The Historia Sicula of the so-called Anonimus Vaticanus, titled by some manuscripts Chronica Roberti Biscardi et fratrum ac Rogerii comitis Mileti, is interesting for two reasons: it offers a useful narrative of the history of southern Italy between the 11th and 13th centuries; moreover, it represents a fairly typical example of historiographical compilation. It lacks an author and a sure title; contains information that partially coincides with the so-called Malaterra; it has a distinctly bipartite textual tradition, in which one branch arrives at the death of Roger I of Altavilla (1101), the second at the beginning of Vespers (1282); has structural inconsistencies; some significant fragments are also incorporated in other texts. This article focuses on the typical processes of aggregative construction of many late medieval chronicles characterized by a low gradient of authorship: they are “liquid texts” par excellence, because they constantly adapt themselves to the multiple needs of other more or less aware chroniclers, compilers, copyists.

Le lait a une place importante dans le régime alimentaire d’un certain nombre de nos sociétés modernes, en particulier sur le continent européen. Pourtant, le lait n’est entré dans notre régime alimentaire que tardivement. En effet, ce n’est qu’avec la domestication des bovins, brebis et chèvres il y a plus de 10 000 ans, que l’homme a commencé à consommer du lait. Le lait frais est riche en lactose, le « sucre du lait », et sa consommation par des individus qui y sont intolérants peut provoquer des troubles digestifs. Pourtant, de nos jours, un adulte sur trois dans le monde peut digérer le lactose grâce à la production de l’enzyme lactase permettant l’hydrolyse du lactose en glucose et galactose. En Europe, la production de lactase à l’âge adulte est due à une seule mutation (-13910*T) dans le génome humain. Cette adaptation à la consommation de lait frais depuis la Préhistoire suggère une pression de sélection forte dans la population européenne. Tandis que l’analyse d’ADN ancien d’individus du début du Néolithique n’a pas permis de détecter cet allèle, il apparaît chez une proportion plus importante d’individus plusieurs millénaires après la domestication des bovins et caprinés. Outre les analyses génétiques permettant de détecter si les premiers agriculteurs avaient la capacité de digérer le lactose, la problématique de l’exploitation du lait pendant la préhistoire peut être abordée à partir des restes des animaux domestiques. L’étude des ossements animaux découverts sur les sites archéologiques permet d’avoir accès aux stratégies d’abattage des bovins et caprinés, et donc à la gestion démographique des troupeaux. Les courbes d’abattage ont permis de montrer que les caprinés étaient exploités pour leur lait dès le Néolithique précéramique. D’autres méthodes complémentaires des courbes d’abattage, les analyses isotopiques des restes dentaires animaux (bovins et caprinés), permettent d’établir la saisonnalité des naissances et l’âge au sevrage. Bien que relativement récentes, ces études ont déjà montré un sevrage précoce des veaux dans certains sites néolithiques, probablement en lien avec une durée de lactation plus courte chez les vaches néolithiques. L’étude de tessons de poterie est aussi un champ d’investigation précieux pour examiner les débuts de l’exploitation laitière. L’identification de lipides issus de lait dans des poteries du VIIe millénaire a permis de montrer que le lait était bien une denrée alimentaire au Proche-Orient. De même, la présence de résidus laitiers dans des récipients perforés découverts dans des sites archéologiques du début du Ve millénaire a permis d’identifier la production de fromages. Les approches génétique, archéozoologique et biomoléculaire restent complémentaires pour élucider les débuts de l’histoire de l’exploitation laitière.
