Full textThis dissertation consists of the study of the meat consumption by the nobility group during the 13th and 14th centuries in France and its cultural meaning, based on the analysis of the culinary treatise Le Viandier de Taillevent. The research work began with the translation of the referred document to Portuguese and cataloguing of recipes and respective ingredients. Subsequently, analogical comparisons were made between Le Viandier de Taillevent and two further French culinary documents from the same period, Le Fabliau de Cocagne and the treatise Le Ménagier de Paris. The development is supported by a specialized bibliography on nourishment habits in the Middle Ages, from which Le Viandier de Taillevent was put into perspective. The analysis of the consumption of meat and its symbolic meaning for the social context are presented and related to the exercise of power, economy, religion, and dietetics and cooking.

Introduction : This thesis attempts to evaluate the opportunities of the circular economy at the territorial scale and to engage the role of biogeochemical cycles, economic systems and the institutional boundaries between the environment and the economy, during the transformation project of the waste treatment center at Ivry-Paris XVIII. To achieve this thesis, three different dimensions can be taken into consideration. The first one, inspired by the definition of biosphere proposed by Vernadsky, analyzes the pathways of molecules such as nitrogen in the biosphere. The second one, closer to the perspective supported by Sraffa and Leontief, leads to reconstruct a history of economics based on the interface between economy and environment. The third one, inspired by Moore's dialectical method, is to confront the positioning of the actors around the regulation of the boundaries between the processes of appropriation of the economy and the preservation of the environment.2. Methodology : The fourth part of the thesis aims at proposing a conceptual framework of successive or simultaneous steps to develop its strategy of circular economy using the three analysis dimensions, In this context, The thesis proposes a Sraffa’s typology of ten structures of the system to formalize economic-physical relations.The application of the circular economy model has the advantage of facilitating the identification and selection of a coherent set of interdependent indicators (system of indicators) enabling the characterization of the different dimensions of the close of material and energy flows. It is often possible to measure the closure of the loops of certain processes using indicators proposed by Liu Yifang and the Ellen MacArthur Foundation.3. Case of study - What Ivry-Paris XIII plant project would suit for tomorrow? : To answer this question, we explored three cases of study. 1. The case of landfilling of waste without looping mechanisms, 2. The case of urban composting which considers close the loops of the matter flow. 3. The case of incineration of waste which examines looping of energy flows.On the basis of the results of the indicators, our three case studies correspond to different flows configurations in the same territory.The move from incineration to urban composting has been explained on the basis of non-profit urban composting. This volunteer characteristic of the house composting can be illustrated by a Sraffian profit rate equal to zero. We must note that the selling price of compost poses a financial problem in the value system and hence subsidies will be necessary for its smooth running. Then, the ton of compost can be subsidized, at the price of a landfill.We will also be able to propose an alternative subsidy to household composting therefore; an industrial composting that can be carried out by a recycling company such as Bio Yvelines Services. In addition, the transition to the incineration can be managed by the Metropolitan Household Waste Agency (Syctom). The project of rebuilding the Ivry-Paris XIII treatment plant also shows a certain complexity of interaction between public and private actors and civil society, which raises the question of the state's capacity for a public discussion

Based on a comprehensive and inductive approach of the rural households’ ways of living, our research shows the influence of the rural area’s features and of the households’ profile (in particular their spatial origin, their seniority in the area and their life project) on their daily practices. They are underlain by easy and cheap car-mobility, which could evolve as a result of three phenomena (rarefaction of fossil energy; stronger injunctions to sustainable development; public policies that incite to develop only the territories that are served by public transport). Our research evaluates the households’ leeway in terms of mobility practices and their potential for transition towards more sustainable practices. Thanks to the analysis of an action-research project we highlight the role of a lever of “personalized accompaniment” in terms of behavioral evolution and propose some prescriptive elements in favor of global mobility policies

Full textThe dissertation deals with the emergence in France of a new professional activity, soon named "design industriel", defined as the shaping of industrial products. It aims at explaining the transition from the tradition of "arts décoratifs", associated with craft and luxury, to a new model of design suitable for industrial production and mass consumption. The first part deals with two associations committed in the promotion of industrial shapes in the 1950s. Formes Utiles defended the idea of a continuity between natural, craft and industrial shapes. It focused on the education of consumers through selections of products in the Salon des arts ménagers, a commercial exhibition of household appliances. The Institut d'esthétique industrielle drew on the ideas of the American engineer Frederick Taylor and steered its action towards producers and managers. The second partanalyses the fragile establishment of design in France in the 1960s and 1970s. The new institutions of design (Centre de création industrielle, Conseil supérieur de la création industrielle) did not manage to consolidate the profession. Functionalism is questioned by critical theory (Roland Barthes, Jean Baudrillard). French industrial designers followed the Hochschule fur Gestaltung Ulm model passed by Abraham Moles. They described themselves as environment designers and as representatives of consumers. The information system on products developed at the CCI showed this ambition. Case studies explain the cooperation between industrial design studios and firms in the sector of household electrical appliances (Moulinex, Calor, Seb)

Full textIn the last two decades of the 19th century came the fast development of Parisian suburbs and the beginnings of the state school system. Laws bearing the names of Paul Bert, Ferry and Goblet were the foundation of a republican, secular educational system, as well as they designed public education for women. In the south-west of Paris, urbanism and education followed a joint development. A study of female education through learners and teachers until the implementation of coeducation in the late 1950s reveals the evolution of educational models and gender representation in suburban areas. It highlights the part played by schools in the systematization of the social role of women and the place attributed to them within the city; it also allows for a better understanding of the relationship between the capital and its suburbs, the latter differentiated in the way they are experienced not less than in the way they are planned and built, as well as through representations of the urban space. With the representations it promotes, female education highlights the social diversity of the Parisian south-west, and its socio-demographical mutations. Through the evolution of school structures and educational offer, expectations from parents and the elite, it becomes an indicator of the powers and agents at play there – local competitions and initiatives, discrepancies between local efforts and regional or national policies. The school system focuses the inequalities between Paris and its suburbs, and from one suburb to another. This history of women, education and suburbs addresses three distinct eras : the turn of the 20th century and the beginnings of the secularization of the school system, the Interwar period and the growing competition between genders and between Paris and its suburbs, and the 1950s, when educational policies openly factors in urban hierarchical organization. Between political powers and civil society, female education appears as an essential vehicle for the organization of the south-east suburbs, and the creation of a suburban identity

Full textThis work argues for a revision of the question of social mobility in terms of capitals and reconversion strategies. For this purpose, it describes the way French- and English-language sociology conceptualizes social positions since the 19th century, in relation to the relatively autonomous history of the discipline. Then it points recurrent biases in the analysis of social stratification and mobility: the essentialization and the routinization of categories, the adoption of an encompassing point of view, the absence of scale-homology between phenomena and their mesurement, the absence of empirically-based definition of the subject of mobility, the interference of concerns of action, the idea of movements of the society as a whole, the symmetrical analysis of downward and upward mobility, the preferential analysis of the latter. It also reconsiders the problem of social boundaries. The theoretical propositions are tested out from the case of cultural capital's reconversions outside of the French educational system (traditionally described as "intergenerational downward mobility"), using, among others, long biographical interviews and eight large public statistical inquiries. Through the conditions of socialization are studied local reconversions (in relation to the territorial basis of educational capital, which gives the occasion to discuss the concepts of strength of weak ties, of social capital and of autochthonic capital), the different relations to consumption and the uses of family real estate, the place of matrimonial and seduction strategies, and, at last, the self-presentation strategies linked with the legitimacy of reconversions
