Abstract:
Daniel Frassinetti was born on July 26, 1939 in Iquique and died on April 9, 2010 in Santiago, Chile. He obtained the title of Teacher of General Basic Education in 1959 from Escuela Normal Jose Abelardo Nunez and worked as a teacher for several years. He came to Santiago in 1971, where he joined the Museo Nacional de Historia Natural as a technician. Quickly he became research assistant and in 1975 he ascended to researcher of the Geology Section. In 1991 he became head of the Paleontology Section and was editor of the Boletin del Museo Nacional de Historia Natural and the museum’s Publicacion Ocasional for more than 30 years. In 1995 he obtained a degree in Education from the Universidad Metropolitana de Ciencias de la Educacion. Daniel Frassinetti retired in the year 2008, but continued his investigations as Emeritus Curator at the museum. He was always generous with information about paleontology, but rarely talked about his private life. For some years, he fought silently and bravely against a cancer without many people knowing about it. A fight he eventually lost.

Abstract:
Inedible mushrooms are endowed with diverse nutritional and nutraceutical compounds. In this study, the amino acid profile, and phytochemical fingerprints of four selected wild inedible mushroom species from Oban Division of Cross River National Park (CRNP), Nigeria including Crepidotus applanatus (Pers.) P. Kumm, Daldinia concentrica (Bolton) Cesati & de Notaris, Oxyporus populinus (Schumach.) Donk and Trametes versicolor (L.) Lloyd were investigated. The fresh sporocarps of study mushroom were collected from the decaying wood during July 2018. Samples for amino acids profiling were dried to constant weight, defatted, hydrolyzed, evaporated in a rotary evaporator and loaded into the cartridge of the Applied Biosystems PTH Amino Acid Analyzer and analyzed for 45 minutes. The samples for phytochemical analysis were subjected to methanol extraction using a Soxhlet extractor and rotatory evaporator and injected into the column of an Agilent gas chromatography mass spectrometer (GCMS). The results of amino acid analysis revealed the presence of ten essential and eight non-essential amino acids in varying quantities across the species. The total amino acid content was highest in C. applanatus followed by D. concentrica, T. versicolor, and O. populinus in decreasing order. Glutamic acid, Arginine, and Aspartic acid were present in the highest amounts while Cystine, Lysine, and Histidine were the least across the species. The phytochemical screening of the samples led to the identification of 24 different compounds in D. concentrica, six compounds each in C. applanatus and O. populinus and three compounds in T. versicolor. In terms of percentage composition, 4H-Imidazo(1,5-a)(1,4)benzodiazepine-3-carboxylic acid, 5,6-dihydro-5-methyl-6-oxo-, ethyl ester, 1-Methylbicyclo[3.2.1]octane, Acetamide, N-(6-acetylaminobenzothiazol-2-yl)-2-(adamantan-1-yl)- and 9,19-Cyclolanost-24-en-3-ol, (3.beta.)-,TMS derivative were the most dominant compounds in C. applanatus, D. concentrica and T. versicolor respectively. The identified compound reportedly shows diverse bioactive activities, including antiviral, anticancer, antioxidant, hypocholesterolemic, anaphylactic, neurostimulant, pesticidal, insecticide and insecticidal activities. This data may represent the baseline information on the amino acid profiles and bioactive constituents of inedible mushroom species from Nigeria, as sources of noble compounds of substantial nutritional, medicinal and agricultural importance.

In the spring of 2014, the University of Vienna in cooperation with the Ludwig Boltzmann institute for the history and Theory of Biography in Vienna organised an interdisciplinary lecture series “The Many faces of Biography”. This lecture series brought together scholars and practitioners of various historical and recent biographical forms, focusing on the specificities and challenges posed by different biographical media. One of them was Peter Morgan, a major name in contemporary biographical film-making (and playwriting), noted for his characteristic dual-structure approach to writing lives for the screen. During one of the sessions of the lecture series he was interviewed by Julia Novak and Werner Huber about some of his most famous work, such as The Deal (2003), The Queen (2006), Frost/Nixon (2008), The Other Boleyn Girl (2008), and Rush (2013). In this Q&A he shed light on the principles guiding the screenwriter-biographer’s work, his conflicting responsibilities towards biographee and audience, and the biopic’s potential to impact on the fame and after-fame of historical and contemporary celebrities. This article was submitted to the European Journal of Life Writing on 28 Februay 2015 and published on 6 July 2015. Abstract:
The new Spanish nationality law requires a certain level of Spanish language proficiency for the application of Spanish nationality. The law, which is on the Official State Bulletin (BOE-Boletin Oficial del Estado) N. 167, Section I, Page 58, 149 and which was drafted on the 14th of July, 2015, came in effect on the 15th of October, 2015. The new regulation outlined the new requirements for the immigrants to be able to become Spanish citizens. The law was mainly targeted towards the descendants of those Jewish people who were thrown out of Spain in 1492 in an effort of the Spanish government to normalize relations. Nevertheless, all new applicants are somehow affected by it since a minimum knowledge of Spanish language is required, (level DELE A2 according to the Common European Framework of Reference for languages (CEF; Council of Europe, 2001 & Little (2005)) and a certain cultural and constitutional knowledge as well, to be measured by additionally passing the CCSE exam. These exams, according to the law, are to be administered by Instituto Cervantes, the official Institute of Spanish language of the Government of Spain. This paper aims to study the repercussions and new effects the law is having on the Pakistan Instituto Cervantes Examination Center in terms of enrollments as well as the effects on a specific group of immigrants themselves; the immigrants from Pakistan.

En tiempo de pandemia, el DNU Nº329/2020(B.O.,31/3/2020) del Poder Ejecutivo nacional se dictó en el marco de la emergencia sanitaria por el coronavirus y sus prórrogas decididas por el DNU Nº487/2020 (B.O.,19/5/2020) y el DNU Nº 624/2020 (B.O.,29/7/2020) prohibieron los despidos sin justa causa y por causas económicas y por fuerza mayor por el plazo de 60 días contados a partir de la fecha de su publicación en el Boletín Oficial, desde el 31 de marzo hasta el 29 de mayo de 2020, luego hasta el 28 de julio y más tarde hasta el 26 de setiembre de 2020. Se ha establecido un régimen de estabilidad propia o absolutapara todos los trabajadores privados a los que alcanzan esos DNU, incluidos los docentes privados de cualquier nivel, curriculares o no- pero pro tempore, porque es limitada al plazo de veda. La decisión del Poder Ejecutivo Nacional aparece como constitucional y convencional, adecuada a normas supra legales que él mismo cita y a otras ut supra referidas, como a la jurisprudencia de la CSJN y la CIDH. A regime of own or absolute stability has been established for all private workers to those who reach these DNU, including private teachers of any level, curricular or not - but pro tempore, because it is limited to the closed period. The decision of the National Executive Power appears as constitutional and conventional, adequate to supra-legal norms that it cites itself and to other supra-referred ones, such as the jurisprudence of the CSJN and the IACHR. After the emergency and the validity of the DNU, the question is whether it will return for all private workers in Argentina to the system of improper relative stability or it will be possible to move to an intermediate one, such as the one that accompanies the private teachers mentioned since 1947, similar to that of the Spanish Workers' Statute in the case of unfair dismissal, or the exception of the DNU will become the rule.

Since World War II astronomy has lived through its golden age undergoing a complete transformation. Before the war, astronomy meant optical astronomy and observations were confined to the use of the narrow range of visible spectrum capable of penetrating the earth’s atmosphere - about 1 octave in all. Since that time new advances have made it possible to observe at radio, infrared, ultra-violet, X-ray and gamma-ray wavelengths covering a spectrum of some 56 octaves. An exciting consequence of the new era has been the discovery of new classes of galaxies with extraordinarily high energy and luminosity, pushing back the limits of the observable universe beyond all expectations. What started this great revolution? It may be fairly said that it all began in 1948 in Sydney, Australia, when a three-man team led by a 26-year old Yorkshireman named John Bolton discovered that three distant objects, known from optical observations, were, extremely powerful emitters of radio waves. One, which Bolton called ‘Taurus A’, was located in our own galaxy; the Crab Nebula. The other two (‘Virgo A’ and ‘Centaurus A’) were external galaxies. This discovery marked the beginning of the new era in which the universe could be explored by means of its high- energy galaxies. The pursuit of this subject became the main theme of Bolton’s scientific life.

Accepted for publication 20 March 2021 The Convention on the Prohibition of the Development, Production and Stockpiling of Bacteriological (Biological) and Toxin Weapons and on Their Destruction (BTWC) does not have a legally binding verification regime. An attempt by the Ad Hoc Group of Experts, created by the UN Committee on Disarmament, to strengthen the BTWC by developing a legally binding document – the Protocol, was blocked by the United States in July 2001. The purpose of this work is to study the history, main provisions, significance and reasons for not signing the Protocol to the BTWC. The attention is paid to the events in biological weapons control, which have led a number of countries to the understanding of the necessity to develop the Protocol. The background of the US actions to block this document is the subject of special consideration. During the Second Review Conference on the Implementation of the Convention (8–25 September 1986, Geneva) the USSR, the German Democratic Republic and the Hungarian People's Republic proposed to develop and adopt the Protocol as an addition to the BTWC. This document was supposed to establish general provisions, definitions of terms, lists of agents and toxins, lists of equipment that was present or used at production facilities, threshold quantities of biological agents designed to assess means and methods of protection. The proposed verification mechanism was based on three «pillars»: initial declarations with the basic information about the capabilities of each State Party; inspections to assess the reliability of the declarations; investigations to verify and confirm or not confirm the alleged non-compliance with the Convention. The verification regime was to be under the control of an international organization – the Organization for the Prohibition of Bacteriological (Biological) and Toxin Weapons. However, the US military and pharmaceutical companies opposed the idea of international inspections. The then US Undersecretary of State for Arms Control and International Security, John Robert Bolton II, played a special role in blocking the Protocol. During the Fifth Review Conference in December 2001, he demanded the termination of the Ad Hoc Group of Experts mandate for negotiations under the pretext that any international agreement would constrain US actions. The current situation with biological weapons control should not be left to chance. Measures to strengthen the BTWC should be developed, taking into account the new fundamental changes in dual-use biotechnology. It should be borne in mind, that the Protocol, developed in the 1990s, is outdated nowadays.

The purpose of this study was to explore Vietnamese educators’ perspectives regarding the feasibility of implementing a U.S. Regional Accreditation standard (“Institutional Effectiveness”) in the current Vietnamese higher education accreditation standards. An Institutional Effectiveness (IE) Process (Strategic Planning-Planning and Assessment- Operational Planning) and Assessment Cycle (Program Learning Outcomes-Curriculum Map-Assessment Methods-Data Collection-Actions for Improvement) served as the conceptual framework for this study. The qualitative research design involved interviews with seven Vietnamese educators who work in centers for accreditation and offices of quality assurance in Vietnamese universities. Findings indicated that all participants supported the implementation of an IE standard and Assessment Cycle in Vietnamese higher education accreditation. Findings also stated that currently the IE Process and Assessment Cycle are not fully implemented in Vietnam higher education accreditation. The Vietnamese higher education institutions (HEIs) did not have a supportive culture of strategic planning due to centralized management by the Ministry of Education and Training (MOET). Moreover, most universities were only familiar with the first two steps in the Assessment Cycle. Based on the research findings, recommendations for the implementation of IE process and Assessment Cycle are made for MOET, Centers for Accreditation and Vietnamese HEIs. If not for the ministrations of a bystander, there would have been one less person on the planet. Such disruptive and distressing incidents shake up our world – not only for the person who experiences the original event but also for those who find themselves as witnesses. Using the given incident as an exemplar, the following paper explores the concept of home in the context of ruptures and breaks for people who inhabit a blended world of the digital and the physical. To focus investigations, the Winnicottian concept of the holding environment provides a novel way of understanding home as a seamless domain of continuity which, in this instance is the worldspace spans the physico-digital divide. Sitting writing a paper about ‘home’ and the manner in which the virtual and the physical worlds are blending, I glanced up and was shocked. It is very easy to sit within the warmth and comfort of academe, especially if you have a nice toasty office in the midst of winter and to postulate about what home might be. Theories and concepts, heater, pc and comfy chair support feelings of being at home, of feeling like you have a place in the world, that you have an academic home, you have a conceptual home and, …just wait a minute… back shortly… just answering an email… and a virtual home, in which you can interact and exist in wholly other ways. The other day, however, I abandoned writing the earlier paper with the disorienting experience of seeing a student at my door, a person who tumbled in amidst a mass of scrambled sentences, bandaged bleeding hands, and a bruised head-kicked face. An overseas student who should have been knocking on my door to tell me that ‘Hey, I’ve finished my exams’ instead arrived to ask for my advice: ‘Someone attacked me the other night and I don’t know what to do.’ Home, at least the home about which I wrote before the shock of meeting a traumatised student, was a concept and reality that had transformed markedly over the last quarter of the twentieth century. It was a concept that in its shifts revealed a parallel between the setting up of share housing and the emergence of virtual/physical world blending. Home, as I construed it was about the move, by people aged up to thirties, who were frequently moving from family homes towards blended environments in which share housing became specific non-related familial space (McNamara & Connell), a space/place replicated by social networking in the domain of the digital. There it was. Leaning on the work of theorists such as Miriam Meyerhoff in relation to communities of practice in a linguistic sense, to the earlier work of Lesley Milroy in relation to social networks, I was set to make an argument that the textual world of the internet and other digital domains was developing in a manner that replicated linguistic – specifically spoken – communities of practice based on speech patterns. Buoyed by the recent discovery of the more recent writing of Line Dubé, Anne Bourhis and Réal Jacob in relation to virtual communities of practice, I was certain that my propositions regarding textual practices had something to offer to the current edition of this journal. Further, my argument would proceed in such a way as to infer that the textual base played out in digital media was advancing into the domain of speech in the physical world to the extent that it was possible to determine who had an active digital life – especially in relation to domains on the net – merely by their vocabulary and their sentence construction. My proposition was that the digital domain had not only blended with the virtual in the manner that Dubé, Bourhis and Jacob suggested, but that textual communication was now a home base for the development of the English language for a broad section of the general populace in English speaking countries. The sudden jar of a physical world shock shook loose the comfortable home of text and theory and challenged what I wrote. What was home for the young student who stood before me? We had spoken of ‘home’ before, of making home in a new country, of how your housemates become your family to a certain extent, of how internet and mobile phones made it easier, how home was really with you wherever you went BUT, with the disaster that was an assault, some of that rhetoric resonated as hollow – rhetoric without substance, cold comfort, no comfort. In this situation, home is a concept tested. Perhaps only in such a context can the boundaries and meanings of home come to the fore. It is to that issue that I will address this version of the paper and for that purpose, I will advance the argument that although there may well be a modified version of home developing for a specific generation or cohort of people, that there remains a need for anchoring in the various domains of engagement. To that end, I will use the theory of psychoanalytic theorist D.W. Winnicott who constructed the concept of the holding environment (Winnicott ‘From Dependence;’ and Seinfeld). This article therefore takes its new springing point from hereon in and starts with a brief exploration of the holding environment by its originating author, reconstructs this as a contextually relevant concept, and then talks into some of the original propositions using the given incident for illustrative purposes. The holding environment as construed by D.W. Winnicott is, under optimal conditions, the first environment that an infant experiences, the warm and caring one provided by a primary caregiver who, for this article will be known as the m/other (“The Concept of the Healthy Individual” 27-28). Within this environment of literal and metaphoric holding, the infant knows nothing other than an all-encompassing domain which includes physical and psychological care, the anticipation and provision of needs, and a titrated introduction to the world of things and people (“From Dependence” 86). From the perspective of the infant and within this circle of holding, the world belongs to the infant and is composed largely of the m/other. Only when there is a break in the continuity of care does the infant notice/perceive a world that is anything other than seamless with her/his own existence. In Winnicott’s schema, if a holding environment operates in an optimal manner, it largely remains invisible (Winnicott, “From Dependence” 86; Winnicott, “The Theory of the Parent-Infant Relationship” 52; Ogden 200). This manner of experiencing the world changes with the developing person so that in adulthood, we experience a range of environments that attend to our various needs, if we are fortunate enough. For example, your office supports your work to a greater or lesser extent and perhaps your partner supports you in a psychological sense, and your personal trainer supports your physical training needs. Other instances of support and holding could include the glasses that support your sight and the car that supports your proclivity for drives in the country and a particular lifestyle. There are therefore, many things, people, institutions, and even phenomena such as birthday celebrations that support different aspects of who we are – our being – and different aspects of our activities – our doing. This mirrors theories developed within the context of sociolinguistics in which authors parallel what people are with social networks and what people do, with communities of practice (Moore 22). In the context of Winnicott and linguistic theory, without those supports, our lives would be different and for many of us, would be diminished. The supports I describe are those I construe as holding environments and I believe that by considering a holding environment as a form of ‘home’ that we can reveal a specific way of understanding not only what a home might be, but also the manner in which it operates when people perceive it to be under threat. In the context of the digital domain, there are many media such as email, chat rooms, twitter, real time chat in a range of venues and digital social networks and virtual worlds that support different aspects of our identities, of things that we want to do, of contacts we make and maintain, and of communication for fun and for business. My initial proposition included the concept that various language forms operate to support and construct our identities and that what digital media provided were various venues for the operation of differing but overlapping holding environments in a textual sense. What do these elements, or those like them mean in the situation in which the student found himself? What does it mean and why was it that despite some time in between, that his primary quest was to seek out a person in the physical domain rather than finding solace online when, as I understood, he spent a great deal of time in digital communication? I believe that although there is a blending of domains – the digital and analogue – that when a holding environment of either variety breaks, fractures or at least reveals cracks, that it is likely that a person will seek redress in both modes and in so doing, will reaffirm what is a vital element for the healthy existence of every person – the maintenance of a sense of home – be that on or offline. Despite the seeking for redress in the mode in which the break occurred, the parallel search for social sanction and acknowledgement in the alternative domain may be just as significant for a slightly different reason. When Winnicott writes about ruptures and breaks, it is about those impingements that destroy continuity (“The Fear of Breakdown” 93) – the break in going on being. In the current context in which a person or community inhabits both the online and offline realms, part of their continuity of being, their worldspace (Hardey 2) is the seamlessness between the domains. It is therefore necessary to bring the sense of rupture/failure that occurs in one domain, across into the other to maintain the meta- holding environment or home. Home is that space where ‘you speak my language,’ whether on or offline, the holding environment is one that adapts to you, that understands your speech/text and responds in a manner predictable and in your own genre under optimal conditions, home meets you where you are and, importantly, is a space and place that when it ruptures, mends in such a way as to your restore your faith in its capacity to perform as a holding environment (“Transitional Objects” 10-11). Winnicott writes that only with an environment that was not perfect, (only with an environment that failed occasionally in a minor way), is it possible for a person to sense that there was a holding environment at all. Further, rather than a person construing this failing as a marker of lack of dependability, that the small failure revealed the significance and value of its effective functioning for most of the time. Additionally, a minor break revealed that the holding environment/home held the potential to respond to some unanticipated and distressing break by supporting the person experiencing it. By operating in this manner, there is now an imaginal space of holding/home. In a sense, this mirrors what other authors such as Thomas Lindif and Milton Shatzer write about when they describe social presence in relation to the manner in which an online arena supports or is perceived to support activities such as communication between peers. One of the most noted and public manifestations of the phenomenon of a failed holding environment becoming mended and therefore stronger was that experienced in several places in relation to terrorist attacks such as that of 2001 in the USA. In relation to the attacks on the twin towers in New York, the people of that city experienced a shattering of the integrity of their holding environment/ their home. However, they also noted – as reported across a range of media (for example: Gamble 1.iii; Grider), a huge outpouring of compassion and caring by their fellow New Yorkers thereby experiencing a certain mending and elevating of the significance of their home city holding environment (Gamble 2.vi). In the context of the aforementioned student being attacked, the break also occurred in the physical domain. Although he sought some form of reassurance online could provide some solace. However, it would leave him with the experience that the physical environment was no longer homelike, that it had failed as a holding environment. That is, home in the physical realm was, for a time, failing to support him. To effect a mending in the physical domain, it was therefore important that he seek out solutions that equally involved the physical world of people – mirroring the break – the assault by a person. What occurred when he visited my office was that he received a physical world hearing and witness to his injuries and then with the aid of colleagues, he received further care, advice and support. One of the consequences of such an experience is that although the possibility of assault is now imaginable, because it has been experienced; there is also the knowledge that assistance is at hand – a situation that may not have been known or predicted before. In some manner therefore, with other imagined ghastly events, there is now an expectation of potential assistance. That imaginal knowing therefore now forms part of his holding environment in his physical world, that form of home that ensures ontological security as mentioned by McNamara and Connell (82). Outrage over incidents in Second Life and in other domains such as myspace predominantly play out in those arenas but, like the assault of the student, also get played out in other arenas, including mainstream media. For example, an attack on the virtual headquarters of the Australian Broadcasting Corporation on Second Life attracted attention in newspapers and other mainstream media (Hutcheon). It seems therefore that not only is it necessary to mend the breaks in a sense within the medium in which the original break occurred but also to reassert the blended domain of the digital and the analogue and the capacity of each to form part of the meta holding environment that exists in contemporary society. There is yet to develop a discourse that links the digital and the physical worlds as constituents of a worldspace (Hardey 2), that can be viewed as a meta- holding environment/home. However, even with the few examples proffered here, it seems apparent that by investigating breaks and ruptures in the lives of people who maintain a life world that spans the digital/physical divide that it might be possible to understand the apparent merging of the two. Further, it may lead to significant observations about the newly emerging worldspace as a holding environment /home in a novel way with leads for the assisting people across the divides that may otherwise have not been considered. The implications for maintaining the seamlessness and continuity of home/holding environment in the instance of natural or person-effected disasters in either domain is the demand for an appropriate response in both. Although this already occurs, it is in an ad hoc manner without a consideration of the significance of mending ruptures and re-enlivening both domains for a sense of ontological security of the worldspace – that is at its very heart, a sense of home. Abstract:
Introduction With a deluge of mouthwatering pre-publicity, the opening of The Spotted Pig, the USA’s first self-identified British-styled gastropub, in Manhattan in February 2004 was much anticipated. The late Australian chef, food writer and restauranteur Mietta O’Donnell has noted how “taking over a building or business which has a long established reputation can be a mixed blessing” because of the way that memories “can enrich the experience of being in a place or they can just make people nostalgic”. Bistro Le Zoo, the previous eatery on the site, had been very popular when it opened almost a decade earlier, and its closure was mourned by some diners (Young; Kaminsky “Feeding Time”; Steinhauer & McGinty). This regret did not, however, appear to affect The Spotted Pig’s success. As esteemed New York Times reviewer Frank Bruni noted in his 2006 review: “Almost immediately after it opened […] the throngs started to descend, and they have never stopped”. The following year, The Spotted Pig was awarded a Michelin star—the first year that Michelin ranked New York—and has kept this star in the subsequent annual rankings. Writing Restaurant Biography Detailed studies have been published of almost every type of contemporary organisation including public institutions such as schools, hospitals, museums and universities, as well as non-profit organisations such as charities and professional associations. These are often written to mark a major milestone, or some significant change, development or the demise of the organisation under consideration (Brien). Detailed studies have also recently been published of businesses as diverse as general stores (Woody), art galleries (Fossi), fashion labels (Koda et al.), record stores (Southern & Branson), airlines (Byrnes; Jones), confectionary companies (Chinn) and builders (Garden). In terms of attracting mainstream readerships, however, few such studies seem able to capture popular reader interest as those about eating establishments including restaurants and cafés. This form of restaurant life history is, moreover, not restricted to ‘quality’ establishments. Fast food restaurant chains have attracted their share of studies (see, for example Love; Jakle & Sculle), ranging from business-economic analyses (Liu), socio-cultural political analyses (Watson), and memoirs (Kroc & Anderson), to criticism around their conduct and effects (Striffler). Eric Schlosser’s Fast Food Nation: The Dark Side of the All-American Meal is the most well-known published critique of the fast food industry and its effects with, famously, the Rolling Stone article on which it was based generating more reader mail than any other piece run in the 1990s. The book itself (researched narrative creative nonfiction), moreover, made a fascinating transition to the screen, transformed into a fictionalised drama (co-written by Schlosser) that narrates the content of the book from the point of view of a series of fictional/composite characters involved in the industry, rather than in a documentary format. Akin to the range of studies of fast food restaurants, there are also a variety of studies of eateries in US motels, caravan parks, diners and service station restaurants (see, for example, Baeder). Although there has been little study of this sub-genre of food and drink publishing, their popularity can be explained, at least in part, because such volumes cater to the significant readership for writing about food related topics of all kinds, with food writing recently identified as mainstream literary fare in the USA and UK (Hughes) and an entire “publishing subculture” in Australia (Dunstan & Chaitman). Although no exact tally exists, an informed estimate by the founder of the Gourmand World Cookbook Awards and president of the Paris Cookbook Fair, Edouard Cointreau, has more than 26,000 volumes on food and wine related topics currently published around the world annually (ctd. in Andriani “Gourmand Awards”). The readership for publications about restaurants can also perhaps be attributed to the wide range of information that can be included a single study. My study of a selection of these texts from the UK, USA and Australia indicates that this can include narratives of place and architecture dealing with the restaurant’s location, locale and design; narratives of directly food-related subject matter such as menus, recipes and dining trends; and narratives of people, in the stories of its proprietors, staff and patrons. Detailed studies of contemporary individual establishments commonly take the form of authorised narratives either written by the owners, chefs or other staff with the help of a food journalist, historian or other professional writer, or produced largely by that writer with the assistance of the premise’s staff. These studies are often extensively illustrated with photographs and, sometimes, drawings or reproductions of other artworks, and almost always include recipes. Two examples of these from my own collection include a centennial history of a famous New Orleans eatery that survived Hurricane Katrina, Galatoire’s Cookbook. Written by employees—the chief operating officer/general manager (Melvin Rodrigue) and publicist (Jyl Benson)—this incorporates reminiscences from both other staff and patrons. The second is another study of a New Orleans’ restaurant, this one by the late broadcaster and celebrity local historian Mel Leavitt. The Court of Two Sisters Cookbook: With a History of the French Quarter and the Restaurant, compiled with the assistance of the Two Sisters’ proprietor, Joseph Fein Joseph III, was first published in 1992 and has been so enduringly popular that it is in its eighth printing. These texts, in common with many others of this type, trace a triumph-over-adversity company history that incorporates a series of mildly scintillating anecdotes, lists of famous chefs and diners, and signature recipes. Although obviously focused on an external readership, they can also be characterised as an instance of what David M. Boje calls an organisation’s “story performance” (106) as the process of creating these narratives mobilises an organisation’s (in these cases, a commercial enterprise’s) internal information processing and narrative building activities. Studies of contemporary restaurants are much more rarely written without any involvement from the eatery’s personnel. When these are, the results tend to have much in common with more critical studies such as Fast Food Nation, as well as so-called architectural ‘building biographies’ which attempt to narrate the historical and social forces that “explain the shapes and uses” (Ellis, Chao & Parrish 70) of the physical structures we create. Examples of this would include Harding’s study of the importance of the Boeuf sur le Toit in Parisian life in the 1920s and Middlebrook’s social history of London’s Strand Corner House. Such work agrees with Kopytoff’s assertion—following Appadurai’s proposal that objects possess their own ‘biographies’ which need to be researched and expressed—that such inquiry can reveal not only information about the objects under consideration, but also about readers as we examine our “cultural […] aesthetic, historical, and even political” responses to these narratives (67). The life story of a restaurant will necessarily be entangled with those of the figures who have been involved in its establishment and development, as well as the narratives they create around the business. This following brief study of The Spotted Pig, however, written without the assistance of the establishment’s personnel, aims to outline a life story for this eatery in order to reflect upon the pig’s place in contemporary dining practice in New York as raw foodstuff, fashionable comestible, product, brand, symbol and marketing tool, as well as, at times, purely as an animal identity. The Spotted Pig Widely profiled before it even opened, The Spotted Pig is reportedly one of the city’s “most popular” restaurants (Michelin 349). It is profiled in all the city guidebooks I could locate in print and online, featuring in some of these as a key stop on recommended itineraries (see, for instance, Otis 39). A number of these proclaim it to be the USA’s first ‘gastropub’—the term first used in 1991 in the UK to describe a casual hotel/bar with good food and reasonable prices (Farley). The Spotted Pig is thus styled on a shabby-chic version of a traditional British hotel, featuring a cluttered-but-well arranged use of pig-themed objects and illustrations that is described by latest Michelin Green Guide of New York City as “a country-cute décor that still manages to be hip” (Michelin 349). From the three-dimensional carved pig hanging above the entrance in a homage to the shingles of traditional British hotels, to the use of its image on the menu, website and souvenir tee-shirts, the pig as motif proceeds its use as a foodstuff menu item. So much so, that the restaurant is often (affectionately) referred to by patrons and reviewers simply as ‘The Pig’. The restaurant has become so well known in New York in the relatively brief time it has been operating that it has not only featured in a number of novels and memoirs, but, moreover, little or no explanation has been deemed necessary as the signifier of “The Spotted Pig” appears to convey everything that needs to be said about an eatery of quality and fashion. In the thriller Lethal Experiment: A Donovan Creed Novel, when John Locke’s hero has to leave the restaurant and becomes involved in a series of dangerous escapades, he wants nothing more but to get back to his dinner (107, 115). The restaurant is also mentioned a number of times in Sex and the City author Candace Bushnell’s Lipstick Jungle in relation to a (fictional) new movie of the same name. The joke in the book is that the character doesn’t know of the restaurant (26). In David Goodwillie’s American Subversive, the story of a journalist-turned-blogger and a homegrown terrorist set in New York, the narrator refers to “Scarlett Johansson, for instance, and the hostess at the Spotted Pig” (203-4) as the epitome of attractiveness. The Spotted Pig is also mentioned in Suzanne Guillette’s memoir, Much to Your Chagrin, when the narrator is on a dinner date but fears running into her ex-boyfriend: ‘Jack lives somewhere in this vicinity […] Vaguely, you recall him telling you he was not too far from the Spotted Pig on Greenwich—now, was it Greenwich Avenue or Greenwich Street?’ (361). The author presumes readers know the right answer in order to build tension in this scene. Although this success is usually credited to the joint efforts of backer, music executive turned restaurateur Ken Friedman, his partner, well-known chef, restaurateur, author and television personality Mario Batali, and their UK-born and trained chef, April Bloomfield (see, for instance, Batali), a significant part has been built on Bloomfield’s pork cookery. The very idea of a “spotted pig” itself raises a central tenet of Bloomfield’s pork/food philosophy which is sustainable and organic. That is, not the mass produced, industrially farmed pig which produces a leaner meat, but the fatty, tastier varieties of pig such as the heritage six-spotted Berkshire which is “darker, more heavily marbled with fat, juicier and richer-tasting than most pork” (Fabricant). Bloomfield has, indeed, made pig’s ears—long a Chinese restaurant staple in the city and a key ingredient of Southern US soul food as well as some traditional Japanese and Spanish dishes—fashionable fare in the city, and her current incarnation, a crispy pig’s ear salad with lemon caper dressing (TSP 2010) is much acclaimed by reviewers. This approach to ingredients—using the ‘whole beast’, local whenever possible, and the concentration on pork—has been underlined and enhanced by a continuing relationship with UK chef Fergus Henderson. In his series of London restaurants under the banner of “St. John”, Henderson is famed for the approach to pork cookery outlined in his two books Nose to Tail Eating: A Kind of British Cooking, published in 1999 (re-published both in the UK and the US as The Whole Beast: Nose to Tail Eating), and Beyond Nose to Tail: A Kind of British Cooking: Part II (coauthored with Justin Piers Gellatly in 2007). Henderson has indeed been identified as starting a trend in dining and food publishing, focusing on sustainably using as food the entirety of any animal killed for this purpose, but which mostly focuses on using all parts of pigs. In publishing, this includes Hugh Fearnley-Whittingstall’s The River Cottage Meat Book, Peter Kaminsky’s Pig Perfect, subtitled Encounters with Some Remarkable Swine and Some Great Ways to Cook Them, John Barlow’s Everything but the Squeal: Eating the Whole Hog in Northern Spain and Jennifer McLagan’s Fat: An Appreciation of a Misunderstood Ingredient, with Recipes (2008). In restaurants, it certainly includes The Spotted Pig. So pervasive has embrace of whole beast pork consumption been in New York that, by 2007, Bruni could write that these are: “porky times, fatty times, which is to say very good times indeed. Any new logo for the city could justifiably place the Big Apple in the mouth of a spit-roasted pig” (Bruni). This demand set the stage perfectly for, in October 2007, Henderson to travel to New York to cook pork-rich menus at The Spotted Pig in tandem with Bloomfield (Royer). He followed this again in 2008 and, by 2009, this annual event had become known as “FergusStock” and was covered by local as well as UK media, and a range of US food weblogs. By 2009, it had grown to become a dinner at the Spotted Pig with half the dishes on the menu by Henderson and half by Bloomfield, and a dinner the next night at David Chang’s acclaimed Michelin-starred Momofuku Noodle Bar, which is famed for its Cantonese-style steamed pork belly buns. A third dinner (and then breakfast/brunch) followed at Friedman/Bloomfield’s Breslin Bar and Dining Room (discussed below) (Rose). The Spotted Pig dinners have become famed for Henderson’s pig’s head and pork trotter dishes with the chef himself recognising that although his wasn’t “the most obvious food to cook for America”, it was the case that “at St John, if a couple share a pig’s head, they tend to be American” (qtd. in Rose). In 2009, the pigs’ head were presented in pies which Henderson has described as “puff pastry casing, with layers of chopped, cooked pig’s head and potato, so all the lovely, bubbly pig’s head juices go into the potato” (qtd. in Rose). Bloomfield was aged only 28 when, in 2003, with a recommendation from Jamie Oliver, she interviewed for, and won, the position of executive chef of The Spotted Pig (Fabricant; Q&A). Following this introduction to the US, her reputation as a chef has grown based on the strength of her pork expertise. Among a host of awards, she was named one of US Food & Wine magazine’s ten annual Best New Chefs in 2007. In 2009, she was a featured solo session titled “Pig, Pig, Pig” at the fourth Annual International Chefs Congress, a prestigious New York City based event where “the world’s most influential and innovative chefs, pastry chefs, mixologists, and sommeliers present the latest techniques and culinary concepts to their peers” (Starchefs.com). Bloomfield demonstrated breaking down a whole suckling St. Canut milk raised piglet, after which she butterflied, rolled and slow-poached the belly, and fried the ears. As well as such demonstrations of expertise, she is also often called upon to provide expert comment on pork-related news stories, with The Spotted Pig regularly the subject of that food news. For example, when a rare, heritage Hungarian pig was profiled as a “new” New York pork source in 2009, this story arose because Bloomfield had served a Mangalitsa/Berkshire crossbreed pig belly and trotter dish with Agen prunes (Sanders) at The Spotted Pig. Bloomfield was quoted as the authority on the breed’s flavour and heritage authenticity: “it took me back to my grandmother’s kitchen on a Sunday afternoon, windows steaming from the roasting pork in the oven […] This pork has that same authentic taste” (qtd. in Sanders). Bloomfield has also used this expert profile to support a series of pork-related causes. These include the Thanksgiving Farm in the Catskill area, which produces free range pork for its resident special needs children and adults, and helps them gain meaningful work-related skills in working with these pigs. Bloomfield not only cooks for the project’s fundraisers, but also purchases any excess pigs for The Spotted Pig (Estrine 103). This strong focus on pork is not, however, exclusive. The Spotted Pig is also one of a number of American restaurants involved in the Meatless Monday campaign, whereby at least one vegetarian option is included on menus in order to draw attention to the benefits of a plant-based diet. When, in 2008, Bloomfield beat the Iron Chef in the sixth season of the US version of the eponymous television program, the central ingredient was nothing to do with pork—it was olives. Diversifying from this focus on ‘pig’ can, however, be dangerous. Friedman and Bloomfield’s next enterprise after The Spotted Pig was The John Dory seafood restaurant at the corner of 10th Avenue and 16th Street. This opened in November 2008 to reviews that its food was “uncomplicated and nearly perfect” (Andrews 22), won Bloomfield Time Out New York’s 2009 “Best New Hand at Seafood” award, but was not a success. The John Dory was a more formal, but smaller, restaurant that was more expensive at a time when the financial crisis was just biting, and was closed the following August. Friedman blamed the layout, size and neighbourhood (Stein) and its reservation system, which limited walk-in diners (ctd. in Vallis), but did not mention its non-pork, seafood orientation. When, almost immediately, another Friedman/Bloomfield project was announced, the Breslin Bar & Dining Room (which opened in October 2009 in the Ace Hotel at 20 West 29th Street and Broadway), the enterprise was closely modeled on the The Spotted Pig. In preparation, its senior management—Bloomfield, Friedman and sous-chefs, Nate Smith and Peter Cho (who was to become the Breslin’s head chef)—undertook a tasting tour of the UK that included Henderson’s St. John Bread & Wine Bar (Leventhal). Following this, the Breslin’s menu highlighted a series of pork dishes such as terrines, sausages, ham and potted styles (Rosenberg & McCarthy), with even Bloomfield’s pork scratchings (crispy pork rinds) bar snacks garnering glowing reviews (see, for example, Severson; Ghorbani). Reviewers, moreover, waxed lyrically about the menu’s pig-based dishes, the New York Times reviewer identifying this focus as catering to New York diners’ “fetish for pork fat” (Sifton). This representative review details not only “an entree of gently smoked pork belly that’s been roasted to tender goo, for instance, over a drift of buttery mashed potatoes, with cabbage and bacon on the side” but also a pig’s foot “in gravy made of reduced braising liquid, thick with pillowy shallots and green flecks of deconstructed brussels sprouts” (Sifton). Sifton concluded with the proclamation that this style of pork was “very good: meat that is fat; fat that is meat”. Concluding remarks Bloomfield has listed Michael Ruhlman’s Charcuterie as among her favourite food books. Publishers Weekly reviewer called Ruhlman “a food poet, and the pig is his muse” (Q&A). In August 2009, it was reported that Bloomfield had always wanted to write a cookbook (Marx) and, in July 2010, HarperCollins imprint Ecco publisher and foodbook editor Dan Halpern announced that he was planning a book with her, tentatively titled, A Girl and Her Pig (Andriani “Ecco Expands”). As a “cookbook with memoir running throughout” (Maurer), this will discuss the influence of the pig on her life as well as how to cook pork. This text will obviously also add to the data known about The Spotted Pig, but until then, this brief gastrobiography has attempted to outline some of the human, and in this case, animal, stories that lie behind all businesses.
