Pectin, a natural ionic polysaccharide found in the cell wall of terrestrial plants undergoes chain–chain association to form hydrogels upon addition of divalent cations. Based on its degree of esterification, pectin has been classified into two main types. The high methoxyl pectin with a degree of esterification greater than 50%, which is mainly used for its thickening and gelling properties and the low methoxyl pectin, which is widely used for its low sugar-content in jams, both applications being in the food industry. Pectin is mostly derived from citrus fruit peels, but can also be found in other plants such as waterleaf leaves, cocoa husk, and potato pulps. Pectin has been used as an excipient in pharmaceutical formulations for various functions. This chapter will focus on the various applications to which pectin has been used in the pharmaceutical industry.

In 1991, American inventor and philanthropist Hugh Loebner funded the launch of a competition aimed at recreating the conditions of the Turing test to assess the success of conversational programs in passing as human. The Loebner Prize competition has been conducted every year since then. This chapter looks at the history of this competition in order to argue that it has functioned as a proving ground for AI’s ability to deceive humans and as a form of spectacle highlighting the potential of computing technologies. The staged confrontations between computers and humans provide a context where humans’ liability for deception and its implications for natural language programs were systematically put to test in a competitive framework. This encouraged programmers to develop strategies and tricks that are reemerging today in communicative AI technologies. Thus, the case of the Loebner Prize helps one better understand Alexa, Siri, and other AI voice assistants that are becoming increasingly widespread in contemporary societies.

Chemical and electrochemical reactions in condensed phases are generally quite complex processes; only outer-sphere electron-transfer reactions are sufficiently simple that we have reached a fair understanding of them in terms of microscopic concepts. In this chapter we give a simple derivation of a semiclassical theory of outer-sphere electron-transfer reactions, which was first systematically developed by Marcus and Hush in a series of papers. A more advanced treatment will be presented in Chapter 19. We begin with qualitative considerations. During the course of an outer-sphere electron-transfer reaction, the reactants get very close, up to a few Ångstroms, to the electrode surface. Electrons can tunnel over such a short distance, and the reaction would be very fast if nothing happened but the transfer of an electron. In fact, outer-sphere reactions are fast, but they have a measurable rate, and an energy of activation of typically 0.2 - 0.4 eV, since electron transfer is accompanied by reorganization processes of atoms and molecules that require thermal activation. While the reacting complex often has the same or similar structure in the oxidized and reduced form, metal-ligand bonds are typically shorter in the complex with the higher charge, which is also more strongly solvated. So the reaction is accompanied by a reorganization of both the complex, or inner sphere, and the solvation sheath, or outer sphere (see Fig. 6.1). These processes require an energy of activation and slow the reaction down. A natural question is: In which temporal order do the reorganization processes and the proper electron transfer take place? The answer is given by the Frank-Condon principle, which in this context, states: First the heavy particles of the inner and outer sphere must assume a suitable intermediate configuration, then the electron is exchanged isoenergetically, and finally the system relaxes to its new equilibrium configuration. A simple illustration is given in Fig. 6.2, where we have drawn potential energy surfaces for the reduced and the oxidized state as a function of two generalized reaction coordinates representing the positions of particles in the inner and outer sphere.

"The student reports that the interview that followed was stiff and quite unsatis-factory. Being black himself, he knew that he had ‘blown it’ by failing to recognize the significance of the husband’s speech style in this particular case. The style is that of a formulaic opening gambit used to ‘check out’ strangers, to see whether or not they can come up with the appropriate formulaic reply. Intent on follow-ing the instructions he had received in his methodological training and doing well in what he saw as a formal interview, the interviewer failed to notice the hus-band’s stylistic cues. Reflecting on the incident, he himself states that, in order to show that he was on the husband’s wave-length, he should have replied with a typically black response like ‘Yea, I’ma git some info’ (I’m going to get some information) to prove his familiarity with and his ability to understand local verbal etiquette and values. Instead, his Standard English reply was taken by the husband as an indication that the interviewer was not one of them and, perhaps, not to be trusted. The opener ‘So y’re gonna check out ma ol lady’ is similar to the ‘Ahma git me a gig’ discussed elsewhere. Both are formulaic phrases identifiable through co-occurrent selections of phonological, prosodic, morphological and lexical options. Linguists have come to recognize that, as Fillmore (1976) puts it, ‘an enormous amount of natural language is formulaic, automatic and rehearsed, rather than pro-positional, creative or freely generated.’ But it must be emphasized that although such formulas have some of the characteristics of common idioms like kick the bucket and spill the beans, their meaning cannot be adequately described by lexical glosses. They occur as part of routinized interactive exchanges, such as Goffman describes as ‘replies and responses’ (1981). Their use signals both expectations about what is to be accomplished and about the form that replies must take. They are similar in function to code switching strategies. Like the latter they are learned by interacting with others in institutionally defined networks of relationships. Where these relationships are ethnically specific they are often regarded as markers of ethnic background. But, as our example shows, their use in actual encounters is ultimately determined by activity specific pre-suppositions so that failure to react is not in itself a clear sign of ethnic identity.
