Full textThis dissertation focuses on food-related decision making, in particular, how food related environments and cognition interact to determine people’s food choices. The first manuscript, “When Diets Last: Lower Cognitive Complexity Increases Diet Adherence,” investigates the role of the cognitive complexity in diet adherence. Can weight loss diets fail because they are too complicated from a cognitive point of view, meaning that dieters are not able to recall or process the diet rules? The impact of excessive cognitive demands on diet adherence were investigated with 1,136 dieters in a longitudinal online-questionnaire. We measured perceived rule complexity controlling for other factors known to influence adherence. Previous diet behavior, self-efficacy, planning and perceived rule complexity predicted an increased risk to quit the diet prematurely, with self-efficacy and diet complexity being the strongest factors. The second manuscript, “Meat Label Design: Effects on Stage Progression, Risk Perception, and Product Evaluation,” presents two studies which tested the impact of health-related meat labels on product evaluation and intention. Specifically, the studies examined how informational content and the context (separate vs. conjoint evaluation) in which labels are assessed influence the evaluation of meat products. The results showed that conjoint assessment of labels can lead to contrary product rankings compared to separate evaluations. Moreover, the results suggest that being exposed to food labels containing specific health-relevant information can increase motivation to consider health aspects in those consumers without previous intention to do so. The third manuscript, “Predicting Children’s Meal Preferences: How Much Do Parents Know?” investigated prediction behavior concerning other people’s food choices. In particular, it asked how accurately and what cues parents use to predict their children’s meal choices. Overall, parents’ prediction accuracy matched the stability of children’s meal choices, implying that accuracy was as high as can be expected. The results suggest parents were able to obtain high predictive accuracy by using specific knowledge about their child’s likes and projecting their own preferences.

Full textThe problem of overweight is increasing in the western industrial nations for years. Especially the treatment of the illnesses caused by obesity is getting an increasing heath-political problem. The costs of the treatment will rise in the future. Important tasks are on the one hand the prevention of obesity on the other hand a long term success of treatment. We examined if long-term outpatient nutrition courses cause a weight-loss of the paticipants and change their eating habits. Paticipants of nutrtion courses, offered by health insurances or adult education centers, received at the beginning and at the end of the courses, six months and two years later a catalogue of questionnaires. The catalogue contained standardized questionnaires: like the questionnaire of eating habits and the questionnaire of eating habits and weight problems. The spot check contains 20 participants in the age of 18 to 63, 90% are women. These are the results: The participants had a significant weight loss at the end of the nutrition course. But six months after the ending of the course they had a significant weight gain, the mean body-mass-index was even higher than at the beginning of the course. The cognitive control, this means the restrainment of the eating behaviour, increased significantly at the end of the course, six months after the ending of the course we could see al loss of the cognitive controll. The disturbance of the eating behaviour caused by external stimuli or emotional feelings decreased significantly at the end of the courses, the participants were less influenced by external emotional feelings (fear, sorrow, loneliness) in their eating behaviour. There was a slight (but not significant) increase of the value for the disturbance after six months and two years. The meaning of eating in life of the participants decreased significantly at the end of the course. In the later period of time the value increased, but not significantly. The conclusion is: at the end of a nutrition course there is no long-term weight -loss. In the future there should be weight-loss courses, which have multiple factors of therapy and a long-term care of the paticipants to achieve a long-term weight-loss

Full textThe prevalence of obesity is increasing. Obesity can lead to cardiovascular and ventilatory complications as obstructive sleep apnea and obesity hypoventilation syndrome. The exact role of obesity in the pathophysiology of obstructive lung disease and pulmonary hypertension is unclear. Objective: To determine lung function and cardiac function in obese adults and to evaluate the effect of weight loss on lung and cardiac function. Design: In a prospective observational study bodyplethysmography, mouth occlusion pressure and echocardiography was performed in patients undergoing a one year structured weight loss program (OPTIFAST®). Results: After 6 months participation in the weight loss program we found a decrease of body weight, BMI and a significant improvement of lung function Additionally, we noticed a decrease of myocardial mass, left ventricular myocardial performance index, MAPSE and an increase of pulmonary outflow acceleration time reflecting a decrease of lung perfusion resistance. Conclusion: The structured weight loss program OPTIFAST can lead to an significant improvement of ventilatory and myocardial function in obese patients
