Galactomannan (gum), a water-soluble polysaccharide, is widely used as a gelling agent in liquids, including in the oil and gas industry for hydraulic fracturing. The most effective source of this valuable plant material is seeds of guar (Cyamopsis tetragonoloba (L.) Taub.), a legume crop new for Russia. Although in recent years progress has been made in the selection of guar varieties adapted to the conditions of the Russian Federation, the question of the most appropriate region for the cultivation of this crop remains open. Guar gum and its derivatives are highly important industrial hydrocolloids as they find applications in various industrial sectors. Guar is a polymer of high molecular weight and its aqueous solutions exhibit unique rheological properties, which has led to its wide acceptance by the industry. In certain industrial applications low molecular weight guar and its derivatives are needed, and conventionally chemical depolymerisation of guar is carried out for this purpose. Abstract Objectives Guar gum, a soluble fiber, is commonly used as a thickener, stabilizer, and source of fiber in processed foods. The food industry has been encouraged to fortify foods with refined guar gum due to its numerous beneficial effects on the human gut and metabolic health. However, we have limited knowledge on whether processed guar gum holds the same physiological effects as its naturally occurring counterpart. In this study, we examined the impact of refined guar gum on intestinal inflammation. Methods We employed three different experimental models of inflammatory bowel disease

Oil-in-water emulsions have wide range of applications in food industry because of their structure-forming properties, and as delivery systems of polyunsaturated fatty acids into foods. The thermodynamic instability of oil and water, and high susceptibility of unsaturated fatty acids to oxidation lead to physical and oxidative stability in oil-in-water emulsions. These instability processes are generally controlled by incorporating proteins and polysaccharides into oil-in-water emulsions. The results showed that the adsorption of the polymer was independent of pH and acidity/basicity of the minerals.
