Abstract:
The aim of the study was to determine the presence of Campylobacter strains in poultry by-products and define antimicrobial resistance of isolates. In total, 400 samples were tested among which 300 included the liver, heart and stomach, and 100 samples represented the contents of the cecum. The samples were taken from chickens and turkeys in the slaughterhouse after evisceration. The prevalence of Campylobacter in chicken samples was 100% with regards to the contents of cecum and offal. The turkey origin Campylobacter strains were noted in 76% of the livers, 78% hearts and 82% gizzards. The samples of cecum contents were positive in 60%. Species analysis of the strains isolated showed C. jejuni as dominant. The estimation of sensitivity to antibiotics showed that Campylobacter strains were most frequently resistant to quinolones and tetracyclines. Resistance to ciprofloxacin was detected among 52.7% and 52.5% chicken and turkey origin strains. The same was noted regarding nalidixic acid, resistance to which was shown in 56% and 58.5% isolates, respectively. Regarding tetracyclines, the highest resistance of the strains from chicken and turkey was detected to doxycyclinum in 61.3% and 53.3% of isolates, respectively. However the highest sensitivity was showed to erythromycin, gentamicin and chloramphenicol. Only one C. coli strain from turkey offal was resistant to gentamicin. Simultaneously multi drug resistance was defined. The aimed studies showed that 62% of C. jejuni and 53.8% of C. coli strains from chicken offal were resistant to two or more agents. In turkey origin isolates MDR was detected in 54.7% of C. jejuni and 53.3% of C. coli strains.

Offals are of interest to both factures of meat products and consumers. At the same time, the ambiguity of the organoleptic properties of offals and the lasted of their processing create barriers to the growth of their consumption. The studies carried out allowed us to demonstrate the most effective approaches to obtain the necessary organoleptic properties of a product with high functional -technological characteristics. The most effective approach to improve the properties of products from beef heart is using of lactic acid starter culture and citric acid.

Abstract:
ABSTRACT Edible offal, which is the nonmuscular part of the livestock, is a popular food product in many countries. However, it can be easily contaminated by bacteria, such as Escherichia coli, during slaughter and processing and regarded as a reservoir for transfer of antimicrobial-resistant bacteria to humans. This study aimed to investigate prevalence and characteristics of antimicrobial-resistant E. coli isolates from edible offal in Korea. A total of 320 chicken offal samples, 540 pig offal samples, and 560 cattle offal samples were collected. Among the 118 E. coli isolates obtained, resistance to at least one antimicrobial agent was revealed in 32 (100%), 46 (95.8%), and 26 (68.4%) isolates of chicken, pig, and cattle offals, respectively, with an overall prevalence of 88.1% (104 of 118). The isolates from chicken offal showed highest resistance to most antimicrobial agents, with the exception of higher ampicillin resistance for isolates from pig offal. In the distribution of antimicrobial resistance genes of 69 (58.5%) multidrug-resistant (MDR) E. coli, blaTEM-1 (97.1%), tetA (76.6%), sul2 (70.6%), and cmlA (57.4%) were most prevalent. Class 1 and class 2 integrons were detected in 82.6 and 2.9% of the MDR isolates, respectively. In total, seven virulence genes (eaeA, escV, astA, fimH, papC, sfa/focDE, and iucC) were also identified in the MDR isolates. The fimH gene was the most frequent (91.3%). Overall, 52 isolates from chicken (24 isolates, 96.0%), pig (16 isolates, 55.2%) and cattle (12 isolates, 80.0%) offals among MDR isolates were found to have some plasmid replicons. Frep (38 isolates) and FIB (27 isolates) replicons were more prevalent than other replicon types. The results suggest that edible offal can become a relevant reservoir of E. coli strains carrying various antimicrobial resistance and virulence genes. HIGHLIGHTS

The study was conducted at Sheep and Goats Sector of the Departament of Animal Science of the Federal Rural University, Recife – Pernambuco – Brazil. Were evaluate performance, nutrients intake and digestibility, carcass characteristics and non carcass components in thirty two males castrate Morada Nova hair sheep breed, in feedlot, feeding with differents levels of concentrate in the diet 20, 40, 60 and 80%. The age and initial live weight was 8,11 ± 1,15 and 19,67 ± 2,97 kg, respectively, and slaughter weight of 30,0 kg. A blocks randomized design, with eight replicates, was used. The concentrate level above 60% of concentrate increasing performance of the Morada Nova hair sheep in feedlot, with elevation of daily weight gain and decreasing of time for reach slaughter, that to change from 52,50 to 123,37 days. Diets above 40% of concentrate increasing the digestibility index, however ether extract digestibility decreasing to start 61,45%, while nonfibrous carbohydrates to start 73,15% of the concentrate level in the diet. In relation to carcass characteristics, the concentrate levels increasing empty body weight, weight and yield cold carcass, but the shoulder, loin, leg cuts and body and carcass measurements were relationed with slaughter weight. The lows weights and yields of carcass were because of the high components non carcass weights. The weight slaughter was representative for organs, viscera and by-products weights in relation to concentrate levels, except liver, omasum, small intestines, blood and paws. Independet of the concentrate levels, the yields and weights of the non carcass components were high, with values that reflect in less yields and weights of carcass of the feedlot Morada Nova hair sheep.
O trabalho foi desenvolvido no Setor de Caprino-ovinocultura do Departamento de Zootecnia da Universidade Federal Rural de Pernambuco, objetivando avaliar o desempenho, consumo e digestibilidade dos nutrientes, as características de carcaça e componentes não carcaça em 32 ovinos da raça Morada Nova, castrados, confinados, recebendo dietas contendo 20, 40, 60 e 80% de concentrado. Os animais tinham 8,11 ± 1,15 meses de idade, peso inicial de 19,67 ± 2,97 kg e ao abate (PVA) 30,0 kg. Utilizou-se um delineamento experimental em blocos casualizados, com quatro tratamentos e oito repetições. O número de dias em confinamento variou de 52,50 a 123,37. O consumo de matéria seca/dia de 0,089 a 0,224 kg; o ganho de peso diário, a conversão e eficiência alimentar melhoraram com o aumento dos níveis de concentrado na dieta. Dietas acima de 40% de concentrado melhoraram os índices de digestibilidade, porém a do extrato etéreo diminuiu a partir do nível de 61,45%, enquanto que para os carboidratos não fibrosos a partir de 73,15% de concentrado. O aumento dos níveis de concentrado elevou o peso do corpo vazio, peso e rendimento da carcaça fria, além de reduzir o período de permanência dos animais no confinamento, mas os cortes da paleta, lombo, perna e as medidas corporais e da carcaça foram mais relacionados com o peso ao abate. O critério de peso adotado para o abate, foi mais representativo para os pesos dos órgãos, vísceras e subprodutos do que os níveis de concentrado utilizados, exceto para o fígado, omaso, intestino delgado, sangue e patas. Independente dos níveis de concentrado, os pesos e rendimentos dos componentes não carcaça foram altos, com valores que refletem menores pesos e rendimentos da carcaça dos ovinos Morada Nova confinados.

L'adoption de moyens de defense, dont certains s'inspirent des techniques americaines, doit cependant se faire dans le respect de la legitimite et de la legalite. Une telle exigence doit etre satisfaite tant pour les moyens de defense fondes sur la protection du capital -controle des actionnaires et acquisition des titres- que pour ceux fondes sur la protection du "controle" - rendre l'acquisition moins profitable, "liberer" le controle du capital -. Il apparait que cette exigence de legitimite et de legalite n'est pas toujours satisfaite. Certaines lacunes de la reglementation subsistent, permettant des exces tant dans les defenses que dans les attaques. L'elaboration d'un droit des prises de controle contestees n'est peut etre donc pas encore acheve
The recent deregulation wave pointed out the french companies weakness when confronted to hostile takeover bids. Though defensive tactics adoption among which some are inspired by american strategies must be achieved in the respect of legitimity and legality. Such a requirement should be satisfied for the defensive ploys based on protection of the capital - shareholders control and shares acquisitions - as well as for those based on protection of the "control" - make the takeover less valuable and "free" the control from the capital. This requirement is not always satisfied. Some loopholes in french regulation allow excesses in defenses and in agressions. Therefore contested takeovers rules are not completed

Les offres publiques transfrontières, devenues aujourd'hui un moyen très souvent employé pour la concentration des entreprises à l'échelle internationale, posent aux régulateurs nationaux un défi redoutable. Ces opérations peuvent affecter les marchés de divers pays, en sorte que chacune des autorités concernées par celles-ci pourrait appliquer sa réglementation. Or, cette dernière varie d'un ordre juridique à l'autre. Les conflits de compétence peuvent donc fréquemment survenir. Ceci étant, une offre publique transfrontière peut également susciter l'application d'autres règles, telles que celles régissant les opérations d'initiés, le contrôle des concentrations et le contrôle d'investissements étrangers. Dans ces conditions, l'application des réglementations nationales aux offres publiques transfrontières se heurte à des difficultés considérables et ne permet pas de régler tous les problèmes engendrés par pareilles opérations. Dans le souci de maintenir l'intégrité du marché et la protection des investisseurs dans un environnement qui ne bride pas l'innovation, la présente thèse propose une approche opérationnelle d'harmonisation des réglementations des offres publiques. Les États pourraient y parvenir en faisant converger les règles de marché, permettant ainsi de créer un " socle commun ", tout en laissant la lex societatis régir les questions relevant du droit des sociétés. Ultérieurement ou même parallèlement, l'adoption d'une loi modèle serait souhaitable en vue de prévoir une réglementation internationale des offres publiques à laquelle les États pourraient adhérer ou qu'ils pourraient utiliser comme source d'inspiration.

Abstract:
The extraction of nitrogenous compounds from cod (Cadus morhua) offal by enzymic hydrolysis with papain, the membrane separation of the peptides in the soluble fraction and their freeze and membrane concentration were investigated with the aim of obtaining a high yield of functional products. The following aspects were covered: kinetics of the hydrolysis and of the enzyme inactivation, separation of insoluble solids and yield of nitrogen under different operating conditions (water to fish offal ratio, temperature and particle size of the raw material). Three of the processing options -the hydrolyses, without and with added water, and the water extraction of the minced fish offal followed by hydrolysis of the residue- gave nitrogen yields of 51%, 62% and 69% of the total nitrogen in the fish offal, and required water: fish offal ratios of 0,1 and 1.86 respectively. The peptides in the hydrolysate supernatants were not amenable to membrane separation but those in the water extract supernatant could be split by pH precipitation and ultrafiltration. Eight functional properties of the potential products were evaluated. The hydrolysate supernatants lacked most of them except for high solubility but their low ash content and the particular molecular weight distribution of their peptides may be useful in special feeding diets. The pH precipitate and the concentrate from the ultrafiltration of the supernatant from the pH precipitation exhibited all the functional properties tested to some extent. The precipitate exhibited low solubility and high buffering capacity, high viscosity and good foaming properties. The concentrate had good solubility, gel strength and emulsifying properties.
