Full textWhile there is extensive research regarding the impact of television on food choices, much less is focused on an instrument able to change beliefs at the point-of-purchase: packaging. This study aims to understand how food packaging can influence children‟s attitudes and purchase decisions towards healthier choices. Therefore, the appealing components of junk food packaging will be transferred to healthy food in order to understand its effect on children: Package Evaluation, Attention to Packaging, Attitude toward the Product, Perceived Healthiness, and Purchase Intention. To measure these variables, structured questionnaires were conducted to a sample composed by 408 Portuguese children aged between 10 and 14 years old from 5th to 9th grades. This study suggests that packaging can be a way to increase the appeal of healthy food to children and, consequently, improve their food choices, taking into consideration their values and preferences.

Full textO objetivo deste estudo é propor estratégias de ensino no enfoque CTS para o ensino de Ligações Químicas com ênfase nas Ligações Iônica e Covalente. Nesse sentido o presente estudo foi desenvolvido e aplicado em uma escola da rede pública de ensino do Paraná, na cidade de Telêmaco Borba, em duas turmas da segunda (2ª) série do ensino técnico integrado ao ensino médio, totalizando 42 alunos. A abordagem metodológica foi abordagem qualitativa, de natureza interpretativa com observação participante. Para a coleta de dados foram utilizados: fotos, gravações de arguições orais e vídeos de atividades transcritos na íntegra, anotações de campo em protocolos de observação das interações do dia-a-dia na sala de aula, questionários e atividades desenvolvidas pelos alunos. As atividades foram desenvolvidas em dezoito (18) aulas, as quais interligaram os conceitos químicos de Ligações Químicas ao tema social controverso (Junk Food), de forma a promover as inter-relações dos aspectos da ciência, tecnologia e sociedade. Os principais resultados obtidos evidenciaram que pelas atividades propostas, o ensino de Ligações Químicas, por meio do tema social Junk Food, promoveu a valorização do conhecimento científico extrapolando as barreiras da sala de aula para o contexto social dos educandos. Pois as atividades desenvolvidas nos módulos, proporcionou as relações entre os conteúdos escolares e os aspectos cotidianos dos alunos. Alcançando os objetivos da proposta CTS para a cidadania. Outro resultado alcançado compreende a elaboração de um guia didático que tem por objetivo compartilhar atividades desenvolvidas neste estudo, como sugestão metodológica para os profissionais que lecionam Química, e atuam no ano final do Ensino Fundamental, Ensino Médio e Técnico.
The aim of this study is to propose teaching strategies in CTS approach to teaching with emphasis on Chemical Bonds Ionic and Covalent Links . In this sense the present study was developed and applied in a public school teaching of Paraná, in the town of Telêmaco Borba , in two classes of the second ( 2nd ) series of technical education integrated into the school , totaling 42 students . The methodological approach was qualitative approach, interpretative participant observation . For data collection were used : photos , recordings and videos Pleas oral activities fully transcribed , field notes on observation protocols of interactions of day- to-day classroom , quizzes and activities for students . The activities we developed in eighteen (18) classes, which interlinked the chemical concepts of Chemical Bonds to controversial social issue (Junk Food), in order to promote inter - relations aspects of science, technology and society. The main results showed that the proposed activities, the teaching of Chemical Bonds, through social theme Junk Food, promoted the appreciation of scientific knowledge surpassing the barriers of the classroom to the social context of the learners. For the activities in the modules, provided the relationships between school subjects and everyday aspects of students. Achieving the goals of the proposed CTS for citizenship. Another result obtained includes the preparation of a didactic guide which aims to share activities developed in this study as methodological suggestion for professionals who teach chemistry, and act in the final year of elementary school, high school and technical.

Para anÃlise da formaÃÃo dessas profissionais, tomouâse a experiÃncia da Escola de Visitadoras de AlimentaÃÃo Agnes June Leith â EVA, que funcionou no estado do Cearà neste perÃodo, com foco nas vivÃncias cotidianas e prÃticas curriculares do curso, centrando a investigaÃÃo nas aÃÃes de educaÃÃo alimentar junto à classe trabalhadora, escolares e populaÃÃo em geral. As fontes utilizadas foram: relatos orais obtidos por meio de entrevistas com pessoas que fizeram parte da referida escola, como diretoras, professoras, alunas e funcionÃrias, e funcionÃrios do SAPS, instituiÃÃo à qual a EVA pertencia; jornais de grande circulaÃÃo da Ãpoca, cadernos de aula do curso de VisitaÃÃo Alimentar, anais do Congresso de Visitadoras de AlimentaÃÃo, livros, revistas, documentos oficiais e fotografias. Concluiâse que a Escola exerceu uma aÃÃo polÃticoâcultural no campo do saber em AlimentaÃÃo e NutriÃÃo no Cearà e no Brasil, contribuindo para a formaÃÃo de recursos humanos engajados na luta contra a fome, a desnutriÃÃo e a pobreza, e que as Visitadoras de AlimentaÃÃo executaram a funÃÃo de educadoras em alimentaÃÃo e difusoras dos princÃpios da alimentaÃÃo racional, contribuindo no processo de busca de representaÃÃo social desse saber.
A research on the constituent elements of food and nutrition expertise with its focus on both the formative space and the intervening curricular practices of the âVisitadoras de AlimentaÃÃoâ (Dietary Education Visitors) in the political and institutional scenario of âSAPSâ (Social Security Food Service) which operated in the State of Cearà from 1944 to 1966. For the analysis of the training of those professionals. âAgnes June Leithâ Dietary Education Visitors School â soâcalled âEVAâ â was selected; it operated in the State of Cearà from 1944 to 1966 focusing on daily experiences and curricular practices of the course, concentrating its investigation on the actions of dietary education amongst workingâclass members, students and the population as a whole. The study was aimed at rebuilding the educational space and investigate the curriculum practices of interventional feeding visits in the political and institutional SAPSâEC in this period. The methodological approach adopted was based on Pierre BourdieuÂs Social Action Theory with its emphasis both on the notions of field and habitus, as well as on the bases of Oral History and the Theory of Curricular Criticism, a landmark which was completed by the concepts of food, meal and eating practices originated from Anthropology. The sources used were the following oral reports obtained by way of interviews with people who had been part of the referred to school, such as principals, teachers, students and employees as well as âSAPSâ employees â the institution to which âEVAâ BELONGED; most popular newspapers at that time, exercise books of the course on Dietary Education Visitors, annals of Conferences on Dietary Education, books, magazines, officials documents and photographs. One can arrive at the conclusion that that School played a politicalâcultural role in the field of Food and Nutrition Education in the State of Cearà and in Brazil, contributing to the enhancement of human resources engaged in the struggle against hunger, malnutrition and poverty, and that the Dietary Education Visitors played a part as food educators and messengers of the principles of rational eating habits, contributing to the searching process for the social representation of such expertise.

Full textThere is evidence that diets containing high levels of lipids and / or carbohydrates con-tribute to the development of chronic degenerative diseases and cognitive impairment. However, the mechanisms by which maternal obesity affects health of offspring, specifi-cally in metabolism and long-term memory, are still unclear. The aim of this study was to investigate whether maternal obesity interferes with the metabolism and behavior related to long-term memory of their offspring, and if there is a summation effect with exposure to the cafeteria diet during the life of the offspring. Rats were fed a control diet (CON) or cafeteria (CAF) from weaning to 210 days old at weaning of their offspring. After wean-ing, their male offspring were divided into 4 groups (CON-CON, CON-CAF, CAF and CAF-CON-CAF) for all litters ingest CON or CAF, irrespective of maternal diet. Mothers were decapitated on the day following weaning of pups. Was decapitated and analyzed in behavioral tasks half the pups at 30 days of age and the other half at 120 days. CAF mothers had higher total body weight and adipose tissue and increased circulating con-centrations of total cholesterol, insulin and leptin than mothers CON. The weekly caloric intake of pups that ingested CAF was higher than those who ate CON, regardless of maternal diet. Litters showed body weight equal to weaning and 30days, but the 120dias, puppies who ate CON-CAF had weight gain compared to CON offspring, re-gardless of maternal diet these. However, the pups CAF-CAF had reduced body weight compared to CON-CAF adulthood. At 30 and 120 days, the puppies that ingested CAF showed greater weight of adipose tissue than those who ate CON, irrespective of ma-ternal diet. At 30 and 120dias, blood triglyceride and cholesterol were similar between groups, as well as blood glucose levels at 30 days. However, at 120 days, the puppies that ingested CAF showed hyperglycemia, as hiperlepti-nemia and hyperinsulinemia, irrespective of maternal diet. At 30 days, all groups were exposed to the cafeteria diet at some stage of life show a decline in performance in one or both tasks related to long-term memory (Recognition of objects and Dodge inhibitory step-down). Already at 120 days, the group CAF-CAF was the one who showed deterioration in performance in the task of Object Recognition, and all groups showed learning ability and memory in the inhibitory avoidance task step down. These data suggest that maternal diet modulates body weight and behaviors related to long-term memory of the puppies and their effects are influenced by postnatal diet offspring. However, further studies are needed to eluci-date the mechanisms involved in the development of these changes.

Full textIn the modern world, humans are exposed to a wide range of chemicals throughout their life. Human risk assessment of chemicals is of considerable public health importance and provides means to derive safe levels of acute and chronic exposure for subgroups of the human population including neonates, children, elderly and populations of different geographical ancestry and genetic polymorphisms. The application of pathway-related kinetic data to address human variability in the quantification of hazard has potential to reduce uncertainty and better characterize variability compared with the use of traditional default uncertainty factors. This thesis aims to 1) quantify human variability by means of Bayesian meta-analysis for a range of phase I, phase II metabolic pathways and transporters using pharmacokinetic markers of acute and chronic exposure or enzyme activity data from available probe substrate, 2) derive pathway-related variability distributions and pathway-related uncertainty factors for their future integration in physiologically based kinetic models for human risk assessment of chemicals

The public health sector, from WHO to Taiwan, is considering obesity as an important public health problem to be prevented and controlled. In Taiwan, obesity prevention is the main administrative goal of Health Promotion Administration, and it has been regulated by Paragraph 3, Article 28 of Act Governing Food Safety and Sanitation, so called “junk food advertisements reguation clause.” Obesity prevention involves interdisciplinary approach, which can include the historical background of liberalization, critique from political philosophy, application of regulation theory, theory and practice in public health, empirical research and critique in medical sociology. However, little legal research has been done on obesity prevention and control. The purpose of this article is to find the theoretical foundations of obesity prevention, and to apply these theoretical foundations to assess the legal strategies, using the junk food advertisements regulation as an example. The issues to be addressed in this article are as follows: Is obesity a global epidemic to be prevented and controlled? Should obesity prevention be regulated by the state? Is the state capable of regulating? How will the state regulate? What are the possible side effects of the regulations, e.g. discrimination? Is the junk food advertisements regulation necessary? What is the constitutional restraint on obesity prevention? The method to carry out this article is using constitutional dogmatic and sociology of law to project the interdisciplinary values on the constitutional values, which are the underlying principles of the Constitution and fundamental rights. The framework consists of the following: the importance of obesity issues, the necessity of improving the obesogenic environment to prevent obesity, the justifiability of obesity regulation by the state, and the necessity of junk food advertisements regulation for improving the obesogenic environment. Finally, this article analyzes the junk food advertisements regulation clause as well as the relating draft regulations, and makes practical suggestions.

In order to understand the scale, facilities and hygienic management of food service establishments in Jung-Li city of Taoyuan, the survey was carried out in the period of July 2004~September 2005 through a door to door interview with caterers located in main streets of Jung-Li city. A total of 294 completed questionnaires was recovered. Results from SPSS analysis revealed that about 17.0% and 7.5% of food service establishments understood the Good Hygienic Practice (GHP) and Hazard Analysis Critical Control Points (HACCP) respectively, indicating much room for food hygiene training. The classification of food service establishments in Jung-Li city consisted of 171 snack bars (58%), 60 restaurants (20%), 20 coffee bars (7%), 14 breakfast diners (5%), 12 fast food restaurants (4%), 9 self-service restaurants (3%) and 8 steak houses (3%). Food types served by food service establishments in Jung-Li city consisted of 137 Chinese (46%), 34 American (12%), 20 Japanese (7%), 17 Taiwanese (6%), 2 Italian (1%), 11 French (4%) and 73 other (24%) styles, including Thai food and other combinations. Japanese food restaurant was the best in many aspects, such as kitchen and meal service hygiene, business registration, full-time food protection staff, pallet, employee health examination and wearing hat with hair restraint. Cross-comparison between classifications of food service establishments and facilities and hygienic management showed that fast food restaurants were many superior aspects. Incomplete hygienic measures of Taiwanese food restaurant need to be improved. However, the percentage of licensed cooks in Taiwanese food restaurants was the highest, implicating that the government promotion policy of cook licensing was partially successful. Up to 88.2% Taiwanese food restaurants used monosodium glutamate, and Chinese food restaurant was the second highest, 84.7%. It is a affirmative that most food service establishments (> 85%) required their employees to put on aprons while in handling foods.

In this paper, I choose Hong Kong as an object and based on the writer of Hong Kong, Liang Bing-Jun, and the writer of Taiwan, Jewel Tsai’s food writing. I analyze and discuss of several works for writers by taking cultural studies as the path and referring to the history and reality of the development of Hong Kong. When we face the wave of globalization, the writers how to describe the city? The city, Hong Kong, how to be found the character and the difference between others? According to these writings, we can find that they emphasize pluralistic national identity, cultural things in this intersection process in their composition. Liang Bing-Jun writes about under the Eastern and Western cross-cultural intersection, colliding with each other, and the emergence of mixed-breed new forms of cultural type. Jewel Tsai writes about the background of ingredient, the same ingredients Department of the Chinese culture, through the effects of different powers, and then change to another culture.

Full textThis research focuses on children’s representations of food and nutrition from a constructivist epistemological perspective based on an interdisciplinary approach integrating communication and social psychology. Our goal was to determine which representations of food and nutrition could be understood as social representations, and if children’s age and cultural background interfered with the development of those representations. The subjects were children aged 7 to 12 from three different cultural backgrounds - we compared representations of food and nutrition built by children born, raised and educated in Romania and Quebec, as well as children from families of Romanian immigrants born (or raised from a very young age) in Quebec. The research methodology integrated social psychology and communication perspectives, instrumentally derived from natural logic and theories on social representations. Results suggest that children build social representations of food and nutrition, and that these representations become progressively more complex, undergoing a similar developmental process, according to children’s age, both from a cognitive and moral viewpoint. Moreover, the research highlights that socio-cultural background influences on the representations content and complexity refer either to cultural or ideological influences with regards to the differences and similarities between socio-cultural groups. Furthermore, we proposed scenarios of communication strategies aiming to increase the effectiveness of nutritional education programs. Finally, the research provides contributions to theories of social representations and child development as well as to the development of new methods for the analysis of representations.
