Introduction: Oral health is considered as being free from any kind of oraldisease. Objectives: To explore the LAYMAN’S PERSPECTIVE regarding oral health, hisawareness about oral diseases. To examine their attitude and beliefs regarding the maintenanceof oral health. Study Design: We conducted mixed study on educated and uneducated people.Study Period: 01 May, 2016 to 01 May, 2017 Study Place: Punjab dental hospital, Lahore.Material & Methods: Qualitative method was used to collect knowledge and perspective ofuneducated people. Quantitative method was used to collect data from educated people. Weinterviewed uneducated people in differenst places of Lahore and questionnaires were filled byeducated people. Results: 58% of educated people and majority of uneducated people thinkthey should visit dentist only at the time of need. 73% educated people said bleeding gumsare indicative of oral disease, while majority of uneducated people said it does not indicateoral disease. Educated people were somewhat more aware of oral health and oral diseasewhile uneducated people were unaware of even maintenance of oral health and its importance.Conclusion: Education makes the difference. Educated people have more awareness aboutoral health. Still awareness is needed a lot.

Abstract:
A project was designed to evaluate the effect of different combinations of emulsifiers and gumson the quality of bread. Wheat variety AARI-11 was milled to get straight grade flour and mixed with theEmulsifiers (DMG & DATEM) and Gums (G.G & CMC) in a quantity of (0.3- 0.6 %). Both, straight gradeflour as well as treated flour (combination with gums and emulsifiers) were subjected to proximate andrheological analysis. Results of the rheological study showed a significant change in water absorption,dough development time, dough stability time and dough viscosity i.e. W/A 61.33-62.93%, D.D.T 3.9-4.8 min, D.S.T 7-9.1 min and 818.33-950.00 BU, respectively. Breads prepared with both flours were alsostudied for their sensory attributes during storage after the interval of 24 h. The highest score was awardedto T1 (0.3% DATEM & 0.5% guar gum) on the bases of its excellent external attributes (colour of crust,volume, symmetry of form, evenness of bake and crust character) and internal characteristics (aroma, grain,texture, taste, mastication and colour of crumb). After the sensory and physicochemical analyses, it isconcluded that with the addition of DATEM (0.3%) and guar gum (0.5%) resulted in good quality of bread.

Abstract:
Food studies, a new addition to the family of humanities, has experienced a rapid rise in the last twenty years and a number of scholars have devoted their time and energy in studying food culture as well as the patterns of eating (Albala, 2013). Food writing has slowly spread its branches into all literary genres including into crime fiction. In more recent crime mysteries, the main plot is supplemented by authentic recipes and descriptions of food and cooking and “gumshoes not only track killers” but also “grill sherry-flavoured tuna” or “bake” chocolate cookies (Carvajal, 1997). The sub-genre of crime fiction that brings together food and crime, has been termed as ‘culinary mystery’ and with the more recent academic interest in food in literature, it has received the critical attention it deserves. The present paper will analyze the role of food in the Reema Ray mysteries of Madhumita Bhattacharyya, The Masala Murder (2012) and Dead in a Mumbai Minute (2014) and the Lalli mysteries of Kalpana Swaminathan, The Secret Gardener (2013) and Page 3 Murders (2006). While for Lalli and her niece Sita, food becomes a luxury, an indulgenceafter a hard day’s grim investigative work; for Reema, baking is her sleuthing tool and stands for her intelligence and autonomy. This paper will thus argue how these novels, with female sleuths who use food/cooking as tools of detection, pose a challenge to the patriarchal roles assigned to women as caregivers and providers of nutrition, and attempt to show how “food mysteries are ultimately about female independence and sustaining the self” (Kalikoff, 2006, p. 75). In doing this, it will alsofocus on how women bridge the gap between the public and private spheres.
