Abstract:
Consuming junk food is linked to several health problems, including obesity, diabetes, heart disease and cancer. The objective of this study was to examine the undergraduate students’ motivation for junk food. This study applied a quantitative research design to examine undergraduate students’ motivation towards junk food choices and the resulting contentment. A survey instrument was employed to collect comprehensive data on factors influencing student’s motivation, using a descriptive statistical analysis method. A representative sample of two hundred participants was selected through a simple random sampling technique. The results of this research indicate a positive association between prioritizing healthy and quality food and convenience food that tends to challenge a healthy diet and undergraduate students’ motivation for junk foods. The results further show a negative association between guardians’ influence, easy access to junk food, college regulations, attractive adds, health impact, the decision to buy junk food and motivation of undergraduate students on junk foods. The implications of this study would benefit policymakers, researchers, academicians, college leaders, teachers and faculty members of educational institutions to understand the current trends of undergraduate student on junk food consumption. Furthermore, the results add new literature on the motivation of junk foods among undergraduate students in the Neplese context. Future research is expected to examine the influencing factors to consume junk food in detail and large scale research.

Abstract:
The term fast food or as referred as the junk food is the food which can be served immediately for eating. Sausages, hamburgers and pizzas come under the category of fast food or the junk food. It can be otherwise said that junk food and fast food are used as synonyms. These junk foods are inherent with a high level of energy with high content of sugar, salt and fat. On the contrary, these types of food have the characteristics of low nutritious level with low level of protein, low level of vitamin, low fibre content as well as low level of minerals. The definition for junk food had been given as the foods which are prepared earlier then served or the ones which are prepared immediately for serving. In this context, the current research study has been done to analyse the adolescent’s attitude towards the junk foods. The study has been carried out the junk food consumers in Tiruvannamalai. The respondents of the study are selected through convenience sampling and the sample size is fixed at 100. Questionnaire is the instrument used to collect the information for the study. The collected data is put into analysis through the technique of mean score. The result of the study shows that most of adolescents like the taste of junk food.

While there is extensive research regarding the impact of television on food choices, much less is focused on an instrument able to change beliefs at the point-of-purchase: packaging. This study aims to understand how food packaging can influence children‟s attitudes and purchase decisions towards healthier choices. Therefore, the appealing components of junk food packaging will be transferred to healthy food in order to understand its effect on children: Package Evaluation, Attention to Packaging, Attitude toward the Product, Perceived Healthiness, and Purchase Intention. To measure these variables, structured questionnaires were conducted to a sample composed by 408 Portuguese children aged between 10 and 14 years old from 5th to 9th grades. This study suggests that packaging can be a way to increase the appeal of healthy food to children and, consequently, improve their food choices, taking into consideration their values and preferences.

Abstract:
Over the past four decades, obesity in the United States has risen to record levels. Co-morbid conditions such as heart disease, diabetes, and stroke will impose over twenty trillion dollars of economic burden over the next two decades. More than half that sum will be direct medical expenses. Under current entitlement programs, governments, and ultimately taxpayers, will be responsible for about 43 percent of that. Even with all this spending, millions of lives will be cut short. Dietary factors are largely to blame. This thesis explores how policy interventions to encourage healthy diet and discourage healthy diet can be projected to affect future healthcare spending. It assesses six dietary factors to determine whether there is sufficient research to determine how much economic disease burden they will impose. Among those for which such research exists, the thesis estimates the cost-effectiveness of interventions such as education, subsidies, taxes and legislative bans.

Acompanha : Guia didático: a química na junk food: uma proposta para o ensino de ligações químicas por meio do enfoque CTS
O objetivo deste estudo é propor estratégias de ensino no enfoque CTS para o ensino de Ligações Químicas com ênfase nas Ligações Iônica e Covalente. Nesse sentido o presente estudo foi desenvolvido e aplicado em uma escola da rede pública de ensino do Paraná, na cidade de Telêmaco Borba, em duas turmas da segunda (2ª) série do ensino técnico integrado ao ensino médio, totalizando 42 alunos. A abordagem metodológica foi abordagem qualitativa, de natureza interpretativa com observação participante. Para a coleta de dados foram utilizados: fotos, gravações de arguições orais e vídeos de atividades transcritos na íntegra, anotações de campo em protocolos de observação das interações do dia-a-dia na sala de aula, questionários e atividades desenvolvidas pelos alunos. As atividades foram desenvolvidas em dezoito (18) aulas, as quais interligaram os conceitos químicos de Ligações Químicas ao tema social controverso (Junk Food), de forma a promover as inter-relações dos aspectos da ciência, tecnologia e sociedade. Os principais resultados obtidos evidenciaram que pelas atividades propostas, o ensino de Ligações Químicas, por meio do tema social Junk Food, promoveu a valorização do conhecimento científico extrapolando as barreiras da sala de aula para o contexto social dos educandos. Pois as atividades desenvolvidas nos módulos, proporcionou as relações entre os conteúdos escolares e os aspectos cotidianos dos alunos. Alcançando os objetivos da proposta CTS para a cidadania. Outro resultado alcançado compreende a elaboração de um guia didático que tem por objetivo compartilhar atividades desenvolvidas neste estudo, como sugestão metodológica para os profissionais que lecionam Química, e atuam no ano final do Ensino Fundamental, Ensino Médio e Técnico.
The aim of this study is to propose teaching strategies in CTS approach to teaching with emphasis on Chemical Bonds Ionic and Covalent Links . In this sense the present study was developed and applied in a public school teaching of Paraná, in the town of Telêmaco Borba , in two classes of the second ( 2nd ) series of technical education integrated into the school , totaling 42 students . The methodological approach was qualitative approach, interpretative participant observation . For data collection were used : photos , recordings and videos Pleas oral activities fully transcribed , field notes on observation protocols of interactions of day- to-day classroom , quizzes and activities for students . The activities we developed in eighteen (18) classes, which interlinked the chemical concepts of Chemical Bonds to controversial social issue (Junk Food), in order to promote inter - relations aspects of science, technology and society. The main results showed that the proposed activities, the teaching of Chemical Bonds, through social theme Junk Food, promoted the appreciation of scientific knowledge surpassing the barriers of the classroom to the social context of the learners. For the activities in the modules, provided the relationships between school subjects and everyday aspects of students. Achieving the goals of the proposed CTS for citizenship. Another result obtained includes the preparation of a didactic guide which aims to share activities developed in this study as methodological suggestion for professionals who teach chemistry, and act in the final year of elementary school, high school and technical.

Abstract:
Objective. Determine the relationship between dietary quality and body weight/composition in college women. Specific emphasis was made regarding adherence to current MyPyramid guidelines, fruit, vegetable and junk food consumption. Design/Participants. The study used a cross-sectional design. One hundred and sixty three women were recruited to participate in the study. All participants were university students (20.4 ± 1.6 y). Diet intake was measured using the Dietary History Questionnaire (DHQ) and the Healthy Eating Index (HEI) was calculated to assess diet quality. Body fat percentage was assessed using the Bod Pod and BMI was calculated using height and weight measurements. Physical activity was measured objectively using accelerometers over seven consecutive days. Results. There was no significant difference in BMI or body fat percentage across university year. There was no relationship between diet quality (as measured using the Healthy Eating Index) and percent body fat or BMI. The number of MyPyramid equivalents of fruit was negatively correlated to body fat percentage (r = -0.2, p ≤ 0,05) but not BMI (r = -0.093, p =0.26). The number of MyPyramid equivalents of dairy was also negatively related to both body fat percentage (r = -0.21, p ≤ 0.05) and BMI (r = -0.21, p ≤ 0.05). Percentage of calories from Non Nutrient Dense Foods (NNDF) was positively related to percent body fat ( r= 0.179, p = 0.029). For every 1-percentage increase in NNDF, there was a 0.12 percentage point increase in body fat. Conclusion. Increasing fruit, dairy, and vegetable intake, and reducing intake from Non Nutrient Dense Foods (NNDF) such as French fries, cookies, and candy, may have a beneficial influence on body composition in college women.

Abstract:
Existem evidências de que dietas compostas por níveis elevados de lipídeos e/ou car-boidratos contribuem para o desenvolvimento de doenças crônico-degenerativas e de déficit cognitivo. Entretanto, os mecanismos pelos quais a obesidade materna interfere na saúde da prole, especificamente no metabolismo e na memória de longo-prazo, ain-da são pouco claros. O objetivo deste trabalho foi investigar se a obesidade materna interfere no metabolismo e nos comportamentos relacionados à memória de longo-prazo de seus filhotes, e se há um efeito somatório com a exposição à dieta de cafete-ria no decorrer da vida da prole. Ratas foram alimentadas com dieta controle (CON) ou de cafeteria (CAF) desde o desmame até os 210 dias de vida, no desmame de sua pro-le. A partir do desmame, seus filhotes machos foram divididos em 4 grupos (CON-CON, CON-CAF, CAF-CON e CAF-CAF) para que todas as ninhadas ingerissem CON ou CAF, independentemente da dieta materna. As mães foram decapitadas no dia seguin-te ao desmame dos filhotes. Foi decapitada e analisada em tarefas comportamentais metade dos filhotes aos 30 dias de idade e, a outra metade, aos 120 dias. As mães CAF apresentaram maior peso corporal total e de tecido adiposo e maiores concentra-ções circulantes de colesterol total, insulina e leptina do que as mães CON. A ingestão calórica semanal dos filhotes que ingeriram CAF mostrou-se maior do que os que inge-riram CON, independentemente da dieta materna. As ninhadas apresentaram peso cor-poral igual no desmame e aos 30dias, porém aos 120dias, os filhotes que ingeriram CON-CAF tiveram aumento de peso em relação aos filhotes CON, independentemente da dieta materna destes. Porém, os filhotes CAF-CAF tiveram redução do peso corporal em relação aos CON-CAF na idade adulta. Aos 30 e 120 dias, os filhotes que ingeriram CAF apresentaram peso de tecido adiposo maior do que os que ingeriram CON, inde-pendentemente da dieta materna. Aos 30 e 120dias, a trigliceridemia e a colesterolemia estavam iguais entre os grupos, assim como a glicemia aos 30 dias. Porém, aos 120 dias, os filhotes que ingeriram CAF apresentaram hiperglicemia, assim como hiperlepti-nemia e hiperinsulinemia, independentemente da dieta materna. Aos 30 dias, todos os grupos que foram expostos à dieta de cafeteria em alguma etapa da vida apresentaram declínio no desempenho em uma ou nas duas tarefas relacionadas à memória de lon-go-prazo (Reconhecimento de objetos e Esquiva Inibitória step-down). Já aos 120 dias, o grupo CAF-CAF foi o único que mostrou piora no desempenho na tarefa de Reconhe-cimento de Objetos, e todos os grupos mostraram capacidade de aprendizado e memó-ria na tarefa de Esquiva Inibitória step-down. Esses dados sugerem que a dieta materna modula o peso corporal e comportamentos relacionados à memória de longo-prazo dos filhotes e que seus efeitos sofrem influência da dieta pós-natal da prole. Porém, novos estudos são necessários para elucidar os mecanismos envolvidos no desenvolvimento dessas alterações.
There is evidence that diets containing high levels of lipids and / or carbohydrates con-tribute to the development of chronic degenerative diseases and cognitive impairment. However, the mechanisms by which maternal obesity affects health of offspring, specifi-cally in metabolism and long-term memory, are still unclear. The aim of this study was to investigate whether maternal obesity interferes with the metabolism and behavior related to long-term memory of their offspring, and if there is a summation effect with exposure to the cafeteria diet during the life of the offspring. Rats were fed a control diet (CON) or cafeteria (CAF) from weaning to 210 days old at weaning of their offspring. After wean-ing, their male offspring were divided into 4 groups (CON-CON, CON-CAF, CAF and CAF-CON-CAF) for all litters ingest CON or CAF, irrespective of maternal diet. Mothers were decapitated on the day following weaning of pups. Was decapitated and analyzed in behavioral tasks half the pups at 30 days of age and the other half at 120 days. CAF mothers had higher total body weight and adipose tissue and increased circulating con-centrations of total cholesterol, insulin and leptin than mothers CON. The weekly caloric intake of pups that ingested CAF was higher than those who ate CON, regardless of maternal diet. Litters showed body weight equal to weaning and 30days, but the 120dias, puppies who ate CON-CAF had weight gain compared to CON offspring, re-gardless of maternal diet these. However, the pups CAF-CAF had reduced body weight compared to CON-CAF adulthood. At 30 and 120 days, the puppies that ingested CAF showed greater weight of adipose tissue than those who ate CON, irrespective of ma-ternal diet. At 30 and 120dias, blood triglyceride and cholesterol were similar between groups, as well as blood glucose levels at 30 days. However, at 120 days, the puppies that ingested CAF showed hyperglycemia, as hiperlepti-nemia and hyperinsulinemia, irrespective of maternal diet. At 30 days, all groups were exposed to the cafeteria diet at some stage of life show a decline in performance in one or both tasks related to long-term memory (Recognition of objects and Dodge inhibitory step-down). Already at 120 days, the group CAF-CAF was the one who showed deterioration in performance in the task of Object Recognition, and all groups showed learning ability and memory in the inhibitory avoidance task step down. These data suggest that maternal diet modulates body weight and behaviors related to long-term memory of the puppies and their effects are influenced by postnatal diet offspring. However, further studies are needed to eluci-date the mechanisms involved in the development of these changes.

Los arquetipos son esquemas innatos que se encuentran en el inconsciente colectivo y ayudan a entender el mundo. El psicoanalista Carl Gustav Jung teorizó y propuso diversos arquetipos de la personalidad que hoy son utilizados en la publicidad. Por otro lado, la peruanidad resulta difícil de definir, a pesar de que, además de Víctor M. Andrés Belaúnde (quien acuñó la palabra y teorizó sobre ella), diversos autores y pensadores hayan abordado el tema de lo peruano. Ello se debería a que esta pertenece a un imaginario, un ideal, un mito, un discurso. En el presente artículo se buscará identificar, relacionar y analizar los arquetipos de Jung empleados en los discursos sobre peruanidad en los pots de Facebook de las marcas fast food KFC y Bembos en el Perú durante el año 2019. Para ello, se realizó una recopilación general de los principales y diversos discursos sobre peruanidad, encontrándose 5 perfiles de lo peruano; y, finalmente, se definieron los 12 arquetipos de Jung empleados en la teoría publicitaria.
Archetypes are innate schemes found in the collective unconscious and help to understand the world. Psychoanalyst Carl Gustav Jung theorized and proposed various archetypes of personality that are used in advertising today. On the other hand, peruvianness is difficult to define, even though, in addition to Víctor M. Andrés Belaúnde (who coined the word and theorized about it), various authors and thinkers have addressed this issue. This is because it belongs to an imaginary, an ideal, a myth, a discourse. This article seeks to identify, to relate and analyze Jung's archetypes used in the peruvianness discourses of the fast food brands KFC and Bembos in Peru during the year 2019. For this, a general compilation of the main and various discourses of peruvianess was made, finding 5 profiles of the Peruvian; and, finally, the 12 Jungian archetypes used in advertising theory were defined.

The rising prevalence of diet-related non-communicable diseases (NCDs) such as diabetes and cardiovascular diseases is a major global public health concern. The consumption of junk food – food high in fat, sugar, and salt – contributes to unhealthy weight gain, obesity, and NCDs. The World Health Organization recognizes the health benefits of introducing tax on junk food, proposing that such a policy would encourage healthier dietary choices leading to the reduction of NCD prevalence. Multiple countries have adopted this policy to tackle NCDs. This systematic review focuses on the experience from Mexico and hopes to provide insights on using health tax policy as a public health intervention. The prevalence of various NCDs in Mexico is among the highest in the world. To address this issue, Mexico has decided to regulate the junk food market by introducing an 8% and a 10% tax on non-essential energy-dense foods (NEDFs) and sugar-sweetened beverages (SSBs), respectively, since January 2014. The purchase and consumption of NEDFs and SSBs have declined in the post-tax period. Mathematical models on weight change, diabetes, and cardiovascular disease policy have also predicted a drop in the prevalence of overweight, obesity, diabetes, coronary heart disease, stroke, and mortality, even if calorie compensation is factored in. This translates into a promising reduction in the burden of health due to NCDs and healthcare costs, particularly for those of lower socioeconomic status, thus promoting health equity. However, the policy is not without shortcomings. For instance, the tax effect is not evenly distributed as it varies across types of foods, regions, and retailers; hence hindering the maximum potential of the policy. In addition, the awareness of the junk food tax and its motives is also not universal among the population, which diminishes the impact of the policy. Complementary strategies such as healthy food subsidies or educational campaigns to promote the policy should be considered to maximize the effect. Countries that are considering junk food tax as a public health policy to tackle NCDs should learn from Mexico’s example.

Fieldwork for Food and You 2: Wave 3 was conducted between 28th April and 25th June 2021. A total of 6,271 adults from 4,338 households (an overall response rate of 31%) across England, Wales, and Northern Ireland completed the ‘push-to-web’ survey (see Annex A for more information about the methodology). This survey was conducted during the Covid-19 pandemic and so it records the reported attitudes and behaviours under unusual circumstances which have had a significant impact on how and where people buy and eat food, and on levels of household food insecurity. According to the United Nations World Food Programme, the socio-economic impact of the pandemic caused by the imposition of restrictions on social and commercial activities appears to be more devastating than the actual virus in many countries. This study is part of the Agricultural Policy Research in Africa programme’s assessment of the impact of the COVID-19 crisis on food systems and livelihoods in Ghana and seven other African countries – Ethiopia, Kenya, Malawi, Nigeria, Tanzania, Zambia and Zimbabwe. Conducted between June–July 2020 and February–March 2021, the study seeks to estimate the potential impact of COVID-19 on food systems and livelihoods in south-western Ghana.

Kitchen Life 2 (KL2) used motion-sensitive cameras to explore food safety behaviours in 70 households and 31 food business operator (FBO) kitchens. It also captured data using surveys, interviews, and fridge and freezer thermometers. KL2 was commissioned in February 2021 and completed in June 2023. The aim of KL2 was to identify the key food safety behaviours that occur in household and business kitchens and understand the factors influencing these behaviours. KL2 was commissioned by the FSA and delivered by Basis Social, with support from Leeds University Business School. This unique and innovative research project won the Analysis in Government (Opens in a new window) ‘Innovative Methods’ award in 2022.

On 8 June 2020, the Government of Tanzania officially declared the country to be free of COVID-19 and all restrictions have since been lifted. As of 3 December 2020, Tanzania had only 509 confirmed cases of the virus and 21 deaths. Nevertheless, neighbouring countries are still facing the threat of the pandemic, all of which are key trading partners. Their continuing COVID-19 control measures have disrupted regional and domestic agricultural markets and affected local livelihoods and food systems. This study analysed the resulting impacts in those systems in several rice-producing communities in Morogoro Region, south-western Tanzania.

There is little available evidence on how schools implement the School Food Standards. To address this, the Department for Education and the Food Standards Agency with support from the Office of Health Improvement and Disparities commissioned this research to support the School Food Standards Compliance Pilot. The purpose of this pilot was to test if Food Safety Officers could carry out a School Food Standards check to identify potential non-compliance with the School Food Standards alongside food hygiene inspections. The pilot launched in September 2022 across 18 local authorities and the FSA has published two reports on the findings: School Food Standards Compliance Pilot: Discovery Research - this report focuses on the findings of the pre-pilot phase, the ‘Discovery Phase’, that ran from June to August 2022. School Food Standards Compliance Pilot: Feasibility Research - this report focuses on the findings of the second phase of the pilot known as ‘Feasibility Study Phase 1'. Research is currently underway to explore the feasibility of an updated pilot design known as ‘Feasibility Study Phase 2.’ This report will be published in Spring 2024.
