Heat resistance of a strain of Bacillus subtilis was measured in homogenized canned mushrooms, peas, lentils, meat balls, and tomato; in rehydrated potato purée; and in buffer at selected pH values, to detect any influence of pH and/or-menstruum upon heat resistance.
