providers to develop suitable products, and to position these products correctly. It is also important to investigate the characteristics of the game and hunting industries in the Eastern Cape and to get information about the characteristics of the market in which product development and positioning take place. Hunting is the most important form of game utilisation in the Eastern Cape, followed by cropping of game and live game sales. At the time of this study, the total value of the game utilised annually in the Eastern Cape was in excess of R168 million. Game utilisation seemed to be taking place on a sustainable basis, as the number of animals utilised annually was less than the annual production. Kudu and springbok provide the biggest total income, and, together with mountain reedbuck, are the most abundant species in the Eastern Cape. The main game-producing areas in the Eastern Cape coincide with the areas where extensive beef, sheep and goat farming are practised. The hunting products on offer from hunting providers, differ in certain ways. Aspects like price, type of hunting provided, game species available for hunting, terrain where hunting takes place, and various other aspects in connection with the hunt, differ from hunting provider to hunting provider. Characteristics of the hunting experience that hunters desire may be divided into core and variable elements. The core elements include: · the conditions pertaining to the hunt being spelt out clearly; · the maintenance of safety standards; · reasonable day fees; · the presence of game in sufficient numbers; and · other aspects generally desired by hunters. In the study it was found that the needs of hunters also differ regarding certain aspects of the hunting experience. These variable elements include price levels, type and availability of accommodation, and the role of the hunting provider. The core aspects that hunters desire are as a rule part of the product offering. From a product development perspective, the variable elements provide an opportunity to customise products to hunter needs. The inclusion or exclusion of variable elements from the product offering give rise to certain unique product features, and therefore provide the opportunity for product differentiation. After development, products are positioned firstly by selecting a market segment to focus on. Secondly, the needs of hunters in the target segment should be clearly identified, followed by the development of suitable products based on hunter needs, and taking into account the features of competitive offerings. Decisions should also be taken about the features to be included in the product offering to achieve product differentiation. After development of a suitable product, an image or brand should be chosen for the product, and this image should be effectively communicated to the market. A number of possible positioning options were identified for hunting providers. It was found that factors like the physical features of the ranch, available infrastructure, the market segment chosen, desires of the hunting providers, and the perception of the needs of hunters, eventually influence decisions about product development and positioning. The final decisions on positioning should take the core competencies of the hunting provider into account and should ensure that the hunting provider has the ability to fill the chosen position in the market.

Implementation of existing meat hygiene legislation can be costly to the game farm owner in terms of slaughter facilities and human resources. This can consequently force farmers and processors to operate outside of the law when delivering game meat to the market. In answer to this a Game Meat Scheme was negotiated between Wildlife Ranching South Africa, represented by the researcher and the Department of Agriculture, Forestry and Fisheries. Nevertheless, the Game Meat Scheme only offers a 5 year period of grace for legal compliance for game farmers producing for the local meat market. Concerns of Wildlife Ranching South Africa on the implementation of such and other legal procedures on game farms motivated the comparative research on regulated and non-regulated game carcasses. Dependent and independent variables were researched to compare game carcasses intended for the export market (aspiring to strict requirements), and game carcasses intended for the local market (no control measures). The swabbing sampling technique used by the researcher was verified against the excision method (used by the export market). The results of this study have further led to a proposed innovation in the testing and verification of current legislation culminating in the Game Meat scheme and a new Game Meat Guide that could lead to the development of practical guidelines for the hunting process on the farm.

The South African game farming industry has become a world leader in the utilization of game, including the meat of game animals. The fast growth in the game meat industry is fuelled by health conscious consumers for meat with a low fat content. Although research on the production potential of African ungulates has been done, little has been done on the factors in the supply chain that affect the provision of safe game meat to the consumer. A literature review of the study field was completed to obtain an understanding of the value chain. In order to obtain information regarding the status of existing policies, strategies and practices that may impact on game meat safety, questionnaires were distributed to game farmers, hunters, butcheries, provincial offices of Veterinary Public Health (VPH) and Environmental Health (EH) as well as municipalities. Interviews were also conducted with those members of national departments who are responsible for policy making. The results represent the first systematic analysis of the current status of the South African legal framework and its application in relation to game meat safety as well as the practices by stakeholders that impact on the provision of safe game meat to the consumer. The results provide information on the current status of game meat control in South Africa, a description of the game meat supply chain and essential food safety management points in the supply chain; game farmer, hunter and butchery practices; and the knowledge of stakeholders in the game meat industry. 220 The main conclusions drawn from the study were as follows: (1) that the game meat industry is growing in South Africa; (2) that game meat reaches the consumers through a complex supply chain with various stakeholders; (3) that gaps exist in the supply chain that may impact negatively on the supply of safe game meat to the consumer. These gaps apply in particular on the farm, during hunting and control after the farm gate; (4) that there is an inconsistent application of policies and regulations by controlling authorities that leads to fragmentation in the control of game meat safety; and (5) that there is a certain degree of unfamiliarity on the part of stakeholders with regard to the game meat supply chain. A theoretical model was suggested that can be used in the development of strategies and policies that will help to alleviate the identified concerns and problems that may impact negatively on the provision of safe game meat to the consumer.
