In over twenty years of operations the Canadian Innovation Centre has evaluated, through its Inventor's Assistance Program (IAP), the commercial potential of over 12,000 early stage inventions. O objetivo geral deste trabalho foi realizar um estudo comparativo entre três processos de secagem aplicados para desidratação de tomates, dois já usuais na indústria, a estufa com circulação de ar e liofilização, e um inovador na secagem de frutas e hortaliças. Para isso foi desenvolvido e testado um protótipo laboratorial do sistema de secagem por fluxo de ar e foram definidos os parâmetros das condições de secagem para cada um dos sistemas utilizados no estudo.
